And on Mondays eight servants, including an extra gardener, toiled all day with mops and scrubbing-brushes and hammers and garden-shears, repairing the ravages of the night before.
Every Friday five crates of oranges and lemons arrived from a fruiterer in New York--every Monday these same oranges and lemons left his back door in a pyramid of pulpless halves. There was a machine in the kitchen which could extract the juice of two hundred oranges in half an hour if a little button was pressed two hundred times by a butler's thumb.
At least once a fortnight a corps of caterers came down with several hundred feet of canvas and enough colored lights to make a Christmas tree of Gatsby's enormous garden. On buffet tables, garnished with glistening hors-d'oeuvre, spiced baked hams crowded against salads of harlequin designs and pastry pigs and turkeys bewitched to a dark gold. In the main hall a bar with a real brass rail was set up, and stocked with gins and liquors and with cordials so long forgotten that most of his female guests were too young to know one from another.
By seven o'clock the orchestra has arrived, no thin five-piece affair, but a whole pitful of oboes and trombones and saxophones and viols and cornets and piccolos, and low and high drums. The last swimmers have come in from the beach now and are dressing up-stairs; the cars from New York are parked five deep in the drive, and already the halls and salons and verandas are gaudy with primary colors, and hair shorn in strange new ways, and shawls beyond the dreams of Castile. The bar is in full swing, and floating rounds of cocktails permeate the garden outside, until the air is alive with chatter and laughter, and casual innuendo and introductions forgotten on the spot, and enthusiastic meetings between women who never knew each other's names.
The lights grow brighter as the earth lurches away from the sun, and now the orchestra is playing yellow cocktail music, and the opera of voices pitches a key higher. Laughter is easier minute by minute, spilled with prodigality, tipped out at a cheerful word. The groups change more swiftly, swell with new arrivals, dissolve and form in the same breath; already there are wanderers, confident girls who weave here and there among the stouter and more stable, become for a sharp, joyous moment the centre of a group, and then, excited with triumph, glide on through the sea-change of faces and voices and color under the constantly changing light.
Suddenly one of the gypsies, in trembling opal, seizes a cocktail out of the air, dumps it down for courage and, moving her hands like Frisco, dances out alone on the canvas platform. A momentary hush; the orchestra leader varies his rhythm obligingly for her, and there is a burst of chatter as the erroneous news goes around that she is Gilda Gray's understudy from the FOLLIES. The party has begun.

By this time I was convinced of it—and my conviction remained unshaken throughout the years that followed. Later he asked me whether I thought that words had a magic and music quite independent of their meaning. I said I certainly thought so, and I quoted as a classic though familiar instance the first lines that came into my head.

Until the end of dinner I listened to him spellbound. I can remember thinking: This is what people mean when they talk of seeing stars. That is what I am doing now. I do not to this day know who was on my other side. Good manners, social obligation, duty—all had gone with the wind. I was transfixed, transported into a new element. I knew only that I had seen a great light. I recognized it as the light of genius…

One afternoon, Little Brother struck up a conversation in a café with a group of charming young people, who turned out to be some species of fancy aristocrats. The charming young aristocrats took a liking to Little Brother and invited him to a party that weekend in a castle in the Loire Valley. They promised Little Brother that this was going to be the most fabulous party of the year. It would be attended by the rich, by the famous, and by several crowned heads of Europe. Best of all, it was to be a masquerade ball, where nobody skimped on the costumes. It was not to be missed. Dress up, they said, and join us! Excited, Little Brother worked all week on a costume that he was certain would be a showstopper. He scoured Paris for materials and held back neither on the details nor the audacity of his creation. Then he rented a car and drove to the castle, three hours from Paris. He changed into his costume in the car and ascended the castle steps. He gave his name to the butler, who found him on the guest list and politely welcomed him in. Little Brother entered the ballroom, head held high. Upon which he immediately realized his mistake. This was indeed a costume party—his new friends had not misled him there—but he had missed one detail in translation: This was a themed costume party. The theme was “a medieval court.” And Little Brother was dressed as a lobster. All around him, the wealthiest and most beautiful people of Europe were attired in gilded finery and elaborate period gowns, draped in heirloom jewels, sparkling with elegance as they waltzed to a fine orchestra. Little Brother, on the other hand, was wearing a red leotard, red tights, red ballet slippers, and giant red foam claws. Also, his face was painted red. This is the part of the story where I must tell you that Little Brother was over six feet tall and quite skinny—but with the long waving antennae on his head, he appeared even taller. He was also, of course, the only American in the room. He stood at the top of the steps for one long, ghastly moment. He almost ran away in shame. Running away in shame seemed like the most dignified response to the situation. But he didn’t run. Somehow, he found his resolve. He’d come this far, after all. He’d worked tremendously hard to make this costume, and he was proud of it. He took a deep breath and walked onto the dance floor. He reported later that it was only his experience as an aspiring artist that gave him the courage and the license to be so vulnerable and absurd. Something in life had already taught him to just put it out there, whatever “it” is. That costume was what he had made, after all, so that’s what he was bringing to the party. It was the best he had. It was all he had. So he decided to trust in himself, to trust in his costume, to trust in the circumstances. As he moved into the crowd of aristocrats, a silence fell. The dancing stopped. The orchestra stuttered to a stop. The other guests gathered around Little Brother. Finally, someone asked him what on earth he was. Little Brother bowed deeply and announced, “I am the court lobster.” Then: laughter. Not ridicule—just joy. They loved him. They loved his sweetness, his weirdness, his giant red claws, his skinny ass in his bright spandex tights. He was the trickster among them, and so he made the party. Little Brother even ended up dancing that night with the Queen of Belgium. This is how you must do it, people.

