Every day the same things came up; the work was never done, and the tedium of it began to weigh on me. Part of what made English a difficult subject for Korean students was the lack of a more active principle in their learning. They were accustomed to receiving, recording, and memorizing. That's the Confucian mode. As a student, you're not supposed to question a teacher; you should avoid asking for explanations because that might reveal a lack of knowledge, which can be seen as an insult to the teacher's efforts. You don't have an open, free exchange with teachers as we often have here in the West. And further, under this design, a student doesn't do much in the way of improvisation or interpretation. This approach might work well for some pursuits, may even be preferred--indeed, I was often amazed by the way Koreans learned crafts and skills, everything from basketball to calligraphy, for example, by methodically studying and reproducing a defined set of steps (a BBC report explained how the North Korean leader Kim Jong Il had his minions rigorously study the pizza-making techniques used by Italian chefs so that he could get a good pie at home, even as thousands of his subjects starved)--but foreign-language learning, the actual speaking component most of all, has to be more spontaneous and less rigid. We all saw this played out before our eyes and quickly discerned the problem. A student cannot hope to sit in a class and have a language handed over to him on sheets of paper.

He made his selection from the portraits of the 3,000 concubines in his court, many of whom he had never seen. As she was for a barbarian, he selected the ugliest portrait, but on the day of her departure he discovered that the woman was in fact extremely beautiful. Her portrait was ugly because she had refused to bribe the court painter. The emperor ordered the artist to be executed, while the lady wept, sitting by a river, at having to leave her country to live among the barbarians. The wind carried away her hairpin and dropped it into the river as though it wanted to keep something of hers in her homeland. Later on, she killed herself. Legend had it that where her hairpin dropped, the river turned crystal clear, and became known as the Crystal River. My fellow passenger told me this was the tributary we were passing. With a grin, he declared: "Ah, bad omen! You might end up living in a foreign land and marrying a barbarian!" I smiled faintly at the traditional Chinese obsession about other races being 'barbarians," and wondered whether this lady of antiquity might not actually have been better off marrying the 'barbarian' king. She would at least be in daily contact with the grassland, the horses, and nature. With the Chinese emperor, she was living in a luxurious prison, without even a proper tree, which might enable the concubines to climb a wall and escape. I thought how we were like the frogs at the bottom of the well in the Chinese legend, who claimed that the sky was only as big as the round opening at the top of their well. I felt an intense and urgent desire to see the world. At the time I had never spoken with a foreigner, even though I was twenty-three, and had been an English language student for nearly two years. Speaking to a foreigner was the dream of every student, and my opportunity came at last. When I got back from my trip down the Yangtze, I learned that my year was being sent in October to a port in the south called Zhanjiang to practice our English with foreign sailors. I was thrilled. Zhanjiang was about 75 miles from Chengdu, a journey of two days and two nights by rail. It was the southernmost large port in China, and quite near the Vietnamese border. It felt like a foreign country, with turn-of-the-century colonial-style buildings, pastiche Romanesque arches, rose windows, and large verandas with colorful parasols. The local people spoke Cantonese, which was almost a foreign language. The air smelled of the unfamiliar sea, exotic tropical vegetation, and an altogether bigger world. But my excitement at being there was constantly doused by frustration. We were accompanied by a political supervisor and three lecturers, who decided that, although we were staying only a mile from the sea, we were not to be allowed anywhere near it. The harbor itself was closed to outsiders, for fear of 'sabotage' or defection. We were told that a student from Guangzhou had managed to stow away once in a cargo steamer, not realizing that the hold would be sealed for weeks, by which time he had perished. We had to restrict our movements to a clearly defined area of a few blocks around our residence. Regulations like these were part of our daily life, but they never failed to infuriate me. One day I was seized by an absolute compulsion to get out. I faked illness and got permission to go to a hospital in the middle of the city. I wandered the streets desperately trying to spot the sea, without success. The local people were unhelpful: they did not like non-Cantonese speakers, and refused to understand me. We stayed in the port for three weeks, and only once were we allowed, as a special treat, to go to an island to see the ocean. As the point of being there was to talk to the sailors, we were organized into small groups to take turns working in the two places they were allowed to frequent: the Friendship Store, which sold goods for hard currency, and the Sailors' Club, which had a bar, a restaurant, a billiards room, and a ping-pong room. There were strict rules about how we could talk to the sailors. We were not allowed to speak to them alone, except for brief exchanges over the counter of the Friendship Store. If we were asked our names and addresses, under no circumstances were we to give our real ones. We all prepared a false name and a nonexistent address. After every conversation, we had to write a detailed report of what had been said which was standard practice for anyone who had contact with foreigners. We were warned over and over again about the importance of observing 'discipline in foreign contacts' (she waifi-lu). Otherwise, we were told, not only would we get into serious trouble, other students would be banned from coming.

