I dream regularly of its bollito misto, a heroic mix of braised brisket, capon, and tongue served with salsa verde, but the dish I'm looking for this time, a thick beef-and-pork joint with plenty of jammy tomato, is a solid middle-of-the-road ragù.

The choice of 'eastern Europe' as a frame of reference requires a word of explanation. The Greeks established other cities on the mainland, in a cluster known as Magna Graecia, which means “Great Greece” in Latin, the language of ancient Rome. A later Greek city, called Poseidonia after Poseidon, the Greek god of the sea, flourished in about 550 B.C. When Italic people conquered the city, which was located south of Naples, they changed its name to Paestum. The ruins of Greek temples there are among the best-preserved Greek structures anywhere.

Other important langues d’oïl were Angevin, Poitevin and Bourguignon, spoken in Anjou, Poitiers and Burgundy, which were considerably farther south of Paris. Scholars debate who created the designations langues d’oïl and langues d’oc. The poet Dante Alighieri, in his De vulgari eloquentia of 1304, was one of the first to introduce the term langue d’oc, opposing it to the langue d’oïl and the langue de si (Romance from Italy). A fifth important langue d’oïl was Walloon, the dialect of the future Belgium. The langues d’oc attained their golden age in the eleventh and twelfth centuries, when groups of wandering musicians, or troubadours, travelled from city to city spreading a new form of sung poem that extolled the ideal of courtly love, or fin’amor. This new poetry was very different from the cruder epic poems of the north, the chansons de geste, and it enjoyed great literary prestige that boosted the influence of two southern rulers, the Count of Toulouse and the Duke of Aquitaine. Even many Italian courts adopted the langue d’oc, which is also known today as Occitan. Wandering poets of the north, the trouvères of Champagne, also borrowed and popularized the song-poems of the south.

