It remembered with perfect clarity how it came to be - remembered coalescing from the membranous surface of the world, streaked with reflected light, humming with surface tension under the pressure of emptiness underneath. The Psychic Energy Baby found form among the emanations of people's minds and the susurrus of their voices, it found flesh in the shapes of their lips and eyes made, the surprise of 'o's and the sibilations of 's's; its skin stretched taut like a soap bubble, forged from the wet sound of lips touching; its thoughts were the musky smells and the nerves twined around the transparent water balloons of the muscles like stems of toadflax, searching restlessly for every available crevice, stretching along cold rough surfaces. Its veins, tiny rivers, pumped heartbeats striking in unison, the dry dallying of billions of ventricular contractions. And it spoke, spoke endlessly, it spokes words that tasted of dark air and formic acid. It could speak long before it took it's final shape. And when it happened, when all the sounds and smells and words in the world, when all the thoughts had aligned so that it could become - then it found itself pulled into the wires, surrounded by taut copper and green and red and yellow insulation; twined and quartered among the cables, rent open by millions of voices that shouted and whispered and pleaded and threatened, interspersed with the rasping of breaths and tearing laughter. It traveled through the criss-crossing of the wires so fast that it felt itself being pulled into a needle, head spearing into the future while its feet infinitely receded into the past, until it came into a dark quiet pool of the black rotary phone, where it could reassemble itself and take stock.

I have again been asked to explain how one can "become a Daoists..." with all of the sad things happening in our world today, Laozi and Zhuangzi give words of advice, tho not necessarily to become a Daoist priest or priestess... " So many foreigners who want to become “Religious Daoists” 道教的道师 (道士) do not realize that they must not only receive a transmission of a Lu 籙 register which identifies their Daoist school, and learn as well how to sing the ritual melodies, play the flute, stringed instruments, drums, and sacred dance steps, required to be an ordained and functioning Daoist priest or priestess. This process usually takes 10 years or more of daily discipleship and practice, to accomplish. There are 86 schools and genre of Daoist rituals listed in the Baiyun Guan Gazeteer, 白雲觀志, which was edited by Oyanagi Sensei, in Tokyo, 1928, and again in 1934, and re-published by Baiyun Guan in Beijing, available in their book shop to purchase. Some of the schools, such as the Quanzhen Longmen 全真龙门orders, allow their rituals and Lu registers to be learned by a number of worthy disciples or monks; others, such as the Zhengyi, Qingwei, Pole Star, and Shangqing 正一,清微,北极,上请 registers may only be taught in their fullness to one son and/or one disciple, each generation. Each of the schools also have an identifying poem, from 20 or 40 character in length, or in the case of monastic orders (who pass on the registers to many disciples), longer poems up to 100 characters, which identify the generation of transmission from master to disciple. The Daoist who receives a Lu register (給籙元科, pronounced "Ji Lu Yuanke"), must use the character from the poem given to him by his or her master, when composing biao 表 memorials, shuwen 梳文 rescripts, and other documents, sent to the spirits of the 3 realms (heaven, earth, water /underworld). The rituals and documents are ineffective unless the correct characters and talismanic signature are used. The registers are not given to those who simply practice martial artists, Chinese medicine, and especially never shown to scholars. The punishment for revealing them to the unworthy is quite severe, for those who take payment for Lu transmission, or teaching how to perform the Jinlu Jiao and Huanglu Zhai 金籙醮,黃籙齋 科儀 keyi rituals, music, drum, sacred dance steps. Tang dynasty Tangwen 唐文 pronunciation must also be used when addressing the highest Daoist spirits, i.e., the 3 Pure Ones and 5 Emperors 三请五帝. In order to learn the rituals and receive a Lu transmission, it requires at least 10 years of daily practice with a master, by taking part in the Jiao and Zhai rituals, as an acolyte, cantor, or procession leader. Note that a proper use of Daoist ritual also includes learning Inner Alchemy, ie inner contemplative Daoist meditation, the visualization of spirits, where to implant them in the body, and how to summon them forth during ritual. The woman Daoist master Wei Huacun’s Huangting Neijing, 黃庭內經 to learn the esoteric names of the internalized Daoist spirits. Readers must be warned never to go to Longhu Shan, where a huge sum is charged to foreigners ($5000 to $9000) to receive a falsified document, called a "license" to be a Daoist! The first steps to true Daoist practice, Daoist Master Zhuang insisted to his disciples, is to read and follow the Laozi Daode Jing and the Zhuangzi Neipian, on a daily basis. Laozi Ch 66, "the ocean is the greatest of all creatures because it is the lowest", and Ch 67, "my 3 most precious things: compassion for all, frugal living for myself, respect all others and never put anyone down" are the basis for all Daoist practice. The words of Zhuangzi, Ch 7, are also deeply meaningful: "Yin and Yang were 2 little children who loved to play inside Hundun (ie Taiji, gestating Dao). They felt sorry because Hundun did not have eyes, or eats, or other senses. So everyday they drilled one hole, ie 2 eyes, 2 ears, 2 nostrils, one mouth; and on the 7th day, Hundun died.

