I go on dates with men who are nice and good-looking and smart – perfect-on-paper men who make me feel like I’m in a foreign land, trying to explain myself, trying to make myself known. Because isn’t that the point of every relationship: to be known by someone else, to be understood? He gets me. She gets me. Isn’t that the simple magic phrase?
So you suffer through the night with the perfect-on-paper man – the stutter of jokes misunderstood, the witty remarks lobbed and missed. But perhaps for those returning after a long absence, the combination of heartfelt sentiments and the ruthless influence of time can only spawn disappointments. The landscape is not as beautiful as one remembered it. The local cider is not as sweet. Quaint buildings have been restored beyond recognition, while fine old traditions have lapsed to make way for mystifying new entertainments. And having imagined at one time that one resided at the very center of this little universe, one is barely recognized, if recognized at all. Thus do the wise counsel that one should steer far and wide of the old homestead.
But no counsel, however well grounded in history, is suitable for all. Like bottles of wine, two men will differ radically from each other for being born a year apart or on neighboring hills. The only thing that kept Kestrel’s face clean of her thoughts was the knowledge that Cheat would take pleasure in any resistance. Yet she couldn’t make herself move.
“I’ll get the wine,” Arin said.
“No,” Kestrel said. She didn’t want to be left alone with Cheat. “I’ll go.”
For an uncertain moment, Arin stood awkwardly. Then he walked to the door and motioned a Herrani girl into the room. “Please escort Kestrel to the wine cellar, then bring her back here.”
“Choose a good vintage,” Cheat said to Kestrel. “You’ll know the best.”
As she left the room, his eyes followed her, glittering.

“Pour.” Cheat shoved his glass toward her. She uncorked the bottle and poured--and kept pouring, even as the red wine flowed over the glass’s rim, across the table, and onto Cheat’s lap.
He jumped to his feet, swatting wine from his fine stolen clothes. “Damn you!”
“You said I should pour. You didn’t say I should stop.”
Kestrel wasn’t sure what would have happened next if Arin hadn’t intervened. “Cheat,” he said, “I’m going to have to ask you to stop playing games with what is mine.

That seemed to draw her up short. “Wh-What?”
Sweet God, he shouldn’t have said that, but he couldn’t let her go on thinking she was some sort of pariah around men. “I knew that if I got his close, and I put my mouth on yours…”
But now he was this close. And she was staring up at him with that mix of bewilderment and hurt pride, and he couldn’t help himself. Not anymore.
He kissed her, to show her what she seemed blind to. That he wanted her. That even knowing it was wrong and could never work, he wanted to have her.
She tore her lips from his. “Mr. Pinter-“ she began in a whisper.
“Jackson,” he growled. “Let me hear you say my name.”
Backing away from him, she cast him a wounded expression. “Y-you don’t have to pretend-“
“I’m not pretending anything, damn it!”
Grabbing her by the sleeves, he dragged her close and kissed her again, with even more heat. How could she not see that he ached to take her? How could she not know what a temptation she was? Her lips intoxicated him, made him light-headed. Made him reckless enough to kiss her so impudently that any other woman of her rank would be insulted.
When she pulled away a second time, he expected her to slap him. But all she did was utter a feeble protest. “Please, Mr. Pinter-“
“Jackson,” he ordered in a low, unsteady voice, emboldened by the melting look in her eyes. “Say my Christian name.”
Her lush dark lashes lowered as a blush stained her cheeks. “Jackson…”
His breath caught in his throat at the intimacy of it, and fire exploded in his brain. She wasn’t pushing him away, so to hell with trying to be a gentleman.
He took her mouth savagely this time, plundering every part of its silky warmth as his blood pulsed high in his veins. She tasted of red wine and lemon cake, both tart and sweet at once. He wanted to eat her up. He wanted to take her, right here in this room.
So when she pulled out of his arms to back away, he walked after her.
She didn’t stop backing away, but neither did she turn tail and run. “Last night you claimed this wouldn’t happen again.”
“I know. And yet it has.” Like someone in an opium den, he’d been craving her for months. And how that he’d suddenly had a taste of the very thing he craved, he had to have more.
When she came up against the writing table, he caught her about the waist. She turned her head away before he could kiss her, so he settled for burying his face in her neck to nuzzle the tender throat he’d been coveting.
With a shiver, she slid her hands up his chest. “Why are you doing this?”