John boiled, coddled, simmered and warmed. He roasted, seared, fried and braised. He poached stock-fish and minced the meats of smoked herrings while Scovell's pans steamed with ancient sauces: black chawdron and bukkenade, sweet and sour egredouce, camelade and peppery gauncil. For the feasts above he cut castellations into pie-coffins and filled them with meats dyed in the colors of Sir William's titled guests. He fashioned palaces from wafers of spiced batter and paste royale, glazing their walls with panes of sugar. For the Bishop of Carrboro they concocted a cathedral.
'Sprinkle salt on the syrup,' Scovell told him, bent over the chafing dish in his chamber. A golden liquor swirled in the pan. 'Very slowly.'
'It will taint the sugar,' John objected.
But Scovell shook his head. A day later they lifted off the cold clear crust and John split off a sharp-edged shard. 'Salt,' he said as it slid over his tongue. But little by little the crisp flake sweetened on his tongue. Sugary juices trickled down his throat. He turned to the Master Cook with a puzzled look.
'Brine floats,' Scovell said. 'Syrup sinks.' The Master Cook smiled. 'Patience, remember? Now, to the glaze...

Quote from "The Dish Keepers of Honest House" ....TO TWIST THE COLD is easy when its only water you want. Tapping of the toothbrush echoes into Ella's mind like footsteps clacking a cobbled street on a bitter, dry, cold morning. Her mind pushes through sleep her body craves. It catches her head falling into a warm, soft pillow.
"Go back to bed," she tells herself.
"You're still asleep," Ella mumbles, pushes the blanket off, and sits up.
The urgency to move persuades her to keep routines. Water from the faucet runs through paste foam like a miniature waterfall. Ella rubs sleep-deprieved eyes, then the bridge of her nose and glances into the sink.
Ella's eyes astutely fixate for one, brief millisecond. Water becomes the burgundy of soldiers exiting the drain. Her mouth drops in shock. The flow turns green. It is like the bubbling fungus of flockless, fishless, stagnating ponds.
Within the iridescent glimmer of her thinking -- like a brain losing blood flow, Ella's focus is the flickering flashing of gray, white dust, coal-black shadows and crows lifting from the ground. A half minute or two trails off before her mind returns to reality.
Ella grasps a toothbrush between thumb and index finger. She rests the outer palm against the sink's edge, breathes in and then exhales. Tension in the brow subsides, and her chest and shoulders drop; she sighs. Ella stares at pasty foam. It exits the drain as if in a race to clear the sink of negativity -- of all germs, slimy spit, the burgundy of imagined soldiers and oppressive plaque.
GRASPING THE SILKY STRAND between her fingers, Ella tucks, pulls and slides the floss gently through her teeth. Her breath is an inch or so of the mirror. Inspections leave her demeanor more alert. Clouding steam of the image tugs her conscience. She gazes into silver glass. Bits of hair loosen from the bun piled at her head's posterior.
What transforms is what she imagines. The mirror becomes a window. The window possesses her Soul and Spirit. These two become concerned -- much like they did when dishonest housekeepers disrupted Ella's world in another story.
Before her is a glorious bird -- shining-dark-as-coal, shimmering in hues of purple-black and black-greens. It is likened unto The Raven in Edgar Allan Poe's most famous poem of 1845.
Instead of interrupting a cold December night with tapping on a chamber door, it rests its claws in the decorative, carved handle of a backrest on a stiff dining chair. It projects an air of humor and concern. It moves its head to and fro while seeking a clearer understanding.
Ella studies the bird. It is surrounded in lofty bends and stretches of leafless, acorn-less, nearly lifeless, oak trees. Like fingers and arms these branches reach below.
[Perhaps they are reaching for us? Rest assured; if they had designs on us, I would be someplace else, writing about something more pleasant and less frightening. Of course, you would be asleep.]
Balanced in the branches is a chair. It is from Ella's childhood home. The chair sways. Ella imagines modern-day pilgrims of a distant shore. Each step is as if Mother Nature will position them upright like dolls, blown from the stability of their plastic, flat, toe-less feet. These pilgrims take fate by the hand.
LIFTING A TOWEL and patting her mouth and hands, Ella pulls the towel through the rack. She walks to the bedroom, sits and picks up the newspaper. Thumbing through pages that leave fingertips black, she reads headlines:
"Former Dentist Guilty of Health Care Fraud."
She flips the page, pinches the tip of her nose and brushes the edge of her chin -- smearing both with ink. In the middle fold directly affront her eyes is another headline:
"Dentist Punished for Misconduct."
She turns the page. There is yet another:
"Dentist guilty of urinating in surgery sink and using contaminated dental instruments on patients."
This world contains those who are simply insane! Every profession has those who stray from goals....

