Corn feeds the chicken and the pig, the turkey, and the lamb, the catfish and the tilapia and, increasingly, even the salmon, a carnivore by nature that the fish farmers are reengineering to tolerate corn. The eggs are made of corn. The milk and cheese and yogurt, which once came from dairy cows that grazed on grass, now typically comes from Holsteins that spend their working lives indoors tethered to machines, eating corn.
Head over to the processed foods and you find ever more intricate manifestations of corn. A chicken nugget, for example, piles up corn upon corn: what chicken it contains consists of corn, of course, but so do most of a nugget's other constituents, including the modified corn starch that glues the things together, the corn flour in the batter that coats it, and the corn oil in which it gets fried. Much less obviously, the leavenings and lecithin, the mono-, di-, and triglycerides, the attractive gold coloring, and even the citric acid that keeps the nugget "fresh" can all be derived from corn.
To wash down your chicken nuggets with virtually any soft drink in the supermarket is to have some corn with your corn. Since the 1980s virtually all the sodas and most of the fruit drinks sold in the supermarket have been sweetened with high-fructose corn syrup (HFCS) -- after water, corn sweetener is their principal ingredient. Grab a beer for you beverage instead and you'd still be drinking corn, in the form of alcohol fermented from glucose refined from corn. Read the ingredients on the label of any processed food and, provided you know the chemical names it travels under, corn is what you will find. For modified or unmodified starch, for glucose syrup and maltodextrin, for crystalline fructose and ascorbic acid, for lecithin and dextrose, lactic acid and lysine, for maltose and HFCS, for MSG and polyols, for the caramel color and xanthan gum, read: corn. Corn is in the coffee whitener and Cheez Whiz, the frozen yogurt and TV dinner, the canned fruit and ketchup and candies, the soups and snacks and cake mixes, the frosting and candies, the soups and snacks and cake mixes, the frosting and gravy and frozen waffles, the syrups and hot sauces, the mayonnaise and mustard, the hot dogs and the bologna, the margarine and shortening, the salad dressings and the relishes and even the vitamins. He looked at Leta, who was uncomfortable. “Well, at least you can’t hang up on me here. You’ll be glad to know that our son isn’t speaking to me. He isn’t speaking to you, either, or so he said,” he added. “I suppose he won’t talk to you?” he added to Cecily.
“He said goodbye very finally, after telling me that I was an idiot to think he’d change his mind and want to marry me just because he turned out to have mixed blood,” she said, not relating the shocking intimacy that had prefaced his remarks.
“I’ll punch him for that,” Matt said darkly.
“Ex-special forces,” Leta spoke up with a faint attempt at humor, nodding toward Matt. “He was in uniform when we went on our first date.”
“You wore a white cotton dress with a tiered skirt,” he recalled, “and let your hair down. Hair…”
He turned back to Cecily and grimaced. “Good God, what did you do that for?”
“Tate likes long hair, that’s what I did it for,” she said, venom in her whole look. “I can’t wait for him to see it, even if I have to settle for sending him a photo!”
“I hope you never get mad at me,” Matt said.

Here’s a Reader’s Digest version of my approach. I select mutual funds that have had a good track record of winning for more than five years, preferably for more than ten years. I don’t look at their one-year or three-year track records because I think long term. I spread my retirement, investing evenly across four types of funds. Growth and Income funds get 25 percent of my investment. (They are sometimes called Large Cap or Blue Chip funds.) Growth funds get 25 percent of my investment. (They are sometimes called Mid Cap or Equity funds; an S&P Index fund would also qualify.) International funds get 25 percent of my investment. (They are sometimes called Foreign or Overseas funds.) Aggressive Growth funds get the last 25 percent of my investment. (They are sometimes called Small Cap or Emerging Market funds.) The invested 15 percent of your income should take advantage of all the matching and tax advantages available to you. He kept his head bowed while he mixed the Bite and Sting tiles, but Kestrel saw him shoot Irex a wary glance. Benix, too, had seen the rage that turned Irex’s face into stone.
Irex shoved back from the table. He stalked over the flagstone terrace to the grass, which bloomed with the highest members of Valorian society.
“That wasn’t necessary,” Benix told Kestrel.
“It was,” she said. “He’s tiresome. I don’t mind taking his money, but I cannot take his company.”
“You couldn’t spare a thought for me before chasing him away? Maybe I would like a chance to win his gold.”

