It’s getting a bowl of food that doesn’t have an agenda. The ingredients are the ingredients because they work and nothing more. These noodles were transcendent not because he used the best produce or protein or because it was locally sourced, but because he worked his dish. You can’t buy a championship. Did this old man invent Dan-Dan Mian? No. But did he perfect it with techniques and standards never before seen? Absolutely. He took a dish people were making in homes, made it better than anyone else, put it on front street, and established a standard. That’s professional cooking. To take something that already speaks to us, do it at the highest level, and force everyone else to step up, too. Food at its best uplifts the whole community, makes everyone rise to its standard. Putting your time in at the office; dutifully spawning your two point five; smiling politely at your retirement party; then chewing on your bedsheet and choking on your canned peaches at the nursing home. Chicken Salad à la Danny Kaye YIELD: 4 SERVINGS TO MOST AMERICANS, Danny Kaye is remembered as a splendid comedian and actor. I think of him as a friend and one of the finest cooks I have ever known. In every way, Danny was equal to or better than any trained chef. His technique was flawless. The speed at which he worked was on par with what you’d find in a Parisian brigade de cuisine. Danny taught me a great deal, mostly about Chinese cuisine, his specialty. Whenever I traveled to Los Angeles, Danny picked me up at the airport and took me to his house, where we cooked Chinese or French food. His poached chicken was the best I have ever had. His method was to put the chicken in a small stockpot, cover it with tepid water seasoned with salt, peppercorns, and vegetables, and cook it at a gentle boil for only 10 minutes, then set it aside off the heat for 45 minutes. As an added touch, he always stuck a handful of knives, forks, and spoons into the cavity of the chicken, to keep it submerged. The result is so moist, tender, and flavorful that I have used the recipe—minus the flatware—ever since. CHICKEN 1 chicken, about 3½ pounds ½ cup sliced carrot 1 cup sliced onion 1 small leek, washed and left whole 1 rib celery, washed and left whole 1 teaspoon salt ¼ teaspoon black peppercorns 2 sprigs thyme 2 bay leaves About 7 cups tepid water, or more if needed DRESSING 2 tablespoons Dijon-style mustard 1 tablespoon white wine vinegar 1 teaspoon finely chopped garlic ¼ teaspoon salt ¼ teaspoon freshly ground black pepper ½ teaspoon Tabasco hot pepper sauce 5 tablespoons extra-virgin olive oil GARNISHES 1 dozen Boston lettuce leaves, cleaned 2 dozen fresh tarragon leaves FOR THE CHICKEN: Place the chicken breast side down in a tall, narrow pot, so it fits snugly at the bottom. Add the remaining poaching ingredients. The chicken should be submerged, and the water should extend about 1 inch above it. Bring to a gentle boil, cover, and let boil gently for two minutes. Remove the pot from the heat, and set it aside to steep in the hot broth for 45 minutes. Remove the chicken from the pot, and set it aside on a platter to cool for a few minutes. (The stock can be strained and frozen for up to 6 months for use in soup.) Pick the meat from the chicken bones, discarding the skin, bones, and fat. Shred the meat with your fingers, following the grain and pulling it into strips. (The meat tastes better shredded than diced with a knife.) FOR THE DRESSING: Mix together all the dressing ingredients in a bowl large enough to hold the chicken salad. Add the chicken shreds to the dressing and toss well. Arrange the Boston lettuce leaves in a “nest” around the periphery of a platter, and spoon the room-temperature chicken salad into the center. Sprinkle with the tarragon leaves and serve.

But the Japanese military remained split between those favoring a strike north against the hated Communist Soviet Union or south to grab the resources of Southeast Asia. The United States fleet remained an obstacle to both strategies. The navy stuck to its war plan of an ambush of the U.S. fleet in home waters. That way Japanese gunships could carry more guns and less fuel. But carrier admirals such as Yamamoto would need more oil to fuel far-striking carriers and their planes. The hawks itched for action in either direction. They rolled leaves of cabbages and chewed on them like monkeys. They ate the golden potatoes as if they were apples. By the time they returned to the making of stock, and took the roasted veal bones from the stove and put them into the pot and filled it with enough cold water so that it could slowly simmer, their own legs no longer ached, their feet felt as if they could stand the weight of their bones for yet another day and they tasted of garlic and wine. "Thank you, chef," he said. "Thank you, chef." She opened the cheese larder and took out a wedge of runny Camembert, which she covered with a handful of white raspberries that he had draining in a colander by the sink. He opened a bottle of port. The dishes could wait. They sat on the back stairs of the tall thin house and looked over the lights of the steep city of Monte Carlo and out into the endless sea. The air was cool, the cheese and raspberries were rich and tart; the port was unfathomably complex with wave and wave of spiced cherries, burnt caramel and wild honey.

Cass didn’t fight it when Falco leaned in and kissed her. She didn’t resist as he tipped her gently backward and laid her down on the wooden bottom of the batèla. Just be who you are. The small boat rocked underneath her, swaying with the gentle current of the canal. The weight of his chest pressed down on her rib cage, her hip bones pressed against his, even through the many layers of garments she wore. She felt a rush of warmth, a heat that made her forget everything else that had been bothering her. It was like she had slipped outside of her skin, and that only her soul, her essence, lay in the boat with Falco. As Falco traced her hairline with his lips, he reached behind her back and loosened the ties of her bodice. He stroked the bare skin of her upper back. Cass couldn’t believe how warm his hands felt. She let her own hands wander beneath the hem of his shirt. Her fingers traced his muscles--first the stomach and then the chest. His pounding heartbeat accelerated as they kissed. Her own blood raced through her veins, trying to keep up. Again Cass thought of the way the body was a single thing, yet was made up of so many different parts all working together. She could barely believe this was happening. She felt like a stranger, a wild, impulsive stranger. “Cassandra,” Falco murmured. He reached up and twisted all her hair into one of his hands, pulling it slightly as he held it behind her head. His lips made their way across her cheek and her jaw and her brow bone. His other hand caressed her left leg through her cotton stocking. His fingers followed the repeating diamond pattern embossed into her leather garter and then stroked the soft skin just above it. Cass felt transported by his touch, his soft voice, and the mist rising off the canals. Everything felt otherworldly. It was a dream or a hallucination. Any moment now she’d wake up tucked beneath her covers with Slipper snuggled against her chest. Just let go.