HERE ARE MY TEN BEEF NOODLE SOUP COMMANDMENTS: 1. Throw out the first: always flash-boil your bones and beef to get the “musk” out. I’ve gone back and forth on this a lot. I would sometimes brown the meat as opposed to boil, but decided in the end that for this soup, you gotta boil. If you brown, it’s overpowering. The lesson that beef noodle soup teaches you is restraint. Sometimes less is more if you want all the flavors in the dish to speak to you. 2. Make sure the oil is medium-high when the aromatics go down and get a slight caramelization. It’s a fine line. Too much caramelization and it becomes too heavy, but no caramelization and your stock is weak. 3. Rice wine can be tricky. Most people like to vaporize it so that all the alcohol is cooked off. I like to leave a little of the alcohol flavor ’cause it tends to cut through the grease a bit. 4. Absolutely no butter, lard, or duck fat. I’ve seen people in America try to “kick it up a notch” with animal fats and it ruins the soup. Peanut oil or die. 5. Don’t burn the chilis and peppercorns, not even a little bit. You want the spice and the numbness, but not the smokiness. 6. After sautéing the chilis/peppercorns, turn off the heat and let them sit in the oil to steep. This is another reason you want to turn the heat off early. 7. Strain your chilis/peppercorns out of the oil, put them in a muslin bag, and set them aside. Then add ginger/garlic/scallions to the oil in that order. Stage them. 8. I use tomatoes in my beef noodle soup, but I add them after the soup is finished and everything is strained. I let them hang out in the soup as it sits on the stove over the course of the day. I cut the tomatoes thin so they give off flavor without having to cook too long and so you can serve them still intact. 9. Always use either shank or chuck flap. Brisket is too tough. If you want to make it interesting, add pig’s foot or oxtail. 10. Do you. I don’t give you measurements with this because I gave you all the ingredients and the technique. The best part about beef noodle soup is that there are no rules. It just has to have beef, noodle, and soup. There are people that do clear broth beef noodle soup. Beef noodle soup with dairy. Beef noodle soup with pig’s blood. It would suck if you looked at my recipe and never made your own, ’cause everyone has a beef noodle soup in them. Show it to me.

Every part of the body had its traditional method of preparation. Zampetti all' aggro were calf's feet, served with a green sauce made from anchovies, capers, sweet onions, pickled gherkins, and garlic, finely chopped, then bound with potato and thinned with oil and vinegar. Brains were cooked with butter and lemon---cervello al limone---or poached with vegetables, allowed to cool, then thinly sliced and fried in an egg batter. Liver was wrapped in a caul, the soft membrane that envelops a pig's intestines, which naturally bastes the meat as it melts slowly in the frying pan. The Princeton economist and wine lover Orley Ashenfelter has offered a compelling demonstration of the power of simple statistics to outdo world-renowned experts. Ashenfelter wanted to predict the future value of fine Bordeaux wines from information available in the year they are made. The question is important because fine wines take years to reach their peak quality, and the prices of mature wines from the same vineyard vary dramatically across different vintages; bottles filled only twelve months apart can differ in value by a factor of 10 or more. An ability to forecast future prices is of substantial value, because investors buy wine, like art, in the anticipation that its value will appreciate. It is generally agreed that the effect of vintage can be due only to variations in the weather during the grape-growing season. The best wines are produced when the summer is warm and dry, which makes the Bordeaux wine industry a likely beneficiary of global warming. The industry is also helped by wet springs, which increase quantity without much effect on quality. Ashenfelter converted that conventional knowledge into a statistical formula that predicts the price of a wine—for a particular property and at a particular age—by three features of the weather: the average temperature over the summer growing season, the amount of rain at harvest-time, and the total rainfall during the previous winter. His formula provides accurate price forecasts years and even decades into the future. Indeed, his formula forecasts future prices much more accurately than the current prices of young wines do. This new example of a “Meehl pattern” challenges the abilities of the experts whose opinions help shape the early price. It also challenges economic theory, according to which prices should reflect all the available information, including the weather. Ashenfelter’s formula is extremely accurate—the correlation between his predictions and actual prices is above .90.

