Ingredients: 12 ounces flour 4 ounces breadcrumbs 1 teaspoon baking powder ½ teaspoon baking soda 1 or ½ teaspoon salt 1 teaspoon mixed spice (cinnamon, nutmeg, cloves) 1 pound dark brown sugar (plus extra for the blacking) 2 teaspoons vanilla 1 pound butter (4 sticks), at room temperature 12 eggs 5 to 6 cups dried fruit (raisins, prunes, currants), soaked at least 4 months in white or dark rum and port to cover. If using, dates and maraschino cherries should only be added at mixing time. Instructions: Preheat the oven to 350°F. Add all the dry ingredients to a bowl and blend. In a separate bowl, rub together the sugar and butter, or use a mixer on low, until smooth and fluffy. Add vanilla. Add 1 egg, mix 1-1 ½ minutes, add 1 ⅓ ounces flour-breadcrumbs mixture. Repeat until all eggs and flour are gone. Mix in the blacking. Make the blacking by melting brown sugar in a saucepan over low heat until it is caramelized. You will need more than you think! Puree half the fruits in a blender. Combine and add to the batter. Grease two cake tins. Cut wax paper circles to line the bottoms of the tins. Pour in the batter until the tins are three-quarters full. To bake: Place the tins on the middle rack of the oven. Place a separate pan filled with tap water on the rack beneath. Bake for 1 to 2 hours, until the cake starts to pull away from the side of the pan and a knife inserted into the middle comes out dry. Depends on oven, tin size, and weather.

STUFFIN’ MUFFINS Preheat oven to 350 degrees F., rack in the middle position. 4 ounces salted butter (1 stick, 8 Tablespoons, ¼ pound) ½ cup finely chopped onion (you can buy this chopped or chop it yourself) ½ cup finely chopped celery ½ cup chopped apple (core, but do not peel before chopping) 1 teaspoon powdered sage 1 teaspoon powdered thyme 1 teaspoon ground oregano 8 cups herb stuffing (the kind in cubes that you buy in the grocery store—you can also use plain bread cubes and add a quarter-teaspoon more of ground sage, thyme, and oregano) 3 eggs, beaten (just whip them up in a glass with a fork) 1 teaspoon salt ½ teaspoon black pepper (freshly ground is best) 2 ounces (½ stick, 4 Tablespoons, pound) melted butter ¼ to ½ cup chicken broth (I used Swanson’s) Hannah’s 1st Note: I used a Fuji apple this time. I’ve also used Granny Smith apples, or Gala apples. Before you start, find a 12-cup muffin pan. Spray the inside of the cups with Pam or another nonstick cooking spray OR line them with cupcake papers. Get out a 10-inch or larger frying pan. Cut the stick of butter in 4 to 8 pieces and drop them inside. Put the pan over MEDIUM heat on the stovetop to melt the butter. Once the butter has melted, add the chopped onions. Give them a stir. Add the chopped celery. Stir it in. Add the chopped apple and stir that in. Sprinkle in the ground sage, thyme, and oregano. Sauté this mixture for 5 minutes. Then pull the frying pan off the heat and onto a cold burner. In a large mixing bowl, combine the 8 cups of herb stuffing. (If the boxed stuffing you bought has a separate herb packet, just sprinkle it over the top of the mixture in your frying pan. That way you’ll be sure to put it in!) Pour the beaten eggs over the top of the herb stuffing and mix them in. Sprinkle on the salt and the pepper. Mix them in. Pour the melted butter over the top and mix it in. Add the mixture from your frying pan on top of that. Stir it all up together. Measure out ¼ cup of chicken broth. Wash your hands. (Mixing the stuffing is going to be a lot easier if you use your impeccably clean hands to mix it.) Pour the ¼ cup of chicken broth over the top of your bowl. Mix everything with your hands. Feel the resulting mixture. It should be softened, but not wet. If you think it’s so dry that your muffins might fall apart after you bake them, mix in another ¼ cup of chicken broth. Once your Stuffin’ Muffin mixture is thoroughly combined, move the bowl close to the muffin pan you’ve prepared, and go wash your hands again. Use an ice cream scoop to fill your muffin cups. If you don’t have an ice cream scoop, use a large spoon. Mound the tops of the muffins by hand. (Your hands are still impeccably clean, aren’t they?) Bake the Stuffin’ Muffins at 350 degrees F. for 25 minutes. Yield: One dozen standard-sized muffins that can be served hot, warm, or at room temperature. Hannah’s 2nd Note: These muffins are a great accompaniment to pork, ham, chicken, turkey, duck, beef, or . . . well . . . practically anything! If there are any left over, you can reheat them in the microwave to serve the next day. Hannah’s 3rd Note: I’m beginning to think that Andrea can actually make Stuffin’ Muffins. It’s only April now, so she’s got seven months to practice.