In a sense Provincetown is a beach. If you stand on the shore watching the tide recede, you are merely that much closer to the water and that much more available to weather than you would be in the middle of town. All along the bay side, the entire length of town, the beach slopes gently, bearded with kelp and dry sea grass. Because Provincetown stands low on the continental shelf, it is profoundly affected by tides, which can exceed a twelve-foot drop at the syzygy of sun, moon, and earth. Interludes of beach that are more than a hundred yards wide at low tide vanish entirely when the tide is high. The water of the bay is utterly calm in most weathers and warmer than that of the ocean beaches, but this being the North Atlantic, no water anywhere is ever what you could rightfully call warm, not even in August. Except in extreme weather the bay beach is entirely domesticated, the backyard of the town, never empty but never crowded, either; there is no surf there, and the water that laps docilely up against the shore is always full of boats. In the Negev in Israel, Israeli authorities have refused to legally recognize 35 Palestinian Bedouin communities, making it impossible for their 90,000 or so residents to live lawfully in the communities they have lived in for decades. Instead, authorities have sought to concentrate Bedouin communities in larger recognized townships in order, as expressed in governmental plans and statements by officials, to maximize the land available for Jewish communities. Israeli law considers all buildings in these unrecognized villages to be illegal, and authorities have refused to connect most to the national electricity or water grids or to provide even basic infrastructure such as paved roads or sewage systems. The communities do not appear on official maps, most have no educational facilities, and residents live under constant threat of having their homes demolished. Israeli authorities demolished more than 10,000 Bedouin homes in the Negev between 2013 and 2019, according to government data. They razed one unrecognized village that challenged the expropriation of its lands, al-Araqib, 185 times.

Ocean Acidification is sometimes referred to as Global Warming's Equally Evil Twin. The irony is intentional and fair enough as far as it goes... No single mechanism explains all the mass extinctions in the record and yet changes in ocean chemistry seem to be a pretty good predictor. Ocean Acidification played a role in at least 2 of the Big Five Extinctions: the End-Permian and the End-Triassic. And quite possibly it was a major factor in a third, the End-Cretaceous. ...Why is ocean acidification so dangerous? The question is tough to answer only because the list of reasons is so long. Depending on how tightly organisms are able to regulate their internal chemistry, acidification may affect such basic processes as metabolism, enzyme activity, and protein function. Because it will change the makeup of microbial communities, it will alter the availability of key nutrients, like iron and nitrogen. For similar reasons, it will change the amount of light that passes through the water, and for somewhat different reasons, it will alter the way sound propagates. (In general, acidification is expected to make the seas noisier.) It seems likely to promote the growth of toxic algae. It will impact photosynthesis—many plant species are apt to benefit from elevated CO2 levels—and it will alter the compounds formed by dissolved metals, in some cases in ways that could be poisonous. Of the myriad possible impacts, probably the most significant involves the group of creatures known as calcifiers. (The term calcifier applies to any organism that builds a shell or external skeleton or, in the case of plants, a kind of internal scaffolding out of the mineral calcium carbonate.)... Ocean acidification increases the cost of calcification by reducing the number of carbonate ions available to organisms that build shells or exoskeletons. Imagine trying to build a house while someone keeps stealing your bricks. The more acidified the water, the greater the energy that’s required to complete the necessary steps. At a certain point, the water becomes positively corrosive, and solid calcium carbonate begins to dissolve. This is why the limpets that wander too close to the vents at Castello Aragonese end up with holes in their shells. According to geologists who work in the area, the vents have been spewing carbon dioxide for at least several hundred years, maybe longer. Any mussel or barnacle or keel worm that can adapt to lower pH in a time frame of centuries presumably already would have done so. “You give them generations on generations to survive in these conditions, and yet they’re not there,” Hall-Spencer observed.

