There you will see that one historical event passes over the private (real) lives of people like a cloud over a lake. Nothing stirs, there is only a fleeting shadow. Another event whips up the lake as if in a thunderstorm. For a while it is scarcely recognisable. A third may, perhaps, drain the lake completely. I believe history is misunderstood if this aspect is forgotton (and it is usually forgotton).

PORK AND BEANS BREAD Preheat oven to 350 degrees F., rack in the middle position. 15-ounce can of pork and beans (I used Van Camp’s) 4 eggs, beaten (just whip them up in a glass with a fork) 1 cup vegetable oil (not canola, not olive—use vegetable oil) 1 teaspoon vanilla extract 2 cups white (granulated) sugar 1 teaspoon baking soda ½ teaspoon baking powder ½ teaspoon salt 1 and ½ teaspoons ground cinnamon 1 cup chopped pecans or walnuts (measure after chopping—I used pecans) 3 cups all-purpose flour (pack it down in the cup when you measure it) Prepare your pans. Spray two 9-inch by 5-inch by 3-inch-deep loaf pans with Pam or another nonstick cooking spray.   Don’t drain the pork and beans. Pour them into a food processor or a blender, juice and all, and process them until they’re pureed smooth with no lumps.   Place the beaten eggs in a large mixing bowl. Stir in the pureed pork and beans and mix them in well.   Add the vegetable oil and the vanilla extract. Mix well.   Add the sugar and mix it in. Then mix in the baking soda, baking powder, salt and cinnamon. Stir until everything is incorporated.   Stir in the chopped nuts.   Add the flour in one-cup increments, stirring after each addition.   Spoon half of the batter into one loaf pan and the other half of the batter into the second loaf pan.   Bake at 350 degrees F. for 50 to 60 minutes. Test the bread with a long food pick inserted in the center. If it comes out sticky, the bread needs to bake a bit more. If it comes out dry, remove the pans from the oven and place them on a wire rack to cool for 20 minutes.   Run the sharp blade of a knife around inside of all four sides of the pan to loosen the bread, and then tip it out onto the wire rack.   Cool the bread completely, and then wrap it in plastic wrap. At this point the bread can be frozen in a freezer bag for up to 3 months.   Hannah and Lisa’s Note: If you don’t tell anyone the name of this bread, they probably won’t ever guess it’s made with pork and beans.

When the pasta is al dente, I drain it quickly, reserving a bit of the cooking water, and add it to a large bowl with a knob of butter, mixing quickly to coat the pasta. I add in the lemon sauce, tossing with a pair of tongs. When the whole mass comes together in a slick velvet tumble of noodles, I taste for seasoning, add a bit more ground black pepper, and put the shredded chicken on top with a bit more grated cheese. A fork and a cold beer out of the fridge, and I take the bowl out to the living room, tossing Simca a piece of chicken, and settle on the couch to watch TV, twirling long strands of the creamy lemony pasta onto my fork with pieces of the savory chicken, complete comfort food.

I can feel the irrationality and anxiety draining my store of energy like a battery-operated racecar grinding away in the corner. This is energy I will need to get through the next day. But I just lie in bed and watch it burn, and with it any hope for a productive tomorrow. There go the dishes, there goes the grocery store, there goes exercise, there goes bringing in the garbage cans. There goes basic human kindness. I wake up in a sweat so thorough I sleep with a pitcher of water by the bed or I might die of dehydration.

You can appreciate being given the gift without necessarily having to keep it. Try adopting a whole different philosophy about presents. When you give something to someone, give it with love and let it go. Allow the recipient complete freedom to do whatever he wants with it. If the thing he can most useful he do is put it straight in the trash or give it to someone else, fine (you wouldn’t want him to clutter up his space with unwanted presents would you?). Give others this freedom and you will begin to experience more freedom in your own life too.

