They didn’t consume too many sugars or fats for their unblemished guts to digest, or pop painkilling and antibiotic tablets to deal with the short-term symptoms of long-term problems that should be dealt with by wholesale lifestyle change. They didn’t drink or smoke. They were perfect and we should sling out all our stuff and emulate them. Except they had an average life expectancy of about 18 and the planet could only support a few hundred thousand of them. Apart from that, good plan.

The American who looked up from the raft was Second Lieutenant Conrad Bentzlin, a young man from a large Swedish-American family in Saint Paul, Minnesota. He was quiet and hardworking, having taught himself English in high school. He had paid his way through the University of Minnesota by working for the government’s Civilian Conservation Corps program, cutting firebreaks in the forests of northern Minnesota. Among his buddies of the 82nd Fighter Group, Bentzlin was known as “the smartest guy in the unit.” Far from shore Bentzlin floated alone. A day later, another flight of P-38s flew over him and, through a hole in the clouds, saw him waving his arms from a raft. But he was in the middle of the sea and they could do nothing. Bentzlin would never be seen again.*

And today, for the first time, we are given a real recipe: making chocolate pudding from scratch. We stir cocoa and cornstarch and sugar together, then stir in milk. Chef guides us step by step and we all clean our stations as the pudding chills. As I'm putting away my ingredients, a little red bottle in the pantry calls my attention. I snatch it up and sprinkle some on my pudding. When Chef Ayden calls us up to test our dishes, I'm the first student to set my bowl in front of him. He grabs a clean plastic spoon and pulls my dish closer to him, leaning down to inspect it, turning the dish slowly in a circle. "Mmm. Nice chocolate color, smooth texture; you made sure the cream didn't break, which is great. And I'm curious what this is on top." He takes a tiny spoonful and pops it into his mouth, and the moment his mouth closes around the spoon his eyelids close, too. I wonder if my cooking woo-woo will work on him. "What is that?" he asks, his eyes still closed. I assume he means the spice on top and not whatever memory may have been loosened by my pudding. His eyes open and I realize the question was in fact for me. "I used a little smoked paprika," I say. Heat creeps up my neck. I hadn't even thought about what would happen if I used an ingredient that wasn't in the original recipe. "You trying to show off, Emoni?" Chef Ayden asks me very, very seriously. "No, Chef. I wasn't." "The ancient Aztecs too would pair chocolate with chipotle and cayenne and other spices, although it is not so common now. Why'd you add it?" "I don't know. I saw it in the pantry and felt the flavors would work well together." He takes another spoonful. Chef told us from the beginning that since every student is evaluated, he would very rarely take more than one bite of any single dish. I'm surprised he does so now, but he closes his eyes again as if the darkness behind his lids will help him better taste the flavors. His eyes pop open. "This isn't bad." He drops his spoon. "Emoni, I think creativity is good. And this, this..." He gives a half laugh like he's surprised he doesn't know what to say. He clears his throat and it seems almost like a memory has him choked up.

Now, there are a few dryadologists who could resist the opportunity to sample faerie food, the enchanted sort served at the tables of the courtly fae---I know several who have dedicated their careers to the subject and would hand over their eye teeth for the opportunity. I stopped at a stand offering toasted cheese---a very strange sort of cheese, threaded with glittering mold. It smelled divine, and the faerie merchant rolled it in crushed nuts before handing it over on a stick, but as soon as it touched my palm, it began to melt. The merchant was watching me, so I put it in my mouth, pantomiming my delight. The cheese tasted like snow and melted within seconds. I stopped next at a stand equipped with a smoking hut. The faerie handed me a delicate fillet of fish, almost perfectly clear despite the smoking. I offered it to Shadow, but he only looked at me with incomprehension in his eyes. And, indeed, when I popped it into my mouth, it too melted flavorlessly against my tongue. I took a wandering course to the lakeshore, conscious of the need to avoid suspicion. I paused at the wine merchant, who had the largest stand. It was brighter than the others, snow piled up behind it in a wall that caught the lantern light and threw it back in a blinding glitter. I had to look down at my feet, blinking back tears, as one of the Folk pressed an ice-glass into my hand. Like the food, the wine smelled lovely, of sugared apples and cloves, but it slid eerily within the ice, more like oil than wine. Shadow kept growling at it, as he had not with the faerie food, and so I tipped it onto the snow. Beside the wine merchant was a stand offering trinkets, frozen wildflowers that many of the Folk threaded through their hair or wove through unused buttonholes on their cloaks, as well as an array of jewels with pins in them. I could not compare them to any jewels I knew; they were mostly in shades of white and winter grey, hundreds of them, each impossibly different from the next. I selected one that I knew, without understanding how, was the precise color of the icicles that hung from the stone ledges of the Cambridge libraries in winter. But moments after I pinned it to my breast, all that remained was a patch of damp.