Outlawing drugs in order to solve drug problems is much like outlawing sex in order to win the war against AIDS. We recognize that people will continue to have sex for nonreproductive reasons despite the laws and mores. Therefore, we try to make sexual practices as safe as possible in order to minimize the spread of the AIDS viruses. In a similar way, we continually try to make our drinking water, foods, and even our pharmaceutical medicines safer. The ubiquity of chemical intoxicants in our lives is undeniable evidence of the continuing universal need for safer medicines with such applications. While use may not always be for an approved medical purpose, or prudent, or even legal, it is fulfilling the relentless drive we all have to change the way we feel, to alter our behavior and consciousness, and, yes, to intoxicate ourselves. We must recognize that intoxicants are medicines, treatments for the human condition. Then we must make them as safe and risk free and as healthy as possible. Dream with me for a moment. What would be wrong if we had perfectly safe intoxicants? I mean drugs that delivered the same effects as our most popular ones but never caused dependency, disease, dysfunction, or death. Imagine an alcohol-type substance that never caused addiction, liver disease, hangovers, impaired driving, or workplace problems. Would you care to inhale a perfumed mist that is as enjoyable as marijuana or tobacco but as harmless as clean air? How would you like a pain-killer as effective as morphine but safer than aspirin, a mood enhancer that dissolves on your tongue and is more appealing than cocaine and less harmful than caffeine, a tranquilizer less addicting than Valium and more relaxing than a martini, or a safe sleeping pill that allows you to choose to dream or not? Perhaps you would like to munch on a user friendly hallucinogen that is as brief and benign as a good movie? This is not science fiction. As described in the following pages, there are such intoxicants available right now that are far safer than the ones we currently use. Similarly the evocation of a right to reply signals the absence of any dialogue, and so on. The rights of the individual lose their meaning as soon as the individual is no longer an alienated being, deprived of his own being, a stranger to himself, as has long been the case in societies of exploitation and scarcity. In his postmodern avatar, however, the individual is a self-referential and selfoperating unit. Under such circumstances the human-rights system becomes totally inadequate and illusory: the flexible, mobile individual of variable geometric form is no longer a subject with rights but has become, rather, a tactician and promoter of his own existence whose point of reference is not some agency of law but merely the efficiency of his own functioning or performance. Yet it is precisely now that the rights of man are acquiring a worldwide resonance. They constitute the only ideology that is currently available - which is as much as to say that human rights are the zero point of ideology, the sale outstanding balance of history. Human rights and ecology are the two teats of the consensus. The current world charter is that of the New Political Ecology. Ought we to view this apotheosis of human rights as the irresistible rise of stupidity, as a masterpiece which, though imperilled, is liable to light up the coming fin de siecle in the full glare of the consensus?

The pheromones that flood the anthill with global information have an equivalent in the planetary television of today. There is a widespread belief that if the best is made available to all, one day we will end up with a perfect human race. That is not the way of things. Nature, with all due respect to Mr Darwin, does not evolve in the direction of the supremacy of the best (according to which criteria, anyway?). Nature draws its strength from diversity. It needs all kinds of people, good, bad, mad, desperate, sporty, bed-ridden, hunchbacked, hare-lipped, happy, sad, intelligent, stupid, selfish, generous, small, tall, black, yellow, red and white. It needs all religions, philosophies, fanaticisms and wisdom. The only danger is that any one species may be eliminated by another. In the past, fields of maize artificially designed by men and made up of clones of the best heads (the ones that need least water, are most frost-resistant or produce the best grains) have suddenly succumbed to trivial infections while fields of wild maize made up of several different strains, each with its own peculiar strengths and weaknesses, have always managed to survive epidemics. Jesus does not specify what the “free gift” precisely is which the apostles have received, and the word δωϱεὰν may also be read adverbially to mean “gratis”, “free of charge”, so that the alternate translation would be: “You received without cost; give without charge.” The very indetermination of the object, however, here makes the formulation even more absolute. Although in context the specific “gift” meant is probably the divine authority to heal and generally to act in Jesus’ stead, surely it also refers to the first call to discipleship by Jesus, to the invitation to and privilege of following him and sharing his life, and to this present call to special apostleship as well. In other words, the “gift” given by God free of charge is the Christian’s whole life; Christ Jesus himself. The gratuitousness with which God gives his Son to mankind, furthermore, imposes an inviolable pattern of transitiveness. The one who receives must give the gift further as freely as he has received it. As a result of receiving from God, one must give like God. God, then, imparts not only the gift itself but the very manner of the giving. This gift communicates its qualities to its recipient: having such a gift, I myself must become gift. The gift of God’s life—Jesus—does not pass through me like water through a pipe, leaving me unaffected. It descends upon me like fire on a sacrifice, roasting the meat and making it edible for God’s hungry.