It designated undomesticated, unbroken bush dwellers, those for whom the light of culture of the eastern Mediterranean kind had not yet dawned. It is a powerful distinction to make, with powerful, enforceable criteria. The Romans didn’t invent pagan, but they did make pagans out of the country people they conquered. Though the word at this time meant something like “those on land unbroken,” the change in meaning to the modern European sense of pagan as “enemy of the true religion” tracks the arc from agricultural practice to systematic ethnic cleansing. Through a programme of shame and systematic desecration, they marginalized traditionalists, drove wedges of privilege between families, rewarded collaborators, confounded and demeaned the local languages, compromised indigenous lifeways. They made another kind of war on the indigenous aptitude for living alongside ancestors. Though certainly not the history many of us were taught to emulate or admire, it is there, stones in the sediment of the Europe that founded America. As the Romans went their civil, ruinous way, they made a point of learning from the newly conquered something of the traditional histories, alliances, and enmities of the area. They learned these enmities not to conclude them but to collude with them and deepen them, to further them, prey upon them, employ them, turning the conquered against the not-yet conquered, holding themselves out as the new, powerful ally who would right ancestral wrongs, securing and obliging and forcing the newly conquered to raise the foreign conqueror to the status of a mysteriously benevolent foreign God. Sleeping with the enemy began in earnest. This is a lesson and example relied upon heavily by Hernando Cortes as he made his ruinous way across Mexico early in the sixteenth century, and it made Cortes a dark legend in the old and new worlds.

The two billion people who speak English these days live mainly in countries where they’ve learned English as a foreign language. There are only around 400 million mother-tongue speakers – chiefly living in the UK, Ireland, USA, Canada, Australia, New Zealand, South Africa, and the countries of the Caribbean. This means that for every one native speaker of English there are now five non-native speakers. The centre of gravity in the use of English has shifted, therefore. Once upon a time, it would have been possible to say, in terms of number of speakers, that the British ‘owned’ English. Then it was the turn of the Americans. Today, it’s the turn of those who have learned English as a foreign language, who form the vast majority of users. Everyone who has taken the trouble to learn English can be said to ‘own’ it now, and they all have a say in its future. So, if most of them say such things as informations and advices, it seems inevitable that one day some of these usages will become part of international standard English, and influence the way people speak in the ‘home’ countries. Those with a nostalgia for linguistic days of old may not like it, but it will not be possible to stop such international trends.

Even if there is no connection between diversity and international influence, some people would argue that immigration brings cultural enrichment. This may seem to be an attractive argument, but the culture of Americans remains almost completely untouched by millions of Hispanic and Asian immigrants. They may have heard of Cinco de Mayo or Chinese New Year, but unless they have lived abroad or have studied foreign affairs, the white inhabitants of Los Angeles are likely to have only the most superficial knowledge of Mexico or China despite the presence of many foreigners. Nor is it immigrants who introduce us to Cervantes, Puccini, Alexander Dumas, or Octavio Paz. Real high culture crosses borders by itself, not in the back pockets of tomato pickers, refugees, or even the most accomplished immigrants. What has Yo-Yo Ma taught Americans about China? What have we learned from Seiji Ozawa or Ichiro about Japan? Immigration and the transmission of culture are hardly the same thing. Nearly every good-sized American city has an opera company, but that does not require Italian immigrants. Miami is now nearly 70 percent Hispanic, but what, in the way of authentic culture enrichment, has this brought the city? Are the art galleries, concerts, museums, and literature of Los Angeles improved by diversity? Has the culture of Detroit benefited from a majority-black population? If immigration and diversity bring cultural enrichment, why do whites move out of those very parts of the country that are being “enriched”? It is true that Latin American immigration has inspired more American school children to study Spanish, but fewer now study French, German, or Latin. If anything, Hispanic immigration reduces what little linguistic diversity is to be found among native-born Americans. [...] [M]any people study Spanish, not because they love Hispanic culture or Spanish literature but for fear they may not be able to work in America unless they speak the language of Mexico. Another argument in favor of diversity is that it is good for people—especially young people —to come into contact with people unlike themselves because they will come to understand and appreciate each other. Stereotyped and uncomplimentary views about other races or cultures are supposed to crumble upon contact. This, of course, is just another version of the “contact theory” that was supposed to justify school integration. Do ex-cons and the graduates—and numerous dropouts—of Los Angeles high schools come away with a deep appreciation of people of other races? More than half a century ago, George Orwell noted that: 'During the war of 1914-18 the English working class were in contact with foreigners to an extent that is rarely possible. The sole result was that they brought back a hatred of all Europeans, except the Germans, whose courage they admired.

