The opposite type in de Ketham’s text, the melancholic, is a combination of melan, Latin for “black,” and choler, or bitter bile. A melancholic person is gloomy and bitter. But pure bile, or choler, makes one impetuous and irascible. Today, the French word for anger is colere, and the root of the word shows up also in a “colicky” baby—one who is irritable. Phlegm, on the other hand, makes one fat and languid, slow-moving. Today phlegmatic has come to mean stolidly calm, unexcitable, and unemotional.

Unlike babies, phenomena are typically born long before humans give them names. Zurara did not call Black people a race. French poet Jacques de Brézé first used the term “race” in a 1481 hunting poem. In 1606, the same diplomat who brought the addictive tobacco plant to France formally defined race for the first time in a major European dictionary, “Race…means descent,” Jean Nicot wrote in the Trésor de la langue française. “Therefore, it is said that a man, a hors, a dog or another animal is from a good or bad race.” From the beginning, to make races was to make racial hierarchy. Gomes de Zurara grouped all those peoples from Africa into a single race for that very reason: to create hierarchy, the first racist idea. Race making is an essential ingredient in the making of racist ideas, the crust that holds the pie. Once a race has been created it must be filled in-and Zurara filled it with negative qualities that would justify Prince Henry’s evangelical mission to the world. If any actress best represents the snappy 1930s dame, it’s Joan Blondell. During that era she played a lively assortment of chorus girls, waitresses, golddiggers, reporters and secretaries in a total of 53 movies, 44 of them for Warner Bros. “Yet, for all that overwork,” Mick LaSalle writes in Complicated Women, “Blondell hardly ever had a false moment. Self-possessed, unimpressed, completely natural, always sane, without attitude or pretense … the greatest of the screen’s great broads. No one was better at playing someone both fun-loving yet grounded, ready for a great time, yet substantial, too.” She was fun-loving, but sometimes there were limits. As a flip waitress in Other Men’s Women (1931), Joan puts the breaks on a fresh customer: BLONDELL: Anything else you guys want? CUSTOMER (checking her out as she bends over): Yeah, give me a big slice of you—and some french fried potatoes on the side. BLONDELL: Listen, baby, I’m A.P.O. CUSTOMER (turning to friend): What does she mean, A.P.O.? It was fall, my favorite time of the year, bursting with all the savory ingredients I craved like a culinary hedonist, the ingredients that turned my light on. All those varieties of beautiful squashes and root vegetables- the explosion of colors, the ochre yellows, lush greens, vivid reds, and a kaleidoscope of oranges- were just a few of the ingredients that fueled my cooking fantasies. In the summer, on those hot cooking days and nights in New York with rivulets of thick sweat coating my forehead, I'd fantasize about what we'd create in the fall, closing my eyes and cooking in my head. Soon, the waitstaff would arrive to taste tonight's specials, which would be followed by our family meal. I eyed the board on the wall and licked my lips. The amuse-bouche consisted of a pan-seared foie gras served with caramelized pears; the entrée, a boar carpaccio with eggplant caviar, apples, and ginger; the two plats principaux, a cognac-flambéed seared sea scallop and shrimp plate served with deep-fried goat cheese and garnished with licorice-perfumed fennel leaves, which fell under my responsibility, and the chief's version of a beef Wellington served with a celeriac mash, baby carrots, and thin French green beans.