Pizzoccheri — SERVES 4 TO 6 — 1 medium Savoy cabbage A big, sexy slab of Valtellina cheese, or something similar, like fontina 3 large yellow potatoes A fuck of a lot of butter 4 large garlic cloves 1 pound pizzoccheri Extra-virgin olive oil 2 handfuls grated Parmigiano-Reggiano, or Bitto (if available and you can afford it) Salt Remove and discard any tough outer leaves from the cabbage and roughly chop it into long pieces. Thinly cut about 15 pieces of Valtellina cheese and also grate about 3 cups. Set aside. Preheat the oven to 325°F. Peel and dice the potatoes and boil until cooked but still firm, about 15 minutes or so. Halfway through boiling, add the cabbage to the potatoes. When the potatoes and cabbage are cooked, drain them and set them aside. In a large, deep frying pan over low heat, melt the fuckload of butter. Gently crush (if that’s even possible) the garlic cloves, place them in the pan, and cook until they soften and the butter has melted but not turned brown. Boil the pizzoccheri until al dente and drain, reserving about 2 cups of the water. Return the pizzoccheri to the pot and drizzle them with a little olive oil or some butter so they don’t stick together. Pour a little of the garlic butter into a baking dish and begin to layer the ingredients, starting with the pizzoccheri, then the cabbage, then the potatoes, then both cheeses, drizzling more garlic butter over the whole mixture after each layer, adding a bit of the reserved pasta water to ensure it doesn’t get too thick but making sure it doesn’t get too watery. You may need only a cup. Top the final layer with a drizzle of olive oil and more grated cheese. Cover with foil and bake for about 15 minutes or so. Remove the foil and return to the oven until the top has a slight crisp. Salt to taste. Serve it and eat it and drink a lot of wine with it and think about how much you deserve it after you burned off so many

After the deep dissolutions of menopause, I was refashioning myself from those calcinated ashes; I was growing new bones. It’s something we all have to do at this time in our lives; somehow, with whatever tools are available to us, we have to begin to curate the vision of the elder we will become. It’s an act of bricolage. And so now I had become like the bright-eyed, cackling magpies which regularly ransacked our garden: a collector — though not of trinkets, but of clues. I was gathering them together in the safety of my new nest. The clues were there in the pieces; those clues are threaded through this book. Scattered in shadowy corners and brightly lit windows, these objects I’ve selected are so much more than random gatherings of whatever it was that I happened to come across in my wanderings. Are you a reservoir or are you a canal or a swamp? The distinction is literal. The function of a canal is to channel water; it is a device by which water may move from one place to another in an orderly and direct manner. It holds water in a temporary sense only; it holds it in transit from one point to another. The function of the reservoir is to contain, to hold water. It is a large receptacle designed for the purpose, whether it is merely an excavation in the earth or some vessel especially designed. It is a place in which water is stored in order that it may be available when needed. In it provisions are made for outflow and inflow. A swamp differs from either. A swamp has an inlet but no outlet. Water flows into it but there is no provision make for water to flow out. The result? The water rots and many living things die. Often there is a strange and deathlike odor that pervades the atmosphere. The water is alive but apt to be rotten. There is life in a swamp but it is stale. The dominant trend of a man's life may take on the characteristics of a canal, reservoir or swamp. The important accent is on the dominant trend. There are some lives that seem ever to be channels, canals through which things flow. They are connecting links between other people, movements, purposes. They make the network by which all kinds of communications are possible. They seem to be adept at relating needs to sources of help, friendlessness to friendliness. Of course, the peddler of gossip is also a canal. If you are a canal, what kind of things do you connect? Or are you a reservoir? Are you a resource which may be drawn upon in times of others' needs and your own as well? Have you developed a method for keeping your inlet and your outlet in good working order so that the cup which you give is never empty? As a reservoir, you are a trustee of all the gifts God has shared with you. You know they are not your own. Are you a swamp? Are you always reaching for more and more, hoarding whatever comes your way as your special belongings? If so, do you wonder why you are friendless, why the things you touch seem ever to decay? A swamp is a place where living things often sicken and die. The water in a swamp has no outlet. Canal, reservoir or swamp-- WHICH?