BY ADAM GOPNIK Once, in a restaurant in Italy with my family, I occasioned enormous merriment, as a nineteenth-century humorist would have put it, by confusing two Italian words. I thought I had, very suavely, ordered for dessert fragoline—those lovely little wild strawberries. Instead, I seem to have asked for fagiolini—green beans. The waiter ceremoniously brought me a plate of green beans with my coffee, along with the flan and the gelato for the kids. The significant insight the mistake provided—arriving mere microseconds after the laughter of those kids, who for some reason still bring up the occasion, often—was about the arbitrary nature of language: the single “r” rolled right makes one a master of the trattoria, an “r” unrolled the family fool. Although speaking feels as natural as breathing, the truth is that the words we use are strange, abstract symbols, at least as remote from their objects as Egyptian hieroglyphs are from theirs, and as quietly treacherous as Egyptian tombs. Although berries and beans may be separated by a subtle sound within a language, the larger space between like words in different languages is just as hazardous. Two words that seem to indicate the same state may mean the opposite. In English, the spiritual guy is pious, while the one called spirituel in French is witty; a liberal in France is on the right, in America to the left. And what of cultural inflections that seem to separate meanings otherwise identical? When we have savoir-faire in French, don’t we actually have something different from “know-how” in English, even though the two compounds combine pretty much the same elements? These questions, about the hidden traps of words and phrases, are the subject of what may be the weirdest book the twenty-first century has so far produced: “Dictionary of Untranslatables: A Philosophical Lexicon,” a thirteen-hundred-page volume, originally edited in French by the French philologist Barbara Cassin but now published, by Princeton University Press, in a much altered English edition, overseen by the comp-lit luminaries Emily Apter, Jacques Lezra, and Michael Wood. How weird is it? Let us count the ways. It is in part an anti-English protest, taking arms against the imperializing spread of our era’s, well, lingua franca—which has now been offered in English, so that everyone can understand it. The book’s presupposition is that there are significant, namable, untranslatable differences between tongues, so that, say, “history” in English, histoire in French, and Geschichte in German have very different boundaries that we need to grasp if we are to understand the texts in which the words occur. The editors, propelled by this belief, also believe it to be wrong. In each entry of the Dictionary, the differences are tracked, explained, and made perfectly clear in English, which rather undermines the premise that these terms are untranslatable, except in the dim sense that it sometimes takes a few words in one language to indicate a concept that is more succinctly embodied in one word in another. Histoire in French means both “history” and “story,” in a way that “history” in English doesn’t quite, so that the relation between history and story may be more elegantly available in French. But no one has trouble in English with the notion that histories are narratives we make up as much as chronicles we discern. Indeed, in the preface, the editors cheerfully announce that any strong form of the belief to which their book may seem to be a monument is certainly false: “Some pretty good equivalencies are always available. . . . If there were a perfect equivalence from language to language, the result would not be translation; it would be a replica. . . . The actual antecedents of contemporary populist politicians like Trump are to be found not in interwar Central European totalitarian states but in state and local politics, particularly urban politics. In Europe, pro-Brexit Boris Johnson was the mayor of London before becoming prime minister, and Italy’s Matteo Salvini was on the city council of Milan from 1993 to 2012.
In the United States, the shift from post-1945 democratic pluralism to technocratic neoliberalism was fostered from the 1960s onward by an alliance of the white overclass with African Americans and other racial minority groups. The result was a backlash by white working-class voters, not only against nonwhites who were seen as competitors for jobs and housing, but also against the alien cultural liberalism of white “gentry liberals.” The backlash in the North was particularly intense among “white ethnics”—first-, second-, and third-generation white immigrants like Irish, German, Italian, and Polish Americans, many of them Catholic. The disproportionately working-class white ethnics now found themselves defined as bigots by the same white Anglo-Saxon Protestant (WASP) elites who until recently had imposed quotas on Jews and Catholics in their Ivy League universities, but who were now posing as the virtuous, enlightened champions of civil rights.
This toxic mix of black aspiration, white ethnic backlash, and WASP condescension provided a ripe habitat for demagogues, many of them old-school Democrats like Frank Rizzo, mayor of Philadelphia, Sam Yorty, mayor of Los Angeles, and Mario Angelo Procaccino, failed mayoral candidate in New York. These populist big-city mayors or candidates in the second half of the twentieth century combined appeals to working-class grievances and resentments with folksy language and feuds with the metropolitan press, a pattern practiced, in different ways, by later New York City mayors Ed Koch, a Democrat, and Rudy Giuliani, a Republican.
In its “Against Trump” issue of January 22, 2016, the editors of National Review mocked the “funky outer-borough accents” shared by Donald Trump and Bernie Sanders. Indeed, Trump, a “white ethnic” from Queens with German and Scots ancestors, with his support in the US industrial states where working-class non-British European-Americans are concentrated, is ethnically different from most of his predecessors in the White House, whose ancestors were proportionately far more British American. Traits which seem outlandish in a US president would not have seemed so if Trump had been elected mayor of New York. Donald Trump was not Der Führer. He was Da Mayor of America.

In the programs and statements of these parties one hears echoes of classical fascist themes: fears of decadence and decline; assertion of national and cultural identity; a threat by unassimilable foreigners to national identity and good social order; and the need for greater authority to deal with these problems. Even though some of the European radical Right parties have full authoritarian-nationalist programs (such as the Belgian Vlaams Blok’s “seventy points” and Le Pen’s “Three Hundred Measures for French Revival” of 1993), most of them are perceived as single-issue movements devoted to sending unwanted immigrants home and cracking down on immigrant delinquency, and that is why most of their voters chose them.
Other classical fascist themes, however, are missing from the programmatic statements of the most successful postwar European radical Right parties. The element most totally absent is classical fascism’s attack on the liberty of the market and economic individualism, to be remedied by corporatism and regulated markets. In a continental Europe where state economic intervention is the norm, the radical Right has been largely committed to reducing it and letting the market decide.
Another element of classical fascist programs mostly missing from the postwar European radical Right is a fundamental attack on democratic constitutions and the rule of law. None of the more successful European far Right parties now proposes to replace democracy by a single-party dictatorship. At most they advocate a stronger executive, less inhibited forces of order, and the replacement of stale traditional parties with a fresh, pure national movement. They leave to the skinheads open expressions of the beauty of violence and murderous racial hatred. The successful radical Right parties wish to avoid public association with them, although they may quietly share overlapping membership with some ultraright action squads and tolerate a certain amount of overheated language praising violent action among their student branches.
No western European radical Right movement or party now proposes national expansion by war—a defining aim for Hitler and Mussolini. Indeed the advocates of border changes in postwar Europe have mostly been secessionist rather than expansionist, such as the Vlaams Blok in Belgium and (for a time) Umberto Bossi’s secessionist Northern League (Lega Nord) in northern Italy. The principal exceptions have been the expansionist Balkan nationalisms that sought to create Greater Serbia, Greater Croatia, and Greater Albania.

