If Paul brought the first generation of Christians the useful skills of a trained theologian, Origen was the first great philosopher to rethink the new religion from first principles. As his philosophical enemy, the anti-Christian Porphyry, summed it up, he 'introduced Greek ideas to foreign fables' -- that is, gave a barbarous eastern religion the intellectual respectability of a philosophical defense. Origen was also a phenomenon. As Eusebius put it admiringly, 'even the facts from his cradle are worth mentioning'. Origen came from Alexandria, the second city of the empire and then it's intellectual centre; his father's martyrdom left him an orphan at seventeen with six younger brothers. He was a hard working prodigy, at eighteen head of the Catechetical School, and already trained as a literary scholar and teacher. But at this point, probably in 203, he became a religious fanatic and remained one for the next fifty years. He gave up his job and sold his books to concentrate on religion. he slept on the floor, ate no meat, drank no wine, had only one coat and no shoes. He almost certainly castrated himself, in obedience to the notorious text, Matthew 19:12, 'there are some who have made themselves eunuchs for the kingdom of heaven's sake.' Origen's learning was massive and it was of a highly original kind: he always went back to the sources and thought through the whole process himself. This he learned Hebrew and, according to Eusebius, 'got into his possession the original writings extant among the Jews in the actual Hebrew character'. These included the discovery of lost texts; in the case of the psalms, Origen collected not only the four known texts but three others unearthed, including 'one he found at Jericho in a jar'. The result was an enormous tome, the Hexapla, which probably existed in only one manuscript now lost, setting out the seven alternative texts in parallel columns. He applied the same principles of original research to every aspect of Christianity and sacred literature. He seems to have worked all day and though most of the night, and was a compulsive writer. Even the hardy Jerome later complained: 'Has anyone read everything Origen wrote?'

This is why the Greeks needed myth: for that boundary, to know where they stood amidst the infinite. No one can simply coexist with the ocean, storms, or cypress trees. They had to codify the elements with language and greater meaning, and create gods out of them–gods who looked suspiciously like themselves–so that even if they were powerless over nature, there were better versions of them in control. Or perhaps it was not for the sake of control over the terror of nature at all that they created their gods. Perhaps it was because the world, with all its beauty, was not enough. Simply being alive was not enough. The Greeks needed a new fantasy to make the world more exciting. With their war, wine, poetry, gods, and food, they needed to get high. Maybe we all did.

In summer, most ramen restaurants in Tokyo serve hiyashi chūka, a cold ramen noodle salad topped with strips of ham, cucumber, and omelet; a tart sesame- or soy-based sauce; and sometimes other vegetables, like a tomato wedge or sheets of wakame seaweed. The vegetables are arranged in piles of parallel shreds radiating from the center to the edge of the plate like bicycle spokes, and you toss everything together before eating. It's bracing, ice-cold, addictive- summer food from the days before air conditioning. In Oishinbo: Ramen and Gyōza, a young lifestyle reporter wants to write an article about hiyashi chūka. "I'm not interested in something like hiyashi chūka," says my alter ego Yamaoka. It's a fake Chinese dish made with cheap industrial ingredients, he explains. Later, however, Yamaoka relents. "Cold noodles, cold soup, and cold toppings," he muses. "The idea of trying to make a good dish out of them is a valid one." Good point, jerk. He mills organic wheat into flour and hires a Chinese chef to make the noodles. He buys a farmyard chicken from an old woman to make the stock and seasons it with the finest Japanese vinegar, soy sauce, and sake. Yamaoka's mean old dad Kaibara Yūzan inevitably gets involved and makes an even better hiyashi chūka by substituting the finest Chinese vinegar, soy sauce, and rice wine. When I first read this, I enjoyed trying to follow the heated argument over this dish I'd never even heard of. Yamaoka and Kaibara are in total agreement that hiyashi chūka needs to be made with quality ingredients, but they disagree about what kind of dish it is: Chinese, Japanese, or somewhere in between? Unlike American food, Japanese cuisine has boundary issues.

What is left will cut down the whole forest to feather his sprawling urban nest. At the end of these operations, tell me: what is left? I believe that sake and wine are the only drinks in the world that have achieved the level of being forms of art. Wine is made from grapes. Grapes have a lot of sugar in them to start with. Although it's a gross simplification, if you crushed the grapes and put them in a barrel they'd naturally ferment and turn into wine. But that's not the case with sake. In order for fermentation to occur, the starch in the rice has to be converted into sugar. And that involves a far more complex and difficult process than what's involved in making wine. In the entire world, no other country has developed such a refined drink out of cereal grains. What you usually get out of cereal grains is something like beer, which has a low proof... ... or a distilled liquor like whiskey, which has a high one. I want you to understand what a wonderful and unique thing sake is... ... and to appreciate the amazing skill it takes to create a drink that is practically an art form out of plain rice.

February 25 The Destitution of Service Though the more abundantly I love you, the less I be loved. 2 Corinthians 12:15 Natural love expects some return, but Paul says—“I do not care whether you love me or not, I am willing to destitute myself completely, not merely for your sakes, but that I may get you to God.” “For ye know the grace of our Lord Jesus Christ, that, though He was rich, yet for your sakes He became poor.” Paul’s idea of service is exactly along that line—“I do not care with what extravagance I spend myself, and I will do it gladly.” It was a joyful thing to Paul. The ecclesiastical idea of a servant of God is not Jesus Christ’s idea. His idea is that we serve Him by being the servants of other men. Jesus Christ out-socialists the socialists. Of all the countries Fairchild had visited, Japan struck him as the most advanced on matters of horticulture. One of the most unrecognized discoveries of Fairchild, a man drawn to edible fruits and vegetables, was zoysia grass, a rich green lawn specimen attractive for the thickness of its blades and its slow growth, which meant it required infrequent cutting. And then there was wasabi, a plant growing along streambeds in the mountains near Osaka. It had edible leaves, but wasabi's stronger quality was its bitter root's uncanny ability to burn one's nose. Wasabi only lasted in America until farmers realized that its close relative the horseradish root grew faster and larger and was more pungent than the delicate wasabi (which tends to stay pungent only fifteen minutes after it's cut). Small American farms still grow Fairchild's wasabi, but most of the accompaniment to modern sushi is in fact horseradish---mashed, colored, and called something it's not.

Then we slipped in two blanched snow peas and surrounded the ingredients with a bit of dashi, which we had seasoned with soy to attain the perfect whiskey color, then lightly salted to round out the flavor. Using our teacher's finished tenshin as a model, we arranged most of the dishes on three polished black lacquer rectangles, first lightly spraying them with water to suggest spring rain. Then we actually sat down and ate the meal. To my surprise, the leaf-wrapped sushi, the silky charred peppers, candied fava beans, and slippery algae did taste cool and green.

Called tataki gobo (pounded burdock root), the dish is so named because the gobo (root) symbolizes the hope for a stable, deeply rooted life, while the homonym for tataki (pounded) also means "joy aplenty." The third item consisted of a tiny clump of intensely flavored soy-caramelized sardines that tasted like ocean candy. Called tazukuri, meaning "paddy-tilling," the sticky fish symbolized hopes for a good harvest, since in ancient times, farmers used chopped sardines along with ash for fertilizer.
