It smelled like burnt piles of collected leaves, the cough of a newly revived chimney, roasted chestnuts, the scent of a man’s hands after hours spent in a woodshop. Fall rain was not Viviane’s favorite. Rain in the winter smelled simply like ice, the cold air burning the tips of ears, cheeks, and eyelashes. Winter rain was for hiding in quilts and blankets, for tying woolen scarves around noses and mouths — the moisture of rasping breaths stinging chapped lips. The first bout of warm spring rain caused normally respectable women to pull off their stockings and run through muddy puddles alongside their children. Viviane was convinced it was due to the way the rain smelled: like the earth, tulip bulbs, and dahlia roots. It smelled like the mud along a riverbed, like if she opened her mouth wide enough, she could taste the minerals in the air. Viviane could feel the heat of the rain against her fingers when she pressed her hand to the ground after a storm. But in 1959, the year Henry and I turned fifteen, those warm spring rains never arrived. March came and went without a single drop falling from the sky. The air that month smelled dry and flat. Viviane would wake up in the morning unsure of where she was or what she should be doing. Did the wash need to be hung on the line? Was there firewood to be brought in from the woodshed and stacked on the back porch? Even nature seemed confused. When the rains didn’t appear, the daffodil bulbs dried to dust in their beds of mulch and soil. The trees remained leafless, and the squirrels, without acorns to feed on and with nests to build, ran in confused circles below the bare limbs. It is traditionally made with pineapple vinegar but can also be prepared with whey and salt. Like traditional sauerkraut, cortido improves with age. In a large bowl mix cabbage with carrots, onions, oregano, red chile flakes, sea salt and whey. Pound with a wooden pounder or a meat hammer for about 10 minutes to release juices. Place in 2 quart-sized, wide-mouth mason jars and press down firmly with a pounder or meat hammer until juices come to the top of the cabbage. The top of the cabbage mixture should be at least 1 inch below the top of the jars. Cover tightly and keep at room temperature for about 3 days before transferring to cold storage. Variation: Traditional Cortido Omit salt and whey and use 4-6 cups pineapple vinegar. Mix all ingredients except pineapple vinegar together in a large bowl and pound lightly. Stuff cabbage loosely into 3 quart-sized, wide-mouth mason jars and add enough vinegar to cover the cabbage. The top of the cabbage mixture should be at least 1 inch below the top of the jars. Cherry Cream Cheese Surprise Recipe   Ingredients: From Scratch Pie Crust: (8 or 9 inch pie crust) 1/3 cup plus 1 tablespoon shortening (Crisco) OR 1/3 cup lard 1 cup all-purpose flour ½ teaspoon salt 2 to 3 tablespoons cold water Steps: Cut shortening into flour and salt until particles are the size of small peas.  Sprinkle in water, 1 tablespoon at a time, tossing with a fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 tablespoons water can be added, if needed.) Gather pastry into a ball.  Flatten the ball on a lightly floured cloth-covered board. (A hard, floured surface will also work.) Roll pastry 2 inches larger than inverted pie plate using floured rolling pin.  (Note: I use a lightly floured spatula to loosen the piecrust from the surface.) Fold pastry into quarters, unfold and ease into lightly greased pie plate, pressing firmly against bottom and sides of plate.  Trim overhang excess and then press fork tines along rim of pie plate.  Cream Cheese Layer: 8 ounces whipped cream cheese ½ cup white sugar ½ tsp. vanilla extract Mix ingredients and spread on the bottom and sides of the piecrust. Mix 1 tablespoon brown sugar and ½ teaspoon cinnamon together and sprinkle over top of cream cheese mixture.   PREHEAT OVEN TO 375 DEGREES. Cherry Pie Filling: 4 cups fresh or frozen cherries, thawed (if frozen, make sure to drain juice after thawing) ¾ cup sugar 3 tbsp cornstarch or Mix ingredients and pour on top of cream cheese/brown sugar and cinnamon mixture. Topping: 2/3 cup packed brown sugar ½ cup all-purpose flour ½ cup oats ¾ teaspoon ground cinnamon ¾ teaspoon ground nutmeg ½ cup margarine or butter, softened Mix ingredients and sprinkle over top of cherry mixture.   Bake 30 minutes at 375 degrees.  *For a quicker, easier version, substitute with a refrigerated (ready-to-bake) pie crust and 2 cans of cherry pie filling. *Serve warm with ice cream…or eat a piece for breakfast with a fresh cup of coffee .
