Traditional Swiss fondue is a combination of melted Gruyère and Emmenthaler cheeses, white wine, and nutmeg, boiled together and lightly thickened with cornstarch, then finished with kirschwasser. My version uses a lot of garlic, no thickening agent, and no kirsch. The cheese tends to thicken in the bottom of the pot (an enameled cast-iron pot is best), and the flavored white wine comes to the top. As diners drag their bread cubes gently through the fondue, the liquid on the surface and the thicker mixture underneath combine. Only crusty, country-type French bread should be used. If it falls off your fork into the cheese, custom requires that you buy a round of drinks for everyone at the table. Fondue is usually made in the kitchen at the last moment, then brought to the dining room and kept hot over a Sterno or gas burner set in the center of the table. My father always warned against drinking cold white wine with the fondue, claiming it would cause the stomach to swell, but I have drunk my wine throughout without any ill effects. Fondue is a meal in itself at our house and is usually followed by a salad and fruit for dessert.

No, you're not passing up on A good glorious kitchen gadget. You're passing up on THE glorious kitchen appliance. The key is to get one which has 3 knobs: temperature, mode (bake/toast/broil), and time. Instead of easily making toast, I love to butter the bakery first and obtain it properly caramelized under the broiler. Merely today I warmed up some leftover biscuits and waffles; instead of coming out just a little soggy and rubbery in the microwave they turn out just simply because crisp and very good as if they were new. Pizza tastes 100x better rewarmed in a toaster oven than a microwave; cheese is definitely nice and melty rather than scorching warm and rubbery (like in a microwave). We generate garlic bread all the time; utilize it on bake for some minutes then zap it on broil until stuff are browned. Jalapeno poppers happen to be another prevalent thing I take advantage of it for when simply producing them for a 1-2 people. Roasted garlic, quesadillas, baked broccoli, stuffed mushrooms... all sorts of things that work effectively in it. We guess it creates more impression for smaller sized households, but we use ours many times a day time (family of 3). It's easily our most-applied counter top appliance. In 15 years I've never needed a normal toaster, and I take in an unhealthy volume of toast. Overall, just super versatile and significantly better for reheating anything baked, or doing little baking batches and never have to heat the oven.

TV demanded that the dishes be visually attractive, too. It was fun to dream up new recipes with that focus in mind. This one is a good example. Partially drying the tomatoes in the oven concentrates their taste, giving them a wonderfully deep flavor and great chewiness. The red of the tomatoes, the white of the cheese, and the green of the basil make this dramatically colorful salad especially enticing. Serve with good crunchy bread. 1½ pounds plum tomatoes (about 6), cut lengthwise into halves (12 pieces) ¾ teaspoon salt 10 ounces fresh mozzarella cheese, cut into ½-inch slices 2 tablespoons drained and rinsed capers ½ teaspoon freshly ground black pepper 1 teaspoon chopped garlic 3 tablespoons extra-virgin olive oil ½ teaspoon grated lemon rind About 1 cup (loose) basil leaves Preheat the oven to 250 degrees. Line a cookie sheet with aluminum foil. Arrange the tomato halves cut side up on the sheet, and sprinkle ½ teaspoon of the salt on top. Bake for 4 hours. Add the cheese, and stir gently with a wooden spatula or spoon until it is totally melted and the mixture is just reaching a boil. Do not let it come to a strong boil. Taste for seasoning, trying the fondue on a piece of the bread, and then correct the seasonings, if necessary. Bring the pan to the table, and set over a burner to keep hot. Instruct guests to use this technique: Impale one piece of bread, soft side first, on a dinner fork, and stir it gently into the mixture until coated with the cheese. With a twist of the wrist, lift the bread from the cheese, and set it on a plate for a few seconds to cool slightly before eating. When only about 1 cup of the mixture is left in the bottom of the pan, make the “soup” by adding a dozen or so pieces of the bread to the pot and mixing well to coat them with the leftover liquid and cheese. Don’t forget to eat the crusty bits of cheese sticking to the bottom of the pan.

Let's break it down: The scramble: Monica, who doesn't even like eggs, created these sublime scrambles with a specific and studied technique. And we keep turning them and turning them until they're fluffy and in one piece, not broken into bits of egg." The toast: While the rave-worthiness of toast usually boils down to the quality of the bread, HOME/MADE takes it a step further. "It just was everything," she says of the tangy, vinegary flavor the French condiment lent to her spuds. Remove the yolks carefully, put them in a bowl, and add the garlic, parsley, milk, salt, and pepper. Crush with a fork to create a coarse paste. Spoon the mixture back into the hollows of the egg whites, reserving 2 to 3 tablespoons of the filling to use in the dressing. Heat the vegetable oil in a nonstick skillet, and place the eggs, stuffed side down, in the skillet. Cook over medium heat for 2 to 3 minutes, until the eggs are beautifully browned on the stuffed side. Remove and arrange, stuffed side up, on a platter. FOR THE DRESSING: Mix all of the dressing ingredients in a small bowl with a whisk or a spoon until well combined. Coat the warm eggs with the dressing, and serve lukewarm.