After wandering the world and living on the Continent I had long tired of well-behaved, fart-free gentlemen who opened the door and paid the bills but never had a story to tell and were either completely asexual or demanded skin-burning action until the morning light. Swiss watch salesmen who only knew of “sechs” as their wake-up hour, or hairy French apes who always required their twelve rounds of screwing after the six-course meal. I suppose I liked German men the best. They were a suitable mixture of belching northerner and cultivated southerner, of orderly westerner and crazy easterner, but in the post-war years they were of course broken men. There was little you could do with them except try to put them right first. And who had the time for that? Londoners are positive and jolly, but their famous irony struck me as mechanical and wearisome in the long run. As if that irony machine had eaten away their real essence. The French machine, on the other hand, is fuelled by seriousness alone, and the Frogs can drive you beyond the limit when they get going with their philosophical noun-dropping. The Italian worships every woman like a queen until he gets her home, when she suddenly turns into a slut. The Yank is one hell of a guy who thinks big: he always wants to take you the moon. At the same time, however, he is as smug and petty as the meanest seamstress, and has a fit if someone eats his peanut butter sandwich aboard the space shuttle. I found Russians interesting. In fact they were the most Icelandic of all: drank every glass to the bottom and threw themselves into any jollity, knew countless stories and never talked seriously unless at the bottom of the bottle, when they began to wail for their mother who lived a thousand miles away but came on foot to bring them their clean laundry once a month. They were completely crazy and were better athletes in bed than my dear countrymen, but in the end I had enough of all their pommel-horse routines. Nordic men are all as tactless as Icelanders. They get drunk over dinner, laugh loudly and fart, eventually start “singing” even in public restaurants where people have paid to escape the tumult of the world. But their wallets always waited cold sober in the cloakroom while the Icelandic purse lay open for all in the middle of the table. Our men were the greater Vikings in this regard. “Reputation is king, the rest is crap!” my Bæring from Bolungarvík used to say. Every evening had to be legendary, anything else was a defeat. But the morning after they turned into weak-willed doughboys. But all the same I did succeed in loving them, those Icelandic clodhoppers, at least down as far as their knees. Below there, things did not go as well. And when the feet of Jón Pre-Jón popped out of me in the maternity ward, it was enough. The resemblances were small and exact: Jón’s feet in bonsai form. I instantly acquired a physical intolerance for the father, and forbade him to come in and see the baby. All I heard was the note of surprise in the bass voice out in the corridor when the midwife told him she had ordered him a taxi. From that day on I made it a rule: I sacked my men by calling a car. ‘The taxi is here,’ became my favourite sentence.

Kya would never see the handsome Jake swagger into an Asheville soda fountain in early 1930, where he spotted Maria Jacques, a beauty with black curls and red lips, visiting from New Orleans. Over a milkshake he told her his family owned a plantation and that after high school he’d study to be a lawyer and live in a columned mansion. But when the Depression deepened, the bank auctioned the land out from under the Clarks’ feet, and his father took Jake from school. They moved down the road to a small pine cabin that once, not so long ago really, had been occupied by slaves. Jake worked the tobacco fields, stacking leaves with black men and women, babies strapped on their backs with colorful shawls. One night two years later, without saying good-bye, Jake left before dawn, taking with him as many fine clothes and family treasures—including his great-grandfather’s gold pocket watch and his grandmother’s diamond ring—as he could carry. He hitchhiked to New Orleans and found Maria living with her family in an elegant home near the waterfront. They were descendants of a French merchant, owners of a shoe factory. Jake pawned the heirlooms and entertained her in fine restaurants hung with red velvet curtains, telling her that he would buy her that columned mansion. As he knelt under a magnolia tree, she agreed to marry him, and they wed in 1933 in a small church ceremony, her family standing silent.

I breathed a sigh of relief that it wasn’t Alex, followed by a chaser of disappointment that it wasn’t Alex, topped by a dollop of concern that our friend Ken Hachette had been shot. Ken, a human NOPD detective who’d recently been clued in about the big bad world surrounding him, had missed all the recent events due to a family emergency that had taken him out of town. Why would he be coming to Old Barataria alone via Jean Lafitte’s private transport unless Alex sent him? My adrenaline jump-started my heart to another race, this one fueled by worry. Something bad had happened; it was the only explanation. Jean and Dominique exchanged a rapid-fire torrent of French that went way past my abilities to interpret. “He claims to be a friend to her,” Dominique finally spat out, and I could tell by the way he said her, much as one might say flesh-eating maggot, that he referred to me. He’d never liked me; he considered me a bad influence on his baby brother the immortal pirate. As if.

