(A turn handle is easier to manipulate than a squeeze handle, but both develop fine-motor muscles in the hands.) Let the child scoop and sift. Stringing and Lacing—Provide shoelaces, lengths of yarn on plastic needles, or pipe cleaners, and buttons, macaroni, cereal “Os,” beads, spools, paper clips, and jingle bells. From the Waverley Kitchen Journal Fig and Pepper Bread Mary’s Note: Sometimes the two most improbable things make the best combination. Ingredients: 2 cups whole grain spelt flour 2 ½ cups unbleached all purpose flour 1 ½ cups coarsely chopped figs 2 tsp coarse black pepper 2 tsp sea salt 2 tbsp olive oil 1 dry yeast packet 1 ½ cups of warm water Whisk flour, salt, pepper, and yeast until blended, by hand or with whisk attachment of mixer. Add olive oil and warm water. Knead for 10 minutes, or use dough hook attachment of mixer for 5 minutes, until dough is smooth and springy. Oil a large bowl, place dough inside, and cover bowl with a damp hand towel. Let sit in a warm place for approximately 1 hour, or until dough has doubled in size. Softly knead in the chopped figs and evenly distribute throughout the dough (lightly flouring your hands can make handling the dough easier), shape into an oval, then place on a baking sheet. Snip three shallow lines into top of the dough with scissors, then lightly dust the dough with flour. Let rise, uncovered, until dough swells a little more—10–15 mins, or longer if the kitchen isn’t warm. Place tray in 350° oven for 40–45 mins until crust is slightly brown and the loaf sounds hollow when tapped on the underside. Cool on a wire rack.

Cakes: Microwave milk, water, oil, and butter for two minutes. Make certain it is not too hot to touch (90–100 degrees. We don’t want to kill off our little hardworking yeast, do we? No. We are not killers). Crack eggs into liquid. In the mixing bowl of a standing mixer, combine 1 ½ cups of flour, the salt, sugar, and yeast. Add the liquid and stir thoroughly. Add remaining 2 cups of flour one cup at a time, stirring between each addition. With mixer on low and using the bread paddle or hook, mix dough for 4 minutes. If you don’t have a standing mixer for some strange reason, which I cannot fathom because they are the most useful things ever, you can knead it by hand for 8 minutes instead. Scrape dough into a greased and floured mixing bowl. Let rise for one hour in a warm place. (I preheat my oven to 100 degrees and then turn it off before putting the dough inside, covered with a towel. This is a Great Way to Not Kill Your Yeast.) After one hour, remove the dough and place on a floured cutting board. Gently roll it out to a 12 x 20 inch(ish) rectangle. Combine 3 tablespoons melted butter and ¼ teaspoon orange extract for the filling. Spoon the filling to cover the rectangle, then roll it up. It will be . . . slimy. Delicious, but slimy. Use a sharp knife to cut the log into 12 rolls. (They should be swirled like cinnamon rolls.) Place each roll cut side up in a greased muffin tin and let rise for a half hour covered with the towel. Preheat the oven to 400 degrees, then bake rolls (remove the towel first, flames are such a pain in the kitchen) for 14 minutes. Let them cool in the pan for a few minutes, then tip them out onto a large plate for the next step.

His trembling fingers sought mine, and he clutched my hand against his chest, against his armor. We stood together for a long time, until his tears subsided. Then I turned the water off, and led him into the kitchen, scattering mirror pieces with my toes as I walked. He was staring into middle distance. I wasn’t sure that he knew where he was, or what was happening to him. I undid the straps of his armor and guided it over his head; I pinched the hem of his shirt and peeled the wet fabric away from his body; I unbuttoned his pants and let them drop to the floor in a soaking-wet heap. I had daydreamed about seeing him this way, and even about one day undressing him, taking away some of the layers that separated us, but this was not a daydream. He was in pain. I wanted to help him.

