Finally, the world's cattle are thought to produce about 20 percent of the methane released into the atmosphere, and methane traps twenty-five times as much heat from the sun as carbon dioxide. Factory farm manure also produces methane because, unlike manured dropped naturally in the fields, it dies not decompose in the presence of oxygen. A few years before the end of his life, he gave a now-famous commencement speech at Kenyon College. He said to the graduating class, Everybody worships. The only choice we get is what to worship. And the compelling reason for maybe choosing some sort of god . . . to worship . . . is that pretty much anything else you worship will eat you alive. If you worship money and things, if they are where you tap real meaning in life, then you will never have enough, never feel you have enough. It’s the truth. Worship your own body and beauty and sexual allure, and you will always feel ugly. And when time and age start showing, you will die a million deaths before [your loved ones] finally plant you. . . . Worship power, and you will end up feeling weak and afraid, and you will need ever more power over others to numb you to your own fear. Worship your intellect, being seen as smart, you will end up feeling stupid, a fraud, always on the verge of being found out. The China Study was conducted over the course of decades by researchers at Cornell and Oxford University. Over six-hundred thousand people in twenty-six different provinces were placed in groups; with one group fed a meat-based diet and the other group fed a plant based vegan diet. Only the groups that were on a meat based diet developed cancers, while not one person on the plant-based diets had any signs of cancer whatsoever. The most interesting part is that they reversed the roles, and the meat eaters who developed cancer were given a plant based diet, and their cancers soon disappeared. Concurrently, the groups who were healthy and on a plant based diet had meat introduced into their diet and they soon developed cancer. This study proves without any discrepancies that meat eating (and especially the consumption of animal protein) is directly linked to cancer.

At the time of World War II, the atmosphere was too dense with war fervor to permit them to be aired. For the United States to step forward as a defender of helpless countries matched its image in American high school history textbooks, but not its record in world affairs. It had opposed the Hatian revolution for independence from France at the start of the nineteenth century. It had instigated a war with Mexico and taken half of that country. It had pretended to help Cuba win freedom from Spain, and then planted itself in Cuba with a military base, investments, and rights of intervention. It had seized Hawaii, Puerto Rico, Guam, and fought a brutal war to subjugate the Filipinos. It had “opened” Japan to its trade with gunboats and threats. It had declared an Open Door Policy in China as a means of assuring that the United States would have opportunities equal to other imperial powers in exploiting China. It had sent troops to Peking with other nations, to assert Western supremacy in China, and kept them there for over thirty years.

They are also difficult to reconcile with archaeological evidence of how cities actually began in many parts of the world: as civic experiments on a grand scale, which frequently lacked the expected features of administrative hierarchy and authoritarian rule. We do not possess an adequate terminology for these early cities. To call them ‘egalitarian’, as we’ve seen, could mean quite a number of different things. It might imply an urban parliament and co-ordinated projects of social housing, as with some pre-Columbian centres in the Americas; or the self-organizing of autonomous households into neighbourhoods and citizens’ assemblies, as with prehistoric mega-sites north of the Black Sea; or, perhaps, the introduction of some explicit notion of equality based on principles of uniformity and sameness, as in Uruk-period Mesopotamia. None of this variability is surprising once we recall what preceded cities in each region. That was not, in fact, rudimentary or isolated groups, but far-flung networks of societies, spanning diverse ecologies, with people, plants, animals, drugs, objects of value, songs and ideas moving between them in endlessly intricate ways. While the individual units were demographically small, especially at certain times of year, they were typically organized into loose coalitions or confederacies. At the very least, these were simply the logical outcome of our first freedom: to move away from one’s home, knowing one will be received and cared for, even valued, in some distant place. At most they were examples of ‘amphictyony’, in which some kind of formal organization was put in charge of the care and maintenance of sacred places. It seems that Marcel Mauss had a point when he argued that we should reserve the term ‘civilization’ for great hospitality zones such as these. Of course, we are used to thinking of ‘civilization’ as something that originates in cities – but, armed with new knowledge, it seems more realistic to put things the other way round and to imagine the first cities as one of those great regional confederacies, compressed into a small space.

There is no way to get around the fact that, whatever legitimate federalism-based issues were at play, slavery was a central reason Anglo-Texans wanted out of Mexico. Using unpaid labor to clear forests, plant crops, harvest them, and move them to market was the basis of their lives and wealth. As Austin perceptively noted, any individual or family who tried to do this on their own in the wilderness of East Texas would face years of toil and strife without a real prospect of success. Still, nothing is inevitable. Things could have been different. The choice for slavery was deliberate, and that reality is hard to square with a desire to present a pristine and heroic origin story about the settlement of Texas. There is no way to do that without suggesting that the lives of African Americans, and their descendants in Texas, did not, and do not, matter.

