It seems to me that if the electoral process can be so wrong about such a simple thing, isn't it possible for it to be very, very wrong on much more complex matters? We have this sacred cow in our society that what the majority of people want is right—but is it? Our populace can't really be informed, not the majority of them—most people vote the way they have been manipulated and by the way they have responded to that manipulation—they are working out their own patterns of wishful thinking on the social environment in which they live. It is most disturbing to me to realize that though a majority may choose a specific course of action or direction for itself, through the workings of a 'representative government,' they may be as mistaken about the correctness of such a choice as my classmates were about the sex of that Shaleenian kangaroo-cat. I'm not so sure than an electoral government is necessarily the best.

Somewhere in the back of my brain, I knew I was sitting in a Jeep in the parking lot of a night club on an island off the Mexican coast - but how could I really be sure, with another part of my brain convinced that I was looking down on the huge glittering bowl of Los Angeles from the cockpit of a 727? Was that the Milky Way? Or Sunset Boulevard? Orion, or the Beverly Hills Hotel? Who gives a fuck? I thought.

I realized I still had my eyes shut. I had shut them when I put my face to the screen, like I was scared to look outside. Now I had to open them. I looked out the window and saw for the first time how the hospital was out in the country. The moon was low in the sky over the pastureland; the face of it was scarred and scuffed where it had just torn up out of the snarl of scrub oak and madrone trees on the horizon. The stars up close to the moon were pale; they got brighter and braver the farther they got out of the circle of light ruled by the giant moon. It called to mind how I noticed the exact same thing when I was off on a hunt with Papa and the uncles and I lay rolled in blankets Grandma had woven, lying off a piece from where the men hunkered around the fire as they passed a quart jar of cactus liquor in a silent circle. I watched that big Oregon prairie moon above me put all the stars around it to shame. I kept awake watching, to see if the moon ever got dimmer or if the stars got brighter, till the dew commenced to drift onto my cheeks and I had to pull a blanket over my head. Something moved on the grounds down beneath my window — cast a long spider of shadow out across the grass as it ran out of sight behind a hedge. When it ran back to where I could get a better look, I saw it was a dog, a young, gangly mongrel slipped off from home to find out about things went on after dark. He was sniffing digger squirrel holes, not with a notion to go digging after one but just to get an idea what they were up to at this hour. He’d run his muzzle down a hole, butt up in the air and tail going, then dash off to another. The moon glistened around him on the wet grass, and when he ran he left tracks like dabs of dark paint spattered across the blue shine of the lawn. Galloping from one particularly interesting hole to the next, he became so took with what was coming off — the moon up there, the night, the breeze full of smells so wild makes a young dog drunk — that he had to lie down on his back and roll. He twisted and thrashed around like a fish, back bowed and belly up, and when he got to his feet and shook himself a spray came off him in the moon like silver scales. He sniffed all the holes over again one quick one, to get the smells down good, then suddenly froze still with one paw lifted and his head tilted, listening. I listened too, but I couldn’t hear anything except the popping of the window shade. I listened for a long time. Then, from a long way off, I heard a high, laughing gabble, faint and coming closer. Canada honkers going south for the winter. I remembered all the hunting and belly-crawling I’d ever done trying to kill a honker, and that I never got one. I tried to look where the dog was looking to see if I could find the flock, but it was too dark. The honking came closer and closer till it seemed like they must be flying right through the dorm, right over my head. Then they crossed the moon — a black, weaving necklace, drawn into a V by that lead goose. For an instant that lead goose was right in the center of that circle, bigger than the others, a black cross opening and closing, then he pulled his V out of sight into the sky once more. I listened to them fade away till all I could hear was my memory of the sound.

The dolphins had obviously smelled the flood tide of boyhood in the sea and heard the hormones singing in the boy0scented water. None of us spoke as the porpoises circled us. The visitation was something so rare and perfect that we knew by instinct not to speak – and then, as quickly as they had come, the porpoises moved away from us, moved south where there were fish to be hunted. “Each of us would remember that night floating on the waves all during our lives. It was the year before we went to high school when we were poised on the slippery brink between childhood and adulthood, admiring our own daring as we floated free from the vigilance and approval of adult eyes, ruled only by the indifference of stars and fate. It was the purest moment of freedom and headlong exhilaration that I had ever felt. A wordless covenant was set among us the night of the porpoises.

