On Hell’s Kitchen, when Gordon Ramsay pretends that the criminally inept, desperately unhealthy gland case in front of him could ever stand a chance in hell of surviving even three minutes as “executive chef of the new Gordon Ramsay restaurant” (the putative grand prize for the finalist), I’m inexplicably actually angry on Gordon’s behalf. And he’s the one making a quarter-million dollars an episode—very contentedly, too, from all reports. The eye-searing “Kwanzaa Cake” clip on YouTube, of Sandra Lee doing things with store-bought angel food cake, canned frosting, and corn nuts, instead of being simply the unintentionally hilarious viral video it should be, makes me mad for all humanity. I. Just. Can’t. Help it. I wish, really, that I was so far up my own ass that I could somehow believe myself to be some kind of standard-bearer for good eating—or ombudsman, or even the deliverer of thoughtful critique. But that wouldn’t be true, would it? I’m just a cranky old fuck with what, I guess, could charitably be called “issues.” And I’m still angry. But eat the fucking fish on Monday already. Okay? I wrote those immortal words about not going for the Monday fish, the ones that’ll haunt me long after I’m crumbs in a can, knowing nothing other than New York City. And times, to be fair, have changed. Okay, I still would advise against the fish special at T.G.I. McSweenigan’s, “A Place for Beer,” on a Monday. We could not figure out the ordering system, but we listed off ingredients we liked and ended up with two pancakes' worth of batter teeming with squid, octopus, sliced negi, and pickled ginger. The waiter dropped off a big bowl of unmixed pancake fixings and a couple of spatulas and assumed we would know how to do the rest. Every time we did something wrong, he sucked in his breath (a very common sound in Japan, at least in my presence) and intervened. Every time we did something right, he gave the thumbs-up and a Fonzie-like grunt of approval. Now that I've cooked two okonomiyaki and am certified by the Vera Okonomiyaki Napoletana Association, I can tell you how it's done. If your okonomiyaki has a large featured ingredient like strips of pork belly, set it aside to go on top; don't mix it in. Stir everything else together really well. Pour some oil onto the griddle and smooth it out into a thin film with a spatula. Dump the batter onto the griddle and shape it into a pancake about 1/2 to 3/4 inch thick. If you have pork strips, lay them over the top now like you're making bacon-wrapped meatloaf. Now wait. And wait. And wait. If little bits of egg seep out around the edge of your pancake, coax them back in. It takes at least five minutes to cook the first side of an okonomiyaki. Maybe ten. Maybe thirty. If you're not hungry enough to drink a tureen of raw batter, it's not ready. Finally, when it's brown on the bottom, slide two spatulas underneath and flip with confidence. Now wait again. When the center is set and the meat is crispy, cut it into wedges and serve with okonomiyaki sauce, mayo, nori, and fish flakes. If you haven't had okonomiyaki sauce, it's a lot like takoyaki sauce. John and Paul, who once made music together with such passion, excitement and brilliance, had found it harder and harder to get on together as the sixties drew to a close. Their musical ideas and tastes were diverging as Paul went on writing ballads, like “Hey Jude,” while John wrote raw and challenging songs like “Hey Jude”’s B side, “Revolution,” commemorating the international student riots of 1968. The Magical Mystery Tour film had been their first project after Brian’s death and Paul had organized it; John had backed off. Manga represents and extremely unfiltered view of the inner workings of their creator's minds. This is because manga are free of the massive editing and "committee"-style production used in other media like film, magazines and television. Even in American mainstream comics, the norm is to have a stable of artists, letterers, inkers, and scenario writers all under the control of the publisher. In Japan, a single artist might employ many assistants and act as a sort of "director," but he or she is usually at the core of the production process and retains control over the rights to the material created. That artists are not necessarily highly educated and deal frequently in plain subject matter only heightens the sense that manga offer the reader an extremely raw and personal view of the world. Thus, of the more than 2 billion manga produced each year, the vast majority have a dreamlike quality. They speak to people's hope, and fears. They are where stressed-out modern urbanites daily work out their neuroses and their frustrations. Viewed in their totality, the phenomenal number of stories produced is like the constant chatter of the collective unconscious -- and articulation of the dream world. Reading manga is like peering into the unvarnished, unretouched reality of the Japanese mind.

It's hard to find vocabulary for weather this cold. The senses first become sharp and then dulled. Objects etch themselves with hyperclarity on the dense air, but it's hard to keep your eyes open to look at them steadily. When you first step outside from a heated space, the blast from 46-below-zero air clears the mind like a ringing slap. After a breath or two, ice builds up on the hairs of your nasal passages and the clear film bathing your eyeballs thickens. If the wind is calm and your body, head, and hands are covered, you feel preternaturally alert and focused. At first. A dozen paces from the door, your throat begins to feel raw, your lips dry and crack, tears sting the corners of your eyes. The cold becomes at once a knife and, paradoxically, a flame, cutting and scorching exposed skin.

Such questions were undecidable, and therefore 'reality' would always be elusive: at the very moment when it seemed that it was being grasped into the raw, reality transformed into what Baudrillard, in a much misunderstood neologism, called 'hyperreality'.

Let’s call it the theory of receptivity. It’s the idea, often cited by young people in their case against the relevance of even marginally older people, that one’s taste—in music or film, literature or fine cuisine—petrifies during life’s peak of happiness or nadir of misery. Or maybe it’s not that simple. Maybe a subtler spike on the charts—upward, downward, anomalous points in between—might qualify, so long as it’s formative. Let’s say that receptivity, anyway, can be tied to the moments when, for whatever reason, a person opens herself to the things we can all agree make life worth living in a new and definitive way, whether curiosity has her chasing down the world’s pleasures, or the world has torn a strip from her, exposing raw surface area to the winds. During these moments—sleepaway camp right before your bar mitzvah; the year you were captain of the hockey team and the baseball team; the time after you got your license and before you totaled the Volvo—you are closely attuned to your culture, reaching out and in to consume it in vast quantities. When this period ends, your senses seal off what they have absorbed and build a sensibility that becomes, for better or worse, definitive: This is the stuff I like. These films/books/artists tell the story of who I am. There is no better-suited hairstyle. This is as good/bad as it gets for me. The theory suggests that we only get a couple of these moments in life, a couple of sound tracks, and that timing is paramount. If you came of age in the early eighties, for instance, you may hold a relatively shitty cultural moment to be the last time anything was any good simply because that was the last time you were open and engaged with what was happening around you, the last time you felt anything really—appallingly—deeply. I worry about this theory. I worry because it suggests that receptivity is tied closely to youth, and firsts, and also because as with many otherwise highly rejectable theories—Reaganomics and communism come to mind—there is that insolent nub of truth in it.

But film sometimes flinches at the expertise of actresses, and the sympathetic viewer may come to realize that there was a mute honesty in Novak: she did not conceal the fact that she had been drawn into a world capable of exploiting her. Filming seemed an ordeal for her; it was as if the camera hurt her. But while many hostile to the movies rose in defense of the devastation of Marilyn Monroe—whether or not she was a sentient victim—Novak was stoical, obdurate, or sullen. She allowed very few barriers between that raw self and the audience and now looks dignified, reflective, and responsive to feeling where Monroe appears haphazard and oblivious. Novak is the epitome of every small-town waitress or beauty contest winner who thought of being in the movies. Despite a thorough attempt by Columbia to glamorize her, she never lost the desperate attentiveness of someone out of her depth but refusing to give in. Her performances improve with time so that ordinary films come to center on her; even Vertigo, Hitchcock’s masterpiece, owes some of its power to Novak’s harrowing suspension between tranquility and anxiety.