The City of México, situated on a lake that had been gradually drying for a thousand years, had begun to experience serious flooding as early as the administration of the first Velasco. The problem was that the Spanish had deforested the ocote- and cypress-covered slopes of the three central lakes, Xaltocán, Texcoco, and Zumpango; now water cascaded off the mountains and soil erosion began to silt up the lakes. The lakes in Anáhuac had never drained to any sea; and during seasons of unusually heavy rains the water level lapping against the capital rose dangerously. After an inundation in the 1550s, the viceroy had rebuilt the old Mexica dikes; by 1604 no dams or levees could hold off the rising water. The second Velasco set the engineer Enrico Martínez to solving the problem. Martínez dug a tunnel four miles through the encircling mountains to drain off the excess water. Many thousands of local indios were dragooned into this task and driven harshly to complete the job within a year. The task was done in eleven months, at an enormous cost in Amerindian hardship and lives. Unfortunately, while the idea was sound, the construction was shaky. The tunnel tended to cave in, and it was not large enough to handle a serious flood. For some twenty years, huge numbers of indios were kept laboring to clear the tunnel and shore it up; then, in 1629, a simultaneous rise in all the lakes choked the tunnel. The destruction was enormous, and some parts of the city remained flooded for four years. The engineer Martínez was again called upon. Now, he converted his disastrous tunnel into an open ditch about thirteen miles long and about two hundred feet deep. This ditch, called the Tajo de Nochistongo, required ten years to put in operation, and work continued on it for more than a century. The draining of the Valley occupied a whole series of viceroys, used up most of their revenues, and laid terrible burdens on the surviving Anáhuac Indians. Nor was the drainage problem really solved, though the Capital was kept out of the mire. Drainage, and the subsequent sinking and shifting of the porous lake-bottom soil is still a monstrous engineering, architectural, and financial problem for México.

BACON, EGG, AND CHEDDAR CHEESE TOAST CUPS Preheat oven to 400 degrees F., rack in the middle position. 6 slices bacon (regular sliced, not thick sliced) 4 Tablespoons (2 ounces, ½ stick) salted butter, softened 6 slices soft white bread ½ cup grated cheddar cheese 6 large eggs Salt and pepper to taste Cook the 6 slices of bacon in a frying pan over medium heat for 6 minutes or until the bacon is firmed up and the edges are slightly brown, but the strips are still pliable. They won’t be completely cooked, but that’s okay. They will finish cooking in the oven. Place the partially-cooked bacon on a plate lined with paper towels to drain it. Generously coat the inside of 6 muffin cups with half of the softened butter. Butter one side of the bread with the rest of the butter but stop slightly short of the crusts. Lay the bread out on a sheet of wax paper or a bread board butter side up. Hannah’s 1st Note: You will be wasting a bit of butter here, but it’s easier than cutting rounds of bread first and trying to butter them after they’re cut. Using a round cookie cutter that’s three and a half inches (3 and ½ inches) in diameter, cut circles out of each slice of bread.   Hannah’s 2nd Note: If you don’t have a 3.5 inch cookie cutter, you can use the top rim of a standard size drinking glass to do this. Place the bread rounds butter side down inside the muffin pans, pressing them down gently being careful not to tear them as they settle into the bottom of the cup. If one does tear, cut a patch from the buttered bread that is left and place it, buttered side down, over the tear. Curl a piece of bacon around the top of each piece of bread, positioning it between the bread and the muffin tin. This will help to keep the bacon in a ring shape. Sprinkle shredded cheese in the bottom of each muffin cup, dividing the cheese as equally as you can between the 6 muffin cups. Crack an egg into a small measuring cup (I use a half-cup measure) with a spout, making sure to keep the yolk intact. Hannah’s 3rd Note: If you break a yolk, don’t throw the whole egg away. Just slip it in a small covered container which you will refrigerate and use for scrambled eggs the next morning, or for that batch of cookies you’ll make in the next day or two. Pour the egg carefully into the bottom of one of the muffin cups. Repeat this procedure for all the eggs, cracking them one at a time and pouring them into the remaining muffin cups. When every muffin cup has bread, bacon, cheese and egg, season with a little salt and pepper. Bake the filled toast cups for 6 to 10 minutes, depending on how firm you want the yolks. (Naturally, a longer baking time yields a harder yolk.) Run the blade of a knife around the edge of each muffin cup, remove the Bacon, Egg, and Cheddar Cheese Toast Cups, and serve immediately. During the course of the dinner, the conversation turned from religion to various world mythologies and we began to play the game of ‘Name That Character.” To play this game, you pick a category such as famous actors, superheroes or historical characters. In turn, each person describes events in a famous character’s life while everyone else tries to guess who the character is. Strategically you try to describe the deeds of a character in such a way that it might fit any number of characters in that category. After three guesses, if no one knows who your character is, then you win. Choosing the category of Bible Characters, we played a couple of fairly easy rounds with the typical figures, then it was my turn. Now, knowing these well meaning young men had very little religious experience or understanding outside of their own religion, I posed a trick question. I said, “Now my character may seem obvious, but please wait until the end of my description to answer.” I took a long breath for dramatic effect, and began, “My character was the son of the King of Heaven and a mortal woman.” Immediately both young men smiled knowingly, but I raised a finger asking them to wait to give their responses. I continued, “While he was just a baby, a jealous rival attempted to kill him and he was forced into hiding for several years. As he grew older, he developed amazing powers. Among these were the ability to turn water into wine and to control the mental health of other people. He became a great leader and inspired an entire religious movement. Eventually he ascended into heaven and sat with his father as a ruler in heaven.” Certain they knew who I was describing, my two guests were eager to give the winning answer. However, I held them off and continued, “Now I know adding these last parts will seem like overkill, but I simply cannot describe this character without mentioning them. This person’s birthday is celebrated on December 25th and he is worshipped in a spring festival. He defied death, journeyed to the underworld to raise his loved ones from the dead and was resurrected. He was granted immortality by his Father, the king of the gods, and was worshipped as a savior god by entire cultures.” The two young men were practically climbing out of their seats, their faces beaming with the kind of smile only supreme confidence can produce. Deciding to end the charade I said, “I think we all know the answer, but to make it fair, on the count of three just yell out the answer. One. Two. Three.” “Jesus Christ” they both exclaimed in unison – was that your answer as well? Both young men sat back completely satisfied with their answer, confident it was the right one…, but I remained silent. Five seconds ticked away without a response, then ten. The confidence of my two young friends clearly began to drain away. It was about this time that my wife began to shake her head and smile to herself. Finally, one of them asked, “It is Jesus Christ, right? It has to be!” Shaking my head, I said, “Actually, I was describing the Greek god Dionysus.