Finally another train did pull into the station but in stark contrast to the empty platform we were standing on, the train was completely full of people. Although he wasn’t that big of a man, Herr Schreiner pushed my suitcases up the two steps into the railway car, and I climbed up behind them. As the train left the station, he hung onto the two entrance handles right behind me and I pushed for space, trying to make enough room for him to get into the carriage. With every surge of the train I expected him to lose his grip but with what I am certain was superhuman strength, he hung on as the train picked up speed. Several of the people made snide remarks but I turned a deaf ear to this and pushed as hard as I could, so that he could also get in. With the help of another man pulling on his coat, Herr Schreiner finally managed to squeeze in far enough so that we could close the door behind him. Once safely on the train, someone from his school in Mannheim recognized him. Herr Schreiner had been a very popular, much admired school principal and seeing how tired and bedraggled we now looked, the passenger offered us his window seats and helped to make room so that we could store our suitcases in the luggage rack above our heads. The train didn’t make any more stops and continued east crossing the Rhine River Bridge, which miraculously was still there. I couldn’t believe that everything had come together as well as it had, and that I was on my way back to Überlingen and my children.

Caramel Apple Bundt Cake For people. Cake 1½ cups flour 1 cup pecans 2 teaspoons baking powder ½ teaspoon baking soda 1½ teaspoons cinnamon ¾ teaspoon nutmeg ¾ teaspoon cloves ¼ teaspoon salt 2 medium apples, peeled and cored ½ cup sugar + extra 1¼ sticks (10 tablespoons) butter at room temperature + extra for greasing the pan 1 cup packed dark brown sugar 2 large eggs at room temperature 1 cup applesauce Preheat oven to 350ºF. Place the flour, pecans, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a food processor and pulse until the pecans are fine. Transfer the flour mixture to a bowl. Insert the grating disk and grate the apples. Take 1 tablespoon of sugar out of the plain sugar and set it aside. Cream the butter with the sugars. Beat in the eggs. Alternate adding the applesauce and the flour mixture until completely combined. Stir in the grated apples. Grease the Bundt pan liberally. Sprinkle the extra sugar on the butter. You may need another tablespoon of sugar for full coverage. Use a cooking spoon to ladle the batter into the Bundt pan and smooth the top. Bake 40 minutes or until it begins to pull away from the sides and a cake tester comes out clean. Allow to rest on a baking rack about 5 to 10 minutes. Loosen the edges, and flip onto the rack. When cool, top with caramel. Caramel 4 tablespoons unsalted butter 1 cup packed dark brown sugar ¼ cup heavy cream Place the ingredients in a deep microwave-safe dish (I used a 4-cup Pyrex measuring cup). Microwave in short bursts, stirring occasionally, until it bubbles up and the sugar melts. (You may find that you even like it if the sugar doesn’t melt!) Swedish Tea Ring For people.

I put my hand on the back of his neck and pulled his face toward the water. He closed his eyes and let it hit his cheeks. His trembling fingers sought mine, and he clutched my hand against his chest, against his armor. We stood together for a long time, until his tears subsided. Then I turned the water off, and led him into the kitchen, scattering mirror pieces with my toes as I walked. He was staring into middle distance. I wasn’t sure that he knew where he was, or what was happening to him. I undid the straps of his armor and guided it over his head; I pinched the hem of his shirt and peeled the wet fabric away from his body; I unbuttoned his pants and let them drop to the floor in a soaking-wet heap. I had daydreamed about seeing him this way, and even about one day undressing him, taking away some of the layers that separated us, but this was not a daydream. He was in pain. I wanted to help him.

It projects an air of humor and concern. It moves its head to and fro while seeking a clearer understanding. Ella studies the bird. It is surrounded in lofty bends and stretches of leafless, acorn-less, nearly lifeless, oak trees. Like fingers and arms these branches reach below. [Perhaps they are reaching for us? Rest assured; if they had designs on us, I would be someplace else, writing about something more pleasant and less frightening. Of course, you would be asleep.] Balanced in the branches is a chair. It is from Ella's childhood home. The chair sways. Ella imagines modern-day pilgrims of a distant shore. Each step is as if Mother Nature will position them upright like dolls, blown from the stability of their plastic, flat, toe-less feet. These pilgrims take fate by the hand. LIFTING A TOWEL and patting her mouth and hands, Ella pulls the towel through the rack. She walks to the bedroom, sits and picks up the newspaper. Thumbing through pages that leave fingertips black, she reads headlines: "Former Dentist Guilty of Health Care Fraud." She flips the page, pinches the tip of her nose and brushes the edge of her chin -- smearing both with ink. In the middle fold directly affront her eyes is another headline: "Dentist Punished for Misconduct." She turns the page. There is yet another: "Dentist guilty of urinating in surgery sink and using contaminated dental instruments on patients." This world contains those who are simply insane! Every profession has those who stray from goals....