The two of you take a morning walk along the beach, maybe go for a swim. And you pick up a few pieces of seaglass to put in a jar. Later, you both ride bikes into the town, and you head for the outfitters shop to buy some fishing stuff . . . some kind of bait—”

“For what kind of fish?”
“Redfish.”
“Great. So then you go fishing—”
“The girlfriend, too?” he asked.

“No, but she thinks it’s fine that you do, and she says it’s healthy for you to have separate interests.” I paused. “She packed a really big sandwich and a couple of beers for you.”
“I like this woman.”
“You go out in your boat, and you bring home a nice catch and throw it on the grill. You and the woman have dinner. You sit with your feet up, and you talk. Sometimes you stop to listen to the sounds of the tide coming in. After that, the two of you go on the beach with a bottle of wine, and sit on a blanket to watch the sunset.” I finished and looked at him expectantly. “How was that?”
I had thought Jack would be amused, but he stared at me with disconcerting seriousness. “Great.”

Switzerland, she wrote. Move. “That brings us to the third bond,” Elizabeth said, pointing at another set of molecules, “the hydrogen bond—the most fragile, delicate bond of all. I call this the ‘love at first sight’ bond because both parties are drawn to each other based solely on visual information: you like his smile, he likes your hair. But then you talk and discover he’s a closet Nazi and thinks women complain too much. Poof. Just like that the delicate bond is broken. There is no fault that can’t be corrected [in natural wine] with one powder or another; no feature that can’t be engineered from a bottle, box, or bag. Wine too tannic? Fine it with Ovo-Pure (powdered egg whites), isinglass (granulate from fish bladders), gelatin (often derived from cow bones and pigskins), or if it’s a white, strip out pesky proteins that cause haziness with Puri-Bent (bentonite clay, the ingredient in kitty litter). Not tannic enough? Replace $1,000 barrels with a bag of oak chips (small wood nuggets toasted for flavor), “tank planks” (long oak staves), oak dust (what it sounds like), or a few drops of liquid oak tannin (pick between “mocha” and “vanilla”). Or simulate the texture of barrel-aged wines with powdered tannin, then double what you charge. (““Typically, the $8 to $12 bottle can be brought up to $15 to $20 per bottle because it gives you more of a barrel quality. . . . You’re dressing it up,” a sales rep explained.)
Wine too thin? Build fullness in the mouth with gum arabic (an ingredient also found in frosting and watercolor paint). Too frothy? Add a few drops of antifoaming agent (food-grade silicone oil). Cut acidity with potassium carbonate (a white salt) or calcium carbonate (chalk). Crank it up again with a bag of tartaric acid (aka cream of tartar). Increase alcohol by mixing the pressed grape must with sugary grape concentrate, or just add sugar. Decrease alcohol with ConeTech’s spinning cone, or Vinovation’s reverse-osmosis machine, or water. Fake an aged Bordeaux with Lesaffre’s yeast and yeast derivative. Boost “fresh butter” and “honey” aromas by ordering the CY3079 designer yeast from a catalog, or go for “cherry-cola” with the Rhône 2226. Or just ask the “Yeast Whisperer,” a man with thick sideburns at the Lallemand stand, for the best yeast to meet your “stylistic goals.” (For a Sauvignon Blanc with citrus aromas, use the Uvaferm SVG. For pear and melon, do Lalvin Ba11. For passion fruit, add Vitilevure Elixir.) Kill off microbes with Velcorin (just be careful, because it’s toxic). And preserve the whole thing with sulfur dioxide.
When it’s all over, if you still don’t like the wine, just add a few drops of Mega Purple—thick grape-juice concentrate that’s been called a “magical potion.” It can plump up a wine, make it sweeter on the finish, add richer color, cover up greenness, mask the horsey stink of Brett, and make fruit flavors pop. No one will admit to using it, but it ends up in an estimated 25 million bottles of red each year. “Virtually everyone is using it,” the president of a Monterey County winery confided to Wines and Vines magazine. “In just about every wine up to $20 a bottle anyway, but maybe not as much over that.
