I never leave home without my cayenne pepper. I either stash a bottle of the liquid extract in my pocket book or I stick it in the shopping cart I pull around with me all over Manhattan. When it comes to staying right side up in this world, a black woman needs at least three things. The first is a quiet spot of her own, a place away from the nonsense. The second is a stash of money, like the cash my mother kept hidden in the slit of her mattress. The last is several drops of cayenne pepper, always at the ready. Sprinkle that on your food before you eat it and it’ll kill any lurking bacteria. The powder does the trick as well, but I prefer the liquid because it hits the bloodstream quickly. Particularly when eating out, I won’t touch a morsel to my lips ‘til it’s speckled with with cayenne. That’s just one way I take care of my temple, aside from preparing my daily greens, certain other habits have carried me toward the century mark. First thing I do every morning is drink four glasses of water. People think this water business is a joke. But I’m here to tell you that it’s not. I’ve known two elderly people who died of dehydration, one of whom fell from his bed in the middle of the night and couldn’t stand up because he was so parched. Following my water, I drink 8 ounces of fresh celery blended in my Vita-mix. The juice cleanses the system and reduces inflammation. My biggest meal is my first one: oatmeal. I soak my oats overnight so that when I get up all I have to do is turn on the burner. Sometimes I enjoy them with warm almond milk, other times I add grated almonds and berries, put the mixture in my tumbler and shake it until it’s so smooth I can drink it. In any form, oats do the heart good. Throughout the day I eat sweet potatoes, which are filled with fiber, beets sprinkled with a little olive oil, and vegetables of every variety. I also still enjoy plenty of salad, though I stopped adding so many carrots – too much sugar. But I will do celery, cucumbers, seaweed grass and other greens. God’s fresh bounty doesn’t need a lot of dressing up, which is why I generally eat my salad plain. From time to time I do drizzle it with garlic oil. I love the taste. I also love lychee nuts. I put them in the freezer so that when I bite into them cold juice comes flooding out. As terrific as they are, I buy them only once in awhile. I recently bit into an especially sweet one, and then I stuck it right back in the freezer. “Not today, Suzie,” I said to myself, “full of glucose!” I try never to eat late, and certainly not after nine p.m. Our organs need a chance to rest. And before bed, of course, I have a final glass of water. I don’t mess around with my hydration.

There were colds and flu and pneumonia, and babies being born and unborn, and school, and shoes wearing out. There were old men and women dying, and sometimes the young died before their time. Babies died. Life was just a little thing to them: a shrunken breast, a colorless tent wall in their curious sight, hunger without name and explanation, pain, and the dark. Sometimes in the short winter days, the mothers looked at old magazines and saw ads for milk and pretty blankets and lacy pillows, and insurance for your baby’s education, and sometimes they found articles about how to care for a baby, and they knew why their babies died. They knew anyway. Often they wondered why their babies did not die, how they could survive without all the things necessary to babies in the outside world.

Egg-laying hens, for example, have a complex world of behavioural needs and drives. They feel strong urges to scout their environment, forage and peck around, determine social hierarchies, build nests and groom themselves. But the egg industry often locks the hens inside tiny coops, and it is not uncommon for it to squeeze four hens to a cage, each given a floor space of about 10 by 8.5 inches. The hens receive sufficient food, but they are unable to claim a territory, build a nest or engage in other natural activities. Indeed, the cage is so small that hens are often unable even to flap their wings or stand fully erect. Pigs are among the most intelligent and inquisitive of mammals, second perhaps only to the great apes. Yet industrialised pig farms routinely confine nursing sows inside such small crates that they are literally unable to turn around (not to mention walk or forage). The sows are kept in these crates day and night for four weeks after giving birth. Their offspring are then taken away to be fattened up and the sows are impregnated with the next litter of piglets. Many dairy cows live almost all their allotted years inside a small enclosure; standing, sitting and sleeping in their own urine and excrement. They receive their measure of food, hormones and medications from one set of machines, and get milked every few hours by another set of machines. The cow in the middle is treated as little more than a mouth that takes in raw materials and an udder that produces a commodity. Treating living creatures possessing complex emotional worlds as if they were machines is likely to cause them not only physical discomfort, but also much social stress and psychological frustration.