As psychologist Bruce Hood writes in his book The Self Illusion, you have an origin story and a sense that you’ve traveled from youth to now along a linear path, with ups and downs that ultimately made you who you are today. Babies don’t have that. That sense is built around events that you can recall and place in time. Babies and small children have what Hood calls “unconscious knowledge,” which is to say they simply recognize patterns and make associations with stimuli. Without episodic memories, there is no narrative; and without any narrative, there is no self. Somewhere between ages two and three, according to Hood, that sense of self begins to come online, and that awakening corresponds with the ability to tell a story about yourself based on memories. He points to a study by Alison Gopnik and Janet Astington in 1988 in which researchers presented to three-year-olds a box of candy, but the children were then surprised to find pencils inside instead of sweets. When they asked each child what the next kid would think was in the box when he or she went through the same experiment, the answer was usually pencils. The children didn’t yet know that other people have minds, so they assumed everyone knew what they knew. Once you gain the ability to assume others have their own thoughts, the concept of other minds is so powerful that you project it into everything: plants, glitchy computers, boats with names, anything that makes more sense to you when you can assume, even jokingly, it has a sort of self. That sense of agency is so powerful that people throughout time have assumed a consciousness at the helm of the sun, the moon, the winds, and the seas. Out of that sense of self and other selves come the narratives that have kept whole societies together. The great mythologies of the ancients and moderns are stories made up to make sense of things on a grand scale. So strong is the narrative bias that people live and die for such stories and devote whole lives to them (as well as take lives for them).

When I first began to criticize small farming, a number of critics (most of them small-scale farmers) roundly condemned me for supporting agribusiness. In my favorite example to date, Joel Salatin, who figures prominently in the grass-fed-beef chapter, condemned my “love affair with confinement hog factories”! This reaction, while wildly inaccurate, is nonetheless important to take seriously. Most notably, it’s almost comically indicative of how narrowly we have framed our options. Joel was serious. His accusation shows that by constricting our choices to animal products sourced from either industrial or nonindustrial operations, by holding up the animal-based alternatives to industrial agriculture as our only alternative, we have silenced discussion of the most fertile, most politically consequential, and most reform-minded choice: eating plants. This alternative to the alternatives changes the entire game of revolutionizing our broken food system. It places the food movement on a new foundation, infuses it with fresh energy, and promotes the only choice that keeps agribusiness executives awake at night.

the planned destruction of Iraq’s agriculture is not widely known. Modern Iraq is part of the ‘fertile crescent’ of Mesopotamia where man first domesticated wheat between 8,000 and 13,000 years ago, and home to several thousand varieties of local wheat. As soon as the US took over Iraq, it became clear its interests were not limited to oil. In 2004, Paul Bremer, the then military head of the Provisional Authority imposed as many as a hundred laws which made short work of Iraq’s sovereignty. The most crippling for the people and the economy of Iraq was Order 81 which deals, among other things, with plant varieties and patents. The goal was brutally clear-cut and sweeping — to wipe out Iraq’s traditional, sustainable agriculture and replace it with oil-chemical-genetically-modified-seed-based industrial agriculture. There was no public or parliamentary debate for the conquered people who never sought war. The conquerors made unilateral changes in Iraq’s 1970 patent law: henceforth, plant forms could be patented — which was never allowed before — while genetically-modified organisms were to be introduced. Farmers were strictly banned from saving their own seeds: this, in a country where, according to the Food and Agriculture Organisation, 97 per cent of Iraqi farmers planted only their own saved seeds. With a single stroke of the pen, Iraq’s agriculture was axed, while Order 81 facilitated the introduction and domination of imported, high-priced corporate seeds, mainly from the US — which neither reproduce, nor give yields without their prescribed chemical fertiliser and pesticide inputs. It meant that the majority of farmers who had never spent money on seed and inputs that came free from nature, would henceforth have to heavily invest in corporate inputs and equipment — or go into debt to obtain them, or accept lowered profits, or give up farming altogether.

The size of a small building, he should have had these big, uneven features that made him look like a caveman, but of course he didn’t. Apparently, he liked to defy every stereotype he’d ever been assigned in his life. He was smart, fast, coordinated, and—as far as I knew—had never seen a game of hockey. He had only said ‘eh’ in front of me twice, and he didn’t consume animal protein. The man didn’t eat bacon. He was the last person I would ever consider polite, and he never apologized. Ever. A favourite drink among the working classes precisely because of its relative cheapness for the effect produced, absinthe became the scapegoat for a host of social ills, not least the Commune. (...) Absinthe found a dedicated following among artists, writers and poets (including Charles Baudelaire), for whom the liquor became the entrancing ‘green fairy’. Its popularity in these circles was due primarily to its intoxicating effect, but also because its consumption was accompanied by a curious ritual which appealed to quirky individuals with a taste for the extraordinary. To counteract the drink’s inherent bitterness, a sugar lump was placed on a special spoon with a hole in it, which was held above the glass while water was poured over it, with the effect of sweetening the absinthe. Not surprisingly, absinthe flowed freely through the bars and cafés of Montmartre.