Even if one were to agree with progressive Christians that racial inequities should be the Church’s greatest concern, no other race-based injustice can compare to what is being done under the auspices of “reproductive rights,” something Professor Carl Trueman ably highlighted in First Things. “Police actions in 2018 accounted for the deaths of fewer than three hundred African Americans, while in the same year abortions of African-American babies accounted for more than 117,000 of the same,” he pointed out. “One would think this extreme difference (390 to one) would make abortion the centerpiece of Christian critiques of racism.”67 The only reason it wouldn’t is if those drawing such equivalencies do not, deep down, see those 117,000 babies as equally human as the 300 adults. Prior, French, Keller, and both Moores have taken to the pages of the most elite media outlets in the world to incessantly disparage average Christians who felt it was worth voting for Donald Trump for a chance to dismantle the most wicked practice this nation has ever known. Let’s be clear, no one cast a ballot for Trump because he committed adultery or because he bragged in 2005 about grabbing women’s private parts. Nor was the legal protection of adultery or lechery a feature of the Trump campaign’s platform. In contrast, Clinton and Biden did promise voters that electing them would allow the butchery to continue. They did make it a part of their platforms, and a significant number of voters cast ballots for them based on those promises. Given this, which vote is more morally compromising for the Christian—the one that places power in the hands of those who promise to allow the innocent to be put to death or the one that vests power in those who promise to make a way to rescue the innocent? Which group of Christians do these celebrated evangelical leaders accuse of defaming the name of Christ with an untoward interest in political power, and which do they excuse and even promote?

The store smells of roasted chicken and freshly ground coffee, raw meat and ripening stone fruit, the lemon detergent they use to scrub the old sheet-linoleum floors. I inhale and feel the smile form on my face. It's been so long since I've been inside any market other than Fred Meyer, which smells of plastic and the thousands of people who pass through every day. By instinct, I head for the produce section. There, the close quarters of slim Ichiban eggplant, baby bok choy, brilliant red chard, chartreuse-and-purple asparagus, sends me into paroxysms of delight. I'm glad the store is nearly empty; I'm oohing and aahing with produce lust at the colors, the smooth, shiny textures set against frilly leaves. I fondle the palm-size plums, the soft fuzz of the peaches. And the berries! It's berry season, and seven varieties spill from green cardboard containers: the ubiquitous Oregon marionberry, red raspberry, and blackberry, of course, but next to them are blueberries, loganberries, and gorgeous golden raspberries. I pluck one from a container, fat and slightly past firm, and pop it into my mouth. The sweet explosion of flavor so familiar, but like something too long forgotten. I load two pints into my basket. The asparagus has me intrigued. Maybe I could roast it with olive oil and fresh herbs, like the sprigs of rosemary and oregano poking out of the salad display, and some good sea salt. And salad. Baby greens tossed with lemon-infused olive oil and a sprinkle of vinegar. Why haven't I eaten a salad in so long? I'll choose a soft, mild French cheese from the deli case, have it for an hors d'oeuvre with a beautiful glass of sparkling Prosecco, say, then roast a tiny chunk of spring lamb that I'm sure the nice sister will cut for me, and complement it with a crusty baguette and roasted asparagus, followed by the salad. Followed by more cheese and berries for dessert. And a fruity Willamette Valley Pinot Noir to wash it all down. My idea of eating heaven, a French-influenced feast that reminds me of the way I always thought my life would be.