To get blood off of piano keys, polish them with talcum powder or powdered milk. This isn’t the most marketable job skill, but to get bloodstains out of wallpaper, put on a paste of cornstarch and cold water. This will work just as well to get blood out of a mattress or a davenport. The trick is to forget how fast these things can happen. Suicides. Accidents. Crimes of passion. Just concentrate on the stain until your memory is completely erased. Practice really does make perfect. If you could call it that. Ignore how it feels when the only real talent you have is for hiding the truth. You have a God-given knack for committing a terrible sin. It’s your calling. You have a natural gift for denial. A blessing. If you could call it that. Even after sixteen years of cleaning people’s houses, I want to think the world is getting better and better, but really I know it’s not. You want there to be some improvement in people, but there won’t be. And you want to think there’s something you can get done. Cleaning this same house every day, all that gets better is my skill at denying what’s wrong. God forbid I should ever meet who I work for in person. Please don’t get the idea I don’t like my employers. The caseworker has gotten me lots worse postings. I don’t hate them. I don’t love them, but I don’t hate them. I’ve worked for lots worse. Just ask me how to get urine stains out of drapes and a tablecloth. Ask me what’s the fastest way to hide bullet holes in a living-room wall. The answer is toothpaste. For larger calibers, mix a paste of equal parts starch and salt. Call me the voice of experience.

Dog Talk … I have seen Ben place his nose meticulously into the shallow dampness of a deer’s hoofprint and shut his eyes as if listening. But it is smell he is listening to. The wild, high music of smell, that we know so little about. Tonight Ben charges up the yard; Bear follows. They run into the field and are gone. A soft wind, like a belt of silk, wraps the house. I follow them to the end of the field where I hear the long-eared owl, at wood’s edge, in one of the tall pines. All night the owl will sit there inventing his catty racket, except when he opens pale wings and drifts moth-like over the grass. I have seen both dogs look up as the bird floats by, and I suppose the field mouse hears it too, in the pebble of his tiny heart. Though I hear nothing. Bear is small and white with a curly tail. He was meant to be idle and pretty but learned instead to love the world, and to romp roughly with the big dogs. The brotherliness of the two, Ben and Bear, increases with each year. They have their separate habits, their own favorite sleeping places, for example, yet each worries without letup if the other is missing. They both bark rapturously and in support of each other. They both sneeze to express plea- sure, and yawn in humorous admittance of embarrassment. In the car, when we are getting close to home and the smell of the ocean begins to surround them, they both sit bolt upright and hum. With what vigor and intention to please himself the little white dog flings himself into every puddle on the muddy road. Somethings are unchangeably wild, others are stolid tame. The tiger is wild, the coyote, and the owl. I am tame, you are tame. The wild things that have been altered, but only into a semblance of tameness, it is no real change. But the dog lives in both worlds. Ben is devoted, he hates the door between us, is afraid of separation. But he had, for a number of years, a dog friend to whom he was also loyal. Every day they and a few others gathered into a noisy gang, and some of their games were bloody. Dog is docile, and then forgets. Dog promises then forgets. Voices call him. Wolf faces appear in dreams. He finds himself running over incredible lush or barren stretches of land, nothing any of us has ever seen. Deep in the dream, his paws twitch, his lip lifts. The dreaming dog leaps through the underbrush, enters the earth through a narrow tunnel, and is home. The dog wakes and the disturbance in his eyes when you say his name is a recognizable cloud. How glad he is to see you, and he sneezes a little to tell you so. But ah! the falling-back, fading dream where he was almost there again, in the pure, rocky weather-ruled beginning. Where he was almost wild again, and knew nothing else but that life, no other possibility. A world of trees and dogs and the white moon, the nest, the breast, the heart-warming milk! He was one hundred and fifteen miles away and would not be back for perhaps a month. The poor woman was filled with fear—she was alone and unprotected, in bitter January weather. When morning came, she realized that she was without food for her children. She pulled off the calendar page. That day’s verse stated simply: “So then, don’t be afraid. I will provide for you and your children” (Genesis 50:21). There was a rap at the door. “We knew you would be hungry,” said a longtime neighbor, “and you didn’t know how to milk the goats. So I have milked your goats. Here is milk for your children.” Will you try to explain this away, handle it on an intellectual basis as just pure coincidence? When you come right down to it, what is coincidence? It is an act of God in the midst of time.

