We've been here three days already, and I've yet to cook a single meal. The night we arrived, my dad ordered Chinese takeout from the old Cantonese restaurant around the corner, where they still serve the best egg foo yung, light and fluffy and swimming in rich, brown gravy. Then there had been Mineo's pizza and corned beef sandwiches from the kosher deli on Murray, all my childhood favorites. But last night I'd fallen asleep reading Arthur Schwartz's Naples at Table and had dreamed of pizza rustica, so when I awoke early on Saturday morning with a powerful craving for Italian peasant food, I decided to go shopping. Besides, I don't ever really feel at home anywhere until I've cooked a meal. The Strip is down by the Allegheny River, a five- or six-block stretch filled with produce markets, old-fashioned butcher shops, fishmongers, cheese shops, flower stalls, and a shop that sells coffee that's been roasted on the premises. It used to be, and perhaps still is, where chefs pick up their produce and order cheeses, meats, and fish. The side streets and alleys are littered with moldering vegetables, fruits, and discarded lettuce leaves, and the smell in places is vaguely unpleasant. There are lots of beautiful, old warehouse buildings, brick with lovely arched windows, some of which are now, to my surprise, being converted into trendy loft apartments. If you're a restaurateur you get here early, four or five in the morning. Around seven or eight o'clock, home cooks, tourists, and various passers-through begin to clog the Strip, aggressively vying for the precious few available parking spaces, not to mention tables at Pamela's, a retro diner that serves the best hotcakes in Pittsburgh. On weekends, street vendors crowd the sidewalks, selling beaded necklaces, used CDs, bandanas in exotic colors, cheap, plastic running shoes, and Steelers paraphernalia by the ton. It's a loud, jostling, carnivalesque experience and one of the best things about Pittsburgh. There's even a bakery called Bruno's that sells only biscotti- at least fifteen different varieties daily. Bruno used to be an accountant until he retired from Mellon Bank at the age of sixty-five to bake biscotti full-time. There's a little hand-scrawled sign in the front of window that says, GET IN HERE! You can't pass it without smiling. It's a little after eight when Chloe and I finish up at the Pennsylvania Macaroni Company where, in addition to the prosciutto, soppressata, both hot and sweet sausages, fresh ricotta, mozzarella, and imported Parmigiano Reggiano, all essential ingredients for pizza rustica, I've also picked up a couple of cans of San Marzano tomatoes, which I happily note are thirty-nine cents cheaper here than in New York.

I want to write about my family's favorites, the strange foods that comforted us in tense moments around the dinner table. Mom's Midwestern "hot dish": layers of browned hamburger, canned vegetable soup, canned sliced potatoes, topped with canned cream of mushroom soup. I haven't tasted it in years. Her lime Jell-O salad with cottage cheese, walnuts, and canned pineapple, her potato salad with French dressing instead of mayo. I have a craving, too, for Dad's grilling marinade. "Shecret Shauce" he called it in those rare moments of levity when he'd perform the one culinary task he was willing to do. I'd lean shyly against the counter and watch as he poured ingredients into a rectangular cake pan. Vegetable oil, soy sauce, garlic powder, salt and pepper, and then he'd finish it off with the secret ingredient: a can of fruit cocktail. Somehow the sweetness of the syrup was perfect against the salty soy and the biting garlic. Everything he cooked on the grill, save hamburgers and hot dogs, first bathed in this marinade overnight in the refrigerator. Rump roasts, pork chops, chicken legs all seemed more exotic this way, and dinner guests raved at Dad's genius on the grill. They were never the wiser to the secret of his sauce because the fruit bits had been safely washed into the garbage disposal.

I imagined her jerking her thumb in the direction of my room. "The company was like watching paint dry, but the food was fantastic. Out of this world." "And?" Lou said. "And," my mother said, "I went back a couple of years ago, just to see, and it was closed up. Totally empty and sad. One silver tray sat in the middle of the place, I remember. My mom was a little befuddled by my participation (her idea of baking involved Duncan Hines and canned, shelf-stable frosting, preferably in a blinding shade of neon), but she rode along with my dad, Stevie, and me as we carted two-dozen cupcakes to the fairgrounds in Novi. The competition was steep---pumpkin cupcakes with cream cheese frosting, German chocolate cupcakes, zucchini cupcakes with lemon buttercream---but my entry outshone them all, and I ended up taking home the blue ribbon, along with a gift certificate to King Arthur Flour.