A doctoral student in cultural studies (San Diego) was the first to tweet a link to the essay, writing ‘I can’t even deal with how much is wrong here’ and adding a trigger warning and the hashtags #whiteprivilege, #povertytourism, and #yuck. The fury spread from there. Tony’s name was trending in a matter of hours, and the more attention his essay attracted, the angrier his critics seemed to get. He was accused of colonialist condescension, of reinforcing harmful stereotypes, of sentimentalising violence, and of being yet another entitled white man presuming, in a way that somehow managed to be both predatory and insipid, that the most valuable aspect of a thing was always, and only ever, his experience of it. Disgusted tweeters demanded to know why, if Tony had travelled to Mexico in order to teach English, he had not learned Spanish before he arrived; they pointed out all the invidious ways in which his essay implied the inarticulacy of his native guide, as though it were Eduardo’s failure that Tony could not understand him; they asked what right he had to appropriate the fight that he had witnessed, to instrumentalise it, and to seek to profit from it in the form of cultural cachet; they analysed the inherent problematics of his rather florid prose style; and they invited him, in less than cordial terms, to apologise to Mexicans, renounce all forms of white supremacy, and go home.

A surge of laughter, a bright trill of high spirits following the ball into the air, now she remembers how light, how free that laughter felt, it was never far away, it tickled under her skin, it swirled through her blood; one shake and it would spill out over her lips, it was so free, almost too free: on the school bench you had to hug yourself and bite your lip to keep from laughing at some funny remark or silliness in French class. Any little thing would set off waves of that effervescent girlish laughter. A teacher who stammered, a funny face in the mirror, a cat chasing its tail, a look from an officer on the street, any little thing, any tiny, senseless bit of nonsense, you were so full of laughter that anything could bring it out. It was always there and ready to erupt, that free, tomboyish laughter, and even when she was asleep, its high-spirited arabesque was traced on her young mouth.

Finally, I would like to point out that now in the age of English, choosing a language policy is not the exclusive concern of non-English-speaking nations. It is also a concern for English-speaking nations, where, to realize the world’s diversity and gain the humility that is proper to any human being, people need to learn a foreign language as a matter of course. Acquiring a foreign language should be a universal requirement of compulsory education. Furthermore, English expressions used in international conferences should be regulated and standardized to some extent. Native English speakers need to know that to foreigners, Latinate vocabulary is easier to understand than what to the native speakers is easy, child-friendly language. At international conferences, telling jokes that none but native speakers can comprehend is inappropriate, even if fun. If native speakers of English – those who enjoy the privilege of having their mother tongue as the universal language – would not wait for others to protest but would take steps to regulate themselves, what respect they would earn from the rest of the world! If that is too much to ask, the rest of the world would appreciate it if they would at least be aware of their privileged position – and more important, be aware that the privilege is unwarranted. In this age of global communication, some language or other was bound to be come a universal language used in every corner of the world English became that language not because it is intrinsically more universal than other languages, but because through a series of historical coincidences it came to circulate ever more widely until it reached the tipping point. That’s all there is to it. English is an accidental universal language. If more English native speakers walked through the doors of other languages, they would discover undreamed-of landscapes. Perhaps some of them might then begin to think that the truly blessed are not they themselves, but those who are eternally condemned to reflect on language, eternally condemned to marvel at the richness of the world.

Learning to meditate helped too. When the Beatles visited India in 1968 to study Transcendental Meditation at the ashram of Maharishi Mahesh Yogi, I was curious to learn it, so I did. I loved it. Meditation has benefited me hugely throughout my life because it produces a calm open-mindedness that allows me to think more clearly and creatively. I majored in finance in college because of my love for the markets and because that major had no foreign language requirement—so it allowed me to learn what I was interested in, both inside and outside class. I learned a lot about commodity futures from a very interesting classmate, a Vietnam veteran quite a bit older than me. Commodities were attractive because they could be traded with very low margin requirements, meaning I could leverage the limited amount of money I had to invest. If I could make winning decisions, which I planned to do, I could borrow more to make more. Stock, bond, and currency futures didn’t exist back then. Commodity futures were strictly real commodities like corn, soybeans, cattle, and hogs. So those were the markets I started to trade and learn about. My college years coincided with the era of free love, mind-expanding drug experimentation, and rejection of traditional authority. Living through it had a lasting effect on me and many other members of my generation. For example, it deeply impacted Steve Jobs, whom I came to empathize with and admire. Like me, he took up meditation and wasn’t interested in being taught as much as he loved visualizing and building out amazing new things. The times we lived in taught us both to question established ways of doing things—an attitude he demonstrated superbly in Apple’s iconic “1984” and “Here’s to the Crazy Ones,” which were ad campaigns that spoke to me. For the country as a whole, those were difficult years. As the draft expanded and the numbers of young men coming home in body bags soared, the Vietnam War split the country. There was a lottery based on birthdates to determine the order of those who would be drafted. I remember listening to the lottery on the radio while playing pool with my friends. It was estimated that the first 160 or so birthdays called would be drafted, though they read off all 366 dates. My birthday was forty-eighth.