If you can’t find it in your area, try chopped lemon balm, lemon verbena, or lemon basil. ¼ cup seasoned bread crumbs ¼ cup grated Parmesan cheese 2 teaspoons lemon thyme leaves 2 large zucchinis, thinly sliced 1 large Vidalia onion, thinly sliced 4 tablespoons melted butter Preheat oven to 350 degrees. Mix bread crumbs, cheese, and thyme. In a round casserole dish, layer half of the zucchini and half of the onion slices. Baste with melted butter. Add half of the bread crumb mixture. I want to write about my family's favorites, the strange foods that comforted us in tense moments around the dinner table. Mom's Midwestern "hot dish": layers of browned hamburger, canned vegetable soup, canned sliced potatoes, topped with canned cream of mushroom soup. I haven't tasted it in years. Her lime Jell-O salad with cottage cheese, walnuts, and canned pineapple, her potato salad with French dressing instead of mayo. I have a craving, too, for Dad's grilling marinade. "Shecret Shauce" he called it in those rare moments of levity when he'd perform the one culinary task he was willing to do. I'd lean shyly against the counter and watch as he poured ingredients into a rectangular cake pan. Vegetable oil, soy sauce, garlic powder, salt and pepper, and then he'd finish it off with the secret ingredient: a can of fruit cocktail. Somehow the sweetness of the syrup was perfect against the salty soy and the biting garlic. Everything he cooked on the grill, save hamburgers and hot dogs, first bathed in this marinade overnight in the refrigerator. Rump roasts, pork chops, chicken legs all seemed more exotic this way, and dinner guests raved at Dad's genius on the grill. They were never the wiser to the secret of his sauce because the fruit bits had been safely washed into the garbage disposal.

EMBASSY GRILLED PASTRAMI SANDWICH Put lean pastrami slices in a hot skillet and quickly toss until the edges are slightly crispy. Cover with asiago cheese and grilled scallions and cover with a lid until the cheese melts. Pile the pastrami on grilled country bread spread with mustard and topped with vinaigrette-based coleslaw. Drizzle Khrenovina sauce (processed slurry of tomatoes, horseradish, garlic, salt, pepper, paprika, sweet bell pepper, vinegar, and sugar) on top.

Olive oil cooking spray 1½ cups panko breadcrumbs 2 teaspoons garlic powder 2 teaspoons dried oregano 2 tablespoons sweet or smoked paprika 1 teaspoon kosher salt ½ cup all-purpose flour ½ teaspoon freshly ground black pepper 2 large eggs 4 to 6 boneless, skinless chicken breasts or cutlets, each about ½ inch thick (about 1½ pounds total) 1 jar (24 ounces) good-quality marinara sauce (I love Rao’s) 6 to 8 slices provolone cheese ¼ cup shredded Parmesan cheese Let’s cook: 1. Preheat oven to 400°F with a rack in the upper third. Generously mist a sheet pan with cooking spray. 2. Stir together the panko, garlic powder, oregano, paprika, and ½ teaspoon of the salt in a large bowl to combine. In another large bowl, whisk together the flour, the remaining ½ teaspoon salt, and the pepper. In a third shallow bowl, whisk together the eggs. 3. Dip each chicken cutlet first in the flour mixture, shaking off any excess, then in the eggs, and finally in the panko mixture, patting to coat thoroughly on both sides. Place the breaded chicken cutlets on the prepared pan. Mist the chicken with cooking spray to lightly coat. 4. Bake the chicken until the panko has browned and the cutlets are almost entirely cooked through (they’ll no longer feel squishy when you poke them), about 15 minutes. 5. Remove the pan from the oven. Top each chicken cutlet with about ½ cup marinara sauce (use up the jar) and the provolone and Parmesan, and return to the oven. Bake until the cheese is melted and bubbly, an additional 10 minutes. 6. Serve hot. Chicken Legs with Fennel & Orange Serves 4 I love the classic pairing of fennel and citrus.

Alexander works diligently and with such care that her heart can't help but flutter. He preheats the oven, saws off four thick pieces of sourdough bread, spreads a generous layer of mayo instead of butter before searing to a perfect golden brown in a pan. Once browned, he uses a single clove of garlic and rubs it against the bread, giving an otherwise boring piece of toast that extra herbal kick. He's generous with the layers of cheese he applies--- in this case, sharp cheddar and mozzarella--- before he lays everything together, lovingly wraps the food up in a sheet of parchment paper, and pops it in the oven to melt. Once he's satisfied, he pulls the sandwich out and drizzles the top with the lightest trace of honey; a playful balance of sweet and salty. Alexander plates up without pomp or circumstance, returning to Eden with the fanciest grilled cheese she's ever eaten in her entire life.
