In a large bowl, combine flour, baking powder and salt; cut in shortening until mixture has a crumbly texture. Add milk and mix into a dough, adding flour as needed until dough pulls away from side of bowl. On a lightly floured surface, roll or pat dough ¾-inch thick. Using a biscuit cutter, cut out biscuits, place on a baking sheet. Bake for 15 minutes, or until lightly browned on top. To make gravy: pan fry breakfast sausage until fully cooked, breaking up large pieces. Using a slotted spoon, transfer cooked sausage to bowl. Add flour to pan dripping and whisk until golden. Slowly add milk and whisk over low heat until thickened. Add reserved sausage and stir to blend. Season to taste with salt and black pepper. Serve split biscuits topped with gravy.

Spinach Quiche Preheat oven to 375 degrees F., rack in the middle position   This is my recipe. It can be served as an appetizer if you cut it into thin slices and arrange them on a platter. It can also be served as an entrée.   One 9-inch unbaked pastry shell 1 beaten egg yolk (reserve the white in a small dish) 10-ounce package frozen chopped spinach ½ teaspoon salt ½ teaspoon pepper (freshly ground is best) 3 Tablespoons horseradish sauce 2 ounces shredded Jarlsberg (or good Swiss cheese) 4 eggs 1½ cups Half & Half (or light cream) 1/8 teaspoon salt 1/8 teaspoon cayenne pepper 1/8 teaspoon nutmeg (freshly ground is best)   Beat the egg yolk in a glass with a fork. Brush the inside of the unbaked pastry shell with the yolk. Set the shell aside to dry. Cook and drain the spinach. Squeeze out as much moisture as you can and then blot with a paper towel. In a bowl, combine the spinach with the salt, pepper, and horseradish sauce. Spread it in the bottom of the pastry shell. Sprinkle the top with the grated cheese. Beat the 4 whole eggs with the reserved egg white. Add the Half & Half, salt, and cayenne pepper. Mix well and pour on top of cheese. Sprinkle the top with nutmeg. Bake at 375 degrees F. for 40 minutes, or until a knife inserted one inch from the center comes out clean. Let cool for ten minutes and then cut into wedges and serve. This quiche can be served warm or at room temperature. I’ve even been known to eat it cold, straight out of the refrigerator. It’s perfect for a fancy brunch or a lazy, relaxed breakfast on the weekend. Yield: Serves from 12 to 18 as an appetizer. Serves six as an entrée if they only have one piece.

Synchronous satellites, hovering in space will make it possible for you to direct-dial any spot on earth, including the weather stations in Antarctica. [M]en will continue to withdraw from nature in order to create an environment that will suit them better. By 2014, electroluminescent panels will be in common use. Ceilings and walls will glow softly, and in a variety of colors that will change at the touch of a push button. Robots will neither be common nor very good in 2014, but they will be in existence. The appliances of 2014 will have no electric cords, of course, for they will be powered by long- lived batteries running on radioisotopes. “[H]ighways … in the more advanced sections of the world will have passed their peak in 2014; there will be increasing emphasis on transportation that makes the least possible contact with the surface. There will be aircraft, of course, but even ground travel will increasingly take to the air a foot or two off the ground. The last refuge of the Self, perhaps, is “physical continuity.” Despite the body’s mercurial nature, it feels like a badge of identity we have carried since the time of our earliest childhood memories. A thought experiment dreamed up in the 1980s by British philosopher Derek Parfit illustrates how important—yet deceiving—this sense of physical continuity is to us.15 He invites us to imagine a future in which the limitations of conventional space travel—of transporting the frail human body to another planet at relatively slow speeds—have been solved by beaming radio waves encoding all the data needed to assemble the passenger to their chosen destination. You step into a machine resembling a photo booth, called a teletransporter, which logs every atom in your body then sends the information at the speed of light to a replicator on Mars, say. This rebuilds your body atom by atom using local stocks of carbon, oxygen, hydrogen, and so on. Unfortunately, the high energies needed to scan your body with the required precision vaporize it—but that’s okay because the replicator on Mars faithfully reproduces the structure of your brain nerve by nerve, synapse by synapse. You step into the teletransporter, press the green button, and an instant later materialize on Mars and can continue your existence where you left off. The person who steps out of the machine at the other end not only looks just like you, but etched into his or her brain are all your personality traits and memories, right down to the memory of eating breakfast that morning and your last thought before you pressed the green button. If you are a fan of Star Trek, you may be perfectly happy to use this new mode of space travel, since this is more or less what the USS Enterprise’s transporter does when it beams its crew down to alien planets and back up again. But now Parfit asks us to imagine that a few years after you first use the teletransporter comes the announcement that it has been upgraded in such a way that your original body can be scanned without destroying it. You decide to give it a go. You pay the fare, step into the booth, and press the button. Nothing seems to happen, apart from a slight tingling sensation, but you wait patiently and sure enough, forty-five minutes later, an image of your new self pops up on the video link and you spend the next few minutes having a surreal conversation with yourself on Mars. Then comes some bad news. A technician cheerfully informs you that there have been some teething problems with the upgraded teletransporter. The scanning process has irreparably damaged your internal organs, so whereas your replica on Mars is absolutely fine and will carry on your life where you left off, this body here on Earth will die within a few hours. Would you care to accompany her to the mortuary? Now how do you feel? There is no difference in outcome between this scenario and what happened in the old scanner—there will still be one surviving “you”—but now it somehow feels as though it’s the real you facing the horror of imminent annihilation. Parfit nevertheless uses this thought experiment to argue that the only criterion that can rationally be used to judge whether a person has survived is not the physical continuity of a body but “psychological continuity”—having the same memories and personality traits as the most recent version of yourself. This has been our battle cry for more than 25 years. People get into relational problems because they forget to keep their promises. It's so easy to make a verbal promise for the moment and then grapple with the execution of that promise later. Sometimes we underestimate the consequences of not keeping the promise flippantly made in a moment of haste. Many times we aren't even aware we have made a promise. Someone says, "I'll call you at 7:00 tonight"; "I'll drop by before noon"; or "I'll call you to set up a breakfast meeting on Wednesday." Then the weak excuses begin to follow. "I called but no one answered" (even though you have voice mail and no message was left). "I got tied up and forgot." "I was too tired." I suggest that we don't make promises if we aren't going to keep them. The person on the other end would prefer not hearing a promise that isn't going to be kept. Yes, there will be times when the execution of a promise will have to be rescheduled, but be up front with the person when you call to change the time. We aren't perfect, but we can mentor proper relationship skills to our friends and family by exhibiting accountability in our words of promise. We teach people that we are trustworthy-and how they can be trusted too. You'll be pleased at how people will pleasantly be surprised when you keep your promises. As my friend Florence Littauer says, "It takes so little to be above average." When you develop a reputation for being a woman who does what she says, your life will have more meaning and people will enjoy being around you.

