You say yes because it is the only way to really experience another place, and let it change you. Which, in my opinion, is the mark of a great trip. 2. You venture to the places where the tourists aren’t, in addition to hitting the “must-sees.” If you are exclusively visiting places where busloads of Chinese are following a woman with a flag and a bullhorn, you’re not doing it. 3. You are easygoing about sleeping/eating/comfort issues. You don’t change rooms three times, you’ll take an overnight bus if you must, you can go without meat in India and without vegan soy gluten-free tempeh butter in Bolivia, and you can shut the hell up about it. 4. You are aware of your travel companions, and of not being contrary to their desires/​needs/​schedules more often than necessary. If you find that you want to do things differently than your companions, you happily tell them to go on without you in a way that does not sound like you’re saying, “This is a test.” 5. You can figure it out. How to read a map, how to order when you can’t read the menu, how to find a bathroom, or a train, or a castle. 6. You know what the trip is going to cost, and can afford it. If you can’t afford the trip, you don’t go. Conversely, if your travel companions can’t afford what you can afford, you are willing to slum it in the name of camaraderie. P.S.: Attractive single people almost exclusively stay at dumps. If you’re looking for them, don’t go posh. 7. You are aware of cultural differences, and go out of your way to blend. You don’t wear booty shorts to the Western Wall on Shabbat. You do hike your bathing suit up your booty on the beach in Brazil. Basically, just be aware to show the culturally correct amount of booty. 8. You behave yourself when dealing with local hotel clerks/​train operators/​tour guides etc. Whether it’s for selfish gain, helping the reputation of Americans traveling abroad, or simply the spreading of good vibes, you will make nice even when faced with cultural frustrations and repeated smug “not possible”s. This was an especially important trait for an American traveling during the George W. years, when the world collectively thought we were all either mentally disabled or bent on world destruction. (One anecdote from that dark time: in Greece, I came back to my table at a café to find that Emma had let a nearby [handsome] Greek stranger pick my camera up off our table. He had then stuck it down the front of his pants for a photo. My arena of literal expression offered four avenues to the topic of elimination, two references to human anatomy, one request for divine imprecation, one standard description of or request for coitus, and a coital variation which was no longer an option for me since my mother was deceased. All in all, it was enough.

Lemon Barley Chicken Soup: The first thing you have to do is make chicken broth. Over here in France, I can’t seem to find acceptable packaged chicken broth, so I make it from scratch; it’s really not tricky. Remove the skin from four or five chicken thighs. Put them in a big pot, along with a cut-up onion, a carrot or two, some celery, salt and pepper, and lots of water. Cook this mélange very, very slowly (bubbles just rising) for a few hours (at least three). When you’ve got the broth under way, cook the barley: take 1 cup of barley and simmer it slowly in 4 to 5 cups of water. When it’s soft, drain the barley, but reserve any remaining barley water so you can add it to the broth. When the broth is ready, skim off the froth. Then remove the chicken thighs and when they’re cool enough, strip the meat off the bones, saving it for the soup. Strain the broth and put it to the side. Now that you’ve got chicken broth, it’s time for the soup itself—the rest is even easier. Cut up some leeks, if you have them, though an onion works just fine, too. If you’ve got leeks, put some butter in your (now emptied) stockpot over low heat; use olive oil instead if you have onions. While the leeks/onions are softening, finely mince a knob of ginger and 2 or 3 garlic cloves. If you can get some, you can also crush some lemongrass and put it in at this point. I never seem to cook it right (it always stays tough), but it adds great flavor. Dump all that in with the softened leeks/onions. Cook until you can smell it, but take care to avoid browning. Then add the cut-up chicken and the barley, and pour in the broth. Simmer it over low heat for about half an hour. Add salt to taste. To get a great lemon kick, squeeze 2 lemons and beat the juice well with 2 egg yolks. With the pot removed from the heat source, briskly whisk this mixture into the soup, being careful that the eggs don’t separate and curdle. Then return the pot to the heat and stir vigorously for a bit, until the eggs are cooked. This soup is excellent for sick people (ginger, hot lemon, and chicken; need I say more?) and a tonic for sad people (total comfort). And it’s even better the next day.

Instantly, I noticed that our conversation was easy, flirtatious and exciting. It didn’t take very long for us to get to know each other. To start with, I was a little taken aback with both of them being so friendly and talkative. As we talked, I really didn’t know what to call Rita and I stammered some as I attempted to navigate around the social aspects of my dilemma. I didn’t know her last name and “Mrs. Whatjamacallit” didn’t seem appropriate, so I continued using her first name. What seemed awkward to me at first, soon became and sounded acceptable. I also noticed that Connie alternated between calling her mother “Mom” and “Rita.” At first this was strange, but soon I kind of understood the unique relationship between them. For me it seemed different, however I tend to adapt easily and now I was becoming acquainted with a girl who called her mother by her first name. The house was without central heating, but it did have a big cast iron Franklin stove in the living room. Rita looked over to me and asked if I would light the fire. “Guess so,” I replied. I soon found out that lighting the fire encompassed getting and splitting the firewood, and then tending to it. Connie showed me to the front porch where there was a big pile of cordwood, just dumped in one heap. I also noticed that the wind was picking up and was blowing the white stuff onto the porch and covering the woodpile. “Might be a good idea to bring in enough wood to last the night,” I thought aloud. It’s hard to imagine a time when French writers were uncertain about the legitimacy and importance of their language, but that was the case in the sixteenth century. French was considered appropriate for vulgar (that is, popular) writing or for old medieval poetic forms such as rondeaux or madrigals, but not for “higher” forms of writing, higher learning or the sciences, which were still the exclusive domain of Latin. While François I didn’t regulate French in any way, his policies did legitimize the efforts of the many artists, poets, savants and printers who were trying to dump Latin and make French prestigious by inserting it into the language of state administration, universities and spheres of higher learning such as medicine and poetry. In some ways writers led the way in this movement. The most militant anti-Latin lobby in France was a group of poets originally called the Brigade who were soon to choose a more poetic name: La Pléiade. They were up-and-coming writers who wanted to position themselves as a literary avant-garde. Their manifesto, Déffence et illustration de la langue Françoyse (Defence and Illustration of the French Language), was an indictment of Latin in favour of French. It was published in 1549, ten years after the publication of the Ordinance of Villers-Cotterêts. Signed by the poet Joachim Du Bellay, it begged poets to use French for the new-found forms of classic Greek and Latin literature—the ode, the elegy, and comedy and tragedy (these were, of course, very old forms, but they were only just being rediscovered after having been forgotten for more than a thousand years). In a chapter titled “Exhortation to Frenchmen,” Du Bellay wonders, “Why are we so hard on ourselves? Why do we use foreign languages as if we were ashamed to use our own?…Thou must not be ashamed of writing in thy own language.” The debate is surprisingly similar to the twentieth-century one in which French musicians wondered if it was possible to make rock ’n’ roll in their own language. François I’s policies definitely added weight to the case made by Du Bellay and the Pléiade poets. While Du Bellay’s Déffence was in many ways a squabble between poets over their art, it also contained a program for the promotion of French in science and art.