A low lacquered table is set on the tatami floor, and the woman slides back paper walls to reveal a moonlit corner garden dripping from a recent rain; Kawabata wrote of this garden in the rain that it was the heart of Kyoto. “Not any garden,” she says pointedly, “but this very garden.” She informs him that the tub in the bathroom is already warm and that an attendant will keep it warm, always, for whenever he needs it. Always. There is a yukata in the closet for him to wear. Would he like dinner in the room? She will bring it personally for him: the first of the four kaiseki meals he will be writing about. The kaiseki meal, he has learned, is an ancient formal meal drawn from both monasteries and the royal court. It is typically seven courses, each course composed of a particular type of food (grilled, simmered, raw) and seasonal ingredients. Tonight, it is butter bean, mugwort, and sea bream. Less is humbled both by the exquisite food and by the graciousness with which she presents it. “I most sincerely apologize I cannot be here tomorrow to see you; I must go to Tokyo.” She says this as if she were missing the most extraordinary of wonders: another day with Arthur Less. He sees, in the lines around her mouth, the shadow of the smile all widows wear in private. She bows and exits, returning with a sake sampler. He tries all three, and when asked which is his favorite, he says the Tonni, though he cannot tell the difference. He asks which is her favorite. She blinks and says: “The Tonni.” If only he could learn to lie so compassionately.

How are you? If you are reading this it means your back from the wonderful cruise my brothers and I sent you on for your anniversary. We’re sure you both had a wonderful time. We want you to know that, while you were away, we did almost everything you asked. All but one thing, that is.
We killed the lawn.
We killed it dead.
You asked us not to and we killed it. We killed it with extreme prejudice and no regard for its planty life.
We killed the lawn.
Now we know what you’re thinking: “But sons, whom we love ever so much, how can this be so? We expressly asked you to care for the lawn? The exactly opposite of what you are now conveying to us in an open digital forum.” True enough. We cannot dispute this. However, we have killed the lawn. We have killed it good.
We threw a party and it was quite a good time. We had a moon bounce and beer and games and pirate costumes, oh it was a good time. Were it anyone else’s party that probably would have been enough but, hey, you know us. So we got a foam machine.
A frothy, wet, quite fun yet evidently deadly, foam machine. Now this dastardly devise didn’t kill the lawn per se. We hypothesize it was more that it made the lawn very wet and that dancing in said area for a great many hours over the course of several days did the deed. Our jubilant frolicking simply beat the poor grass into submission.
We collected every beer cap, bottle, and can. There is not a single cigarette butt or cigar to be found. The house is still standing, the dog is still barking, Grandma is still grandmaing but the lawn is no longer lawning.
Now we’re sure, as you return from your wonderful vacation, that you’re quite upset but lets put this in perspective. For one thing whose idea was it for you to leave us alone in the first place? Not your best parenting decision right there. We’re little better than baboons. The mere fact that we haven’t killed each other in years past is, at best, luck.
Secondly, let us not forget, you raised us to be this way. Always pushing out limits, making sure we thought creatively. This is really as much your fault as it is ours, if not more so. If anything we should be very disappointed in you.
Finally lets not forget your cruise was our present to you. We paid for it. If you look at how much that cost and subtract the cost of reseeding the lawn you still came out ahead so, really, what position are you in to complain?
So let’s review; we love you, you enjoyed a week on a cruise because of us, the lawn is dead, and it’s partially your fault.
Glad that’s all out in the open. Can you have dinner ready for us by 6 tonight? We’d like macaroni and cheese.