But every once in a great while, the pull of her heritage would hit her, and Grand-mere would cook something real. I could never figure out what it was that triggered her, but I would come home from school to a glorious aroma. The thick smoked pork chops called Kasseler ribs, braised in apple cider and served with caraway-laced sauerkraut. A rich baked dish with sausages, duck, and white beans. And hoppel poppel. A traditional German recipe handed down from her mother. I haven't even thought of it in years. But when my mom left, it was the only thing I could think to do for Joe, who was confused and heartbroken, and it was my best way to try to get something in him that didn't come in a cardboard container. I never got to learn at her knee the way many granddaughters learn to cook; she never shared the few recipes that were part of my ancestry. But hoppel poppel is fly by the seat of your pants, it doesn't need a recipe; it's a mess, just like me. It's just what the soul needs. I grab an onion, and chop half of it. I cut up the cold cooked potatoes into chunks. I pull one of my giant hot dogs out, and cut it into thick coins. Grand-mere used ham, but Joe loved it with hot dogs, and I do too. Plus I don't have ham. I whisk six eggs in a bowl, and put some butter on to melt. The onions and potatoes go in, and while they are cooking, I grate a pile of Swiss cheese, nicking my knuckle, but catching myself before I bleed into my breakfast. By the time I get a Band-Aid on it, the onions have begun to burn a little, but I don't care. I dump in the hot dogs and hear them sizzle, turning down the heat so that I don't continue to char the onions. When the hot dogs are spitting and getting a little browned, I add the eggs and stir up the whole mess like a scramble. When the eggs are pretty much set, I sprinkle the cheese over the top and take it off the heat, letting the cheese melt while I pop three slices of bread in the toaster. When the toast is done, I butter it, and eat the whole mess on the counter, using the crispy buttered toast to scoop chunk of egg, potato, and hot dog into my mouth, strings of cheese hanging down my chin. Even with the burnt onions, and having overcooked the eggs to rubbery bits, it is exactly what I need.

