Between Hide-Chan, Ichiran, and Ippudo- three of the biggest ramen chains in the world- they've brought the soup to corners of the globe that still thought ramen meant a bag of dried noodles and a dehydrated spice packet. But while Ichiran and Ippudo are purveyors of classic tonkotsu, undoubtedly the defining ramen of the modern era, Hideto has a decidedly different belief about ramen and its mutability. "There are no boundaries for ramen, no rules," he says. "It's all freestyle." As we talk at his original Hide-Chan location in the Kego area of Fukuoka, a new bowl arrives on the table, a prototype for his borderless ramen philosophy. A coffee filter is filled with katsuobushi, smoked skipjack tuna flakes, and balanced over a bowl with a pair of chopsticks. Hideto pours chicken stock through the filter, which soaks up the katsuobushi and emerges into the bowl as clear as a consommé. He adds rice noodles and sawtooth coriander then slides it over to me. Compared with other Hide-Chan creations, though, this one shows remarkable restraint. While I sip the soup, Hideto pulls out his cell phone and plays a video of him layering hot pork cheeks and cold noodles into a hollowed-out porcelain skull, then dumping a cocktail shaker filled with chili oil, shrimp oil, truffle oil, and dashi over the top. But on their last run, the stretcher bearers carried him out after all… Old Collin was still alive. From the aid station to the ambulance and from the ambulance to the hospital, all he could remember was his fall into that pit, with maggots swarming over the open wound he had become from head to toe… Come to think of it, where was his head? And what about his feet? In the ambulance, the bumps were so awful and the pain so intense that it would have been a relief to pass out. But he didn’t. He was still alive, writhing on his hook. They carved up old Collin good. They fixed him as best they could, but his hands and legs were gone. So much for fishing. Later, they pinned a medal on him, right there in that putrid recovery room. And later still, they explained to him about gangrene and bandages packed with larvae that feed on death tissue. He owed them his life. From one amputation and operation to the next – thirty-eight in all – the docs finally got him “back on his feet”. But by then, the war was long over.

I DON'T WANT to talk about me, of course, but it seems as though far too much attention has been lavished on you lately-that your greed and vanities and quest for self-fulfillment have been catered to far too much. You just want and want and want. You believe in yourself excessively. You don't believe in Nature anymore. It's too isolated from you. You've abstracted it. It's so messy and damaged and sad. Your eyes glaze as you travel life's highway past all the crushed animals and the Big Gulp cups. You don't even take pleasure in looking at nature photographs these days. Oh, they can be just as pretty as always, but don't they make you feel increasingly ... anxious? Filled with more trepidation than peace? So what's the point? You see the picture of the baby condor or the panda munching on a bamboo shoot, and your heart just sinks, doesn't it? A picture of a poor old sea turtle with barnacles on her back, all ancient and exhausted, depositing her five gallons of doomed eggs in the sand hardly fills you with joy, because you realize, quite rightly, that just outside the frame falls the shadow of the condo. What's cropped from the shot of ocean waves crashing on a pristine shore is the plastics plant, and just beyond the dunes lies a parking lot. Hidden from immediate view in the butterfly-bright meadow, in the dusky thicket, in the oak and holly wood, are the surveyors' stakes, for someone wants to build a mall exactly there-some gas stations and supermarkets, some pizza and video shops, a health club, maybe a bulimia treatment center. Those lovely pictures of leopards and herons and wild rivers-well, you just know they're going to be accompanied by a text that will serve only to bring you down. You don't want to think about it! It's all so uncool. And you don't want to feel guilty either. Guilt is uncool. Regret maybe you'll consider. Maybe. Regret is a possibility, but don't push me, you say. Nature photographs have become something of a problem, along with almost everything else. Even though they leave the bad stuff out-maybe because you know they're leaving all the bad stuff out-such pictures are making you increasingly aware that you're a little too late for Nature. Do you feel that? Twenty years too late? Maybe only ten? Not way too late, just a little too late? Well, it appears that you are. And since you are, you've decided you're just not going to attend this particular party.

Then fate had taken its turn, and Mulan had thrown everything away to become a soldier. To learn how to punch and kick and hold a sword and shield, to shoot arrows and run and yell. To save her country, and bring honor home to her family. How much she had wanted them to be proud of her.

