Brine 8 cups water ¼ cup kosher salt 1 tablespoon sorghum (see Resources) Wings 6 chicken wings, cut into tips and drumettes 3 tablespoons green peanut oil (see Resources) 1 tablespoon Husk BBQ Rub ¾ cup thinly sliced scallions (white and green in equal parts) ½ cup dry-roasted peanuts, preferably Virginia peanuts, chopped Sauce 10 scallions, trimmed 1 tablespoon peanut oil Kosher salt 1 cup Husk BBQ Sauce 1 tablespoon Bourbon Barrel Foods Bluegrass Soy Sauce (see Resources) 1 cup cilantro leaves Equipment 1 pound hickory chips Charcoal chimney starter 3 pounds hardwood charcoal Kettle grill For the brine: Combine the ingredients for the brine. I brine the wings using either a heavy-duty plastic bag that the wing tips can’t puncture or a Cryovac machine (you use a lot less brine this way). Place the wings in the brine and turn to cover well. Refrigerate overnight. Soak the wood chips in water for a minimum of 30 minutes but preferably overnight. For the sauce: Toss the scallions in the peanut oil and season with salt. Lay them out on the grill rack and heavily char them on one side, about 8 minutes (the charred side should be black). Remove them from the grill and cool for about 5 minutes. Clean the grill rack if necessary. Put the scallions and the remaining sauce ingredients in a blender and process until smooth, about 3 minutes. Set aside at room temperature. For the wings: Fill a chimney starter with 3 pounds hardwood charcoal, ignite the charcoal, and allow to burn until the coals are evenly lit and glowing. Distribute the coals in an even layer in the bottom of a kettle grill. Place the grill rack as close to the coals as possible. Drain the wings; discard the brine. Dry the wings with paper towels, toss in the peanut oil, and season with the BBQ rub. Place the wings in a single layer on the grill rack over the hot coals and grill until they don’t stick to the rack anymore, about 5 minutes. Turn the wings over and grill for 8 minutes more. Transfer the wings to a baking sheet. Drain the wood chips. Lift the rack from the grill and push the coals to one side. Place the wood chips on the coals and replace the rack. After about 2 minutes, place the wings in a single layer over the side of the grill where there are no coals. Place the lid on the grill, with the lid’s vents slightly open; the vents on the bottom of the grill should stay closed. Smoke the wings for 10 minutes. It’s important to monitor the airflow of the grill: keeping the lid’s vents slightly open allows a nice steady flow of subtle smoke. Remove the wings from the grill, toss them in the sauce, and place them on a platter or in a serving pan. Top with the chopped scallions and peanuts and serve.

The town fair, which took place over the last weekend of August each year, was just over a month away. If their family agreed about anything, it was the town fair. Twiss loved the Wild West game and the spun sugar; their father loved the putting game and the caramel apples; their mother loved the bean counting game- last year she'd guessed 1,245 beans and won a forty-pound sack of kidney beans- and the Ferris wheel; and Milly loved what everyone else loved, except the livestock show and the amateur rodeo, where boys from the 4-H club wrestled calves to the ground for giant gold belt buckles. Milly also loved how the fair transformed the abandoned field behind the high school from twenty-five dandelion-inhabited acres that went unnoticed most of the year into a kind of fairy-tale place, where people sucked on cherry-flavored ice chips and honey-roasted peanuts, and the Ferris wheel went round and round, and the firecrackers reached higher and higher.

I began to delight in surprising adults with my refined palate and disgusting my inexperienced peers with what I would discover to be some of nature's greatest gifts. By the age of ten I had learned to break down a full lobster with my bare hands and a nutcracker. I devoured steak tartare, pâtés, sardines, snails baked in butter and smothered with roasted garlic. I tried raw sea cucumber, abalone, and oysters on the half shell. At night my mother would roast dried cuttlefish on a camp stove in the garage and serve it with a bowl of peanuts and a sauce of red pepper paste mixed with Japanese mayonnaise. My father would tear it into strips and we'd eat it watching television together until our jaws were sore, and I'd wash it all down with small sips from one of my mother's Coronas. Neither one of my parents graduated from college. I was not raised in a household with many books or records. I was not exposed to fine art at a young age or taken to any museums or plays at established cultural institutions. My parents wouldn't have known the names of authors I should read or foreign directors I should watch. I was not given an old edition of Catcher in the Rye as a preteen, copies of Rolling Stones records on vinyl, or any kind of instructional material from the past that might help give me a leg up to cultural maturity. But my parents were worldly in their own ways. They had seen much of the world and had tasted what it had to offer. What they lacked in high culture, they made up for by spending their hard-earned money on the finest of delicacies. My childhood was rich with flavor---blood sausage, fish intestines, caviar. They loved good food, to make it, to seek it, to share it, and I was an honorary guest at their table.

Thin with water to desired consistency—leave it thick to use as a dip, and thin it out to dress salads, vegetables, or meat. Taste with a leaf of lettuce, then adjust salt and acid as needed. Refrigerate leftovers, covered, for up to 3 days. Ideal for cucumbers, rice or soba noodles, romaine, and serving alongside grilled or roasted chicken, steak, or pork.

