His worn jeans, a blood-stained t-shirt, and his makeshift bandage sat on a nearby chair. The hysteria created by his appearance in the small hospital ward had died down. A local cop greeted him as soon as he was escorted to the examination room. The conversation was brief, once he revealed he was a bail enforcer the topic changed from investigation to shooting the bull. The experienced officer shook his hand before leaving then joked he hoped this would be their only encounter. The ER doc was a woman about his age. Already the years of long hours, rotating shifts and the rarity of a personal life showed on her face. Her eyelids were pink-rimmed, her complexion sallow; all were earmarks of the effect of long-term exhaustion. Wayne knew it all too well as he rubbed his knuckle against his own grainy eyes. Despite this, she attended to him with an upbeat demeanor and even slid in some ribbing at his expense. He was defenseless, once the adrenaline dropped off Wayne felt drained. He accepted her volleys without a response. All he mustered was a smile and occasional nod as she stitched him up. Using his free uninjured arm, he held the phone away from him slightly, utilizing the speaker option. “Hey Baby.” “What the hell, Wayne!” Her voice filled the small area, in his peripheral vision he saw the doc smirk. Turning his head, he addressed the caller. “Babe, I was getting ready to call.” The excuse sounded lame, even to him. “Why the hell do I have to hear about this secondhand?” Wayne placed the phone to his chest, loudly he exclaimed; “F***!” The ER doc touched his arm, “I will give you privacy.” Wayne gave her a grateful nod. With a snatch, she grabbed the corner of the thin curtain suspended from the ceiling and pulled it close. Alone again, he refocused on the call. The woman on the other end had continued in her tirade without him. When he rejoined the call mid-rant, she was issuing him a heartfelt ass-chewing. “...bullshit Wayne that I have to hear about this from my cousin. We’ve talked about this!” “Honey...” She interrupts him before he can explain himself. “So what the hell happened?” Wisely he waited for silence to indicate it was his turn to speak. “Lou, Honey first I am sorry. Socialization is never completely successful. Some individuals “inhabit” the transmitted universe more definitely than others. Even among the more or less accredited “inhabitants,” there will always be idiosyncratic variations in the way they conceive of the universe. Precisely because the symbolic universe cannot be experienced as such in everyday life, but transcends the latter by its very nature, it is not possible to “teach” its meaning in the straightforward manner in which one can teach the meanings of everyday life. Children’s questions about the symbolic universe have to be answered in a more complicated way than their questions about the institutional realities of everyday life. The questions of idiosyncratic adults require further conceptual elaboration. In the previous example, the meaning of cousinhood is continually represented by flesh-and-blood cousins playing cousin roles in the experienced routines of everyday life. Human cousins are empirically available. Divine cousins, alas, are not. This constitutes an intrinsic problem for the pedagogues of divine cousinhood. It is similar, however, to the loup de mer of the Mediterranean, one of the most prized fish of that region and a standard menu item in restaurants along the Côte d’Azur. With flesh that is slightly softer and moister than its European cousin, striped bass was a specialty of Le Pavilion. The braised wild striped bass would be presented to the patrons whole and carved at tableside. The following is a simple, elegant, and mouth-watering adaptation of the recipe from Le Pavilion. The fish, gutted with head on, is braised with white wine, shallots, and mushrooms in the oven, then coated with the cooking juices enriched with butter. This dish is excellent served with tiny steamed potatoes or sautéed cucumbers. 1 striped bass, gutted, with head on (about 3 pounds) 2 cups thinly sliced mushrooms ¼ cup chopped shallots ½ teaspoon salt, plus more to taste ½ teaspoon freshly ground black pepper, plus more to taste 1 tablespoon good olive oil 1 teaspoon fresh thyme leaves 2 bay leaves 1 cup dry, fruity white wine (Chardonnay or Sauvignon Blanc) 8 tablespoons (1 stick) unsalted butter, at room temperature 1 tablespoon fresh lemon juice 1 tablespoon minced fresh chives Preheat the oven to 400 degrees. Place the fish in a gratin dish or stainless steel baking dish that is narrow enough to prevent the garnishes and the wine from spreading out too much. Sprinkle with the mushrooms, shallots, ½ teaspoon salt, ½ teaspoon pepper, olive oil, thyme, bay leaves, and wine. Cover tightly with a piece of aluminum foil so the fish will cook in its own steam. Bake for 35 to 45 minutes, or until the fish is cooked through. Check by inserting the point of a small knife into the flesh. It should be tender, and the flesh should separate from the central bone when pierced with the knife. Reduce the heat to 150 degrees. Using a large hamburger spatula, transfer the whole fish to an ovenproof serving platter, and set aside in the warm oven while you complete the recipe. Pour the fish’s cooking juices and vegetable solids into a small saucepan, and discard the bay leaves. You should have ¾ to 1 cup of liquid; cook down the liquid or add water to adjust the yield to this amount. Bring to a boil on top of the stove, and add the butter spoonful by spoonful, incorporating each piece into the mixture with a whisk before you add another. Remove the saucepan from the heat, and add the lemon juice, chives, and additional salt and pepper to taste. At serving time, pull or scrape off the skin on top of the fish with a small paring knife. Coat the fish with the sauce, and sprinkle the chives on top. Bring to the table, and carve for the guests.