I knew, then, why the storerooms were guarded as if they held gold, or nuclear armaments. They hid something rarer still: a passage back through time. The animal carcasses were left unskinned. He did the same for his own coffee and then took a sip. ‘You have a country to live in and it is called England,’ he said. ‘Therefore you have no problems.’ ‘No problems!’ I cried. ‘England is fighting for her life all by herself against virtually the whole of Europe! We’re even fighting the Vichy French and that’s why we’re in Palestine right now! Oh, we’ve got problems all right!’ I was getting rather worked up. I resented the fact that this man sitting in his fig grove said that I had no problems when I was getting shot at every day. ‘I’ve got problems myself’, I said, ‘in just trying to stay alive.’ ‘That is a very small problem,’ the man said. ‘Ours is much bigger.’ I was flabbergasted by what he was saying. He didn’t seem to care one bit about the war we were fighting. But it was steady and went by almost in slow motion. The Owner set up a soup kitchen on the sidewalk. No, I haven’t been down there. The smoke. The dust. But the sky was so blue. My buddy was the somm at the restaurant - we came up at Tavern on the Green together. You guys never talk about it. I was going into a class called, I’m not joking, Meanings of Death. I always wondered: If I had been here, would I have stayed? And I thought, New York is so far away. My cousin was a firefighter, second-wave responder. Nothing on television is real. But am I safe? Because what else is there to do but make soup? But I really can’t imagine it. I was pouring milk into my cereal, I looked down for one second… I was asleep, I didn’t even feel the impact. A tide of people moving up the avenues on foot. Blackness. Sometimes it still feels too soon. It’s our shared map of the city. Then the sirens, for days. We never forget, really. A friend who had been aboard La Bestia for a few days, working on a documentary, read it to me once. I didn’t learn the entire thing, but I remember these lines: “Partir es morir un poco / Llegar nunca es llegar”—“To leave is to die a little / To arrive is never to arrive.” I’ve had to ask so many children: Why did you come? Sometimes I ask myself the same question. I don’t have an answer yet. Before coming to the United States, I knew what others know: that the cruelty of its borders was only a thin crust, and that on the other side a possible life was waiting. I understood, some time after, that once you stay here long enough, you begin to remember the place where you originally came from the way a backyard might look from a high window in the deep of winter: a skeleton of the world, a tract of abandonment, objects dead and obsolete. And once you’re here, you’re ready to give everything, or almost everything, to stay and play a part in the great theater of belonging. In the United States, to stay is an end in itself and not a means: to stay is the founding myth of this society. To stay in the United States, you will unlearn the universal metric system so you can buy a pound and a half of cooked ham, accept that thirty-two degrees, and not zero, is where the line falls that divides cold and freezing. You might even begin to celebrate the pilgrims who removed the alien Indians, and the veterans who maybe killed other aliens, and the day of a president who will eventually declare a war on all the other so-called aliens. True, there's an aisle devoted to foreign foods, and then there are familiar foods that have been through the Japanese filter and emerged a little bit mutated. Take breakfast cereal. You'll find familiar American brands such as Kellogg's, but often without English words anywhere on the box. One of the most popular Kellogg's cereals in Japan is Brown Rice Flakes. They're quite good, and the back-of-the-box recipes include cold tofu salad and the savory pancake okonomiyaki, each topped with a flurry of crispy rice flakes. Iris and I got mildly addicted to a Japanese brand of dark chocolate cornflakes, the only chocolate cereal I've ever eaten that actually tastes like chocolate. (Believe me, I've tried them all.) Stocking my pantry at Life Supermarket was fantastically simple and inexpensive. I bought soy sauce, mirin, rice vinegar, rice, salt, and sugar. (I was standing right in front of the salt when I asked where to find it This happens to me every time I ask for help finding any item in any store.) Total outlay: about $15, and most of that was for the rice. Japan is an unabashed rice protectionist, levying prohibitive tariffs on imported rice. As a result, supermarket rice is domestic, high quality, and very expensive. There were many brands of white rice to choose from, the sacks advertising different growing regions and rice varieties. (I did the restaurant wine list thing and chose the second least expensive.) Japanese consumers love to hear about the regional origins of their foods. I almost never saw ingredients advertised as coming from a particular farm, like you'd see in a farm-to-table restaurant in the U.S., but if the milk is from Hokkaido, the rice from Niigata, and the tea from Uji, all is well. I suppose this is not so different from Idaho potatoes and Florida orange juice. When I got home, I opened the salt and sugar and spooned some into small bowls near the stove. The next day I learned that Japanese salt and sugar are hygroscopic: their crystalline structure draws in water from the air (and Tokyo, in summer, has enough water in the air to supply the world's car washes). I figured this was harmless and went on licking slightly moist salt and sugar off my fingers every time I cooked.