So he was more than a bit surprised when the short, blonde skipper of the boat, wearing not much more than a camisole and panties smashed him out of the way like an NFL linebacker on her way aft. “MOVE PEOPLE!” the boat captain shouted, continuing to hammer her way through the crowd of refugees. * * * “Fuck a freaking duck,” Sophia said, opening the door to the engine compartment. The smoke wasn’t so bad she needed a respirator but it was bad. And they were dead in the water. All the power except the shrieking alarm was out. She threw the main battery disconnect, then picked up one of the industrial fire extinguishers and played it over the exterior of the main breakers which were the source of the fire. “Skipper?” Paula said, picking another one up. “We need to get it open before we use them all up,” Sophia said, putting her hand on the extinguisher. “Get Rusty to get all the passengers up, out and on the sundeck.” She slid one hand into a rubber glove and popped open the main breaker panel. The whole thing was smoldering so she played the rest of the fire extinguisher over it until it was cold. A tick checker showed that the whole thing was electrically cold as well. Now if only the batteries hadn’t discharged their whole load into the panel and killed themselves as well. “What can I do, Skipper?” Patrick said groggily. The “engineer” was wearing not much more than the skipper. “Get a hand-held,” Sophia said. “See if there’s a sub in range. Tell them we had a major electrical fire. Fire is under control. No power at this time. May be repairable but we may need assistance. Don’t at this time but may. Got it? Do not call mayday or PON-PON. On a break from the tour, I went south to Bali, a place the choreographer Toni Basil, whom Eno and I had met during the Bush Of Ghosts sessions, had recommended as being transporting and all about performance. I rented a small motorcycle and headed up into the hills, away from the beach resort. I soon discovered that if one saw offerings of flowers and fruit being brought to a village temple compound in the afternoon, one could be pretty certain that some sort of ritual performance would follow there at night. Sure enough, night after night I would catch dances accompanied by gamelan orchestras and shadow-puppet excerpts from the Hindu Ramayana--epic and sometimes ritual performances that blended religious and theatrical elements. (A gamelan is a small orchestra made up mainly of tuned metallic gongs and xylophone-like instruments--the interplay between the parts is beautiful and intricate.) In these latter events some participants would often fall into a trance, but even in trance there were prescribed procedures. It wasn't all thrashing chaos, as a Westerner might expect, but a deeper kind of dance. As In Japanese theater, the performers often wore masks and extreme makeup; their movements, too, were stylized and "unnatural." It began to sink in that this kind of "presentational" theater has more in common with certain kinds of pop-music performance that traditional Western theater did. I was struck by other peripheral aspects of these performances. The audiences, mostly local villagers of all ages, weren't paying attention half the time. People would wander in and out, go get a snack from a cart or leave to smoke a bidi cigarette, and then return to watch some more. This was more like the behavior of audiences in music clubs than in Western theaters, where they were expected to sit quietly and only leave or converse once the show was over. The Balinese "shows" were completely integrated into people's daily lives, or so it seemed to me. There was no attempt to formally separate the ritual and the show from the audience. Everything seemed to flow into everything else. The food, the music, and the dance were all just another part of daily activity. I remembered a story about John Cage, who, when in Japan, asked someone what their religion was. The reply was that they didn't have a strict religion--they danced. Japanese do, of course, have Buddhist and Shinto rituals for weddings, funerals, and marriages, but a weekly thing like going to church or temple doesn't exist. The "religion" is so integrated into the culture that it appears in daily gestures and routines, unsegregated for ordinary life. I was beginning to see that theatricality wasn't necessarily a bad thing. It was part of life in much of the world, and not necessarily phony either.

Lesson one: Pack light unless you want to hump the eight around the mountains all day and night. By the time we reached Snowdonia National Park on Friday night it was dark, and with one young teacher as our escort, we all headed up into the mist. And in true Welsh fashion, it soon started to rain. When we reached where we were going to camp, by the edge of a small lake halfway up, it was past midnight and raining hard. We were all tired (from dragging the ridiculously overweight packs), and we put up the tents as quickly as we could. They were the old-style A-frame pegged tents, not known for their robustness in a Welsh winter gale, and sure enough by 3:00 A.M. the inevitable happened. Pop. One of the A-frame pegs supporting the apex of my tent broke, and half the tent sagged down onto us. Hmm, I thought. But both Watty and I were just too tired to get out and repair the first break, and instead we blindly hoped it would somehow just sort itself out. Lesson two: Tents don’t repair themselves, however tired you are, however much you wish they just would. Inevitably, the next peg broke, and before we knew it we were lying in a wet puddle of canvas, drenched to the skin, shivering, and truly miserable. The final key lesson learned that night was that when it comes to camping, a stitch in time saves nine; and time spent preparing a good camp is never wasted. The next day, we reached the top of Snowdon, wet, cold but exhilarated. My best memory was of lighting a pipe that I had borrowed off my grandfather, and smoking it with Watty, in a gale, behind the summit cairn, with the teacher joining in as well. It is part of what I learned from a young age to love about the mountains: They are great levelers. For me to be able to smoke a pipe with a teacher was priceless in my book, and was a firm indicator that mountains, and the bonds you create with people in the wild, are great things to seek in life. (Even better was the fact that the tobacco was homemade by Watty, and soaked in apple juice for aroma. This same apple juice was later brewed into cider by us, and it subsequently sent Chipper, one of the guys in our house, blind for twenty-four hours. Oops.) If people ask me today what I love about climbing mountains, the real answer isn’t adrenaline or personal achievement. Mountains are all about experiencing a shared bond that is hard to find in normal life. I love the fact that mountains make everyone’s clothes and hair go messy; I love the fact that they demand that you give of yourself, that they make you fight and struggle. They also induce people to loosen up, to belly laugh at silly things, and to be able to sit and be content staring at a sunset or a log fire. That sort of camaraderie creates wonderful bonds between people, and where there are bonds I have found that there is almost always strength.

