In most Western homes, kitchen drawers are organized so that forks are with forks and knives are with knives. The walls of a room are usually uniform in color, and when a creative shift in color does occur, it usually happens at a corner or along a straight line midway down the wall. Pictures are framed with straight edges, molding covers up seams in the wall, and lawns are edged to form a clear line between the sidewalk and the lawn. Why? Because we view life in terms of classifications, categories, and taxonomies. And cleanliness itself is largely defined by the degree of order that exists. It has little to do with sanitation and far more to do with whether things appear to be in their proper place. Maintaining boundaries is essential in the Western world; otherwise categories begin to disintegrate and chaos sets in.13 Most Americans want dandelion-free lawns and roads with clear lanes prescribing where to drive and where not to drive. Men wear ties to cover the adjoining fabric on the shirts that they put on before going to the symphony, where they listen to classical music based on a scale with seven notes and five half steps. Each note has a fixed pitch, defined in terms of the lengths of the sound waves it produces.14 A good performance occurs when the musicians hit the notes precisely. In contrast, many Eastern cultures have little concern in everyday life for sharp boundaries and uniform categories. Different colors of paint may be used at various places on the same wall. And the paint may well “spill” over onto the window glass and ceiling. Meals are a fascinating array of ingredients where food is best enjoyed when mixed together on your plate. Roads and driving patterns are flexible. The lanes ebb and flow as needed depending on the volume of traffic. In a place like Cambodia or Nigeria, the road space is available for whichever direction a vehicle needs it most, whatever the time of day. And people often meander along the road in their vehicles the same way they walk along a path. There are many other ways aesthetics between one place and another could be contrasted. But the important point is some basic understanding of how cultures differ within the realm of aesthetics. Some months later when my parents returned to check on my progress, my mother brought me a beautiful double-layer chocolate cake. This time I was ready, having bought all the Ex-Lax the pharmacy in Toms River had on hand. Using a hot plate, I heated the Ex-Lax until it liquefied, and then poured the sticky brown substance all over the cake in a most decorative way. With that, I placed the cake on my desk and invitingly left the door open to my dorm room. I wasn’t away long before this cake also grew legs, and, lo and behold, it also disappeared. Darius tossed his jacket down on the closest chair and moved to stand beside me. I could feel his eyes on me but I gave my attention to the room, studying portraits of old men in stuffy clothes and dragons soaring across the sky. Their choice in decor was boringly repetitive. The door opened and the kitchen maid came in carrying two plates with subs for us. I smiled at her as I accepted mine. “Thanks,” I said and she stared at me like I’d just slapped her before heading out of the room. “What was that about?” I asked before taking a bite of my sandwich. AUNT KITTY’S JAMAICAN RUM BALLS DO NOT preheat oven—these don’t require baking! 4 cups finely crushed vanilla wafers (a 12-ounce box is about 2½ cups crushed—measure after crushing) 1 cup chopped nuts (measure after chopping—I use pecans, but that’s because I really like them—I’ve also used macadamia nuts, walnuts, and cashews) ½ cup Karo syrup (the clear white kind) ½ cup excellent rum (or excellent whiskey, or excellent whatever) 2 Tablespoons Nestle’s sweet dry cocoa (I’m going to use Ghirardelli’s sweet cocoa with ground chocolate the next time I make them) 1 Tablespoon strong coffee (brewed—liquid) COATING: Dry cocoa Powdered (confectioner’s) sugar Chocolate sprinkles Crush the vanilla wafers in a food processor, or put them in a plastic bag and crush them with a rolling pin. Measure them and pour them into a mixing bowl. Chop the nuts finely with a food processor, or with your knife. Measure them and add those. Mix in the Karo syrup, rum (or substitute), sweet dry cocoa, and strong coffee. Stir until thoroughly blended. Rub your hands with powdered sugar. Make small balls, large enough to fit into a paper bonbon cup. Dip the balls in cocoa, or powdered sugar, or chocolate sprinkles to coat them. Do some of each and arrange them on a plate—very pretty. Refrigerate these until you serve them. They should last for at least a month in the refrigerator. (I’ve never been able to put this to the test, because every time I make them, they’re gone within a week.) Yield: At least 5 dozen, depending on how large you roll the balls. Aunt Kitty’s Jamaican Rum Balls make great gifts when they’re packaged like fine candy. Most cake decorating stores stock a variety of frilly bonbon cups and decorative candy boxes for you to use. To make these nonalcoholic, use fruit juice in place of the rum. This should work just fine, but make sure you refrigerate them and eat them within a week. You’ll have to change the name to “No Rum Balls,” but that’s okay. Choose a fruit juice that’ll go well with the chocolate, like peach, orange, or pineapple. Note: I’ve always wanted to try these dipped in melted chocolate. I bet they’d be fantastic!