      Later we went back to Ryan’s house and hung out. He seemed like a cool guy, and we had a lot in common. Nothing about Ryan suggested that his beliefs were fundamentally different from mine. Steve had a way of inspiring loyalty, not jealousy, in his fellow young writers, which was remarkable given how spectacularly successful he’d been in such a short time. While the rest of us were still scratching our way out of the intern pit, he was becoming a franchise, turning out bizarre and amazing stories week after week for The New Republic, Harper’s, and Rolling Stone— each one a home run. I didn’t know when he called me that he’d made up nearly all of the bizarre and amazing stories, that he was the perpetrator of probably the most elaborate fraud in journalistic history, that he would soon become famous on a whole new scale. I didn’t even know he had a dark side. It was the spring of 1998 and he was still just my hapless friend Steve, who padded into my office ten times a day in white socks and was more interested in alphabetizing beer than drinking it. When he called, I was in New York and I said I would come back to D.C. right away. I probably said something about Chuck like: “Fuck him. He can’t fire you. He can’t possibly think you would do that.” I was wrong, and Chuck, ever-resistant to Steve’s charms, was as right as he’d been in his life. The story was front-page news all over the world. The staff (me included) spent several weeks re-reporting all of Steve’s articles. It turned out that Steve had been making up characters, scenes, events, whole stories from first word to last. He made up some funny stuff—a convention of Monica Lewinsky memorabilia—and also some really awful stuff: racist cab drivers, sexist Republicans, desperate poor people calling in to a psychic hotline, career-damaging quotes about politicians. In fact, we eventually figured out that very few of his stories were completely true. Not only that, but he went to extreme lengths to hide his fabrications, filling notebooks with fake interview notes and creating fake business cards and fake voicemails. (Remember, this was before most people used Google. Plus, Steve had been the head of The New Republic ’s fact-checking department.) Once we knew what he’d done, I tried to call Steve, but he never called back. He just went missing, like the kids on the milk cartons. It was weird. People often ask me if I felt “betrayed,” but really I was deeply unsettled, like I’d woken up in the wrong room. I wondered whether Steve had lied to me about personal things, too. I wondered how, even after he’d been caught, he could bring himself to recruit me to defend him, knowing I’d be risking my job to do so. These days the type of milk added to chocolate varies widely throughout the world, and this is the main reason that milk chocolate tastes different from country to country. In the UK sugar is added to liquid milk, and it is this solution, reduced to a concentrate, that is added to the chocolate, creating a milder caramel flavor. In Europe powdered milk is still used, giving the chocolate a fresh dairy flavor with a powdery texture. These different tastes do not travel well. Despite globalization, the preferred taste of milk chocolate, once acquired, remains surprisingly regional.

Once You’re in Keto, How Can You Keep It Going Without Fasting? The short answer is: Eat a boatload of fat (~1.5 to 2.5 g per kilogram of body weight), next-to-no carbs, and moderate protein (1 to 1.5 g per kilogram of body weight) each day. We’ll look at Dom’s typical meals and day in a minute, but a few critical notes first: High protein and low fat doesn’t work. Your liver will convert excess amino acids into glucose and shut down ketogenesis. Fat as 70 to 85% of calories is required. This doesn’t mean you always have to eat rib eye steaks. A chicken breast by itself will kick you out of ketosis, but a chicken breast cut up into a green leafy salad with a lot of olive oil, feta cheese, and some Bulletproof Coffee (for example) can keep you in ketosis. One of the challenges of keto is the amount of fat one needs to consume to maintain it. Roughly 70 to 80% of your total calories need to come from fat. Rather than trying to incorporate fat bombs into all meals (one does get tired of fatty steak, eggs, and cheese over and over again), Dom will both drink fat between meals (e.g., coconut milk—not water—in coffee) and add in supplemental “ice cream,” detailed on page 29. Dom noticed that dairy can cause lipid profile issues (e.g., can spike LDL) and has started to minimize things like cream and cheese. I experienced the same. It’s easy to eat a disgusting amount of cheese to stay in keto. Consider coconut milk (Aroy-D Pure Coconut Milk) instead. Dom doesn’t worry about elevated LDL as long as other blood markers aren’t out of whack (high CRP, low HDL, etc.). From Dom: “The thing that I focus on most is triglycerides. If your triglycerides are elevated, that means your body is just not adapting to the ketogenic diet. Some people’s triglycerides are elevated even when their calories are restricted.