A guy once asked me to go with him to Indonesia to help people after the latest tsunami hit. I said yes. I had no idea what I was doing. We arrived in Banda Aceh two weeks after the destruction. (Indonesia alone lost a mind-bending two hundred thousand lives.) We weren’t welcomed by everyone. Most people love the help, sure. But I felt unwelcome when a group of Muslim separatists threatened to kill us. (I have a sixth sense about this kind of thing.) They were opposed to Western interference in Aceh and didn’t want us saying anything about Jesus. I just wanted to help some people. I also wanted a hotel. I wanted a safer place. I didn’t want to die. I had no idea what I was getting into. We took supplies to what was, before the tsunami, a fishing village. It was now a group of people living on the ground, some in tents. I just followed what the rest of our little group was doing. They had more experience. We distributed the food, housewares, cooking oil, that sort of thing, and stayed on the ground with them. That’s how our little disaster-response group operated, even though I wanted a hotel. They stayed among the victims and lived with them. After the militant group threatened to slit our throats, I felt kind of vulnerable out there, lying on the ground. As a dad with two little kids, I didn’t sign up for the martyr thing. I took the threat seriously and wanted to leave. The local imam resisted our presence, too, and this bugged me. “Well, if you hate us, maybe we should leave. It’s a thousand degrees, we’ve got no AC or running water or electricity, and your co-religionists are threatening us. So, yeah. Maybe let’s call it off.” But it wasn’t up to me, and I didn’t have a flight back. As we helped distribute supplies to nearby villages, people repeatedly asked the same question: “Why are you here?” They simply couldn’t understand why we would be there with them. They told us they thought we were enemies. One of the members of our group spent time working in a truck with locals, driving slowly through the devastation, in the sticky humidity, picking up the bodies of their neighbors. They piled them in the back of a truck. It was horrific work. They wore masks, of course, but there’s no covering the smell of death. The locals paused and asked him too: “Why? Why are you here?” He told them it was because he worshiped Jesus, and he was convinced that Jesus would be right there, in the back of the truck with them. He loves them. “But you are our enemy.” “Jesus told us to love our enemies.” The imam eventually warmed up to us, and before we left, he even invited our little group to his home for dinner! We sat in his home, one of the few in the area still standing. He explained through an interpreter that he didn’t trust us at first, because we were Christians. But while other “aid” groups would drive by, throw a box out of a car, and get their pictures taken with the people of his village, our group was different. We slept on the ground. He knew we’d been threatened, he knew we weren’t comfortable, and he knew we didn’t have to be there. But there we were, his supposed enemies, and we would not be offended. We would not be alienated. We were on the ground with his people. His wives peered in from the kitchen, in tears. He passed around a trophy with the photo of a twelve-year-old boy, one of his children. He told us the boy had been lost in the tsunami, and could we please continue to search for him? Was there anything we could do? We were crying too.

Hell, take it one level further: cook the dinner and do the dishes. Doing laundry is man’s work too, as well as cleaning up after the dogs and cuddling your kids. Having a home life where you get the opportunity to be a family man and partake in all these things is a very good thing. It means that you have elevated your man thing to the very top level. Keep it up. Don’t be a pussy. Don’t shy away from a situation just because it’s tough. If you need to protect the one you love or things are tough at work . . . pin those ears back and remember who the fuck you are. Get smart. Educate yourself on what is going on in culture and politics. Read some books about history. Don’t be a pawn, be a scholar. Evolve. Our dads and granddads grew up in a different time. Communication and tenderness were not necessarily components of their age groups’ makeup. You don’t have to be exactly like them. Even though we saw good examples of man stuff in them, the times, they are a-changing.

He went back to camp, drove to the dam in his Ute, and tied a chain to the obstacle. As he backed up the truck, the chain tightened. Slowly a cow’s pelvis emerged from the muck. I watched with horror as Steve dislodged an entire cow carcass that had been decomposing right where I had been enjoying my refreshing dip. I must have been poking among its rib cage while I brushed my teeth and washed my hair. Steve dragged the carcass a good distance off. “Do you think we should tell the crew?” he asked me when he came back. “Maybe what they don’t know won’t hurt them,” I said. We spent our week doing odd jobs to fix up the place, cooking meals to serve to the kids, and doing lots of babysitting. We all got so attached to the children that we kept walking into town to buy them stuff because we had it to give. There was a new baby who had been found in a dumpster and brought to the orphanage the morning we arrived. I pretty much decided it was my job to hold her. I distinctly remember worrying that I was going to confuse her by speaking English, so I called over to one of the smarter kids in youth group. “How do you say ‘I love you’ in Spanish?” I asked. “Te amo, Jessica,” he said with googly eyes, and laughed. I smiled back and turned my face to the baby. “Te amo,” I said, over and over again, meaning it. I wanted her to know she was loved. I wanted it to be a familiar feeling, so that when unconditional love came into her life, she would recognize it.

