As In Japanese theater, the performers often wore masks and extreme makeup; their movements, too, were stylized and "unnatural." It began to sink in that this kind of "presentational" theater has more in common with certain kinds of pop-music performance that traditional Western theater did. I was struck by other peripheral aspects of these performances. The audiences, mostly local villagers of all ages, weren't paying attention half the time. People would wander in and out, go get a snack from a cart or leave to smoke a bidi cigarette, and then return to watch some more. This was more like the behavior of audiences in music clubs than in Western theaters, where they were expected to sit quietly and only leave or converse once the show was over. The "religion" is so integrated into the culture that it appears in daily gestures and routines, unsegregated for ordinary life. CHOCOLATE CHIP COOKIE BRITTLE Serves 12 to 15 THIS RECIPE HAS MADE THE ROUNDS, AND NEVER FAILS TO IMPRESS. IT’S ALL THE satisfaction of crisp, sugary, brown-buttery chocolate chip cookies for very little time and effort. Perfect for weekday baking, gifting, compulsive snacking, and making friends and influencing people. Try a variety of chip and nut combinations in the mix—I love bittersweet chocolate chips and pecans, but consider cashews and butterscotch chips, shredded coconut, salted peanuts, and more—this workhorse of a recipe can take it. 1 cup/225 g unsalted butter, melted and cooled 2 teaspoons pure vanilla extract 1 cup/200 g granulated sugar 1 teaspoon fine sea salt 2 cups/256 g all-purpose flour, spooned and leveled 1 cup/170 g chopped pecans, lightly toasted 1 cup/170 g bittersweet chocolate chips (60% cacao) Position a rack to the center of the oven and preheat it to 350°F/180°C. Have ready a 12 × 17-inch/30 × 43 cm rimmed baking sheet. In a large bowl, whisk together the melted butter and vanilla. Add the sugar and salt and continue to whisk until the mixture thickens and appears pastelike. Switch to a wooden spoon or spatula and mix in the flour. Stir in the nuts and chocolate chips. Press the mixture into the ungreased pan in a thin, even layer (use the chocolate chips as your guide—try to get them in as close to a single layer as possible throughout the dough, and you’ll have the right thickness). Bake for 23 to 25 minutes, or until light golden brown (the edges will be a bit darker than the center), rotating the pan 180 degrees every 7 to 8 minutes during baking. Let cool completely before breaking into charmingly irregular pieces. Store in an airtight container at room temperature for up to 1 week.

Chorizo, tomatoes and eggs Feeds three to four as a snack or just you if you’ve had a crappy day and are wondering what the point of it all really is. INGREDIENTS One medium onion, chopped 250g cooking chorizo, skinned (piquant or not, depending on taste) Two 400g tins of chopped tomatoes. Buy the expensive ones if it makes you feel better about yourself, but the cheap ones will do the job 200g grated cheddar 100g torn-up mozzarella Three eggs Bunch of coriander 200g jar of pickled jalapeños Heat the oven to 200°C. Gently fry the chopped onion in olive oil in a deep-sided frying pan until soft. Break the chorizo into thumbnail-sized nuggets and fry with the onion. When the chorizo is browned, add the tomatoes, mix all the ingredients together, turn down the heat and let it simmer gently on the hob for twenty minutes or so until almost all the liquid has been boiled off. Stir occasionally to stop it sticking to the bottom of the pan. Decant half the mixture into an oven-proof casserole dish. Cover with half the mixed cheese. Add the rest of the tomato and chorizo mixture and cover with the remaining cheese. Put in the oven and leave until the cheese has started to brown and the liquid around the edges is bubbling. Take the dish out of the oven and turn on the grill. Meanwhile, crack the three eggs across the top. Put under the grill for about five minutes or until the eggs are cooked through. Scatter with the coriander and the pickled jalapeños. Eat this by scooping with tortilla chips.

In a groundbreaking study, Judith Smetana presented children as young as two and a half with simple, everyday scenarios. In some of the stories children broke a preschool rule—they didn’t put their clothes in the cubby or they talked at naptime. In others, they caused real physical or psychological harm to another child, by hitting, teasing, or stealing a snack. Smetana asked the children how bad the transgressions were, and whether they deserved punishment. But, most important, she asked whether the actions would be OK if the rules were different or if they took place in a school with different rules. Would it be OK to talk at naptime if the teachers all said so? Would it be OK to hit another child if the teachers all said so? Even the youngest children differentiated between rules and harm. Children thought that breaking rules and causing harm were both bad, but that causing harm was a lot worse. They also said that the rules could be changed or might not apply at a different school, but they insisted that causing harm would always be wrong, no matter what the rules said or where you were. Children made similar judgments about actual incidents that had happened in the preschool, not just hypothetical cases. And when you looked at the natural interactions in the playground you saw much the same pattern. Children reacted differently to harm and rulebreaking. Children in the Virgin Islands, South Korea, and Colombia behaved like American children. Poignantly, even abused children thought that hurting someone was intrinsically wrong. These children had seen their own parents cause harm, but they knew how much it hurt, and thought it was wrong.

What super-sure looks like A multitude of fascinating factors come under the ‘looking confident ‘umbrella. There isn’t space here to explore the thousands of subtle signs that signal confidence. I cover them in my book How to Talk to Anyone. However, here are a few hints to tide you over. Self-assureds do the following things instinctively. You can do them consciously until they become second nature. 1. When you are at a gathering, do not stand close to the wall or by the snacks. Walk directly to the dead-centre of the room. That’s where all the important people instinctively stand. 2. When you are going through a large door or open double doors, don’t walk on one side. Walk straight through the middle. It signifies confidence. 3. At a restaurant, unless there is an established hierarchy, go for the seat at the end of the table facing the door. That is the power position. 4. Sit in the highest chair in a meeting or on the arm of the couch – but not higher than the boss! 5. Make larger, more fluid movements. Confident people’s bodies occupy more space. Shys take as little as possible, as if to say, ‘Excuse me for taking up this much of the earth.’ 6. Keep your hands away from your face and never fidget. 7. When you agree with someone, nod your head up from neutral (jaw parallel to the floor), not down. 8. When walking towards someone and passing, be the last person to break eye-contact. 9. For men: Don’t strut like a bantam rooster. But to look like a leader, swing your arms more significantly when you walk. When you are seated, put one arm up on the back of a chair. Occasionally lean back with your arms up and your hands behind your head. 10. For women: To seem self-assured, square your body towards the person you’re talking to and stand a tad closer. Naturally, give a big smile but let it come ever so slightly so it looks sincere, not nervous.
