In 2018, a team led by Chunwu Zhu looked at the protein content of eighteen different strains of rice, the staple crop for more than 2 billion people, and found that more carbon dioxide in the air produced nutritional declines across the board—drops in protein content, as well as in iron, zinc, and vitamins B1, B2, B5, and B9. Really everything but vitamin E. Overall, the researchers found that, acting just through that single crop, rice, carbon emissions could imperil the health of 600 million people. In previous centuries, empires were built on that crop. Climate change promises another, an empire of hunger, erected among the world’s poor.

It’s interesting to note, while we’re here, that carrots were the source of one of the great disinformation coups of World War II, when the Germans couldn’t understand how our pilots could see their planes coming from huge distances, even in the dark. To stop them trying to work out if we’d invented anything clever like radar (which we had), the British instead started an elaborate and entirely made-up nutritionist rumour. Carotenes in carrots, they explained, are transported to the eye and converted to retinal, which is the molecule that detects light in the eye (this is basically true, and is a plausible mechanism, like those we’ve already dealt with): so, went the story, doubtless with much chortling behind their excellent RAF moustaches, we have been feeding our chaps huge plates of carrots, to jolly good effect. Anyway. Two groups of people at high risk of lung cancer were studied: smokers, and people who had been exposed to asbestos at work. Half were given 3-carotene and vitamin A, while the other half got placebo. Eighteen thousand participants were due to be recruited throughout its course, and the intention was that they would be followed up for an average of six years; but in fact the trial was terminated early, because it was considered unethical to continue it. Why? The people having the antioxidant tablets were 46 per cent more likely to die from lung cancer, and 17 per cent more likely to die of any cause,* than the people taking placebo pills. This is not news, hot off the presses: it happened well over a decade ago.

Magnesium: Preferably magnesium malate, 1,200 mg two or three times per day, or magnesium glycinate, 400 mg two or three times per day; or magnesium citrate, 400 mg two or three times per day. (If elemental magnesium—i.e., magnesium without the weight of malate, glycinate, or citrate—is specified on your supplement, aim for around 400 mg magnesium per day.) Source Naturals, NOW, and KAL are excellent brands. Fish oil: 3,000 to 3,600 mg per day of EPA and DHA, divided into two doses. Meat from grass-fed and pasture-raised animals tends to be more nutrient-dense than conventional meat. Although the exact nutrient content will vary from species to species and from farm to farm (and by time of year and the quality of supplemental feed, if any), grass-fed and pasture-raised meat tends to be higher (sometimes much higher) in many minerals and vitamins while also having a better omega-6 to omega-3 fatty acid ratio. For example, grass-fed beef contains up to ten times more beta-carotene (a carotenoid—that is, an antioxidant and precursor of vitamin A; see here) as grain-fed beef and up to four times more vitamin E (see here). Grass-fed beef is also higher in B vitamins, zinc, iron, phosphorus, and potassium. And because pasture-raised animals hang out in the sun, their fat is a source of vitamin D (which is practically nonexistent in factory-farmed animals). Free-range chickens also have more vitamin E content and iron than conventional chickens. Grass-fed and pasture-raised meat tends to have a much lower water content than conventional meat and is much leaner overall (which means it has more protein!). Plus, its fats are much healthier. Grass-fed meat contains approximately four times more omega-3 fatty acids (in the very useful DHA and EPA forms; see here) as compared with grain-fed meat. It also contains far fewer omega-6 fatty acids, so the ratio of omega-6 to omega-3 fatty acids in grass-fed meat is typically within the optimal range at 3:1 (but can be as low as 4:1 and as high as 20:1 in grain-fed meat, varying by the exact diet of the cow but also the cut of meat). Meat (and dairy) from grass-fed cows is the best-known source of conjugated linoleic acid (CLA; see here). Grass-fed and pasture-raised meat also tends to be higher in oleic acid (see here). This serendipitous and key event was critically responsible for Pauling’s seminal paper in his emergent medical field. Chapter 5 Eyebright For Eye Strain The other night, I took a break from writing and went for a walk. It was dark, but the moon was bright giving me the light I needed to see my way up the road and back. When I returned I could see a few lights on in the house, but what really stood out was my laptop that I had left open; it’s bright white light standing out. I thought, “man, I stare at that light for hours at a time!” No wonder my eyes feel tired so often. Many people do this for eight or more hours every day. When we are viewing the screens of our devices, we blink less than normal which can cause dryness and soreness. The intense focus can also be the root of headaches and other eye related symptoms. Relief can be achieved by taking frequent ‘eye breaks’ which involve looking at something in the distance every twenty minutes or so (there are even apps to remind you!), and making sure your screen is just below eye level. But the reality is many of us are spending a lot of time focusing intently on electronic devices and straining our eyes. Symptoms of eye strain range from dry, sore, or itchy eyes, to headaches, light sensitivity and blurred vision. Mother Nature in her infinite wisdom has provided us with a wild herb that works directly to reduce the discomforts of eye strain and many other eye issues. Eyebright, a tiny flowered, weedy looking herb found wild in Europe, Asia and North America can be used to treat all eye disorders. If you are experiencing a painful eye condition, it is better to warm the eye bath liquid slightly before use. You can also dip cotton balls in the solution and press one on each eye (with lid closed) as a compress. Eyebright Tea: Using the same method for making an eye bath, simply drink the tea for relief of eye symptoms due to eyestrain, colds and allergies.

