These are all real words.
We are hyper-vigilant about everything we put into our body, everything we do to our body, and we are proud of this. We Instagram how proud we are of this, and we follow Goop and Well+Good, and we drop 40 bucks on an exercise class because there are healing crystals in the floor.

In 2018, a team led by Chunwu Zhu looked at the protein content of eighteen different strains of rice, the staple crop for more than 2 billion people, and found that more carbon dioxide in the air produced nutritional declines across the board—drops in protein content, as well as in iron, zinc, and vitamins B1, B2, B5, and B9. Really everything but vitamin E. Overall, the researchers found that, acting just through that single crop, rice, carbon emissions could imperil the health of 600 million people. The results of the other trial were almost worse. It was called the ‘Carotene and Retinol Efficacy Trial’, or ‘CARET’, in honour of the high p-carotene content of carrots. It’s interesting to note, while we’re here, that carrots were the source of one of the great disinformation coups of World War II, when the Germans couldn’t understand how our pilots could see their planes coming from huge distances, even in the dark. To stop them trying to work out if we’d invented anything clever like radar (which we had), the British instead started an elaborate and entirely made-up nutritionist rumour. Carotenes in carrots, they explained, are transported to the eye and converted to retinal, which is the molecule that detects light in the eye (this is basically true, and is a plausible mechanism, like those we’ve already dealt with): so, went the story, doubtless with much chortling behind their excellent RAF moustaches, we have been feeding our chaps huge plates of carrots, to jolly good effect. Anyway. Two groups of people at high risk of lung cancer were studied: smokers, and people who had been exposed to asbestos at work. Half were given 3-carotene and vitamin A, while the other half got placebo. Eighteen thousand participants were due to be recruited throughout its course, and the intention was that they would be followed up for an average of six years; but in fact the trial was terminated early, because it was considered unethical to continue it. Why? The people having the antioxidant tablets were 46 per cent more likely to die from lung cancer, and 17 per cent more likely to die of any cause,* than the people taking placebo pills. This is not news, hot off the presses: it happened well over a decade ago.

When he came across a copy of Niacin Therapy in Psychiatry (1962) by Abram Hoffer in 1965, Pauling was astonished to learn that simple substances needed in minute amounts to prevent deficiency diseases could have therapeutic application in unrelated diseases when given in very large amounts. This serendipitous and key event was critically responsible for Pauling’s seminal paper in his emergent medical field. A body needs abundant calcium to function properly, and one of bone’s many jobs is to serve as a reservoir of this vital mineral. If calcium levels in the blood drop too much because of insufficient calcium from food, hormones stimulate osteoclasts to resorb bone, restoring calcium balance. This response, however, weakens bones if the tissue is not replaced. Consequently, both animals and people whose diets are permanently deficient in calcium develop flimsy bones, and they lose bone more rapidly as they age. Modern grain-based diets, moreover, tend to be woefully deficient in calcium—between two and five times lower than typical hunter-gatherer diets, and only a minority of adult Americans eat sufficient calcium.16 This problem, moreover, is often exacerbated by low levels of vitamin D, which helps the gut absorb calcium, and by low levels of dietary protein, which is also necessary to synthesize bone.

Meat from grass-fed and pasture-raised animals tends to be more nutrient-dense than conventional meat. Although the exact nutrient content will vary from species to species and from farm to farm (and by time of year and the quality of supplemental feed, if any), grass-fed and pasture-raised meat tends to be higher (sometimes much higher) in many minerals and vitamins while also having a better omega-6 to omega-3 fatty acid ratio. For example, grass-fed beef contains up to ten times more beta-carotene (a carotenoid—that is, an antioxidant and precursor of vitamin A; see here) as grain-fed beef and up to four times more vitamin E (see here). Grass-fed beef is also higher in B vitamins, zinc, iron, phosphorus, and potassium. And because pasture-raised animals hang out in the sun, their fat is a source of vitamin D (which is practically nonexistent in factory-farmed animals). Free-range chickens also have more vitamin E content and iron than conventional chickens. Grass-fed and pasture-raised meat tends to have a much lower water content than conventional meat and is much leaner overall (which means it has more protein!). Plus, its fats are much healthier. Grass-fed meat contains approximately four times more omega-3 fatty acids (in the very useful DHA and EPA forms; see here) as compared with grain-fed meat. It also contains far fewer omega-6 fatty acids, so the ratio of omega-6 to omega-3 fatty acids in grass-fed meat is typically within the optimal range at 3:1 (but can be as low as 4:1 and as high as 20:1 in grain-fed meat, varying by the exact diet of the cow but also the cut of meat). Meat (and dairy) from grass-fed cows is the best-known source of conjugated linoleic acid (CLA; see here). Grass-fed and pasture-raised meat also tends to be higher in oleic acid (see here).