TREASURE CHEST COOKIES (Lisa’s Aunt Nancy’s Babysitter’s Cookies) Preheat oven to 350 degrees F., rack in the middle position. The Cookie Dough: ½ cup (1 stick, 4 ounces, ¼ pound) salted butter, room temperature ¾ cup powdered sugar (plus 1 and ½ cups more for rolling the cookies in and making the glaze) ¼ teaspoon salt 2 tablespoons milk (that’s cup) 1 teaspoon vanilla extract 1 and ½ cups all-purpose flour (pack it down when you measure it) The “Treasure”: Well-drained Maraschino cherries, chunks of well-drained canned pineapple, small pieces of chocolate, a walnut or pecan half, ¼ teaspoon of any fruit jam, or any small soft candy or treat that will fit inside your cookie dough balls. The Topping: 1 cup powdered (confectioners) sugar To make the cookie dough: Mix the softened butter and ¾ cup powdered sugar together in a medium-sized mixing bowl. Beat them until the mixture is light and fluffy. Add the salt and mix it in. Add the milk and the vanilla extract. Beat until they’re thoroughly blended. Add the flour in half-cup increments, mixing well after each addition. Divide the dough into 4 equal quarters. (You don’t have to weigh it or measure it, or anything like that. It’s not that critical.) Roll each quarter into a log shape and then cut each log into 6 even pieces. (The easy way to do this is to cut it in half first and then cut each half into thirds.) Roll the pieces into balls about the size of a walnut with its shell on, or a little larger. Flatten each ball with your impeccably clean hands. Wrap the dough around a “treasure” of your choice. If you use jam, don’t use over a quarter-teaspoon as it will leak out if there’s too much jam inside the dough ball. Pat the resulting “package” into a ball shape and place it on an ungreased cookie sheet, 12 balls to a standard-size sheet. Push the dough balls down just slightly so they don’t roll off on their way to your oven. Hannah’s 1st Note: I use baking sheets with sides and line them with parchment paper when I bake these with jam. If part of the jam leaks out, the parchment paper contains it and I don’t have sticky jam on my baking sheets or in the bottom of my oven. Bake the Treasure Chest Cookies at 350° F. for approximately 18 minutes, or until the bottom edge is just beginning to brown when you raise it with a spatula. Remove the cookies from the oven and allow them to cool on the sheets for about 5 minutes. Place ½ cup of powdered sugar in a small bowl. Place wax paper or parchment paper under the wire racks. Roll the still-warm cookies in the powdered sugar. The sugar will stick to the warm cookies. Coat them evenly and then return them to the wire racks to cool completely. (You’ll notice that the powdered sugar will “soak” into the warm cookie balls. That’s okay. You’re going to roll them in powdered sugar again for a final coat when they’re cool.) When the cookies are completely cool, place another ½ cup powdered sugar in your bowl. Roll the cooled cookies in the powdered sugar again. Then transfer them to a cookie jar or another container and store them in a cool, dry place. Hannah’s 2nd Note: I tried putting a couple of miniature marshmallows or half of a regular-size marshmallow in the center of my cookies for the “treasure”. It didn’t work. The marshmallows in the center completely melted away. Lisa’s Note: I’m going to try my Treasure Chest Cookies with a roll of Rollo’s next time I make them. Herb just adores those chocolate covered soft caramels. He wants me to try the miniature Reese’s Pieces, too. Yield: 2 dozen delicious cookies that both kids and adults will love to eat.