MONKEY BREAD   Preheat oven to 350 degrees F., rack in the middle position. 1 and ¼ cups white (granulated) sugar 1 and ½ teaspoons ground cinnamon 4 cans (7.5 ounce tube) unbaked refrigerated biscuits (I used Pillsbury) 1 cup chopped nuts of your choice (optional) 1 cup chocolate chips (optional) (that’s a 6-ounce size bag) ½ cup salted butter (1 stick, 4 ounces, ¼ pound) Hannah’s 1st Note: If you prefer, you can use 16.3 ounce tubes of Pillsbury Grands. If you do this, buy only 2 tubes. They are larger—you will use half a tube for each layer. Tony’s Note: If you use chocolate chips and/or nuts, place them between each biscuit layer. Spray the inside of a Bundt pan with Pam or another nonstick cooking spray. Set your prepared pan on a drip pan just in case the butter overflows. Then you won’t have to clean your oven. Mix the white sugar and cinnamon together in a mixing bowl. (I used a fork to mix it up so that the cinnamon was evenly distributed.) Open 1 can of biscuits at a time and break or cut them into quarters. You want bite-size pieces. Roll the pieces in the cinnamon and sugar mixture, and place them in the bottom of the Bundt pan. Sprinkle one-third of the chopped nuts and one-third of the chocolate chips on top of the layer, if you decided to use them. Open the second can of biscuits, quarter them, roll them in the cinnamon and sugar, and place them on top of the first layer. (If you used Pillsbury Grands, you’ll do this with the remainder of the first tube.) Sprinkle on half of the remaining nuts and chocolate chips, if you decided to use them. Repeat with the third can of biscuits (or the first half of the second tube of Grands). Sprinkle on the remainder of the nuts and chocolate chips, if you decided to use them. Repeat with the fourth can of biscuits (or the rest of the Grands) to make a top layer in your Bundt pan. Melt the butter and the remaining cinnamon and sugar mixture in a microwave safe bowl on HIGH for 45 seconds. Give it a final stir and pour it over the top of your Bundt pan. Bake your Monkey Bread at 350 degrees F. for 40 to 45 minutes, or until nice and golden on top. Take the Bundt pan out of the oven and let it cool on a cold burner or a wire rack for 10 minutes while you find a plate that will fit over the top of the Bundt pan. Using potholders or oven mitts invert the plate over the top of the Bundt pan and turn it upside down to unmold your delicious Monkey Bread. To serve, you can cut this into slices like Bundt cake, but it’s more fun to just let people pull off pieces with their fingers. Hannah’s 2nd Note: If you’d like to make Caramel Monkey Bread, use only ¾ cup of white sugar. Mix it with the cinnamon the way you’d do if it was the full amount of white sugar. With practice, your clean becomes a smooth, rhythmic movement that you can sustain for extended lengths of time, although it may take hundreds of practice repetitions before it flows and becomes polished. Resting the kettlebell on the forearm is a distinguishing characteristic of kettlebells that makes them behave differently than dumbbells and makes them effective for developing the fitness that comes with high-repetition resistance training. By placing most of the load on the forearm, the muscles of the hand and grip are able to relax. It takes practice before the kettlebell will move smoothly in your hand and into position. Sometimes you will have bad repetitions and the kettlebell will crash into your forearm. To make this learning process a little kinder, you can wear wrist wraps or wristbands. In time your technique will become more polished and the kettlebell will just float into position on your arm in cleans and snatches, and at that point you may prefer to not use any wraps at all. However, it is an option for those with more tender arms—no sense giving yourself bruises if you do not need to. With the kettlebell on the floor, sit back with your hips and grip the handle with the fingers of one hand (see figure 7.11, a and b). Swing the kettlebell back through your legs as you did in the one-handed swing (see figure 7.11c), and as it swings forward, keep your forearm braced against your body (see figure 7.11d). During the swing, your arm comes away from the body as inertia pulls the kettlebell forward and up. During the clean, on the other hand, the arm does not disconnect from body, and at the point where the arm would disconnect during the swing, it instead moves vertically along the front of your body. Imagine you are standing inside a chimney. The walls of the chimney block you so that you cannot move out or to the side; you can only move the kettlebell up and down the chimney wall. When the hips reach forward extension, pull with the hip on the working side and give a gentle tug with your trapezius on the same side, pulling the kettlebell up the chimney (see figure 7.11e). Before the kettlebell settles to the chest, loosen your grip and open your hand to insert your fingers as deeply into the handle as you can at a curved angle until the medial portion of your forearm, the ulna, blocks you from inserting the hand any further (see figure 7.11f). Shaping the mounds of dough is easiest to do with a spring-loaded ice cream scoop, although you can use two spoons or a pastry bag with a large, plain tip. 1 cup (250 ml) water ½ teaspoon coarse salt 2 teaspoons sugar 6 tablespoons (90 g) unsalted butter, cut into small chunks 1 cup (135 g) flour 4 large eggs, at room temperature ½ cup (85 g) semisweet chocolate chips ½ cup (60 g) pearl sugar (see Note) Position a rack in the upper third of the oven. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat. Heat the water along with the salt, sugar, and butter in a medium saucepan, stirring, until the butter is melted. Remove from heat and dump in all the flour at once. Stir rapidly until the mixture is smooth and pulls away from the sides of the pan. Allow the dough to cool for 2 minutes, stirring occasionally to release the heat; then briskly beat in the eggs, one at a time, until the paste is smooth and shiny. Let cool completely to room temperature, then stir in the chocolate chips. If it’s even slightly warm, they’ll melt. Drop mounds of dough, about 2 tablespoons each, on the baking sheet, evenly spaced. Press pearl sugar crystals liberally over the top and sides of each mound. Use a lot and really press them in. Once the puffs expand, you’ll appreciate the extra effort (and sugar). Bake the chouquettes for 35 minutes, or until puffed and well browned. Serve warm or at room temperature. STORAGE: Choquettes are best eaten the same day they’re made. However, once cooled, they can be frozen in a zip-top freezer bag for up to one month. Defrost at room temperature, then warm briefly on a baking sheet in a moderate oven, until crisp.

