It’s that time of the month again… As we head into those dog days of July, Mike would like to thank those who helped him get the toys he needs to enjoy his summer. Thanks to you, he bought a new bass boat, which we don’t need; a condo in Florida, where we don’t spend any time; and a $2,000 set of golf clubs…which he had been using as an alibi to cover the fact that he has been remorselessly banging his secretary, Beebee, for the last six months. Tragically, I didn’t suspect a thing. Right up until the moment Cherry Glick inadvertently delivered a lovely floral arrangement to our house, apparently intended to celebrate the anniversary of the first time Beebee provided Mike with her special brand of administrative support. Sadly, even after this damning evidence-and seeing Mike ram his tongue down Beebee’s throat-I didn’t quite grasp the depth of his deception. It took reading the contents of his secret e-mail account before I was convinced. I learned that cheap motel rooms have been christened. Office equipment has been sullied. And you should think twice before calling Mike’s work number during his lunch hour, because there’s a good chance that Beebee will be under his desk “assisting” him. I must confess that I was disappointed by Mike’s over-wrought prose, but I now understand why he insisted that I write this newsletter every month. I would say this is a case of those who can write, do; and those who can’t do Taxes. And since seeing is believing, I could have included a Hustler-ready pictorial layout of the photos of Mike’s work wife. However, I believe distributing these photos would be a felony. The camera work isn’t half-bad, though. It’s good to see that Mike has some skill in the bedroom, even if it’s just photography. And what does Beebee have to say for herself? Not Much. In fact, attempts to interview her for this issue were met with spaced-out indifference. I’ve had a hard time not blaming the conniving, store-bought-cleavage-baring Oompa Loompa-skinned adulteress for her part in the destruction of my marriage. But considering what she’s getting, Beebee has my sympathies. I blame Mike. I blame Mike for not honoring the vows he made to me. I blame Mike for not being strong enough to pass up the temptation of readily available extramarital sex. And I blame Mike for not being enough of a man to tell me he was having an affair, instead letting me find out via a misdirected floral delivery. Before I even got a chance to start thinking about those windows back home again, he somehow convinced them to admit just one more student, and that’s how it all started. That’s how I was able to start over. I was going to go to college. I was going to become a teacher. I would be able to work with children, to teach them, to help shape them, to introduce them to a whole world of possibilities. In the process, a whole world of possibilities was opening up to me. And while I had learned to appreciate—indeed, enjoy—chamber ensembles, orchestras, and on occasion even the opera, I retained my former habit as a dirty amusement to add some private savor to the proceedings. Tonight, it was the violist, weaving and bobbing his way through Dvořák’s Terzetto in C Major like a sinuous dancer. I prefer the romantics—fewer hair-raising harmonies than modern fare, and certainly more engaging than funereal baroque. The intriguing arrangement of the terzetto kept me engaged, in that slightly detached and floating manner engendered by instrumental performance. Moreover, the woman to my left, one row ahead, was wearing Salome by Papillon. The simple fact of anyone wearing such a scent in public pleased me. So few people dared wear anything at all these days, and when they did, it was inevitably staid: an inoffensive classic or antiseptic citrus-and-powder. But this perfume was one I might have worn myself. Jasmine, yes, but more indolic than your average floral. People sometimes say it smells like dirty panties. As the trio wrapped up for intermission, I took a steadying breath of musk and straightened my lapels. The music was only a means to an end, after all.

Printed on the wrapper of every Tcho bar is a simple flavor wheel with just six words: Bright, Fruity, Floral, Earthy, Nutty, and Chocolatey. When Blue Bottle looked at that wheel, they got inspired, and when we sketched, someone repurposed the idea as a simple flavor vocabulary for describing Blue Bottle’s coffee beans: In Friday’s test, and later, at the new online store, customers loved the simple descriptions. It’s a prime example of finding inspiration outside your domain (and yet another reason to be grateful for chocolate).

In many ways, Kaua‘i is the ultimate example of what a world would look like if plants were in charge. The whole island is covered in the surreal products of total floral freedom. When plants are allowed to evolve without fear, they get scrupulously and flamboyantly specific. Take the Hibiscadelphus genus, for example. Found only in Hawai‘i, these plants have long tubular flowers, custom-made to fit the hooked beak of the honeycreeper, the precise bird that pollinates them. Then there is the vulcan palm, Brighamia insignis, or ‘Ōlulu in Hawaiian, a short tree best described by its nickname, “cabbage on a stick.” Over tens of thousands of years, it has evolved to be pollinated only by the extremely rare fabulous green sphinx moth (its real name). The vulcan palm, still critically endangered in the wild, was saved from total extinction by Perlman’s work in the early days of the extinction prevention program, when he made his own harness out of knotted ropes and used it to hang over the Nā Pali Coast cliffs. There, four thousand feet in the air, he would use a small cosmetic brush borrowed from his wife to imitate the moth, carefully transferring the pollen from the males to the females. “You’d know if you did it well,” Perlman said. “When you’d go back, there’d be fruits just bursting open with seed.” (The vulcan palm is now cultivated as a houseplant in the Netherlands, where there are greenhouses full of them. I wonder if a person with a potted Vulcan palm on their Amsterdam windowsill knows of the drama it took to get it there.)