Her eyes were closed and he saw that her lids were bruised and purple against the translucent paleness of her face, drained completely dead white under the makeup she‟d brushed on before she‟d died. Staggering by the sight of her, he knelt by the tub and extended one shaking hand to touch her cheek. It all seemed as if he‟d walked into a horror film and once again he needed to prove to his mind that this wasn‟t real. His hand shook as he lifted it nearer to her flesh, waiting for the corpse, the supposedly dead and buried to move. He touched his quivering fingers to her face, feeling its claylike reality. The sensation caused an immediate shudder of revulsion and he fought not to vomit. Even as the moment came, the sight of her moving in the water startled him and he jumped away from the tub. It wasn‟t an obvious movement at first, only soft breaths moving in and out of her nostrils, but then her chest rose and fell with it and he quaked, feeling unstable where he knelt on the floor. Her eyes opened next and he felt the blood fall out of his face, wanting to scream but too afraid he would cause her to take some action, to reach out and touch him, proving well and forever that he was indeed insane. Scream and you might as well slit your own throat. He swallowed the scream like a rock and stared as her eyes moved slowly in their sockets, locking on him. Slowly, as if she‟d lost control of her muscles, she rose from the tub and looked down at him, smiling. Blood water slid down her bare body, over her neck, down her back and the smooth ridges of her breasts, to slip slowly down her thighs and down over her calves. A puddle spread on the floor, and as it extended toward him he struggled to his feet, skittering away from it. As he watched it spread, he shivered, weak as he started to cry frantic, horrified tears. Breaking down, he looked back up at her face and slipped to the floor once more, his knees incapable of sustaining his own weight. The smile grew wider as she strode to his shivering form, thrown on his side and struggling to rise. The blood water seeped into his clothes, making him sick, a drop of it trickling along the lobe of his ear and into it. And then she leaned down, holding those dim, stained curls of auburn out of her face and tucking them behind her ear. Her lips parted, blue beneath the strong crimson red of her lipstick, and she spoke into his ear with the chill breath of the dead. His eyes grew wide and horrified as she spoke, the hair on his neck rising, sending a maddening shiver of fear through him. “I‟ve returned, Raven.” She whispered “And I want what is mine.” The last thing he saw before his mind, finally, thankfully, shut down was her face in front of his.