The dimensions of the main room were still roughly fifteen feet on a side, but now there was a sleeping loft above, accessible by way of a tiny spiral staircase where my former storage space had been. In the old place, I’d usually slept naked on the couch in an envelope of folded quilt. Now, I was going to have an actual bedroom of my own. I wound my way up, staring in amazement at the double-size platform bed with drawers underneath. In the ceiling above the bed, there was a round shaft extending through the roof, capped by a clear Plexiglas skylight that seemed to fling light down on the blue-and-white patchwork coverlet. Loft windows looked out to the ocean on one side and the mountains on the other. Along the back wall, there was an expanse of cedar-lined closet space with a rod for hanging clothes, pegs for miscellaneous items, shoe racks, and floor-to-ceiling drawers. Just off the loft, there was a small bathroom. The tub was sunken with a built-in shower and a window right at tub level, the wooden sill lined with plants. I could bathe among the treetops, looking out at the ocean where the clouds were piling up like bubbles. The towels were the same royal blue as the cotton shag carpeting. Even the eggs of milled soap were blue, arranged in a white china dish on the edge of the round brass sink.

I never found the owner and from that day, Chelsea was wholly devoted to me. None of my dogs ever doted on me like she did. She literally became my slave. Her gaze was constantly upon me. She was obedient and lived to bring pleasure. I tell this story to illustrate the loving gaze of the slave toward her master. She knows he has rescued her from certain death and even now has the power of life and death over her, yet she loves him for sparing her life. Pickled Asparagus Makes 3 pints 3 pounds asparagus 1 1/2 cups apple cider vinegar 1 1/2 cups water 2 tablespoons pickling salt 3 teaspoons mixed pickling spices 3 garlic cloves, peeled 3 slices of lemon Prepare a boiling water bath canner and 3 pint jars. Wash the asparagus and trim it so that it will fit in your jars, leaving about 1/2 inch of headspace. Combine the vinegar, water, and pickling salt in a pot and bring to a boil. Remove the jars from the hot water bath. Put the lemon slice in the bottom and measure 1 teaspoon of pickling spice into each jar. Pack the trimmed asparagus into the jars (it’s up to you to determine whether you want to go tips up or down). Tuck a garlic clove down into the asparagus spears. Slowly pour the hot brine over the asparagus spears, leaving 1/2 inch for headspace. After all the jars are full, use a wooden chopstick to work the air bubbles out of the jars. Check the headspace again and add more brine if necessary. Wipe the rims, apply lids and rings, and process in a hot water bath for 10 minutes. When the time is up, remove the jars and set them on a folded kitchen towel to cool. When the jars have cooled enough that you can comfortably handle them, check the seals. Sealed jars can be stored at room temperature for up to a year. Any unsealed jars should be refrigerated and used promptly. Wait at least 24 hours before eating, to give the asparagus spears a chance to absorb the brine. Don’t worry if the spears initially look wrinkled. Over time, they will plump up again.

And leeks? Well, I always put leeks in my soup. I microwave the bacon until crisp because Gloria always does so with good results, but it could be cooked in a skillet as well. Although I use coarsely granulated Irish oatmeal, which is chewy and flavorful, the soup is good made with quick-cooking oatmeal, provided you reduce the preparation time and the liquid accordingly. The first part of the recipe—bacon, leeks, and oatmeal—can be prepared ahead. It is better to add the milk and half-and-half at the last moment, however, for a fresher, cleaner-tasting soup. Finishing the soup with both milk and half-and-half is best, although using milk only is fine. 6 slices bacon (6 to 7 ounces), preferably maple- or honey-cured 2 small leeks, trimmed, with most of the green left on, sliced thin, and washed (2½ cups) 5 cups water 1 cup Irish coarse oatmeal 1½ teaspoons salt (less if bacon is highly salted) 1 cup half-and-half 1 cup milk ½ teaspoon freshly ground black pepper Arrange the bacon on a microwave oven tray, cover with paper towels, and cook on full power for about 4 minutes, or until the slices are crisp and brown. Reserve about 2 tablespoons of the bacon fat, and transfer the bacon to a cutting board. Cut the bacon into ½-inch pieces, and set it aside. Put the reserved bacon fat in a saucepan. Add the sliced leeks, and cook over medium heat for 5 to 6 minutes, until softened. Add the water, and bring to a boil. Add the oatmeal and salt, stir, and bring to a boil. Reduce the heat to very low, cover (with the lid placed slightly ajar, so the oatmeal doesn’t boil over), and cook gently for 25 to 30 minutes, or until the oatmeal is tender. (The recipe can be made to this point up to 24 hours ahead of time.) At serving time, add the half-and-half, milk, and pepper, and bring to a boil. Serve hot with the bacon pieces sprinkled on top.