Slothrop is just settling down next to a girl in a prewar Worth frock and with a face like Tenniel’s Alice, same forehead, nose, hair, when from outside comes this most godawful clanking, snarling, crunching of wood, girls come running terrified out of the eucalyptus trees and into the house and right behind them what comes crashing now into the pallid lights of the garden but—why the Sherman Tank itself! headlights burning like the eyes of King Kong, treads spewing grass and pieces of flagstone as it manoeuvres around and comes to a halt. Its 75 mm cannon swivels until it’s pointing through the French windows right down into the room. “Antoine!” a young lady focusing in on the gigantic muzzle, “for heaven’s sake, not now. . . .” A hatch flies open and Tamara—Slothrop guesses: wasn’t Italo supposed to have the tank?—uh—emerges shrieking to denounce Raoul, Waxwing, Italo, Theophile, and the middleman on the opium deal. “But now,” she screams, “I have you all! One coup de foudre!” The hatch drops—oh, Jesus—there’s the sound of a 3-inch shell being loaded into its breech. Girls start to scream and make for the exits. Dopers are looking around, blinking, smiling, saying yes in a number of ways. Raoul tries to mount his horse and make his escape, but misses the saddle and slides all the way over, falling into a tub of black-market Jell-o, raspberry flavor, with whipped cream on top. “Aw, no . . .” Slothrop having about decided to make a flanking run for the tank when YYYBLAAANNNGGG! the cannon lets loose an enormous roar, flame shooting three feet into the room, shock wave driving eardrums in to middle of brain, blowing everybody against the far walls. A drape has caught fire. Slothrop, tripping over partygoers, can’t hear anything, knows his head hurts, keeps running through the smoke at the tank—leaps on, goes to undog the hatch and is nearly knocked off by Tamara popping up to holler at everybody again. After a struggle which shouldn’t be without its erotic moments, for Tamara is a swell enough looking twist with some fine moves, Slothrop manages to get her in a come-along and drag her down off of the tank. But loud noise and all, look—he doesn’t seem to have an erection. Hmm. This is a datum London never got, because nobody was looking. Turns out the projectile, a dud, has only torn holes in several walls, and demolished a large allegorical painting of Virtue and Vice in an unnatural act. Virtue had one of those dim faraway smiles. Vice was scratching his shaggy head, a little bewildered. The burning drape’s been put out with champagne. Raoul is in tears, thankful for his life, wringing Slothrop’s hands and kissing his cheeks, leaving trails of Jell-o wherever he touches. Tamara is escorted away by Raoul’s bodyguards. Slothrop has just disengaged himself and is wiping the Jell-o off of his suit when there is a heavy touch on his shoulder. “You were right. You are the man.” “That’s nothing.” Errol Flynn frisks his mustache. “I saved a dame from an octopus not so long ago, how about that?” “With one difference,” sez Blodgett Waxwing. “This really happened tonight. But that octopus didn’t.