He’s accosted constantly: casino touts, hustling pimps, dope dealers; monkeys on chains, dancing dogs, kids turning tumbles, Chinese ‘look see’ boys offering to watch your car. Their numbers rise as the Japs turn the screws on Shanghai ever tighter. Half-crazy American missionaries try to sell him Bibles printed on rice paper—saving souls in the Badlands is one tough beat. The Chinese hawkers do no better with their porno cards of naked dyed blondes, Disney characters in lewd poses, and bare-arsed Chinese girls, all underage. Barkers for the strip shows and porno flicks up the alleyways guarantee genuine French celluloid of the filthiest kind. Beggars abound, near the dealers and bootleggers in the shadows, selling fake heroin pills and bootleg samogon Russian vodka, distilled in alleyways, that just might leave you blind. Off the Avenue Haig, Nicky, making sure of his gun in its shoulder holster, ventures up the side streets and narrow laneways that buzz with the purveyors of cure-all tonics, hawkers of appetite suppressants, male pick-me-ups promising endless virility. Everything is for sale—back-street abortions and unwanted baby girls alongside corn and callus removers, street barbers, and earwax pickers. The stalls of the letter writers for the illiterate are next to the sellers of pills to cure opium addiction. He sees desperate refugees offered spurious Nansen passports, dubious visas for neutral Macao, well-forged letters of transit for Brazil. He could have his fortune told twenty times over (gypsy tarot cards or Chinese bone chuckers? Your choice). He could eat his fill—grilled meat and rice stalls—or he could start a whole new life: end-of-the-worlders and Korean propagandists offer cheap land in Mongolia and Manchukuo.

Oh God, how can he be so blessedly tiny? He is smaller than my hands. Yes, my love, said Tatiana, one hand on her husband, one hand on her child. But then you do have very big hands. Standing up, Alexander walked over to the open French doors so he could take a better look at the baby in the moonbeam light. Charles Gordon Pasha, he whispered. Pasha. Both parents often work and no longer have time to linger over a serving of Apple Jacks and the local newspaper. Many people grab something on the way to work and devour it in their cars or at their desks while checking e-mail. “For a while, breakfast cereal was convenience food,” says Abigail Carroll, author of Three Squares: The Invention of the American Meal. “But convenience is relative. It's more convenient to grab a breakfast bar, yogurt, a piece of fruit, or a breakfast sandwich at some fast-food place than to eat a bowl of breakfast cereal.” People who still eat breakfast at home favor more laborintensive breakfasts, according to a recent Nielsen survey. They spend more time at the stove, preparing oatmeal (sales were up 3.5 percent in the first half of 2014) and eggs (up 7 percent last year). They're putting their toasters to work, heating up frozen waffles, French toast, and pancakes (sales of these foods were up 4.5 percent in the last five years). This last inclination should be helping Kellogg: It owns Eggo frozen waffles. But Eggo sales weren't enough to offset its slumping U.S. cereal numbers. “There has just been a massive fragmentation of the breakfast occasion,” says Julian Mellentin, director of food analysis at research firm New Nutrition Business. And Kellogg faces a more ominous trend at the table. As Americans become more healthconscious, they're shying away from the kind of processed food baked in Kellogg's four U.S. cereal factories. They tend to be averse to carbohydrates, which is a problem for a company selling cereal derived from corn, oats, and rice. “They basically have a carb-heavy portfolio,” says Robert Dickerson, senior packagedfood analyst at Consumer Edge. If such discerning shoppers still eat cereal, they prefer the gluten-free kind, sales of which are up 22 percent, according to Nielsen. There's also growing suspicion of packagedfood companies that fill their products with genetically modified organisms (GMOs). For these breakfast eaters, Tony the Tiger and Toucan Sam may seem less like friendly childhood avatars and more like malevolent sugar traffickers.

I huddle on a bench in my big thrift-store overcoat and my painful hair, watching my breath make clouds and thinking Holden Caulfield-y thoughts, like how come you never see any baby pigeons? This is what those people on black-and-white French postcards must feel like. I find myself craving a cup of coffee and a cigarette despite the fact that I neither drink coffee nor smoke.