The Dark Depths of the Seas And Internal Waves Or [the unbelievers' state] are like the darkness of a fathomless sea which is covered by waves above which are waves above which are clouds, layers of darkness, one upon the other. If he puts out his hand, he can scarcely see it. Those Allah gives no light to, they have no light. (Qur'an, 24:40) In deep seas and oceans, the darkness is found at a depth of 200 meters (660 feet) and deeper. At this depth, there is almost no light, and below a depth of 1,000 meters (3,280 feet) there is no light at all.65 Today, we know about the general formation of the sea, the characteristics of the living things in it, its salinity, as well as the amount of water it contains, and its surface area and depth. Submarines and special equipment, developed with modern technology, have enabled scientists to obtain such information. Human beings are not able to dive to a depth of more than 70 meters (230 feet) without the aid of special equipment. They cannot survive unaided in the dark depths of the oceans, such as at a depth of 200 meters (660 feet). For these reasons, scientists have only recently been able to discover detailed information about the seas. However, that the depth of the sea is dark was revealed in the Qur'an 1,400 years ago. It is certainly one of the miracles of the Qur'an that such information was given at a time where no equipment to enable man to dive into the depths of the oceans was available. In addition, the statement in Surat an-Nur 40 "…like the darkness of a fathomless sea which is covered by waves above which are waves above which are clouds…" draws our attention to another miracle of the Qur'an. Scientists have only recently discovered that there are sub-surface waves, which "occur on density interfaces between layers of different densities." These internal waves cover the deep waters of seas and oceans because deep water has a higher density than the water above it. Internal waves act like surface waves. They can break, just like surface waves. Internal waves cannot be discerned by the human eye, but they can be detected by studying temperature or salinity changes at a given location.66 The statements in the Qur'an run parallel precisely the above explanation. Certainly, this fact, which scientists has discovered very recently, shows once again that the Qur'an is the word of Allah.

RAIN IN MEASURED AMOUNTS Another item of information provided in the Qur'an about rain is that it is sent down to Earth in "due measure." This is mentioned in Surat az-Zukhruf as follows: It is He Who sends down water in measured amounts from the sky by which We bring a dead land back to life. That is how you too will be raised [from the dead]. (Qur'an, 43:11) This measured quantity in rain has again been discovered by modern research. It is estimated that in one second, approximately 16 million tons of water evaporates from the Earth. This figure amounts to 513 trillion tons of water in one year. This number is equal to the amount of rain that falls on the Earth in a year. Therefore, water continuously circulates in a balanced cycle, according to a "measure." Life on Earth depends on this water cycle. Even if all the available technology in the world were to be employed for this purpose, this cycle could not be reproduced artificially. Even a minor deviation in this equilibrium would soon give rise to a major ecological imbalance that would bring about the end of life on Earth. Yet, it never happens, and rain continues to fall every year in exactly the same measure, just as revealed in the Qur'an. The proportion of rain does not merely apply to its quantity, but also to the speed of the falling raindrops. The speed of raindrops, regardless of their size, does not exceed a certain limit. Philipp Lenard, a German physicist who received the Nobel Prize in physics in 1905, found that the fall speed increased with drop diameter until a size of 4.5 mm (0.18 inch). For larger drops, however, the fall speed did not increase beyond 8 metres per second (26 ft/sec).57 He attributed this to the changes in drop shape caused by the air flow as the drop size increased. The change in shape thus increased the air Allah's Miracles in the Qur'an 113 resistance of the drop and slowed its fall rate. As can be seen, the Qur'an may also be drawing our attention to the subtle adjustment in rain which could not have been known 1,400 years ago. Harun Yahya Every year, the amount of water that evaporates and that falls back to the Earth in the form of rain is "constant": 513 trillion tons. This constant amount is declared in the Qur'an by the expression "sending down water in due measure from the sky." The constancy of this quantity is very important for the continuity of the ecological balance, and therefore, life.