Szechuan Ginger Beer The schizoid effect of ginger on the palate — at once hot and cooling — is reinforced in this recipe with an added kick of aromatic Szechuan peppercorns. This pepper, named after its native Szechuan province of China, is the dried berry of prickly ash (Zanthoxylum spp.) and is not related to the vine peppercorn (Piper nigrum) commonly served at tables. It has a fruity, floral fragrance that is a wonderful complement to the pungency of ginger. This recipe does not begin with a flavor base. Follow the complete brewing instructions to make one gallon of Szechuan Ginger Beer. TO BREW 1 GALLON 31⁄2 quarts water 4 ounces fresh gingerroot, coarsely grated 1 tablespoon Szechuan peppercorns 1 pound sugar 2 tablespoons unflavored rice vinegar 1⁄8 teaspoon champagne yeast (Saccharomyces bayanus) Combine the water, ginger, and peppercorns in a large pot. Bring to a simmer over medium heat. Let simmer for 5 minutes, then add the sugar and vinegar, stirring until the sugar dissolves. Remove from the heat and let cool until the mixture reaches warm room temperature, from 75 to 80°F. Strain out the ginger and peppercorns. Add the yeast, stirring until it is completely dissolved. Pour the mixture into sanitized plastic bottles (see here) using a sanitized kitchen funnel, leaving 11⁄4 inches of air space at the top of each bottle. Seal the bottles. Store for 3 to 5 days at room temperature. When the bottles feel rock hard, the soda is fully carbonated. Refrigerate for at least 1 week before serving; drink within 3 weeks to avoid overcarbonation.

HOW TO MAKE A HAND-TIED BOUQUET This bouquet has a lush, loose, casual feel. You make it by holding a stem in one hand and adding other stems around it in a spiral fashion. Because it’s not tightly wrapped in ribbon, it can easily be stored in a glass of water until showtime. (Do make sure it’s dry before it gets anywhere near your dress!) MATERIALS: • 15 to 20 stems of fairly long-stemmed flowers (no more than 3 or 4 varieties for a mixed bouquet; if using a variety of colors make sure they are evenly distributed) • Florist’s knife • 5 to 10 stems of greenery • 26-gauge florist’s wire or ordinary twine • Floral shears • Ribbon for finishing 1. Cut each of the stems on the diagonal and place in water while you work. Remove any thorns by gently scraping them off with a florist’s knife (take care not to gouge too deeply) and any foliage from the bottom half of the stem. 2. Take the largest flower in the bunch—this will form the center of the bouquet. Hold its stem in your left hand, between your thumb and first finger, about 6 to 8 inches from the base of the flower head. 3. With your right hand, add 4 to 6 clusters of greenery evenly around the center flower, tucking them in just below the head, allowing the stems to cross at the bottom and turning the bouquet clockwise as you work. 4. Tuck the end of a long piece of wire or twine in between two of the stems, and then wind it around the whole bunch of stems a couple of times to begin to hold everything together. Do not cut the wire. 5. Holding the bouquet in your left hand as in step 2, place 5 or 6 more flowers around the greenery, turning the bouquet clockwise as you work. Secure this next layer of stems with a couple of twists of wire in the same place as before. Continue adding greenery, flowers, or whatever you like to add mass to the bouquet until it reaches the desired size and shape. (Look at it from all angles to make sure you like the silhouette.) 6. Finish with a ring of greenery to give it a nice decorative cuff (optional). 7. Secure all the stems together one last time by winding the wire gently but firmly around several times, and then cut it off and tuck it in. 8. Using floral shears, cut the stems to the desired length, all at the same level. (Don’t chop them too short or your bouquet will look top heavy.) 9. Wrap ribbon around the stems to cover the wire, and tie in a droopy bow. If your ribbon is narrow, wrap it around several times before tying a bow to ensure that you’ve covered all your work. Leave the ends of the bow long and trim them at an angle.