CRANBERRY SCONES Preheat oven to 425 degrees F., rack in the middle position. 3 cups all-purpose flour (pack it down in the cup when you measure it) 2 Tablespoons white (granulated) sugar 2 teaspoons cream of tartar (important) 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt ½ cup softened salted butter (1 stick, 4 ounces, ¼ pound) 2 large eggs, beaten (just whip them up in a glass with a fork) 1 cup unflavored yogurt (8 ounces) 1 cup sweetened dried cranberries (Craisins, or their equivalent) ½ cup whole milk Use a medium-size mixing bowl to combine the flour, sugar, cream of tartar, baking powder, baking soda, and salt. Stir them all up together. Cut in the salted butter just as you would for piecrust dough.   Hannah’s Note: If you have a food processor, you can use it for the first step. Cut ½ cup COLD salted butter into 8 chunks. Layer them with the dry ingredients in the bowl of the food processor. Process with the steel blade until the mixture has the texture of cornmeal. Transfer the mixture to a medium-sized mixing bowl and proceed to the second step.   Stir in the beaten eggs and the unflavored yogurt. Then add the sweetened dried cranberries and mix everything up together.   Add the milk and stir until everything is combined.   Drop the scones by soup spoonfuls onto a greased (or sprayed with Pam or another nonstick baking spray) baking sheet, 12 large scones to a sheet. You can also drop these scones on parchment paper if you prefer.   Once the scones are on the baking sheet, you can wet your fingers and shape them into more perfect rounds. (If you do this and there are any leftovers, you can slice them in half and toast them for breakfast the next morning.)   Bake the scones at 425 degrees F. for 12 to 14 minutes, or until they’re golden brown on top.   Cool the scones for at least five minutes on the cookie sheet, and then remove them with a spatula. Serve them in a towel-lined basket so they stay warm.   Yield: Makes 12 large and delicious scones.

I woke up as the first light began to bring an orange glow to the tops of the whispering pines (and sky) above me at 5:43 but lay still to avoid waking Hope for another half-hour. She had suffered through a tough and mostly sleepless night, and I wanted to give her every second I could as the next week promised to be very stressful for her (and me), and that was if everything went according to plan. At a few minutes after six, she either sensed the growing light or my wakefulness and shifted to give me a wet kiss. We both moved down towards the slit in the bottom of my Hennessy hammock and dropped out and down onto the pine needles to explore the morning. Both of us went a ways into the woods to take care of early morning elimination, and we met back by the hammock to discuss breakfast. I shook out some Tyler kibble (a modified GORP recipe) for me and an equal amount of Hope’s kibble for her. As soon as we had scarfed down the basic snack, we picked our way down the sloping shore to the water’s edge, jumped down into the warm water (relative to the cool morning air at any rate) for a swim as the sun came up, lighting the tips of the tallest pines on the opposite shore. Hope and I were bandit camping (a term that I had learned soon after arriving in this part of the world, and enjoyed the feel of), avoiding the established campsites that ringed Follensby Clear Pond. We found our home for the last seventeen days (riding the cooling August nights from the full moon on the ninth to what would be a new moon tonight) near a sandy swimming spot. From there, we worked our way up (and inland) fifty feet back from the water to a flat spot where some long-ago hunter had built/burned a fire pit. We used the pit to cook some of our meals (despite the illegality of the closeness to the water and the fire pit cooking outside an approved campsite … they call it ‘bandit camping’ for a reason). My canoe was far enough up the shore and into the brush to be invisible even if you knew to look for it, and nobody did/would/had. After we had rung a full measure of enjoyment out of our quiet morning swim, I grabbed the stringer I had anchored to the sandy bottom the previous afternoon after fishing, pulled the two lake trout off, killed them as quickly/painlessly/neatly as I could manage, handed one to Hope, and navigated back up the hill to our campsite. I started one of the burners on my Coleman stove (not wanting to signal our position too much, as the ranger for this area liked morning paddles, and although we had something of an understanding, I didn’t want to put him in an uncomfortable position … we had, after all, been camping far too long in a spot too close to the water). Once I had gutted/buttered/spiced the fish, I put my foil-wrapped trout over the flame (flipping and moving it every minute or so, according to the sound/smell of the cooking fish); Hope ate hers raw, as is her preference. It was a perfect morning … just me and my dog, seemingly alone in the world, doing exactly what we wanted to be doing.