In 1853, Haussmann began the incredible transformation of Paris, reconfiguring the city into 20 manageable arrondissements, all linked with grand, gas-lit boulevards and new arteries of running water to feed large public parks and beautiful gardens influenced greatly by London’s Kew Gardens. In every quarter, the indefatigable prefect, in concert with engineer Jean-Charles Alphand, refurbished neglected estates such as Parc Monceau and the Jardin du Luxembourg, and transformed royal hunting enclaves into new parks such as enormous Bois de Boulogne and Bois de Vincennes. They added romantic Parc des Buttes Chaumont and Parc Montsouris in areas that were formerly inhospitable quarries, as well as dozens of smaller neighborhood gardens that Alphand described as "green and flowering salons." Thanks to hothouses that sprang up in Paris, inspired by England’s prefabricated cast iron and glass factory buildings and huge exhibition halls such as the Crystal Palace, exotic blooms became readily available for small Parisian gardens. For example, nineteenth-century metal and glass conservatories added by Charles Rohault de Fleury to the Jardin des Plantes, Louis XIII’s 1626 royal botanical garden for medicinal plants, provided ideal conditions for orchids, tulips, and other plant species from around the globe. Other steel structures, such as Victor Baltard’s 12 metal and glass market stalls at Les Halles in the 1850s, also heralded the coming of Paris’s most enduring symbol, Gustave Eiffel’s 1889 Universal Exposition tower, and the installation of steel viaducts for trains to all parts of France. Word of this new Paris brought about emulative City Beautiful movements in most European capitals, and in the United States, Bois de Boulogne and Parc des Buttes Chaumont became models for Frederick Law Olmsted’s Central Park in New York. Meanwhile, for Parisians fascinated by the lakes, cascades, grottoes, lawns, flowerbeds, and trees that transformed their city from just another ancient capital into a lyrical, magical garden city, the new Paris became a textbook for cross-pollinating garden ideas at any scale. Royal gardens and exotic public pleasure grounds of the Second Empire became springboards for gardens such as Bernard Tschumi’s vast, conceptual Parc de La Villette, with its modern follies, and “wild” jardins en mouvement at the Fondation Cartier and the Musée du Quai Branly. In turn, allées of trees in some classic formal gardens were allowed to grow freely or were interleaved with wildflower meadows and wild grasses for their unsung beauty. Private gardens hidden behind hôtel particulier walls, gardens in spacious suburbs, city courtyards, and minuscule rooftop terraces, became expressions of old and very new gardens that synthesized nature, art, and outdoors living.

Birch bark lends a mild wintergreen flavor to brewed sodas. Birch beer, flavored with sassafras and birch, is a classic American brew. Birch bark is usually sold in homebrew stores. Bitter Orange (Bergamot) s highly aromatic, and its dried peel is an essential part of cola flavor. The dried peel and its extract are usually available in spice shops, or any store with a good spice selection. They can be pricey. Burdock root s a traditional ingredient in American root beers. It has a mild sweet flavor similar to that of artichoke. Dried burdock root is available in most Asian groceries and homebrew stores. Cinnamon has several species, but they all fall into two types. Ceylon cinnamon is thin and mild, with a faint fragrance of allspice. Southeast Asian cinnamon, also called cassia, is both stronger and more common. The best grade comes from Vietnam and is sold as Saigon cinnamon. Use it in sticks, rather than ground. The sticks can be found in most grocery stores. Ginger, a common soda ingredient, is very aromatic, at once spicy and cooling. It is widely available fresh in the produce section of grocery stores, and it can be found whole and dried in most spice shops. Lemongrass, a perennial herb from central Asia, contains high levels of citral, the pungent aromatic component of lemon oil. It yields a rich lemon flavor without the acid of lemon juice, which can disrupt the fermentation of yeasted sodas. Lemon zest is similar in flavor and can be substituted. Lemongrass is available in most Asian markets and in the produce section of well-stocked grocery stores. Licorice root provides the well-known strong and sweet flavor of black licorice candy. Dried licorice root is sold in natural food stores and homebrew stores. Anise seed and dried star anise are suitable substitutes. Sarsaparilla s similar in flavor to sassafras, but a little milder. Many plants go by the name sarsaparilla. Southern-clime sarsaparilla (Smilax spp.) is the traditional root-beer flavoring. Most of the supply we get in North America comes from Mexico; it’s commonly sold in homebrew stores. Wild sarsaparilla (Aralia spp.) is more common in North America and is sometimes used as a substitute for true sarsaparilla. Small young sarsaparilla roots, known as “root bark” are less pungent and are usually preferred for soda making, although fully mature roots give fine results. Sassafras s the most common flavoring for root beers of all types. Its root bark is very strong and should be used with caution, especially if combined with other flavors. It is easily overpowering. Dried sassafras is available in homebrew stores. Star anise, the dried fruit of an Asian evergreen, tastes like licorice, with hints of clove and cinnamon. The flavor is strong, so use star anise with caution. It is available dried in the spice section of most grocery stores but can be found much more cheaply at Asian markets.