There can be a mismatch of attachment expectations.
As mentioned earlier, not all relationships have to be attachment-based, but ideally all parties involved in the relationship need to agree about this. Very painful and confusing situations can arise when one person wants a certain relationship to meet their attachment needs, but the other person does not want the same level of involvement, or if a person wants an attachment-based relationship in theory but is practically or situationally unable to provide at that level. When I see clients struggling with attachment anxiety because a partner gives mixed signals or is inconsistent in their responsiveness, support, or availability, it is important to explore whether or not they are expecting this partner to be an attachment figure for them. If they are, then it is paramount for them to dialogue with their partner about whether or not that partner wants to be in the role of an attachment figure for them, as well as honestly assessing if the partner has enough time, capacity and/or space in their life and other relationships to show up to the degree required for being polysecure together.
Some people prefer not to define their relationships, preferring to explore and experience them without labels or traditional expectations. As long as this level of ambiguity or relationship fluidity is a match for everyone involved, it can be a very liberating and satisfying way to relate with others. But when someone casts a partner in the role of attachment figure, but that person is unable or unwilling to play the part, much pain, frustration, disappointment, heartache and attachment anxiety ensues.

But what were appropriate stakes for a slave who had nothing to gamble? This question had troubled Kestrel ever since she had proposed the game. She shrugged and said, “Perhaps I am afraid to lose.” She split the matches between them.
“Hmm,” he said, and they each put in their ante.
Arin positioned his tiles so that he could see their engravings without revealing them to Kestrel. His eyes flicked to them briefly, then lifted to examine the luxury of his surroundings. This annoyed her--both because she could glean nothing from his expression and because he was acting the gentleman by averting his gaze, offering her a moment to study her tiles without fear of giving away something to him. As if she needed such an advantage.
“How do you know?” she said.
“How do I know what?”
“That this was a writing room. I have never heard of such a thing.” She began to position her own tiles. It was only when she saw their designs that she wondered whether Arin had really been polite in looking away, or if he had been deliberately provoking her.
She concentrated on her draw, relieved to see that she had a good set. A tiger (the highest tile); a wolf, a mouse, a fox (not a bad trio, except the mouse); and a pair of scorpions. She liked the Sting tiles. They were often underestimated.
Kestrel realized that Arin had been waiting to answer her question. He was watching her.
“I know,” he said, “because of this room’s position in your suite, the cream color of the walls, and the paintings of swans. This was where a Herrani lady would pen her letters or write journal entries. It’s a private room. I shouldn’t be allowed inside.”

Some of these success factors are much more important; these are known as critical success factors. Balanced scorecard. A term first introduced by Kaplan and Norton describing how you need to measure performance in a more holistic way. You need to see an organization’s performance in a number of different perspectives. For the purposes of this book, there are six perspectives in a balanced scorecard (see Exhibit 1.7). Oracles and young guns. In an organization, oracles are those gray-haired individuals who have seen it all before. They are often considered to be slow, ponderous, and, quite frankly, a nuisance by the new management. Often they are retired early or made redundant only to be rehired as contractors at twice their previous salary when management realizes they have lost too much institutional knowledge. Their considered pace is often a reflection that they can see that an exercise is futile because it has failed twice before. The young guns are fearless and precocious leaders of the future who are not afraid to go where angels fear to tread. These staff members have not yet achieved management positions. The mixing of the oracles and young guns during a KPI project benefits both parties and the organization. The young guns learn much and the oracles rediscover their energy being around these live wires. Empowerment. For the purposes of this book, empowerment is an outcome of a process that matches competencies, skills, and motivations with the required level of autonomy and responsibility in the workplace. Senior management team (SMT). The team comprised of the CEO and all direct reports. Better practice. The efficient and effective way management and staff undertake business activities in all key processes: leadership, planning, customers, suppliers, community relations, production and supply of products and services, employee wellbeing, and so forth. Best practice. A commonly misused term, especially because what is best practice for one organization may not be best practice for another, albeit they are in the same sector. Best practice is where better practices, when effectively linked together, lead to sustainable world-class outcomes in quality, customer service, flexibility, timeliness, innovation, cost, and competitiveness. Best-practice organizations commonly use the latest time-saving technologies, always focus on the 80/20, are members of quality management and continuous improvement professional bodies, and utilize benchmarking. Exhibit 1.10 shows the contents of the toolkit used by best-practice organizations to achieve world-class performance. EXHIBIT 1.10 Best-Practice Toolkit Benchmarking. Even in Produce on a day when there's ostensibly no corn for sale, you'll nevertheless find plenty of corn: in the vegetable wax that gives the cucumbers their sheen, in the pesticide responsible for the produce's perfection, even in the coating on the cardboard it was shipped in. Indeed, the supermarket itself -- the wallboard and joint compound, the linoleum and fiberglass and adhesives out of which the building itself has been built -- is in no small measure a manifestation of corn.