The congealed salad I fixed in a glass mold the shape of a pinecone, so when I turned it out on a plain white platter lined with leaves of romaine, the peaches and pecans could be clearly seen suspended in the lemony aspic in an interesting design. This time my hot buttermilk biscuits were as high and fluffy as Mama's, and next to the cloth-lined straw basket I had a big slab of the sweetest local country butter in the state of Texas, which I buy every weekend at the farmers' market out off Eldridge Parkway. We transferred Rosemary's yummy cake to the cut-crystal plate with tiny legs I remember my grandmamma using for birthday parties, and to tell the truth, I wondered how in hell I was gonna get through that lunch without cuttin' myself more than just a sliver of that mouthwatering caramel layer cake.

My parents had to work on most weekends, and thus were infrequent visitors to Admiral Farragut Academy. However, on those Sundays when they could come, my mother would bring a cake and some cookies from the bakery. Of course, the cookies and the cake were past their prime, but that was just the way I liked them. I really don’t know how happy my parents were to see me since most of the time they were there; they would talk to my teachers in conference, and then tell me all the things I had supposedly done wrong. Sadly, I would always wind up with a lecture on how bad I had been and what was expected of me. It was something I had grown to expect, but more importantly, I was grateful for the cake and pastries. I have no idea why, but they also brought me cans of condensed milk. I can only guess that they believed that the thick syrupy milk, super saturated with sweet, sweet, sugar, would give me the energy I needed to think better. After one such visit, I made the mistake of leaving my cake unattended. It didn’t take long before it grew legs and ran off. I couldn’t believe that one of my schoolmates would steal my cake, not at a Naval Honor School! Nevertheless, not being able to determine who the villains were, I hatched a plan to catch the culprits the next time around. Some months later when my parents returned to check on my progress, my mother brought me a beautiful double-layer chocolate cake. This time I was ready, having bought all the Ex-Lax the pharmacy in Toms River had on hand. Using a hot plate, I heated the Ex-Lax until it liquefied, and then poured the sticky brown substance all over the cake in a most decorative way. With that, I placed the cake on my desk and invitingly left the door open to my dorm room. I wasn’t away long before this cake also grew legs, and, lo and behold, it also disappeared. The expected happened, and somewhat later I found the culprits in the boys’ bathroom, having a miserable time of it. Laughingly, I identified them as the culprits, but didn’t turn them in. It was enough that I caught them with their pants down!

The Great Hall looked its usual splendid self, decorated for the start-of-term feast. Golden plates and goblets gleamed by the light of hundreds and hundreds of candles, floating over the tables in midair. The four long House tables were packed with chattering students; at the top of the Hall, the staff sat along one side of a fifth table, facing their pupils. It was much warmer in here. Harry, Ron, and Hermione walked past the Slytherins, the Ravenclaws, and the Hufflepuffs, and sat down with the rest of the Gryffindors at the far side of the Hall, next to Nearly Headless Nick, the Gryffindor ghost. Pearly white and semitransparent, Nick was dressed tonight in his usual doublet, but with a particularly large ruff, which served the dual purpose of looking extra-festive, and insuring that his head didn’t wobble too much on his partially severed neck.