Beef & Butternut Squash Stew 6 Servings   Ingredients: 2 tablespoons olive or vegetable oil 1 pound beef stew meat, cut into 1-inch cubes 1/4 cup of flour 3 carrots, chopped 1 onion, coarsely chopped 2 cloves garlic, minced 4 cups beef stock 1 (14.5-ounce) can whole tomatoes, crushed with your hands or a potato masher 1 tablespoon Worcestershire sauce (optional) 2 bay leaves 1 teaspoon dried thyme 1 small butternut squash, peeled and cut into 1-inch cubes 1 cup frozen or canned peas 1 teaspoon salt and, plus extra 1/2 teaspoon pepper, plus extra   Directions: 1. Preheat oven to 325 degrees F. 2. Heat oil over medium-high heat in a Dutch oven, or large skillet. While the oil is heating, blot the beef cubes with a paper towel to remove the moisture (this will allow them to get nice and brown in the pan). Next, season the beef cubes with 1 teaspoon of salt, and 1/2 teaspoon of pepper. Toss the seasoned beef cubes with the flour, and then brown the beef in the hot oil. 3. Remove the browned beef from the pot with a slotted spoon, and set aside on a plate. In the same pot, cook the carrots, onion and garlic over medium heat until they have a little color (about 10 minutes,) 4. If you used a Dutch oven to brown the meat and vegetables, go ahead and return the beef to the Dutch oven and toss with the vegetables. If you browned the meat and vegetables skillet, transfer everything to an oven-proof pot or casserole dish. 5. Add the beef stock, crushed tomatoes, Worcestershire sauce, bay leaves and thyme to the pot. Cover tightly and put into the oven for 90 minutes. 6. Remove from the oven and add the butternut squash. You will want the meat and vegetables to be submerged in liquid, so add a little more water or stock to the pot if needed. Give everything a stir, and cover, this time leaving the lid slightly ajar so that the steam can escape. Return to the oven for another 60 minutes, or until beef and squash are tender. 7. K. Laxman, and, if my mother happens to be there, unselfishly sharing it with her. She, as expected, misunderstands it completely, laughing not at the joke but at the expressions on the faces of the caricatures, and at the hilarious fact that they talk to each other like human beings.

He wet one of the dishcloths with cool water at the sink, and then returned to her. She was not the housekeeper his own wife was—there were crumbs on the kitchen table and stained teacups in the sink—but there was a sweetness in the way she asked when he leaned over her if she could just take hold of his arm.

I squat to retrieve the pitcher but Bruno’s faster. He offers it to me and I make the mistake of looking him in the eye. My balance is thrown and I start to fall back. Bruno drops the pitcher and takes hold of both of my wrists to keep my butt from slamming into the ground. He uses my momentum, and in one swift movement, we’re both standing again, face-to-face. Too close. Way too close. He smells of wine. And basil. Bruno picks up the pitcher, slowly this time, and loops my fingers through the handle. “All right?” he asks, his smile big and hypnotizing. I steal a glance at them. The brunette’s mouth hangs open and the blond one looks me up and down, her expression simultaneously appalled and impressed. I’m mortified. And slightly thrilled. I run through the restaurant and into the kitchen without looking back. I blast the cold water into the sink, let it fill my cupped hands, and dip my face down into it again and again until I’m no longer on fire. When my eyes clear, I notice a hand towel dangling in front of me. Luca. I take it and quickly pat my face dry. “I--”…have no idea what to say. “Your brother…” Luca makes an understanding noise. “Bruno is”--he struggles for the world--“loud.” I would have said something else, but his definition is accurate too. Luca wasn’t even outside but he obviously knows his brother well. Bruno barging in on me while I was changing should have told me everything I needed to know about him.

He sets me down on the couch--the boys’ temporary bed folded away inside--and carefully props my giant foot on a pillow. He rummages in the kitchen and comes back with a plastic sandwich bag filled with ice, wrapped in a hand towel. The weight of it sends a fresh wave of pain up to my temples and I lean back, bracing myself. “I am sorry!” he says, a deep line between his eyebrows. “It’s fine.” I force a laugh. “This”--I motion to my foot--“is definitely not your fault.” “It is. I should have gone. It would not have happened.” If he had come with me, I know exactly what would have happened, and it wouldn’t have involved sightseeing.