Twenty-eight courses?" Dylan mused. "Get comfortable," Grace said with anticipation. They came on little spoons, tiny plates, in small glasses, atop mini-pedestals even speared and hung, suspended on custom-made wire serving devices like little edible works of art, which was entirely the point: mint-scented lamb lollypops, osetra and oysters on frothed tapioca, beet gazpacho and savory mustard shooters, foie gras porridge with a sweet ginger spritz in an atomizer, ankimo sashimi on house-made pop-rocks, plums in powdered yogurt, goat cheese marshmallows, venison maple syrup mastic, warm black truffle gumdrops with chilled sauternes centers. Foamed and freeze-dried, often accompanied by little spray bottles of fragrance and tiny scent-filled pillows, the food crackled and smoked and hissed and sizzled, appealing to all the senses. Thin slices of blast-frozen Kobe carpaccio were hung on little wire stands to thaw between courses at the table. All sorts of textures and presentations were set forth. Many were entirely novel and unexpected renderings of traditional dishes. Intrigued and delighted by the sensory spectacle, Dylan and Grace enjoyed the experience immensely, oohing and aahing, and mostly laughing. For as strange as each course might be, as curious as the decorative objects that presented them, each one was an adventure of sorts, and without exception, each one was delicious, some to the point of profound. And each one came with an expertly matched extraordinary wine, in the precisely correct Riedel glass.

After several courses, Dylan looked at the menu, noting that "Cheeseburger" was next up. "Okay, this is something I recognize," he said with relief. "Don't get too excited," said Grace knowingly as she sipped the last of a bright and barnyard funky Romanee-Saint-Vivant from a big-bowled burgundy stem. The waiter stepped out of the shadows and set two servings of the next course on the table simultaneously. Another server placed two very large Bordeaux stems on the table, and then carefully filled each with just one and a half ounces of wine. "This is Chef's cheeseburger," the waiter said. "Paired with the '70 Latour." The waiter and other server then backed away. Dylan and Grace leaned forward, examining the strange creation. It smelled amazing, though it looked much more like something from a science class than from a Michelin-starred restaurant-- a tiny piece of freeze-dried cheese on a teaspoon of bison tartare, lying atop a small lettuce pillow that had been filled with Vidalia onion smoke. It sat on a small warm open-face wheat bun, and the whole thing was presented on a miniature plate on which was a little pool of foamed heirloom tomato, and another of foamed mustard seed. And it was all topped with a few droplets of pureed brined Japanese cucumber. Dylan just stared at it. "I feel like it belongs in a museum." "I know. It's almost too beautiful to eat," Grace said. They were both captivated by the variety of scents coming from the presentation. It did, indeed, smell like an amazing cheeseburger. "Well, I'm gonna try," said Dylan, putting the little top bun on. Grace watched as he picked it all up with his thumb and forefinger, dapped it in the foamed tomato and mustard, and popped it in his mouth. Dylan's mouth and nose were filled to bursting with all the expected flavors and scents of a great cheeseburger-- bread, meat and cheese, ketchup and mustard, lettuce and pickle. Oh, wow, it was good. And as he chewed, he popped the lettuce pillow, adding just the right touch of sweet onion scent and flavor to the mouthful.

This is how it goes in life: sometimes you’re born with a cleft palette or rickets, like my bow-legged Granddaddy, or a touch short on brains, like my Great Aunt Cal who everyone called ‘Stool.’ Me? I’m a double hitter. In addition to being what folks call “large boned,” I came into this world with homosexual tendencies—though back then I thought of it only as my strange, strong affections for some female friends, having no such notion of “homosexual tendencies” as a thing, at least not in Midland, Texas. Notions of this nature found footing in me eight months before I ran away to work in the kitchen at Sugarland Prison, when I got a job at the egg store. The egg store was all wood. Wood floors, wood ceiling beams, wood shelves—that rugged, knotty, reddish wood. The simple kind of wood they used to bury folks in before the floods, when rotting coffins popped from the ground like splinters and dead bodies dropped out in maggoty heaps.