There is a scene I love where a brother and sister meet after many years and little communication. They meet in an arranged café in mid-afternoon. The light is dying and the city outside rumbles softly in the complacent time before rush hour. The café is unexceptional and quiet. She comes first, sits at the far end, a table facing the door, nervous in her buttoned raincoat. The waiter is an older man. He leaves her be. The brother enters late with the look but not the words of apology. He kisses her cheek. They sit and the old man brings them teas they do not want, two pots, strong for him weak for her. It is long ago since they said each other’s names aloud, and saying them now has the extraordinary shyness of encounter I imagine on the Last Day. At first there is the full array of human awkwardness. But here is the thing: almost in an instant their old selves are immediately present. The years and the changes are nothing. They need few words. They recognise each other in each other, and even in silence the familiarity is powerfully consoling, because despite time and difference there remains that deep-river current, that kind of maybe communion that only exists within people joined in the word family. So now what washes up between them, foam-white and fortifying and quite unexpectedly, is love. I cannot remember what book it is in. But it’s in this one now.

...Christina wasn't about to stop fighting—not until she took her last breath. Boring down with her heels, she thrashed. "Get off me, ye brute." And by the shift of the crushing weight on her chest, she only had moments before her life's breath completely whooshed from her lungs.
The very thought of dying whilst her son was still held captive infused her with strength. With a jab, she slammed the heel of her hand across the man's chin. He flew from her body like a sack of grain. Praises be, had the Lord granted her with superhuman strength? Blinking, Christina sat up.
No, no. Her strike hadn't rescued her from the pillager.
A champion had.
A behemoth of a man pummeled the pikeman's face with his fists. "Never. Ever." His fists moved so fast they blurred. "Harm. A. Woman!"
Bloodied and battered, the varlet dropped to the dirt.
A swordsman attacked her savior from behind.
"Watch out," she cried, but before the words left her lips the warrior spun to his feet. Flinging his arm backward, he grabbed his assailant's wrist, stopped the sword midair and flipped the cur onto his back.
Onward, he fought a rush of English attackers with his bare hands, without armor. Not even William Wallace himself had been so talented. This warrior moved like a cat, anticipating his opponent's moves before they happened.
Five enemy soldiers lay on their backs.
"Quickly," the man shouted, running toward her, his feet bare.
No sooner had she rolled to her knees than his powerful arms clamped around her. The wind whipped beneath her feet. He planted her bum in the saddle.
"Behind!" Christina screamed, every muscle in her body clenching taut.
Throwing back an elbow, the man smacked an enemy soldier in the face resulting in a sickening crack.
She picked up her reins and dug in her heels.
"Whoa!" The big man latched onto the skirt of her saddle and hopped behind her, making her pony's rear end dip. But the frightened galloway didn't need coaxing. He galloped away from the fight like a deer running from a fox.
Christina peered around her shoulder at the mass of fighting men behind them. "My son!"
"Do you see him?" the man asked in the strangest accent she'd ever heard.
She tried to turn back, but the man's steely chest stopped her. "They took him."
"Who?"
"The English, of course."
The more they talked, the further from the border the galloway took them.
"Huh?" the man mumbled behind her like he'd been struck in the head by a hammer. Everyone for miles knew the Scots and the English were to exchange a prisoner that day.
The champion's big palm slipped around her waist and held on—it didn't hurt like he was digging in his fingers, but he pressed firm against her. The sensation of such a powerful hand on her body was unnerving. It had been eons since any man had touched her, at least gently. The truth? Aside from the brutish attack moments ago, Christina's life had been nothing but chaste.
White foam leached from the pony's neck and he took in thunderous snorts. He wouldn't be able to keep this pace much longer. Christina steered him through a copse of trees and up the crag where just that morning she'd stood with King Robert and Sir Boyd before they'd led the Scottish battalion into the valley. There, she could gain a good vantage point and try to determine where the backstabbing English were heading with Andrew this time.
At the crest of the outcropping, she pulled the horse to a halt. "The pony cannot keep going at this pace."
The man's eyebrows slanted inward and he gave her a quizzical stare. Good Lord, his tempest-blue eyes pierced straight through her soul. "Are you speaking English?