Commencez!' cried I, when they had all produced their books. The moon-faced youth (by name of Jules Vanderkelkov, as I afterwards learned) took the first sentence. The 'livre de lecteur' was 'The Vicar of Wakefield', much used in foreign schools, because it is supposed to contain prime samples of conversational English. It might, however, have been a Runic scroll for any resemblance the worse, as enunciated by Jules, bore to the language in ordinary use amongst the natives of Great Britain. My God! how he did snuffle, snort, and wheeze! All he said was said in his throat and nose, for it is thus the Flamands speak; but I heard him to the end of his paragraph without proffering a word of correction, whereat he looked vastly self-complacent, convinced, no doubt, that he had acquitted himself like a real born and bred 'Anglais'. In the same unmoved silence I listened to a dozen in rotation; and when the twelfth had concluded with splutter, hiss, and mumble, I solemnly laid down the book. 'Arrêtez!', said I. There was a pause, during which I regarded them all with a steady and somewhat stern gaze. A dog, if stared at hard enough and long enough, will show symptoms of embarrassment, and so at length did my bench of Belgians. Perceiving that some of the faces before me were beginning to look sullen, and others ashamed, I slowly joined my hands, and ejaculated in a deep 'voix de poitrine' - 'Comme c'est affreux!' What a joy this book is! I love recipe books, but it’s short-lived; I enjoy the pictures for several minutes, read a few pages, and then my eyes glaze over. They are basically books to be used in the kitchen for one recipe at a time. This book, however, is in a different class altogether and designed to be read in its entirety. It’s in its own sui generis category; it has recipes at the end of most of the twenty-one chapters, but it’s a book to be read from cover to cover, yet it could easily be read chapter by chapter, in any order, as they are all self-contained. Every bite-sized chapter is a flowing narrative from a well-stocked brain encompassing Balinese culture, geography and history, while not losing its main focus: food. As you would expect from a scholar with a PhD in history from Columbia University, the subject matter has been meticulously researched, not from books and articles and other people’s work, but from actually being on the ground and in the markets and in the kitchens of Balinese families, where the Balinese themselves learn their culinary skills, hands on, passed down orally, manually and practically from generation to generation. Vivienne Kruger has lived in Bali long enough to get it right. That’s no mean feat, as the subject has not been fully studied before. Yes, there are so-called Balinese recipe books, most, if I’m not mistaken, written by foreigners, and heavily adapted. The dishes have not, until now, been systematically placed in their proper cultural context, which is extremely important for the Balinese, nor has there been any examination of the numerous varieties of each type of recipe, nor have they been given their true Balinese names. This groundbreaking book is a pleasure to read, not just for its fascinating content, which I learnt a lot from, but for the exuberance, enthusiasm and originality of the language. There’s not a dull sentence in the book. You just can’t wait to read the next phrase. There are eye-opening and jaw-dropping passages for the general reader as Kruger describes delicacies from the village of Tengkudak in Tabanan district — grasshoppers, dragonflies, eels and live baby bees — and explains how they are caught and cooked. She does not shy away from controversial subjects, such as eating dog and turtle. Parts of it are not for the faint-hearted, but other parts make you want to go out and join the participants, such as the Nusa Lembongan fishermen, who sail their outriggers at 5.30 a.m. The author quotes Miguel Covarrubias, the great Mexican observer of the 1930s, who wrote “The Island of Bali.” It has inspired all writers since, including myself and my co-author, Ni Wayan Murni, in our book “Secrets of Bali, Fresh Light on the Morning of the World.” There is, however, no bibliography, which I found strange at first. I can only imagine it’s a reflection of how original the subject matter is; there simply are no other sources. Throughout the book Kruger mentions Balinese and Indonesian words and sometimes discusses their derivations. It’s a Herculean task. I was intrigued to read that “satay” comes from the Tamil word for flesh ( sathai ) and that South Indians brought satay to Southeast Asia before Indonesia developed its own tradition. The book is full of interesting tidbits like this. The book contains 47 recipes in all, 11 of which came from Murni’s own restaurant, Murni’s Warung, in Ubud. Mr Dolphin of Warung Dolphin in Lovina also contributed a number of recipes. Kruger adds an introduction to each recipe, with a detailed and usually very personal commentary. I think my favorite, though, is from a village priest (pemangku), I Made Arnila of the Ganesha (Siwa) Temple in Lovina. water.