Cover and refrigerate for at least 1 hour and up to overnight. When you’re ready to bake, move the middle oven rack up one level and preheat the oven to 350°F. Line several baking sheets with parchment paper or silicone mats. Lightly flour a 2-inch cookie cutter or the rim of a small glass, your rolling pin, and a work surface. Turn out half the dough and roll it to an even thickness of ¼ inch. Cut out the cookies, transferring them to the prepared baking sheets, where they should be spaced 1 inch apart. The cookies will spread as they bake. Re-flour the cookie cutter and rolling pin and reroll the dough. Gather up the scraps and reuse them as needed. Guns are one of the many things which haven't changed as much as everyone thought they would. Sure, there was a period when you saw laser pistols on the streets. Problem was, it was a little too easy to catch a reflection in the heat of the moment and end up slicing your own head off. Also, they were just a bit plasticky. When you go marching into some bad situation you want to be racking a shell into a pump-action shotgun. It feels right. It feels tough. It scares the shit out of the other guy. Nervously fingering a little switch wasn't visceral enough and neither was the sound the lasers made. You don't want something which goes ‘tzzz’ or ‘schvip’. You want something which goes CRACK! or BANG! Trust me; I know what I'm talking about. The manufacturers tried to get round the problem by putting little speakers in the laser which played a sampled bang when you pulled the trigger, but it always sounded a bit tinny. And the ones that played a snatch of Chopin's Death March were just fucking silly. Then there was a phase of guns which had moral qualms. Originally, they came out of the home defence market. The guns had a built-in database of legal precedent, monitored any given situation closely, and wouldn't let you fire unless they were sure you had a good cause for a self-defence plea. Most of these guns had other settings too, like ‘Justifiable Homicide’, ‘Manslaughter’, ‘Murder Two’, and ultimately ‘Murder One’. I kept mine on ‘Murder One’ the whole time. So did everyone else. The whole thing was completely pointless. In the end I threw mine away.

In a medium bowl, whisk together the cocoa, sugar, salt, flour, and baking soda, then sift into a large bowl. In a medium bowl, stir the vanilla and oil together. Bring the water to a boil or brew the coffee. Add it to the oil-vanilla mixture. Make a well in the center of the dry ingredients and gradually whisk in the water-oil mixture until incorporated. Gradually whisk in the eggs and stir until smooth. The batter will be thin. Divide the batter evenly between the prepared pans. Drop the pan onto the counter from a height of 3 inches a couple of times to release any air bubbles that may have formed. Bake in the upper third of the oven for 25 to 30 minutes, until the cakes spring back from the touch and just pull away from the edges of the pan. An inserted toothpick should come out clean. Cool the cakes completely on a wire rack before unmolding them from the pan and peeling off the parchment paper. To serve, place one layer down on a cake plate.