Babbage was also known for his extravagant parties, which he called “gatherings of the mind” and hosted for the upper class, the well-known, and the very intelligent.4 Many of the most famous people from Victorian England would be there—from Charles Darwin to Florence Nightingale to Charles Dickens. It was at one of these parties in 1833 that Ada glimpsed Babbage’s half-built Difference Engine. The teenager’s mathematical mind buzzed with possibilities, and Babbage recognized her genius immediately. They became fast friends. The US Department of Defense uses a computer language named Ada in her honor. Babbage sent Ada home with thirty of his lab books filled with notes on his next invention: the Analytic Engine. It would be much faster and more accurate than the Difference Engine, and Ada was thrilled to learn of this more advanced calculating machine. She understood that it could solve even harder, more complex problems and could even make decisions by itself. It was a true “thinking machine.”5 It had memory, a processor, and hardware and software just like computers today—but it was made from cogs and levers, and powered by steam. For months, Ada worked furiously creating algorithms (math instructions) for Babbage’s not-yet-built machine. She wrote countless lines of computations that would instruct the machine in how to solve complex math problems. These algorithms were the world’s first computer program. In 1840, Babbage gave a lecture in Italy about the Analytic Engine, which was written up in French. Ada translated the lecture, adding a set of her own notes to explain how the machine worked and including her own computations for it. These notes took Ada nine months to write and were three times longer than the article itself! Ada had some awesome nicknames. She called herself “the Bride of Science” because of her desire to devote her life to science; Babbage called her “the Enchantress of Numbers” because of her seemingly magical math

Italians reach that state so infrequently that their language provides only a few tame options—ubriaco (drunk), brillo (tipsy), alticcio (high), sbronzo (drunk)—with at most perso (lost) or fradicio (rotten) tacked on for a touch of color. They don’t even have a proper word for a hangover, though if pressed they’ll come up with the stately postumi della sbornia, aftereffects of overindulgence. For Italians, wine and beer are foods. If they provide a little buzz that’s just a pleasant side benefit, improving the sparkle of the conversation. When I first traveled in Italy, parents regularly fed wine-laced water to their kids (“acquavino”), vaccinating them against later dipsomania. And at lunchtime in the cafeteria of my Nuovo Regina Margherita Hospital the docs would jostle to sit at the chaplain’s table, because he’d always bring a bottle of good country wine. Even the harder stuff fits into a culinary protocol: a seven p.m. Campari is meant to whet the appetite, and the cognac or amaro at the end of a large meal to aid digestion. Which is why, in proportion, Italy has one-tenth as many problem drinkers as America.