Cut flower stem to 3 inches long, on the diagonal, using the florist’s knife. 2. Take a length of florist’s wire and gently pierce the green base of the flower, and then push it all the way through. (Make sure you push through a meaty part, but make it closer to the stem than to the flower.) 3. Bend the wire into a hairpin shape. 4. Wrap stem and wire in stem-wrap tape (which will adhere to itself), from top to bottom, in a spiral. 5. If you want to add greenery or baby’s breath, line up a sprig with the stem and tape them together with a few more loops of stem-wrap tape. 6. Cut the “stem,” including the wire (which may extend below the stem itself), to the desired length using clippers. 7. Wrap the end of the wire around a pencil to form the traditional “pigtail” or J-shaped curlicue that gives a boutonniere a finished look. You can cover the stem with ribbon, if you like, or finish with a bow, but it’s probably best to keep the stem small and unobtrusive. 8. Pin on a lapel using the corsage pin.

Tim Graham Tim Graham has specialized in photographing the Royal Family for more than thirty years and is foremost in his chosen field. Recognition of his work over the years has led to invitations for private sessions with almost all the members of the British Royal Family, including, of course, Diana, Princess of Wales, and her children. Her “magic” was a combination of style and compassion. She instinctively knew what was right for every occasion. One of my favorite photographs is a shot I took in Angola in 1997 that shows her with a young land-mine victim who had lost a leg. This image of the Princess was chosen by the Red Cross to appear on a poster to publicize the tragic reality of land mines. It’s an important part of her legacy. It is difficult to capture such a remarkable person in just one photo, but I like this one a lot because it sums up her warmth and concern. Diana had one of those faces that would be very hard to photograph badly. Over the years, there were times when she was fed up or sad, and those emotions I captured, too. They were relevant at the time. I felt horrified by the news of her death and that she could die in such a terrible, simply tragic way. I couldn’t conceive of how her sons would be able to cope with such a loss. I was asked just before the funeral to photograph Prince Charles taking William and Harry out in public for the first time so they could meet the crowds gathered at Kensington Palace and see the floral tributes. It was the saddest of occasions. I had by then received an invitation to the funeral and was touched to have been the only press photographer asked. After much deliberation, I decided to turn down the chance to be a guest in Westminster Abbey. Having photographed Diana for seventeen years, from the day she appeared as Prince Charles’s intended, right through her public and, on occasion by invitation, her private life, I felt that I had to take the final picture. It was the end of an era. From my press position at the door of the abbey, I watched everyone arrive for the service, including my wife, who had also been invited. During my career, I have witnessed so many historic events from the other side of a camera that I felt compelled to take that last photograph of the Princess’s story. Life has moved on, and the public have found other subjects to fascinate them--not least the now grownup sons of this international icon--but everyone knows Diana was unique.

Wide-open, with none of the hidden turns and caverns of the lilies whose trumpets would be deep enough to incubate in, or at least hide one's thoughts in, though their scent would be too strong for the dinner table.

I jolted out of my sleep or so I thought with tunneling sparking flashing light. For a second when I look around the room everything seems soft, unclear, and slightly distorted, I am in my bed naked like I am every day when I get up and hug my stuffed bunny for the last time, as I snap on the lamp on my nightstand. I have to hide my bunny when the girls come over. Ray used to just throw him off the bed onto the floor. That was not cool! I don’t think Marcel would mind my cuddly stuffed bunny, with the cute floppy ears. My alarm has been blaring and Beep- Beeping for five minutes. It's from seven-o to six am. I smash and rub my face in my soft pillow for the last time. I look around the room I am sweating. I wipe my forehead, saying wow, I have had a dream that I’m falling- but never like this. ‘Damn that was a crazy dream!’ So- I start my morning retain- you know grabbing for what inside my Pringles can buy my bed before all hell comes busting through my door. I sit up in bed slightly and I turn on my laptop, might as well live record what going to do on cam, why not. So, push the quilt away, I look down at my unclothed body with my toy in hand, and I see my toes wiggling with nail polish, and my almost smooth legs and everything in-between. Thinking I just shaved and looked at all this stubble, growing here already… don’t you hate that, I sure do? It’s like all you can see and feel. Now I’m covered with sweat even though my room is frigid cold. My throat is dry, my heart is racing, and I’m desperate for a drink, yet I am almost there, my sighing is getting loud, I can feel it building up, I can stop it feeling so good and the tips are just rolling in for the boys that tune into my show. The camera is right there, whoosh- and I feel on top of the world. Yet after I hit a low with having to start my day, running away from me away from who I am, I’ve just been running a long way. My floral sheets are stocked with everything rushing out, and so is my keyboard, yet the boys love it and love me for it, so that is good enough for me. Yet after I do that it’s like I get an embarrassing feeling, I pull it out, then close the lid of my lap, to cover up fast. It’s like I get a rush from it, and then the guilt comes after in my mind saying- ‘That was the wrong missy, yet I can’t stop. Jenny and my girls give me that same rush, always doing something that feels so good yet maybe wrong.