Keep your weak hand up by your face, so that you can easily defend your head if a punch is unexpectedly thrown. Use the weak hand to scratch your head or cheek, brush your hair, wipe your brow, adjust your hat, etc., but keep that hand up. Remember that you will most likely be reacting to an assault, and therefore it will take too long to bring a hand up from your waist to your head to defend yourself against a sneak attack. Cover This block/cover comes from boxing, and is identical to the one taught in my book The Cook Method of the Sap for Law Enforcement and Civilians. The weak (left) hand comes up and brings the hand to the ear as though you are talking on the phone. The upraised elbow and bent arm create a large, strong defense against any type of blow, especially a hook punch, which is difficult to defend against by trying to parry or block with the hand. You can also think of this move as raising the left elbow upward. In close, this shielding move can be used as a strike, hitting the attacker with an upward elbow strike. Train this move by having a partner slowly and lightly swing with his right hand at your head. If you get boxing headgear and gloves, you can gradually increase the speed and power of this strike. It is also possible for your partner to swing at your head using the punch mitts. Hammerfist As the left elbow comes up and the left hand is placed just off your ear, your right hand –which has been resting near your left armpit-- snaps outward, striking with the bottom of the fist. Aim for the opponent's jawline. A problem with punching on the street is that it's easy to damage your knuckles when hitting someone's skull or teeth. The bottom-of-the-fist blow, also known as a hammerfist, is a very powerful blow that can be delivered with little risk of injury to the knuckles or wrist. It has proven itself to be devastatingly effective in the full-contact cage matches of the mixed martial arts. Practice doing both motions at the same time; raising the left elbow up to cover the head while striking out with the right hammerfist. Practice slowly at first, then move to the heavy bag. You can also have a partner with the focus mitts swing the right mitt while holding the left mitt up as a target for you to hit with the right hand. Once you have the form down, make the move explosive. Burst outward with the elbow and hammerfist simultaneously. Snap the hammerfist, bringing it quickly back to the start position. Another tip as you practice this move is to drop your head down, so that your chin and the side of your face are not exposed. With your chin down, the striking right hand and arm will help to shield your head from attacks with the opponent's left hand. This is how you defend yourself when an opponent has surprised you with a flurry of punches –not by trying to block a rain of blows, but by striking while protecting your head.

There's no messing with perfection. (Okay, a little messing, just for fun.) A few crystals of coarse sea salt, a drizzle of local olive oil, and a sprig or two of purple basil. Sliced and layered in a white ceramic dish, the tomatoes often match the hues of the local sunsets--- reds and golds, yellows and pinks. If there were such a thing in our house as "too pretty to eat," this would be it. Thankfully, there's not.
If I'm not exactly cooking, I have done some impromptu matchmaking: baby tomatoes with smoked mozzarella, red onions, fennel, and balsamic vinegar. A giant yellow tomato with a local sheep's milk cheese and green basil. Last night I got a little fancy and layered slices of beefsteak tomato with pale green artichoke puree and slivers of Parmesan. I constructed the whole thing to look like the Leaning Tower of Pisa. I love to think of the utterly pretentious name this would be given in a trendy Parisian bistro:
Millefeuille de tomate provençale, tapenade d'artichaut et coppa de parmesan d'Italie (AOC) sur son lit de salade, sauce aigre douce aux abricots.
And of course, since this is a snooty Parisian bistro and half their clientele are Russian businessmen, the English translation would be printed just below:

The sauce abricot was a happy accident. While making the dressing for the green salad, I mistook a bottle of peach/apricot syrup for the olive oil. Since I didn't realize my mistake until it was at the bottom of the bowl, I decided to try my luck. Mixed with Dijon mustard and some olive oil, it was very nice--- much sweeter than a French vinaigrette, more like an American-style honey Dijon. I decided to add it to my pretentious Parisian bistro dish because, believe it or not, Parisian bistros love imitating American food. Anyone who has been in Paris in the past five years will note the rise of le Tchizzberger. (That's bistro for "cheeseburger.")
I'm moderate in my use of social media, but I can't stop taking pictures of the tomatoes. Close up, I've taken to snapping endless photos of the voluptuously rounded globes. I rejoice in the mingling of olive oil and purply-red flesh. Basil leaves rest like the strategically placed tassels of high-end strippers. Crystals of sea salt catch the afternoon sun like rhinestones under the glaring lights of the Folies Bergère. I may have invented a whole new type of food photography: tomato porn.