A convincing case can be made on environmental grounds alone that a nation of 300,000,000 needs no more people, especially since it would enjoy natural growth if the borders were closed tomorrow. How can we possibly claim to be fighting environmental degradation or hope for energy independence when we import a million or more people every year? How can we claim to be fighting poverty, crime, school failure, or disease when we import people who are more likely than natives to be poor, criminals, school failures, and to suffer from strange diseases? Immigration is even harder to justify when many newcomers speak no English, maintain foreign loyalties, or practice disconcerting religions. It is profoundly unwise to add yet more disparate elements to a population already divided by diversity.
[D]emographers and economists are making dire projections based on the lower likelihood of blacks and Hispanics to become productive workers. These people go on to insist that the solution is to improve education for blacks and Hispanics, but the United States has already made enormous efforts to that end. There is no reason to think some kind of breakthrough is imminent.
Clearly, the solution to the problems posed by an increasing Hispanic population is to stop Hispanic immigration. However, [...], our policy-makers are too afraid of accusations of racism to draw such an obvious conclusion. Americans must open their eyes to the fact that a changing population could change everything in America. The United States could come to resemble the developing world rather than Europe—in some places it already does. One recent book on immigration to Europe sounded a similar alarm when the author asked: “Can you have the same Europe with different people?” His answer was a forthright “no.”
It should be clear from the changes that have already taken place in the United States that we cannot have the same America with different people, either. Different populations build different societies. The principles of European and European-derived societies—freedom of speech, the rule of law, respect for women, representative government, low levels of corruption—do not easily take root elsewhere. They were born out of centuries of struggle, false starts, and setbacks, and cannot be taken for granted. A poorer, more desperate America, one riven with racial rivalries, one increasingly populated by people who come from non-Western traditions could turn its back on those principles.
Many people assert that all people can understand and assimilate Western thinking—and yet cultures are very different. Can you, the reader, imagine emigrating to Cambodia or Saudi Arabia or Tanzania and assimilating perfectly? Probably not; yet everyone in the world is thought to be a potential American. Even if there is only a small chance that non-Western immigrants will establish alien and unsettling practices, why take this risk? Immigration to the United States, like immigration to any nation, is a favor granted by citizens to foreigners. It is not a right.
Immigration advocates often point to the objections Anglo-Americans made to turn-of-the-century immigrants from Italy, Ireland, Hungary, and other “non-Nordic” countries. They point out that these immigrants assimilated, and insist that Mexicans and Haitians will do the same. Those advocates overlook the fundamental importance of race. They forget that the United States already had two ill assimilated racial groups long before the arrival of European ethnics—blacks and American Indians—and that those groups are still uncomfortably distinct elements in American society. Different European groups assimilated across ethnic lines after a few generations because they were of the same race. There are many societal fault lines in “diverse” societies—language, religion, ethnicity—but the fault line of race is deepest.

In the way of a reflection of my family and friends I mused at the number of people that I encountered during the past 85 years. Everyone here has played an important part but there have been others, many of whom have now passed across the horizon of life, however the purpose of my reminiscing is to share happy thoughts while at the same time take a peek into the future.
I can look back to those first few glimpses of my life and find my grandmother Ohme, Gertrude Thieme standing at what I perceived to be a high kitchen counter making sandwiches using a slice of almost not eatable German black bread they called schwartsbrod. With great care she laden it with lard, blootwurst or sometimes liberwurst, topped with the half of a crusty Keiser roll. I always got the heel of the roll, with a quarter lengthwise slice of a crunchy dill pickle. It was the first and last time I remember seeing her before she returned to Germany and the war.
My sister Trudy had died a few years prior leaving a collective hole in my family. Her short life and subsequent death was devastating to my mother and father and I constantly felt the sorrow it brought into our home. My father unsuccessfully tried to make a success of a small delicatessen at 11 Nelson Avenue in Jersey City and we moved to 25 Nelson Avenue when my father started working as a chef at Lindy’s Restaurant on Broadway in Manhattan.
At home we exclusively spoke German which was a hindrance during World War II. My mother and father never lost their German accent and the only one of my family that made a real effort to speak English without an accent was my Onkle Willie. My parents refused to associate with my Onkle Walter and his wife Tante Wilma although they always treated me kindly and I sometimes talked with my cousins Klein Walter und Norma. The neighborhood treated us as NAZI outcasts until Italy entered the war on the Axis side and suddenly we all had to prove that we were patriotic. Eventually I joined the tin can army and learned enough English to be accepted. As my accent faded I truly became an American.