Then he gawked, too. There were posters all over the wall with Wyatt’s solemn, oval face on them. She wore her customary scowl, her dark eyes tracking their every move through the bunk. There was a giant marble statue of a sad-looking Vik with a boot on top of its head. The Vik statue clutched two very, very tiny hands together in a gesture of supplication, its eyes trained upward on the unseen stomper, an inscription at its base, WHY, OH WHY, DID I CROSS WYATT ENSLOW? Tom began to laugh. “She didn’t do it to the bunk,” Vik insisted. “She must’ve done something to our processors.” That much was obvious. If Wyatt was good at anything, it was pulling off tricks with the neural processors, which could pretty much be manipulated to show them anything. This was some sort of illusion she was making them see, and Tom heartily approved. He stepped closer to the walls to admire some of the photos pinned there, freeze-frames of some of Vik’s more embarrassing moments at the Spire: that time Vik got a computer virus that convinced him he was a sheep, and he’d crawled around on his hands and knees chewing on plants in the arboretum. Another was Vik gaping in dismay as Wyatt won the war games. “My hands do not look like that.” Vik jabbed a finger at the statue and its abnormally tiny hands. Wyatt had relentlessly mocked Vik for having small, delicate hands ever since Tom had informed her it was the proper way to counter one of Vik’s nicknames for her, “Man Hands.” Vik had mostly abandoned that nickname for “Evil Wench,” and Tom suspected it was due to the delicate-hands gibe. Just then, Vik’s new roommate bustled into the bunk. He was a tall, slim guy with curly black hair and a pointy look to his face. Keeping a new church outwardly focused from the beginning is much easier than trying to refocus an inwardly concerned church. In order to plant a successful church, you have to know that you know that you are undeniably called by God. The call to start a new church plant is not the same as the call to serve in an existing church or work in a ministry-related organization. You may be the greatest preacher this side of Billy Graham but still not be called to start a church. If you think you may have allowed an improper reason, voice or emotion to lead you to the idea of starting a new church, back away now. Spend some more time with God. You don’t want to move forward on a hunch or because you feel “pretty sure” that you should be planting a church. You have to be completely certain. “You’re afraid? So what. Everybody’s afraid. Fear is the common ground of humanity. The question you must wrestle to the ground is, ‘Will I allow my fear to bind me to mediocrity?’” When you think of a people group that you might be called to reach, does your heart break for them? If so, you may want to consider whether God is specifically calling you to reach that group for His kingdom. Is your calling clear? Has your calling been confirmed by others? Are you humbled by the call? Have you acted on your call? Do you know for certain that God has called you to start a new church? Nail it down. When exactly were you called? What were the circumstances surrounding your call? How did it match up with the sources of proper calling? Do you recognize the four specific calls in your calling? How? How does your call measure up to biblical characteristics? What is the emerging vision that God is giving you with this call? As your dependence on God grows, so will your church. One of the most common mistakes that enthusiastic and well-meaning church starters make is to move to a new location and start trying to reach people without thinking through even a short-term strategy. Don’t begin until you count the cost. why would you even consider starting a church (the only institution Jesus left behind and the only one that will last forever) without first developing a God-infused, specific, winning strategy? There are two types of pain: the pain of front-end discipline and the pain of back-end regret. With the question of strategy development, you get to choose which pain you’d rather live with. Basically, a purpose, mission and vision statement provides guiding principles that describe what God has called you to do (mission), how you will do it (purpose) and what it will look like when you get it done (vision). Keep your statement simple. Be as precise as possible. Core values are the filter through which you fulfill your strategy. These are important, because your entire strategy will be created and implemented in such a way as to bring your core values to life. Your strategic aim will serve as the beacon that guides the rest of your strategy. It is the initial purpose for which you are writing your strategy. He will not send more people to you than you are ready to receive. So what can you do? The same thing Dr. Graham does. Prepare in a way that enables God to open the floodgates into your church. If you are truly ready, He will send people your way. If you do the work we’ve described in this chapter, you’ll be able to build your new church on a strong base of God-breathed preparation. You’ll know where you are, where you’re going and how you are going to get there. You’ll be standing in the rain with a huge bucket, ready to take in the deluge. However, if you don’t think through your strategy, write it down and then implement it, you’ll be like the man who stands in the rainstorm with a Dixie cup. You’ll be completely unprepared to capture what God is pouring out. The choice is yours!