Baking, with her mother, Margaret Corcoran, Christmas cookies in the shapes of music notes, jingle bells, and double basses. Learning to roll piecrust. Yet her immersion in these skills, taught by her devoted mother, have over time created a hunger for another culture. James can see it in the focused way she examines the shabby restaurant. He can see it in the way she looks at him. It's a clinical look, a look of data collection, but also of loss. Why doesn't she do her research in China, where her biological mother lived and died? For the past three months, she'd been sticking rigorously to her diet. She ate an apple and a spoonful of peanut butter for breakfast, a salad with grilled chicken breast for lunch, and a Lean Cuisine for dinner. At work, she avoided the carb-heavy staff meals. One of the sous-chefs was always happy to roast her some chicken breast or salmon. She'd chew spearmint gum while she cooked, and allow herself just a taste of even her favorite dishes. At bedtime, after her mom had gone to bed, she would sneak into the kitchen to slug down a shot of the vodka that she kept in the freezer, with a squeeze of fresh lime. Without that final step, she faced a night lying in bed, listening to her mom snuffling and sighing and sometimes weeping through the thin bedroom door, tormented by thoughts of everything she wanted to eat, when she started eating again: brownies with caramel swirled on top, and a sprinkling of flaky sea salt on top of that. Spicy chicken wings; garlic with pea shoots; spicy tofu in sesame honey sauce, curried goat- from the Jamaican place she'd discovered- over rice cooked with saffron. Vanilla custard in a cake cone, topped with a shower of rainbow sprinkles; eclairs; sugar cookies dusted with green and red; and hot chocolate drunk in front of a fire.

Les Oeufs Jeannette (EGGS JEANNETTE) YIELD: 4 SERVINGS WHEN WE WERE KIDS, eggs were a staple on our table. Meat or poultry showed up there once a week at the most, and more often than not, our “meat” dinners consisted of a delicious ragout of potatoes or cabbage containing bits of salt pork or leftover roast. Eggs were always a welcome main dish, especially in a gratin with béchamel sauce and cheese, and we loved them in omelets with herbs and potatoes that Maman would serve hot or cold with a garlicky salad. Our favorite egg recipe, however, was my mother’s creation of stuffed eggs, which I baptized “eggs Jeannette.” To this day, I have never seen a recipe similar to hers, and we still enjoy it often at our house. Serve with crusty bread as a first course or as a main course for lunch. 6 jumbo eggs (preferably organic) 1 teaspoon chopped garlic 2 tablespoons chopped fresh parsley 2 to 3 tablespoons whole milk ¼ teaspoon salt ¼ teaspoon freshly ground black pepper 2 tablespoons vegetable oil (preferably peanut oil) DRESSING 2 to 3 tablespoons leftover egg stuffing (from above) 4 tablespoons extra-virgin olive oil 1 tablespoon Dijon-style mustard 2 to 3 tablespoons water Dash of salt and freshly ground black pepper FOR THE HARD-COOKED EGGS: Put the eggs in a small saucepan, and cover with boiling water. Bring to a very gentle boil, and let boil for 9 to 10 minutes. Drain off the water, and shake the eggs in the saucepan to crack the shells. (This will help in their removal later on.) Fill the saucepan with cold water and ice, and let the eggs cool for 15 minutes. Shell the eggs under cold running water, and split them lengthwise. Remove the yolks carefully, put them in a bowl, and add the garlic, parsley, milk, salt, and pepper. Crush with a fork to create a coarse paste. Spoon the mixture back into the hollows of the egg whites, reserving 2 to 3 tablespoons of the filling to use in the dressing. Heat the vegetable oil in a nonstick skillet, and place the eggs, stuffed side down, in the skillet. Cook over medium heat for 2 to 3 minutes, until the eggs are beautifully browned on the stuffed side. Remove and arrange, stuffed side up, on a platter. FOR THE DRESSING: Mix all of the dressing ingredients in a small bowl with a whisk or a spoon until well combined. Coat the warm eggs with the dressing, and serve lukewarm.

Life aboard ship was like living in paradise for my agile friend and he could have continued this way forever if he hadn't discovered a splendid new game. When the stevedores were loading or discharging the ship, Peanut would hop onto the edge of the hatch and urinate down on them. Oh what great fun he had, never thinking that they would object to what he was doing. At first they would try to catch him but he was far too agile for them. Not that I understood what they were saying but I knew enough to know that the stevedores were shouting Bassa swearwords at him. Frustrated they would flip him the bird as they climbed down into the hold, foiled again. What a wonderful time Peanut had! His safest refuge was on top of the Wheel House, where the stevedores couldn’t go. Sometimes as a place of last resort he would dive through the open porthole into my state room. He didn’t like the Engine Room, as an alternate route to safety, since it was too hot and noisy. Besides the engineers didn’t much like a monkey messing with their things and who knows what trouble he could get into down there? Peanut, was wonderful entertainment when visitors came aboard. The Pan American flight attendants, they were called stewardesses back then, thought him adorable. I always had roasted peanuts for them to feed him, which he would pick and chew apart, littering the deck. The stewardess’s that came for my famous pizza parties always tried to pick him up and cuddle with him. Monkeys are unpredictable so I cautioned them to be careful but being such a cute little guy they seldom were. Ear rings were a favorite piece of jewelry to tug on, causing the ladies to scream. Most often he would let go but the wings above their pockets was another matter. Peanut would yank and pull on the insignia until it was his. I knew where he usually hid his loot and so could return their stuff but some of the stewardesses flew home without their wings.