LINUS PAULING WAS WRONG about megavitamins because he had made two fundamental errors. First, he had assumed that you cannot have too much of a good thing. Vitamins are critical to life. If people don’t get enough vitamins, they suffer various deficiency states, like scurvy (not enough vitamin C) or rickets (not enough vitamin D). The reason that vitamins are so important is that they help convert food into energy. But there’s a catch. To convert food into energy, the body uses a process called oxidation. One outcome of oxidation is the generation of something called free radicals, which can be quite destructive. In search of electrons, free radicals damage cell membranes, DNA, and arteries, including the arteries that supply blood to the heart. As a consequence, free radicals cause cancer, aging, and heart disease. Indeed, free radicals are probably the single greatest reason that we aren’t immortal. To counter the effects of free radicals, the body makes antioxidants. Vitamins—like vitamins A, C, E, and beta-carotene—as well as minerals like selenium and substances like omega-3 fatty acids all have antioxidant activity. For this reason, people who eat diets rich in fruits and vegetables, which are rich in antioxidants, tend to have less cancer, less heart disease, and live longer. Pauling’s logic to this point is clear; if antioxidants in food prevent cancer and heart disease, then eating large quantities of manufactured antioxidants should do the same thing. But Linus Pauling had ignored one important fact: Oxidation is also required to kill new cancer cells and clear clogged arteries. By asking people to ingest large quantities of vitamins and supplements, Pauling had shifted the oxidation-antioxidation balance too far in favor of antioxidation, therefore inadvertently increasing the risk of cancer and heart disease. As it turns out, Mae West aside, you actually can have too much of a good thing. (“Too much of a good thing can be wonderful,” said West, who was talking about sex, not vitamins.) Second, Pauling had assumed that vitamins and supplements ingested in food were the same as those purified or synthesized in a laboratory. This, too, was incorrect. Vitamins are phytochemicals, which means that they are contained in plants (phyto- means “plant” in Greek). The 13 vitamins (A, B1, B2, B3, B5, B6, B7, B9, B12, C, D, E, and K) contained in food are surrounded by thousands of other phytochemicals that have long and complicated names like flavonoids, flavonols, flavanones, isoflavones, anthocyanins, anthocyanidins, proanthocyanidins, tannins, isothiocyanates, carotenoids, allyl sulfides, polyphenols, and phenolic acids. The difference between vitamins and these other phytochemicals is that deficiency states like scurvy have been defined for vitamins but not for the others. But make no mistake: These other phytochemicals are important, too. And Pauling’s recommendation to ingest massive quantities of vitamins apart from their natural surroundings was an unnatural act.
