I'm exploding with love and soup and I have to tell the world: pan-fried soupies are amazing. The dumplings are served in groups of four, just enough for lunch for one adult or a growing eight-year-old. They're topped with a sprinkle of sesame and scallion. You can mix up a dipping sauce from the dispensers of soy sauce, black vinegar, and chile oil at the table, but I found it unnecessary. Like a slice of pizza, a pan-fried soup dumpling is a complete experience wrapped in dough. Lift a dumpling with your spoon, poke it with a chopstick, press your lips to the puncture wound, and slurp out the soup. (This will come in handy if I'm ever bitten by a soup snake.) No matter how much you extract, there always seems to be a little more broth pooling within as you eat your way through the meaty filling and crispy underside. Then you get to start again, until, too soon, your dumplings are gone.

Well, they’d shortly tomahawk Marah for whining, so Mercy might as well get on with it. She set the two children down, and Eben bent his knees so she could reach and Mercy fished around in the pack. She slid the loaf out. It was long and fat and crusty. Her Indian was watching. Mercy looked straight at him while she ripped off a chunk for Marah. He did nothing. Mercy decided to give some to Jemima too, which would give her something to do besides whine. She would give bread to Eliza and hope food would break Eliza’s grieving stupor. Marah didn’t take a single bite. She threw the bread across the snow. “I want Mama!” she said fiercely. She glared at Mercy, as if all this hiking and shivering were Mercy’s fault. Mercy could not abandon the bread out there in the snow. She was going to need that bread. It was all they had, and somehow Mercy had become responsible for Marah and Daniel and Ruth and Eliza and Jemima, and probably even for Eben. Mercy stepped off the trodden path to retrieve the crust, but her Indian stopped her, shaking his head. On his face was no expression but the one painted in black. His arms were tattooed with snakes that curled their fangs when he tightened his muscles. How could he go half bare in this weather? she thought, and then remembered that she wore his rabbit-lined cloak. Daniel, sitting happily on her hip, reached out from under the rabbit fur and patted the snake. The Indian tensed his upper arm to make the snake slither. Daniel giggled, so the Indian did it again, and it seemed to Mercy that he actually smiled at Daniel. Then, blessedly, he took Marah for her.

I swooned quietly with my first bite. The dish sang with the flavors of Spain and was packed with chunks of browned rabbit, chorizo, and mussels. It was spectacular and camaraderie crushing. "Who made this? Who possibly had time for this?" I was talking through a mouthful of Arboro rice. "I made this once in culinary school and it took an entire day of my life that I'll never get back." "Reza made it." Carlo used an empty mussel shell to pluck the meat out from another shell. "He said he cooked it over an open fire with orange and pine branches for kindling." Carlo grinned at me, a dribble of olive oil snaking its way down his chin. "According to Reza, it's the pine cones, though, that really do the trick. I'm sure you discovered that yourself when you made it on the day you'll never get back." I nibbled on a cut of caramelized chorizo but didn't have the chance to reply.

In my experience, there are, usually, only two types of people in the world. There are the ones who, if you will so kindly excuse the biblical reference, really do take the apple from the snake. And their bites are hearty. Their chin is always dripping with the juice. And that juice, over time, turns to blood. Yet, they keep on eating. They learn to like it. On the other hand, there are those who run from the snake. They never look back, and they never try anything that even remotely looks like an apple. They have no taste for it. They recognize a jug of blood when they see it. But every once in a while, I come across someone like you. Someone who, if they were set into the garden, and the snake came upon them, they would never eat, yet never run. Rather, they'd say to the snake, 'Keep talking, because this moment is the moment. I'll never say yes to you, I'll never say no. just let me sit here, right here. That is my pleasure.' Where you get pleasure is in the border that divides. Not many get it, get you, but I do.
