Roasting garlic scapes with tomatoes and red onion brings out their sweet, rich flavor for a delightful summer meal. 2 swirls of olive oil 10 garlic scapes 1 pint multicolored cherry tomatoes 1 red onion, thinly sliced Sea salt and red pepper flakes, to taste ½ lb. pasta—fettuccine, tubini or spaghetti are good choices 1 cup baby spinach, arugula or fresh basil leaves, or a combination 1 lemon, zested and juiced Toasted pine nuts for garnish Heat oven to 400 ° F. Toss together olive oil, garlic scapes, tomatoes, onion, salt and pepper flakes and spread in an even layer on a parchment-lined baking sheet. Roast for 12–15 minutes, until tomatoes are just beginning to burst. If you have other garden vegetables, such as peppers, zucchini or aubergine, feel free to add that. Meanwhile, cook pasta according to package directions. Toss everything together with the greens, lemon zest and juice. Garnish with pine nuts. Serve immediately with a nice Barolo wine.

For his coda alla vaccinara, as Roman as the Colosseum, a masterpiece of quinto quarto cookery: the oxtail cooked to the point of collapse, bathed in a tomato sauce with a gentle green undertow of celery, one of Rome's unsung heroes. For the vegetables: one day a crostini of stewed favas and pork cheek, the next a tumble of bitter puntarelle greens bound in a bracing anchovy vinaigrette. And always the artichokes. If Roman artichokes are drugs, Claudio's are pure poppy, a vegetable so deeply addictive that I find myself thinking about it at the most inappropriate times. Whether fried into a crisp, juicy flower or braised into tender, melting submission, it makes you wonder what the rest of the world is doing with their thistles.

Which was—at least I think it was—God’s plan when He set up (such things are never left to chance) that one split-second assignation with genuine, no-kidding-around omnipotence what, for lack of better words, I’m calling vision. You breathe in, and, for once, there’s something there. Just when you thought you’d learned some resignation, there’s real resistance in the nearby air until the entire universe is swayed. Even that desert of yours isn’t quite so bare and God’s not nonexistent; He’s just been waylaid by a host of what no one could’ve foreseen. He’s got plans for you: this red-gold-green parade is actually a fairly detailed outline. David never needed one, but he’s long dead and God could use a little recognition. He promises. It won’t go to His head and if you praise Him properly (an autumn psalm! Why didn’t I think of that?) you’ll have it made. But while it’s true that my Virginia creeper praises Him, its palms and fingers crimson with applause, that the local breeze is weaving Him a diadem, inspecting my tree’s uncut gold for flaws, I came to talk about the way that violet-blue sprang the greens and reds and yellows into action: actual motion. I swear it’s true though I’m not sure I ever took it in. Now I’d be prepared, if some magician flew into my field of vision, to realign that dazzle out my window yet again. It’s not likely, but I’m keeping my eyes open though I still wouldn’t be able to explain precisely what happened to these vines, these trees. It isn’t available in my tradition. For this, I would have to be Chinese, Wang Wei, to be precise, on a mountain, autumn rain converging on the trees, a cassia flower nearby, a cloud, a pine, washerwomen heading home for the day, my senses and the mountain so entirely in tune that when my stroke of blue arrives, I’m ready. Though there is no rain here: the air’s shot through with gold on golden leaves. Wang Wei’s so giddy he’s calling back the dead: Li Bai! Du Fu! Guys! You’ve got to see this—autumn sun! They’re suddenly hell-bent on learning Hebrew in order to get inside the celebration, which explains how they wound up where they are in my university library’s squashed domain. Poor guys, it was Hebrew they were looking for, but they ended up across the aisle from Yiddish— some Library of Congress cataloger’s sense of humor: the world’s calmest characters and its most skittish squinting at each other, head to head, all silently intoning some version of kaddish. To recover an intuitive sense of what will be in season throughout the year, picture a season of foods unfolding as if from one single plant. Take a minute to study this creation—an imaginary plant that bears over the course of one growing season a cornucopia of all the different vegetable products we can harvest. We’ll call it a vegetannual. Picture its life passing before your eyes like a time-lapse film: first, in the cool early spring, shoots poke up out of the ground. Small leaves appear, then bigger leaves. As the plant grows up into the sunshine and the days grow longer, flower buds will appear, followed by small green fruits. Under midsummer’s warm sun, the fruits grow larger, riper, and more colorful. As days shorten into the autumn, these mature into hard-shelled fruits with appreciable seeds inside. Finally, as the days grow cool, the vegetannual may hoard the sugars its leaves have made, pulling them down into a storage unit of some kind: a tuber, bulb, or root. So goes the year. First the leaves: spinach, kale, lettuce, and chard (here, that’s April and May). Then more mature heads of leaves and flower heads cabbage, romaine, broccoli, and cauliflower (May–June). Then tender young fruit-set: snow peas, baby squash, cucumbers (June), followed by green beans, green peppers, and small tomatoes (July). Then more mature, colorfully ripened fruits: beefsteak tomatoes, eggplants, red and yellow peppers (late July–August). Then the large, hard-shelled fruits with developed seeds inside: cantaloupes, honeydews, watermelons, pumpkins, winter squash (August–September). Last come the root crops, and so ends the produce parade. Plainly these don’t all come from the same plant, but each comes from a plant, that’s the point—a plant predestined to begin its life in the spring and die in the fall. (A few, like onions and carrots, are attempting to be biennials, but we’ll ignore that for now.) Each plant part we eat must come in its turn—leaves, buds, flowers, green fruits, ripe fruits, hard fruits—because that is the necessary order of things for an annual plant. For the life of them, they can’t do it differently. Some minor deviations and a bit of overlap are allowed, but in general, picturing an imaginary vegetannual plant is a pretty reliable guide to what will be in season, wherever you live. If you find yourself eating a watermelon in April, you can count back three months and imagine a place warm enough in January for this plant to have launched its destiny.

Nina and Sophie were seated at a large round table settled under the branches of a blooming magnolia. The rich scent of the flowers mixed with the incredible food Jasmine and her team had whipped up had built an almost intoxicating aroma. They started off with sesame Halloumi and sweet potato tahini mash, followed by butternut squash and sage risotto, then there were hearty mushroom steaks with a side of roasted eggplant and miso salsa as their main. As they ate, she tasted the flavors from the earth, celebrating the gardens and passionate people around them. Her friend had harnessed the surroundings and created a rich culinary experience for the event.

Dry-aged sounded like an especially bad death for a waterfowl. The waiter returned. "Shall I order for us?" Victoria asked. I nodded, grateful. "Anything you don't eat? Allergies?" I shook my head. Nobody had ever asked me that before. On the island, I'd eaten what I gathered. At the cove, I ate what came to the table. Now I'd eat anything that didn't involve the jar in my backpack. "We'll start with the clam chowder," Victoria said. "We can order more later." The waiter nodded respectfully and disappeared again. "They make it with fresh clams," she told me. "It's exceptional." A young woman with a fancy braid in her hair brought us a basket of French bread, still warm from the oven. I watched as Victoria spread one slice with butter that melted as she applied it, releasing the faintest scent of flowers. "Here," she said, handing it to me. The crust gave way under my teeth with a delicate crunch, the butter soft on my tongue. It tasted even better than it smelled. After almost two weeks of hard mattresses and strangers and failure, I wanted to crawl inside the comfort of this bread and stay there forever.

Her elongated shadow took up the whole table: the head was right in the centre, over the vase, and it looked like a dark monster feeding on the flowers.
