I lean an elbow on the lab table, waiting for an introduction she has to either make up or fess up she knows less than crap about me. She glances at my comfortable position and I can tell from her deer-in-the-headlights look I've stumped her.
"This is Alejandro Fuentes," she starts, her voice hitching the slightest bit. My temper flares at the mention of my given name, but I keep a cool facade as she continues with a made-up introduction. "When he wasn't hanging out on street corners and harassing innocent people this summer, he toured the inside of jails around the city, if you know what I mean. And he has a secret desire nobody would ever guess."
The room suddenly becomes quiet. Even Peterson straightens to attention. Hell, even I'm listening like the words coming out of Brittany's lying, pink-frosted lips are gospel.
"His secret desire," she continues, "is to go to college and become a chemistry teacher, like you, Mrs. Peterson."
Yeah, right. I look over at my friend Isa, who seems amused that a white girl isn't afraid of giving me smack in front of the entire class.
Brittany flashes me a triumphant smile, thinking she's won this round. Guess again, gringa.
I sit up in my chair while the class remains silent.
"This is Brittany Ellis," I say, all eyes now focused on me. "This summer she went to the mall, bought new clothes so she could expand her wardrobe, and spent her daddy's money on plastic surgery to enhance her, ahem, assets."
It might not be what she wrote, but it's probably close enough to the truth. Unlike her introduction of me.
Chuckles come from mis cuates in the back of the class, and Brittany is as stiff as a board beside me, as if my words hurt her precious ego. Brittany Ellis is used to people fawning all over her and she could use a little wake-up call. I'm actually doing her a favor. Little does she know I'm not finished with her intro.
"Her secret desire," I add, getting the same reaction as she did during her introduction, "is to date a Mexicano before she graduates."
As expected, my words are met by comments and low whistles from the back of the room.
"Way to go, Fuentes," my friend Lucky barks out.
"I'll date you, mamacita, " another says.
I give a high five to another Latino Blood named Marcus sitting behind me just as I catch Isa shaking her head as if I did something wrong. What? I'm just having a little fun with a rich girl from the north side.
Brittany's gaze shifts from Colin to me. I take one look at Colin and with my eyes tell him game on. Colin's face instantly turns bright red, resembling a chile pepper. I have definitely invaded his territory.

I watch Mark Bittman enjoy a perfectly and authentically prepared Spanish paella on TV, after which he demonstrates how his viewers can do it at home—in an aluminum saucepot—and I want to shove my head through the glass of my TV screen and take a giant bite out of his skull, scoop the soft, slurry-like material inside into my paw, and then throw it right back into his smug, fireplug face. The notion that anyone would believe Catherine Zeta-Jones as an obsessively perfectionist chef (particularly given the ridiculously clumsy, 1980s-looking food) in the wretched film No Reservations made me want to vomit blood, hunt down the producers, and kick them slowly to death. (Worse was the fact that the damn thing was a remake of the unusually excellent German chef flick Mostly Martha.) On Hell’s Kitchen, when Gordon Ramsay pretends that the criminally inept, desperately unhealthy gland case in front of him could ever stand a chance in hell of surviving even three minutes as “executive chef of the new Gordon Ramsay restaurant” (the putative grand prize for the finalist), I’m inexplicably actually angry on Gordon’s behalf. And he’s the one making a quarter-million dollars an episode—very contentedly, too, from all reports. The eye-searing “Kwanzaa Cake” clip on YouTube, of Sandra Lee doing things with store-bought angel food cake, canned frosting, and corn nuts, instead of being simply the unintentionally hilarious viral video it should be, makes me mad for all humanity. I. Just. Can’t. Help it. I wish, really, that I was so far up my own ass that I could somehow believe myself to be some kind of standard-bearer for good eating—or ombudsman, or even the deliverer of thoughtful critique. But that wouldn’t be true, would it? I’m just a cranky old fuck with what, I guess, could charitably be called “issues.” And I’m still angry. But eat the fucking fish on Monday already. Okay? I wrote those immortal words about not going for the Monday fish, the ones that’ll haunt me long after I’m crumbs in a can, knowing nothing other than New York City. And times, to be fair, have changed. Okay, I still would advise against the fish special at T.G.I. McSweenigan’s, “A Place for Beer,” on a Monday. Fresh fish, I’d guess, is probably not the main thrust of their business. But things are different now for chefs and cooks. The odds are better than ever that the guy slinging fish and chips back there in the kitchen actually gives a shit about what he’s doing. And even if he doesn’t, these days he has to figure that you might actually know the difference. Back when I wrote the book that changed my life, I was angriest—like a lot of chefs and cooks of my middling abilities—at my customers. They’ve changed. I’ve changed. When we came to this place where we knew no one, she gave food when we were hungry, she gave drink when we were thirsty, she gave clothes when we were cold, she gave wealth when we had nothing. Also, she did not just give us things she did not need. Rather, she has given us what she did not dare use for herself, things she did not dare eat, drink, or wear for herself, things she did not dare employ for the happiness of this life, things she did not dare use for her next life's wealth. In brief, without looking for happiness in this life or next, she nurtured her child.
She did not obtain these things easily or with pleasure. She collected them by creating various negative karmas, by sufferings and hardships, and gave them all to the child. For example, creating negative karma: she fed the child through various nonvirtuous actions like fishing, butchering, and so forth. For example, suffering: to give to the child, she accumulated wealth by working at a business or farm and so forth, wearing frost for shoes, wearing stars as a hat, riding on the horse of her legs, her hem like a whip, giving her legs to the dogs and her face to the people.
Furthermore, she loved the unknown one much more than her father, mother, and teachers who were very kind to her. She watched the child with eyes of love, and kept it warm in soft cloth. She dandled the child in her ten fingers, and lifted it up in the sky. She called to it in a loving, pleasant voice, saying, "Joyful one, you who delight Mommy. Lu, lu, you happy one," and so forth.
The "kindness of giving you life" means that, at first, we were not capable of eating with our mouth and hands nor were we capable of enduring all the different hardships. We were like feeble insects without strength; we were just silly and could not think anything. Again, without rejection, the mother served us, put us on her lap, protected us from fire and water, held us away from precipices, dispelled all harmful things, and performed rituals. Out of fear for our death or fear for our health, she did divinations and consulted astrologers. Through many ritual ceremonies and many other different things, in inconceivable ways, she protected the life of her child.
The "kindness of showing you the world" means that, at first, we did not come here knowing various things, seeing broadly, and being talented. We could only cry and move our legs and hands. Other than that, we knew nothing. The mother taught us how to eat when we did not know how. She taught us how to wear clothes when we did not know how. She taught us how to walk when we did not know how. She taught us how to talk when we did not know how to say "Mama," or "Hi," and so forth. She taught us various skills, creative arts, and so forth. She tried to make us equal when we were unequal, and tried to make the uneven even for us.
Not only have we had a mother in this lifetime, but from beginningless samsara she served as a mother countless times.
