Carefully tracked and numbered, molds are supplied only to licensed and inspected dairies, and each is lined with Braille-like needles that crate a pinpoint pattern instantly recognizable to foodies, spelling out the name of the cheese over and over again in a pattern forever imprinted on its rind. A similar raised-pin mold made of plastic is slipped between the steel and the cheese to permanently number the rind of every lot so that any wheel can be traced back to a particular dairy and day of origin. Like a tattoo, these numbers and the words Parmigiano-Reggiano become part of the skin. Later in its life, because counterfeiting the King of Cheeses has become a global pastime, this will be augmented with security holograms... One night, friends came to town and invited Alice out to dinner at celebrity chef Mario Batali's vaunted flagship Italian eatery, Babbo. As Alice told me this story, at one point during their meal, the waiter displayed a grater and a large wedge of cheese with great flourish, asking her if she wanted Parmigiano-Reggiano on her pasta. She did not say yes. She did not say no. Instead Alice looked at the cheese and asked, "Are you sure that's Parmigiano-Reggiano?" Her replied with certainty, "Yes." "You're sure?" "Yes." She then asked to see the cheese. The waiter panicked, mumbled some excuse, and fled into the kitchen. He returned a few minutes later with a different and much smaller chunk of cheese, which he handed over for examination. The new speck was old, dry, and long past its useful shelf-life, but it was real Parmigiano-Reggiano, evidenced by the pin-dot pattern. "The first one was Grana Padano," she explained. "I could clearly read the rind. They must have gone searching through all the drawers in the kitchen in a panic until they found this forgotten crumb of Parmigiano-Reggiano." Alice Fixx was the wrong person to try this kind of bait and switch on, but she is the exception, and I wonder how many other expense-account diners swallowed a cheaper substitute. It may seem a simple act of observation to us, but in that single moment, ergaster reveals the secret of what really marks him out as a different kind of species. It is not the remarkably human-like body, but the thing that resides inside that un-human head. For, at a volume of about 1,000 cubic centimetres (60 cubic inches), ergaster's brain is half as big again as the smartest of his predecessors, and almost within the limits of modern human variation. ... This new brain capacity has brought even greater powers of thought into the everyday life of our ancestor. All animals have some understanding of their environments. A five-month-old swallow is instinctively able to negotiate the 10,000-kilometre (6,000 mile) migration from Britain to southern Africa without ever having done the journey before. An old matriarch elephant can remember where, in her vast territory, to go for water a certain time of year. Earlier hominids such as habilis and rudolfensis had already learned to associate different signs in their environment, such as the wheeling of vultures in the sky as a sign of a kill. But ergaster has taken that further, making complex deductions about apparently unrelated events going on around them. They can look at marks in the sand and, never having seen them before, can tell at once what they are, and what they are likely to relate to. To a dog, a big cat, or even to a baboon, hoofmarks such as these are no more than just that: random marks. Only we, of all the animals on Earth today, can see them for what they are: hoofprints, made by an animal that is likely either to be a meal for us or to make a meal of us. As the Chinese translation of the name Sukhāvatī suggests, it is a land of supreme joy. The Sanskrit is of similar meaning: “that which possesses ease and comfort.” Sukhāvatī is not subject to the sufferings that plague this world and, furthermore, it is a land of surpassed beauty. It is described as having seven tiers of balustrades, seven rows of nets, and seven rows of trees, all adorned with four jewels (gold, silver, lapsis lazuli, and crystal). There is a lake of the seven jewels (gold, silver, lapis lazuli, crystal, a kind of big shell [tridacna gigas], coral, and agate), filled with water having the eight virtues. The bottom of the lake is gold sand. On the four sides of the lake are stairs (galleries) made of the four jewels. Above are towers and palaces also adorned with the seven jewels. The blue lotus flowers emit a blue light, and the yellow, red, and white lotus flowers emit light of corresponding colors. They all give forth a sweet fragrance. The delightful sound of heavenly music can be hard, and in the morning, at noon, and in the evening mandārava flowers fall from the sky and gently pile up on the golden ground. Every morning the inhabitants of the Pure Land gather these flowers with the hems of their robes and make offerings of them to myriads of buddhas in other lands. At mealtime they return to their own land, where they take their meal and stroll around. There are many kinds of birds—swans, peacocks, parrots, sharikas, kalaviṅkas, and jīvaṃjīvakas, which sing with beautiful voices, proclaiming the teachings of the Buddha. When living beings hear this song, they think about the Buddha, Dharma (“law,” or his teachings), and Saṅgha (“community of believers”). When the gentle breezes blow, the rows of four-jeweled trees and jeweled nets give forth a gentle music, like a beautiful symphony. In this land dwell Amitābha Buddha and his two attendants, the bodhisattvas Avalokitśvara and Mahāsthāmaprāpta. At their feet are those virtuous beings who have been reborn in that land because of their ardent faith. All, however, are male; women of deep faith are reborn here with male bodies. The female sex, considered inferior and unfortunate, has no place in Sukhāvatī. All people, says Śākyamuni, should ardently wish for rebirth in that land and become the companions of the most virtuous of all beings. People cannot hope for rebirth there just by performing a few good deeds, however. If living beings meditate eagerly upon the name of Amitābha for even one day with an undisturbed mind, Amitābha and his holy retinue will appear before them to receive them at the end of Life. They will enter the Pure Land with unperturbed hearts.

Once eating is under way, the common dining room looks rather like a high school cafeteria; there are insider and outsider tables, and it is often easy to spot the new students and short-term guests—they're a few minutes late because they haven't memorized the schedule; they're smiling bravely, wielding their dinner trays like steering wheels, weaving around, desperately looking for a public parking space, hoping someone will wave or smile or otherwise signal them to safety I asked a practice leader about this, and she said she knew it was hard but people have to get over their self consciousness; for some newcomers, she said, that's zazen, that's their meditative practice. He's just emerged from his den, and he'll risk injury for a chance at fresh meat. The bear lollops toward the herd. The musk oxen run for it, but the drifts are deep and they sink into the snow. If they can't flee, they have to fight. The adults wheel, forming a ring around last year's young. The bear halts before the wall of horns, looking for an opening. Then one musk ox, a bull weighing almost as much as the bear, breaks formation to charge. The grizzly bolts: he'll search elsewhere for a meal. Danger passed, the musk oxen regain their calm. The young oxen, and the calves about to be born, are safe. The long night is nearly over. Light - and life - will soon return to the Arctic.

Women—both historically and today—have focused on trying to prove ourselves, by trying to get the maximum amount of things done in whatever time we have. We want to have spotless houses, gourmet meals, executive-track promotions, well-behaved children, a robust spiritual life, a spotless community-service record, and, and top of it all, we want time to just relax. We see ourselves as failures and as simply not good enough. So instead if spending time working on ourselves and knowing and loving who we really are, we base our value in what we've crossed off on our to-do-lists. We spread ourselves thin through overcommitting, overvolunteering, and holding ourselves up to standards that are near impossible to achieve, and when we fail (because really, we were sabotaging ourselves from the start), we mentally bludgeon ourselves for not being good enough. We are mice in a wheel, accomplishing a lot, but we are not getting anywhere that really matters to us.