Guests came and went as they pleased, filling their gold-banded plates with hot breads, poached eggs on toast, smoked quail, fruit salad, and slices of charlotte russe made with sponge cake and Bavarian cream. Footmen crossed through the entrance hall as they headed outside with trays of coffee, tea, and iced champagne. Ordinarily this was the kind of event Cassandra would have enjoyed to no end. She loved a nice breakfast, especially when there was a little something sweet to finish off, and charlotte russe was one of her favorite desserts. However, she was in no mood to make small talk with anyone. Besides, she'd eaten far too many sweets lately... the extra jam tart at teatime yesterday, and all the fruit ices between dinner courses last night, and that entire éclair, stuffed with rich almond cream and roofed with a crisp layer of icing. And one of the little decorative marzipan flowers from a platter of puddings.

What a coincidence it was for me to see the SS African Moon in Dar-es-Salaam! After leaving Farrell Lines I thought that I would never get back to Kenya but here I was. It was just like home coming when I came aboard and saw Eddie the first mate. Everything was just as I left it three years before so as we celebrated our reunion over a cup of coffee. Although I hadn’t planned it, I suddenly got an idea. This would be a once in a lifetime opportunity to bring something worthwhile back to The United States. So, I asked Eddie if he could bring something big back to New York for me. “What might that be” he asked suspecting that I was up to no good. “No, it’s not narcotics, it’s a dug out native canoe.” I replied. “Well, I won’t have room in any of the holds but we can lash it down on deck. “Good I’ll have it to you within an hour!” I left and found someone who was willing to sell his dug-out to me and deliver it to the Meteor for under fifty dollars, which at the time was a lot of money but the price included the delivery charge. My, newly acquired well used dug out canoe, was the last thing that crossed the fish plates of the African Moon. Talking to Eddie we watched as the crew professionally lashed it down just forward of the #1 hatch. Shortly thereafter the African Moon backed down and headed out into the Indian Ocean. As for the rest of the story… When the Moon returned, I picked up the dug-out dockside in Brooklyn. With a little help I got it into my pick-up and brought it to my father’s house in Jersey City.  Later without my knowing, it he drilled holes into its hull and decided that it would make a good planter. It didn’t take long for the dirt in it to cause the rot to set in. Within months my canoe was destroyed, however I still have the paddles which sadly but reminiscently serve as a decoration in my Florida home.

And the crumble today is rhubarb-apple." She then turned to me. "I'll give you a minute to decide," she smiled, walking off to the kitchen. I lingered at the table, eyeing the golden brown topping of the crumble, clattering tea cups and intimate conversations dancing in the background. It was similar to Make My Cake's cobbler in that it was a giant dish of oozing fruit concealed by bits of topping- exactly what I had come for. Yet it was unmistakably French. While it was indeed messier than the gâteaux I had fallen for elsewhere around Paris, Les Deux Abeilles's crumble, presented in a round white porcelain dish, was still more refined. It looked thick and sweet and crunchy. I could practically taste the buttery bits and jammy fruit converging in a chaotic mix of flavors and textures in my mouth. But now that pear-praline clafoutis was waving to me from heaven. And the tall, airy wisps on the lemon meringue were tempting me, as well as the towering cheesecake, fluffier than the versions back home, with more finesse. Molten chocolate cake is never the wrong choice, I was rationalizing to myself, when Valeria returned. "Alors, what will it be?" I gazed up at her comforting presence. "I'll take the crumble, please." After my laborious decision, I was relieved to discover I had been right to stick with my original intentions. Five minutes later, a generous slice of rhubarb-apple crumble arrived, warmed in the small kitchen and served with a side of fresh cream, whipped staunchly into a thick, puffy cloud. I sat for a minute, contemplating the crumble's imperfect bumps and dull brown color. The pale pink and sometimes green slices of rhubarb poked out of the sides and lumps of rouge topping decorated my plate. Where the crumble had baked against the dish, a sticky crust of caramelized fruit juice and sugar had formed. It looked like a tarte that had done a somersault in its pastry box and arrived bruised and battered. There was nothing perfect about it. Except its bright flavors. Except its comforting warmth. Except that it was exactly what I wanted and needed. I savored each juicy-crunchy bite. It was wonderful.
