I soak my oats overnight so that when I get up all I have to do is turn on the burner. Sometimes I enjoy them with warm almond milk, other times I add grated almonds and berries, put the mixture in my tumbler and shake it until it’s so smooth I can drink it. In any form, oats do the heart good. Throughout the day I eat sweet potatoes, which are filled with fiber, beets sprinkled with a little olive oil, and vegetables of every variety. I also still enjoy plenty of salad, though I stopped adding so many carrots – too much sugar. But I will do celery, cucumbers, seaweed grass and other greens. God’s fresh bounty doesn’t need a lot of dressing up, which is why I generally eat my salad plain. From time to time I do drizzle it with garlic oil. I love the taste. I also love lychee nuts. I put them in the freezer so that when I bite into them cold juice comes flooding out. As terrific as they are, I buy them only once in awhile. I recently bit into an especially sweet one, and then I stuck it right back in the freezer. “Not today, Suzie,” I said to myself, “full of glucose!” I try never to eat late, and certainly not after nine p.m. Our organs need a chance to rest. And before bed, of course, I have a final glass of water. I don’t mess around with my hydration.

It's just the two of us. She shows me more secret passageways through the woods until the trees clear to reveal a large, moonlit meadow. We stop at the edge. Emma's looking at me expectantly, and at first I'm not sure what I'm supposed to see. I see tall, unkempt grass surrounded by trees. Then, like my eyes are playing tricks on me, fluorescent green lights flash on and off in the field, some of them rising up like bubbles in a pot of boiling water, some shooting across and lighting up the ground below them. "Whoa." "Pretty, right?" Emma says, turning her neck slowly from me to the meadow. "I almost never see fireflies." "I did some research, and they're not even supposed to exist west of Kansas. I have no idea why there's so many of them here." We walk through the field together, and in the blinking green lights I can see Emma's hand inches from my own, I see the curves and dips of her face in profile and I wonder how it is that I can find the space between things beautiful. Emma stops for a second and reaches into the waist-high grass, her hand disappearing in the dark. She pulls it back out to reveal a berry I have never seen before, not in the smorgasbord of rainbow-colored fruit at American grocery stores and definitely not anywhere in Mexico. It is the size of a child's fist, and the skin is prickly, like a lychee's. "When I was a kid, if I was mad at my mom, I'd hide out here for the day, picking out berries," Emma says. "I had no way of knowing if they were poisonous, but I'd feast on them anyway." She digs her thumb into the skin to reveal a pulpy white interior. She takes a bite out of it and then hands it to me. It's sweet and tangy and would be great in a vinaigrette, as a sauce, maybe along with some roasted duck. "I don't even think anyone else knows about these, because I've never seen them anywhere else. I'm sure she'd put it on her menu if she found out about them, but I like keeping this one thing to myself." We grab them by the handful, take them with us down the hill toward the lake. Sitting on the shore, gentle waves lapping at our ankles, we peel the berries one by one. A day or two ago, I thought of Emma as pretty. Tonight, her profile outlined by a full moon, she looks beautiful to me. I wish I could drive the thought away, but there it is anyway. The water---or something else about these nights---really does feel like it can cure hopelessness.

At the age of fourteen, in fact, Gaston Lenôtre of the famed Lenôtre Pâtisserie asked Pierre's father if he could apprentice Pierre. So at about the same age that I started whipping up Oreo blizzards for my illustrious career at Dairy Queen, Pierre began his in the French pastry world. After five years at Lenôtre, at the spry age of nineteen, he became the head pastry chef. If you've ever seen the billowy white gâteaux or structurally perfect strawberry tarts from this Parisian landmark, you know how impressive this is. Later, he moved on to Fauchon, another top marque in the French pastry world, where he caught the world's attention with his Cherry on the Cake, a towering creation of hazelnut dacquoise, milk chocolate ganache, milk chocolate Chantilly cream, milk chocolate shavings, crushed wafers, and a bright red candied cherry- phew! complete with stem- on top. This was an important revelation for two reasons: its artistry and the unexpected flavors. Unveiling this cake is a ritual, and if there's one thing I'd learned, it's that the French like their rituals. The more dramatic, the better. Untying the satin bow at the top of the cake's tall, triangular box allows the sides to fall away, revealing the gleaming cherry and six gold-leaf markings down the side, which indicate where to slice to serve the six perfect portions. With this cake, Pierre proved he was wildly creative, yet precise and thoughtful; a hedonist, but a hedonist with a little restraint and a lot of skill. Just as with its design, the flavor of the Cherry on the Cake left the French gasping. While they're typically dark and bittersweet chocolate devotees, this cake is all milk chocolate. Pierre took a risk that his budding fan base would fall for the milk chocolate and not think him sacrilegious for eschewing the dark. Same thing with flavors like lychee, rose, and salted caramel, which are common these days, but were out there when Pierre introduced them to his macarons and cakes in the early days.