Elena came up with the idea of a fusion elote, taking her beloved Mexican street corn and adding Pakistani and Filipino twists to match with Adeena's and my respective backgrounds. Not only did Jae gave us his mother's recipe for the oksusu cha, or Korean corn tea, but he'd also volunteered to handle all elote duties: slathering the corn with thick, creamy coconut milk before rolling it in a fragrant spice mix that included amchur powder and red chili powder, grilling it, then squeezing calamansi over the corn before sprinkling it with your choice of kesong puti or cotija cheese. It was a simple yet laborious task, but he seemed to enjoy himself ( I wasn't one for gender stereotypes, but what was with guys and grills?) and I'd caught him sneaking more than one smoky, salty treat as he worked. The benefit of being the cook.
Meanwhile, I arranged the sweet offerings I'd prepared: mais ube sandwich cookies, mais kon keso bars, and two types of ice candy--- mais kon yelo and ginataang mais. Corn as a dessert ingredient may seem strange to some people, but Filipinos absolutely love and embrace corn in all its salty-sweet possibilities. My first offering sandwiched ube buttercream between corn cookies, the purple yam's subtle vanilla-like sweetness pairing well with the salty-sweet corn. Cheese and corn are a popular savory pairing, but guess what? It makes one of my absolute favorite Filipino ice cream flavors as well, and I channeled that classic combo into a cheesecake bar with a corn cookie crust.
Mais kon yelo, literally corn with ice, is a Filipino dessert consisting of shaved ice with corn, sugar, and milk, while ginataang mais, a simple porridge made with coconut milk, glutinous rice, and sweet corn, is usually served warm for breakfast or meryenda. My take on these simple, refreshing snacks utilized those same flavors in a portable, easy-to-eat ice pop bag. However, if you wanted to try the traditional versions, you could just pop down a few booths over to Tita Rosie's Kitchen, the restaurant run by my paternal aunt and grandmother. While my aunt, Tita Rosie, handled the savory side of the menu, offering small cups of corn soup and paper cones full of cornick, or corn nuts flavored with salt and garlic, my grandmother, Lola Flor, reigned over the sweets. The aforementioned mais kon yelo and ginataang mais were the desserts on offer, in addition to maja blanca, a simple corn and coconut pudding. Truly a gluten-free sweet tooth's paradise.

it is not uncommon for experts in DNA analysis to testify at a criminal trial that a DNA sample taken from a crime scene matches that taken from a suspect. How certain are such matches? When DNA evidence was first introduced, a number of experts testified that false positives are impossible in DNA testing. Today DNA experts regularly testify that the odds of a random person’s matching the crime sample are less than 1 in 1 million or 1 in 1 billion. With those odds one could hardly blame a juror for thinking, throw away the key. But there is another statistic that is often not presented to the jury, one having to do with the fact that labs make errors, for instance, in collecting or handling a sample, by accidentally mixing or swapping samples, or by misinterpreting or incorrectly reporting results. Each of these errors is rare but not nearly as rare as a random match. The Philadelphia City Crime Laboratory, for instance, admitted that it had swapped the reference sample of the defendant and the victim in a rape case, and a testing firm called Cellmark Diagnostics admitted a similar error.20 Unfortunately, the power of statistics relating to DNA presented in court is such that in Oklahoma a court sentenced a man named Timothy Durham to more than 3,100 years in prison even though eleven witnesses had placed him in another state at the time of the crime. It turned out that in the initial analysis the lab had failed to completely separate the DNA of the rapist and that of the victim in the fluid they tested, and the combination of the victim’s and the rapist’s DNA produced a positive result when compared with Durham’s. A later retest turned up the error, and Durham was released after spending nearly four years in prison.21 Estimates of the error rate due to human causes vary, but many experts put it at around 1 percent. However, since the error rate of many labs has never been measured, courts often do not allow testimony on this overall statistic. Even if courts did allow testimony regarding false positives, how would jurors assess it? Most jurors assume that given the two types of error—the 1 in 1 billion accidental match and the 1 in 100 lab-error match—the overall error rate must be somewhere in between, say 1 in 500 million, which is still for most jurors beyond a reasonable doubt. But employing the laws of probability, we find a much different answer. The way to think of it is this: Since both errors are very unlikely, we can ignore the possibility that there is both an accidental match and a lab error. Therefore, we seek the probability that one error or the other occurred. That is given by our sum rule: it is the probability of a lab error (1 in 100) + the probability of an accidental match (1 in 1 billion). Since the latter is 10 million times smaller than the former, to a very good approximation the chance of both errors is the same as the chance of the more probable error—that is, the chances are 1 in 100. Given both possible causes, therefore, we should ignore the fancy expert testimony about the odds of accidental matches and focus instead on the much higher laboratory error rate—the very data courts often do not allow attorneys to present! And so the oft-repeated claims of DNA infallibility are exaggerated.

Can you not tell me, Miss Erstwhile, if you love me in return?”
Oh, perfect, perfect moment.
But even as her heart pounded, she felt a sense of loss, sand so fine she couldn’t keep it from pouring through her fingers. Mr. Nobley was perfect, but he was just a game. It all was. Even Martin’s meaningless kisses were preferable to the phony perfection. She was craving anything real--bad smells and stupid men, missed trains and tedious jobs. But she remembered that mixed up in the ugly parts of reality were also those true moments of grace--peaches in September, honest laughter, perfect light. Real men. She was ready to embrace it now.