Here are some key attributes of the voice in my head. I suspect they will sound familiar. • It’s often fixated on the past and future, at the expense of whatever is happening right now. The voice loves to plan, plot, and scheme. It’s always making lists or rehearsing arguments or drafting tweets. One moment it has you fantasizing about some halcyon past or Elysian future. Another moment you’re ruing old mistakes or catastrophizing about some not-yet-arrived events. As Mark Twain is reputed to have said, “Some of the worst things in my life never even happened.” • The voice is insatiable. The default mental condition for too many human beings is dissatisfaction. Under the sway of the ego, nothing is good enough. We’re always on the hunt for the next dopamine hit. We hurl ourselves headlong from one cookie, one promotion, one party to the next, and yet a great many of us are never fully sated. How many meals, movies, and vacations have you enjoyed? And are you done yet? Of course not. • The voice is unrelievedly self-involved. We are all the stars of our own movies, whether we cast ourselves as hero, victim, black hat, or all three. True, we can get temporarily sucked into other people’s stories, but often as a means of comparing ourselves to them. Everything ultimately gets subordinated to the one plotline that matters: the Story of Me.

Will it be the same in the future? Will the prized treasures of to-day always be the cheap trifles of the day before? Will rows of our willow-pattern dinner-plates be ranged above the chimneypieces of the great in the years 2000 and odd? Will the white cups with the gold rim and the beautiful gold flower inside (species unknown), that our Sarah Janes now break in sheer light-heartedness of spirit, be carefully mended, and stood upon a bracket, and dusted only by the lady of the house? That china dog that ornaments the bedroom of my furnished lodgings. It is a white dog. Its eyes blue. Its nose is a delicate red, with spots. Its head is painfully erect, its expression is amiability carried to verge of imbecility. I do not admire it myself. Considered as a work of art, I may say it irritates me. Thoughtless friends jeer at it, and even my landlady herself has no admiration for it, and excuses its presence by the circumstance that her aunt gave it to her. But in 200 years’ time it is more than probable that that dog will be dug up from somewhere or other, minus its legs, and with its tail broken, and will be sold for old china, and put in a glass cabinet. And people will pass it round, and admire it. They will be struck by the wonderful depth of the colour on the nose, and speculate as to how beautiful the bit of the tail that is lost no doubt was. We, in this age, do not see the beauty of that dog. We are too familiar with it. It is like the sunset and the stars: we are not awed by their loveliness because they are common to our eyes. So it is with that china dog. In 2288 people will gush over it. The making of such dogs will have become a lost art. Our descendants will wonder how we did it, and say how clever we were. We shall be referred to lovingly as “those grand old artists that flourished in the nineteenth century, and produced those china dogs.” The “sampler” that the eldest daughter did at school will be spoken of as “tapestry of the Victorian era,” and be almost priceless. The blue-and-white mugs of the present-day roadside inn will be hunted up, all cracked and chipped, and sold for their weight in gold, and rich people will use them for claret cups; and travellers from Japan will buy up all the “Presents from Ramsgate,” and “Souvenirs of Margate,” that may have escaped destruction, and take them back to Jedo as ancient English curios.