He would go up and down many times. When he was carrying this water, one of the pots that he was using was slightly cracked and it was always leaking water. The other pot, which was perfect, was always mocking the cracked pot – there are many crackpots here (laughs) – so the perfect pot was mocking every day, “See how I’m serving the Master? See how you are; you’re cracked. Half the water is gone by the time you reach the house.” This was happening. One day, after a long period of seclusion, the Master came out into the garden and walked along the pathway. He noticed, only on one side of the pathway, all along, there were lots of flowers in bloom. The Master looked at these wonderful flowers and said, “Whoever is the cause of making these flowers bloom on my pathway, let him attain,” He blessed. And the cracked pot attained! So there is hope for the cracked ones also. Now, don’t make it your right to be cracked!

She slivered the raw chicken breast left from yesterday- dangling the occasional tidbit for J.C., who sat on her stool and cried "Yeow!" whenever she felt neglected- and slivered carrots and bamboo shoots and Napa cabbage and more green onions and set it all aside to stir-fry at the last minute with rice stick noodles. This was her favorite dish, simple though it was, and Aunt Rubina's favorite; it had been Vivian's favorite of Olivia's recipes, too. (Vivian had never dabbled much in Chinese cooking herself.) A single grain of one thing, a bud of another, a moist fingertip dipped lightly into a small vial and then into the bubbling pot; a thimble full, a matchbox full, a coconut shell full of dark crimson and deep violet, of dusty yellow spice, the entire concoction simmered sometimes for a day or two on coals that emitted only a glimmer of faint heat or that roared like a furnace as she fanned them with a palm leaf. The meats were beaten to silk, so spiced and fragrant they clouded the senses; the sauces were full of strange hints and dark undercurrents, leaving you on firm ground one moment, dragging you under the next. There were dishes with an aftertaste that exploded upon you and left you gasping a whole half-hour after you’d eaten them. Some that were delicate, with a haunting flavour that teased like the memory of something you’d once known but could no longer put your finger on. Pickled limes stuffed with cardamom and cumin, crepuscular creatures simmered upon the wood of a scented tree, small river fish baked in green coconuts, rice steamed with nasturtium flowers in the pale hollow of a bamboo stem, mushrooms red – and yellow-gilled, polka-dotted and striped. Desire filled Sampath as he waited for his meals. In what is one of the most bizarre and ecologically damaging episodes of the Great Leap Forward, the country was mobilised in an all-out war against the birds. Banging on drums, clashing pots or beating gongs, a giant din was raised to keep the sparrows flying till they were so exhausted that they simply dropped from the sky. Eggs were broken and nestlings destroyed; the birds were also shot out of the air. Timing was of the essence, as the entire country was made to march in lockstep in the battle against the enemy, making sure that the sparrows had nowhere to escape. In cities people took to the roofs, while in the countryside farmers dispersed to the hillsides and climbed trees in the forests, all at the same hour to ensure complete victory. Soviet expert Mikhail Klochko witnessed the beginning of the campaign in Beijing. He was awakened in the early morning by the bloodcurdling screams of a woman running to and fro on the roof of a building next to his hotel. A drum started beating, as the woman frantically waved a large sheet tied to a bamboo pole. For three days the entire hotel was mobilised in the campaign to do away with sparrows, from bellboys and maids to the official interpreters. Children came out with slings, shooting at any kind of winged creature.77 Accidents happened as people fell from roofs, poles and ladders. In Nanjing, Li Haodong climbed on the roof of a school building to get at a sparrow’s nest, only to lose his footing and tumble down three floors. Local cadre He Delin, furiously waving a sheet to scare the birds, tripped and fell from a rooftop, breaking his back. Guns were deployed to shoot at birds, also resulting in accidents. In Nanjing some 330 kilos of gunpowder were used in a mere two days, indicating the extent of the campaign. But the real victim was the environment, as guns were taken to any kind of feathered creature. The extent of damage was exacerbated by the indiscriminate use of farm poison: in Nanjing, bait killed wolves, rabbits, snakes, lambs, chicken, ducks, dogs and pigeons, some in large quantities.