Tom is still at the bank. Mom fills up my “Esther” water bottle and sets it down next to me. “With who?” I keep my head down as I chop onions for the spaghetti sauce. They sting my eyes. “Color. The girl who cleans our house,” I say. “You said we need to make friends.” “Color,” Mom says. “Interesting name.” She doesn’t answer my question right away, but takes some of the chopped onions and adds them to the cooking meat. I keep dicing as tears begin to form in my eyes and fall down my cheeks. “You know, I wanted to name you Violet, but your dad didn’t like names that were colors, like Ruby and Hazel.” Mom tucks loose auburn hair behind her ear. Hannah does the same motion with her hair, too. “Amber . . . Jade . . . Goldie?” I say. “How about Olive?” “Raven?” “Scarlet.” I gag. “I still love the name Violet, though,” Mom says. “It’s nice for a girl.” “I like it, too.” I keep chopping. Mom keeps cooking. I add more onions to the pot. She turns to me then, with tears running down her face, just like mine. We stare at each other. It’s the wettest thing to happen in the desert since we arrived. I ask Mom in my head, Why did you let this happen? It’s the most selfish thing I’ve ever asked because I made this happen. I wrote the equation and asked Mom and Tom to answer it. As the fish cooks, the oil will rise to the top. They have a special trick for removing it you aren't going to want to miss. It's the best part. Then we go inside, fill a plate, then pour warm melted butter and lemon over it and eat until we're stuffed." Sanna's stomach growled. She'd forgotten how much she enjoyed fish boils here. Rustic and delicious. As they waited for the fish to cook, she answered Bass's and Isaac's questions, but saved the best part as a secret. When everyone began to gather around the cooking pit, Sanna maneuvered Bass to the front so he could have a perfect view for the grand finale with her and Isaac behind him. When Mr. Smoot splashed the kerosene on the fire, it caused the fish oil to boil over the edge of the pot into the fire, making a huge flare- like a fireball. Bass jumped and the crowd oohed as one.

My daughter is 16 years old and firmly believes that things and people – situations ‘make’ her mad. Here’s a recent exchange I had with her in an attempt to guide her thinking to a different level: ME: “Okay, so you feel as though others can make you angry?” HER: “Of course.” ME: “I can understand that. Let’s try this: suppose I cooked a meal in the kitchen and did no cleanup – left no message for Kate (my partner), and then left the house. How might Kate feel when she arrives home and discovers the mess?” HER: “ANGRY!” ME: “What caused her anger?” HER: “You did by leaving a mess.” ME: “So I made her angry?” HER: “Of course, she has a right to be!” ME: “So now she’s angry and I’m not home. Who is her anger affecting?” HER: “You, when you get home” ME: “Okay, but how about right now when she discovers it?” HER: “No one.” ME: “Are you sure?” HER: “Well, I guess it’s affecting her.” ME: “So if she’s the only one being affected, do you think it’s possible for her to choose a different emotion?” HER: “No, she’s going to be angry… Who wouldn’t?!” ME: “Well, suppose she knows me pretty well and knows I’ve never done anything like that before. Is it possible she may think some emergency came up which required that I drop everything and rush off somewhere? Might she not feel concern for my welfare or that of someone else’s?” HER: “I don’t know.” ME: “Well, what if, in addition to the mess in the kitchen, there was a lot of blood on the counter?” HER: “Then she’d be worried and not angry, obviously.” ME: “So what’s the difference?” HER: “The blood, dad.” ME: “But without the blood, she still had the power of choice over her emotions, right?” HER: “Dad, why are we even talking about this?” You can see where I was going with this, but a 16-year-old simply hasn’t enough life experience for these truths to take hold for, regardless of the situation, we ALWAYS choose our emotions IF we have learned that it is we who hold that power, NOT a random situation or person.

Mae drew closer, bending down to peer at the tiny words written on the ripped scraps of paper. Most of the pieces were no bigger than a Post-it. Smothered chicken. Shrimp and grits. Lamb chops. Fried chicken. Black-eyed peas. Chicken pot pie. Oyster dressing. Corn casserole. Barbecue sauce. Seeing these felt like being reunited with an old friend. The tiny handwriting was unfamiliar, but the dishes jumped out at her like memories. Her dad had talked about some of these. He'd told her about shrimp and grits on those mornings at Skyline Diner. And he'd mentioned oyster dressing and corn casserole once when Mae had asked him what his family ate at Thanksgiving. The barbecue sauce might have been something Althea made a big vat of for their annual Fourth of July event.