Then he closed the fridge, sat down on the old tire, and unwrapped what looked like a turkey sandwich. He said, “You could explain the fridge a few ways. One, there’s some hidden outlet, probably buried in the sand, that leads to a power source far away. I figure there’d have to be at least twenty miles of cable involved before it connected to the grid. That’s a lot of extension cord. Or, this fridge has some kind of secret battery system. If the empirical details didn’t bear this out, if you thoroughly studied the refrigerator and found neither a connection to a distant power source nor a battery, you might still argue that the fridge had some super-insulation capabilities and that the food inside had been able to stay cold since it was dragged out here. But say this explanation didn’t pan out either, and you observed the fridge staying the same temperature week after week while you opened and closed it. Then you’d start to wonder if it was powered by some technology beyond your comprehension. But pretty soon you’d notice something else about this refrigerator. The fact that it never runs out of food. Then you’d start to wonder if somehow it didn’t get restocked while you slept. But you’d realize that it replenished itself all the time, not just while you were sleeping. All this time, you’d keep eating from it. It would keep you alive out here in the middle of nowhere. And because of its mystery you’d begin to hate and fear it, and yet still it would feed you. Even though you couldn’t explain it, you’d still need it. And you’d assume that you simply didn’t understand the technology, rather than ascribe to it some kind of metaphysical power. You wouldn’t place your faith in the hands of some unknowable god. You’d place it in the technology itself. Finally, in frustration, you’d come to realize you’d exhausted your rationality and the only sensible thing to do would be to praise the mystery. You’d worship its bottles of Corona and jars of pickled beets. You’d make up prayers to the meats drawer and sing about its light bulb. And you’d start to accept the mystery as the one undeniable thing about it. That, or you’d grow so frustrated you’d push it off this cliff.” “Is Mr. Kirkpatrick real?” I asked. So it goes until, sometime between midnight and 1 A.M., Galle reels out the numbers for one more mote of light invisible to the naked eye: right ascension 21 h, 53 min, 25.84 seconds. D’Arrest glances down at the chart, then yelps: “that star is not on the map!” The younger man runs to fetch the observatory’s director, who earlier that day had only reluctantly given his permission to attempt what he seems to have thought a fool’s errand. Together, the trio continue to watch the new object until it sets at around 2:30 in the morning. True stars remain mere points in even the most powerful telescopes. This does not, showing instead an unmistakable disk, a full 3.2 arcseconds across—just as Le Verrier had told them to expect. That visible circle can mean just one thing: Galle has just become the first man to see what he knows to be a previously undiscovered planet, one that would come to be called Neptune, just about exactly where Urbain-Jean-Joseph Le Verrier told him to look. —

And we do not understand, because all these things are of the ordered pattern, and only the free curves of the shield-boss are real to us. We do not understand. And when the time comes that we begin to understand your world, too often we lose the understanding of our own.” For a while they were silent, watching Cub at his beetle-hunting. Then Marcus said, “When I came out from home, a year and a half ago, it all seemed so simple.” His gaze dropped again to the buckler on the bench beside him, seeing the strange, swelling curves of the boss with new eyes. Esca had chosen his symbol well, he thought: between the formal pattern on his dagger-sheath and the formless yet potent beauty of the shield-boss lay all the distance that could lie between two worlds. And yet between individual people, people like Esca, and Marcus, and Cottia, the distance narrowed so that you could reach across it, one to another, so that it ceased to matter.

Rick Bayless taught me not one but two amazing mole sauces, the whole time bemoaning that he never seemed to know what to cook for his teenage daughter. Jose Andres made me a classic Spanish tortilla, shocking me with the sheer volume of viridian olive oil he put into that simple dish of potatoes, onions, and eggs. Graham Elliot Bowles and I made gourmet Jell-O shots together, and ate leftover cheddar risotto with Cheez-Its crumbled on top right out of the pan. Lucky for me, Maria still includes me in special evenings like this, usually giving me the option of joining the guests at table, or helping in the kitchen. I always choose the kitchen, because passing up the opportunity to see these chefs in action is something only an idiot would do. Susan Spicer flew up from New Orleans shortly after the BP oil spill to do an extraordinary menu of all Gulf seafood for a ten-thousand-dollar-a-plate fund-raising dinner Maria hosted to help the families of Gulf fishermen. Local geniuses Gil Langlois and Top Chef winner Stephanie Izard joined forces with Gale Gand for a seven-course dinner none of us will ever forget, due in no small part to Gil's hoisin oxtail with smoked Gouda mac 'n' cheese, Stephanie's roasted cauliflower with pine nuts and light-as-air chickpea fritters, and Gale's honey panna cotta with rhubarb compote and insane little chocolate cookies. Stephanie and I bonded over hair products, since we have the same thick brown curls with a tendency to frizz, and the general dumbness of boys, and ended up giggling over glasses of bourbon till nearly two in the morning. She is even more awesome, funny, sweet, and genuine in person than she was on her rock-star winning season on Bravo. Plus, her food is spectacular all day. I sort of wish she would go into food television and steal me from Patrick. Allen Sternweiler did a game menu with all local proteins he had hunted himself, including a pheasant breast over caramelized brussels sprouts and mushrooms that melted in your mouth (despite the occasional bit of buckshot). Michelle Bernstein came up from Miami and taught me her white gazpacho, which I have since made a gajillion times, as it is probably one of the world's perfect foods.