Your grandmother ruled here like some dark sorceress and was treated by the vendors with the reverence of one. You learned how to make the crackled pork strips they called crispy pata, the pickled-sour raw kilawin fish, the perfect full-bodied peanuty sauce for the oxtail in your kare-kare. One day, after you have mastered them all, you will decide on a specialty of your own and conduct your own tests for the worthy. Asaprán witches have too much magic in their blood, and not all their meals are suitable for consumption. Like candy and heartbreak, moderation is key. And after all, recipes are much like spells, aren't they? Instead of eyes of newt and wings of bat they are now a quarter kilo of marrow and a pound of garlic, boiled for hours until the meat melts off their bones. Pots have replaced cauldrons, but the attention to detail remains constant.

The markets were social gathering places and trading centers where a finely woven grass mat was exchanged for forty pounds of potatoes or a basket for storing grain.

The American work ethic—success, occupational prestige, educational attainment, the expenditure of wealth to compete with the Joneses—just didn’t jibe with how these boys had been raised: to save for buying trips and banquets, to work for the family and not for yourself, to think of returning home to China, and not to disgrace yourself in front of Americans or bring harm to the family through your actions. Like their fathers and grandfathers before them who had suffered from having their culture belittled, so too did these young men. The larger world spoke loudly and clearly: You are different. What you feel has no value. You are bad. You are dirty. You are unpleasant to live near. Consciously and unconsciously, they had heard, felt, and seen these things since the day they were born. Be careful. Watch out what you say. Don’t make a mistake. Their bodies, which should have been filled with all the hopes and dreams and spunk of young men around the world, were filled instead with a withering combination of insecurity and a what’s-the-use attitude.

Spies were allegedly everywhere, and willing to report citizens sympathetic to the Communist regime. In addition to the fear of retribution that Chinese Americans faced from within their own communities, there was the apprehension about Caucasians that had continued unabated since the days of the railroad.

Allison slept through it all. She never felt the truck stopping for the roadblock set in the middle of nowhere, never heard the police who didn't care about the rain and dutifully climbed through the rear of the truck, never heard the rustle of papers as they examined the driver's permits and cargo manifest. She never heard the horns outside or the rain or the roar of the Xu Jiang River as they followed its course. She never heard Driver Ming stopping for fuel, never felt the bumps and twists and turns as the road deteriorated and flat farmland became hill country that became mountains. It was still dark as they began their climb into the Wuyi Shan, the range of mountains that rose abruptly on both sides of the road and disappeared into the high mists, mountains where jungles and steep slopes kept the farmers at bay, mountains thick with bamboo forests in which wild tigers were still believed to roam. They drove all night and all the next day, through Ruijin and Xunwu, their progress slowed at times by traffic, at other times by the rain. Finally it was the horrific condition of the road that stopped them altogether. The highway was an unfinished ribbon of concrete, sometimes one lane, sometimes two. There was no shoulder at all, just an abrupt and treacherous drop-off to the adjacent ground. The roadbed sat so high up that if a wheel were to inadvertently slip off the edge, the whole truck might tip over. Allison had seen more than one vehicle that had done just that as she and Tyler watched the receding countryside through the slats of their crate. In places where only one lane existed, oncoming traffic had to stop and back up to let other traffic through. If there was an obstruction in the road, a goat or a sheep or a cart, all traffic squeezed by single file, although somehow it never seemed to slow. Driver Ming seemed good at it, and when Allison felt him swerve sharply she closed her eyes and cringed, waiting for the inevitable collision. By some miracle he always squeaked through. Then his luck ran out.

My friend Brij, a traveling Hong-Kong-suit salesman (the kind who will set up his tie and shirt displays on the ground floor of an embassy suites for a day, run advertisements in the local paper, then take orders for custom-tailored suits which are stitched in Hong-Kong, by Indians, and mailed back in a week), describes his foolproof method of gauging the local Indian population and finding an Indian restaurant in a strange city: You look in white pages under B for ‘Bombay Palace’ or T for ‘Taj Mahal’ or I for ‘India House.’ These are equivalents of Asia Palace, Bamboo House, China Garden, or House of Hunan in the Chinese restaurant business. If there are no listings under those names, take my word there are probably no Indian restaurants in town. Failing this, you simply look up number of Patels in white pages and multiply by 60; that will tell you size of Indian community not counting wives, children and inlaws. Take my word: less than ten Patels means no Indian restaurant. If more than ten, you call, say you are from India, ask them where to go to eat.
