A cursory look at history reveals that propaganda and disinformation are nothing new, and even the habit of denying entire nations and creating fake countries has a long pedigree. In 1931 the Japanese army staged mock attacks on itself to justify its invasion of China, and then created the fake country of Manchukuo to legitimise its conquests. China itself has long denied that Tibet ever existed as an independent country. British settlement in Australia was justified by the legal doctrine of terra nullius (‘nobody’s land’), which effectively erased 50,000 years of Aboriginal history. Analogous views have kept the Islamist Recep Tayyip Erdoğan in power in Turkey since 2003. The name of his party – the Justice and Development Party – highlights its commitment to economic development, and the Erdoğan government has indeed managed to maintain impressive growth rates for more than a decade. Japan’s prime minister, the nationalist Shinzō Abe, came to office in 2012 pledging to jolt the Japanese economy out of two decades of stagnation. His aggressive and somewhat unusual measures to achieve this have been nicknamed Abenomics. Meanwhile in neighbouring China the Communist Party still pays lip service to traditional Marxist–Leninist ideals, but in practice is guided by Deng Xiaoping’s famous maxims that ‘development is the only hard truth’ and that ‘it doesn’t matter if a cat is black or white, so long as it catches mice’. It's from that potato that Gosetsu Udon Noodles are made! In fact, Gosetsu Udon Noodles are 95 percent starch! First, boil the potatoes, and then peel them... Mash them until they're smooth and fluffy... Then add water, salt and flour to make the dough! "There wasn't enough flour left for us to use. But thankfully... ... there were a few bags of this still available!" Potato starch! That was meant to be used for dusting cutting boards and table surfaces when making handmade noodles! It's not normally used as an ingredient in noodles... but as it's potato starch, that changes when it comes to potato noodles! Acting as the glue holding the noodles together, it also adds that extra starchiness for making the finished noodles that much chewier!

In the early 1990s, before Japan’s bubble economy burst, a leading newspaper in the U.S. published a large photo taken on a winter’s morning of rush-hour commuters in Shinjuku Station (or possibly Tokyo Station—the same applies to both) heading down the stairs. As if by agreement, all the commuters were gazing downward, their expressions strained and unhappy, looking more like lifeless fish packed in a can than people. The article said, “Japan may be affluent, but most Japanese look like this, heads downcast and unhappy-looking.” The photo became famous. Tsukuru had no idea if most Japanese were, as the article claimed, unhappy. But the real reason that most passengers descending the stairs at Shinjuku Station during their packed morning commute were looking down was less that they were unhappy than that they were concerned about their footing. Don’t slip on the stairs, don’t lose a shoe—these are the major issues on the minds of the commuters in the mammoth station during rush hour. There was no explanation of this, no context for the photograph. Certainly it was hard to view this mass of people, clad in dark overcoats, their heads down, as happy. And of course it’s logical to see a country where people can’t commute in the morning without fear of losing their shoes as an unhappy society.

To our amazement Jimmy received a letter, dated August 20, 1963, from Bertrand Russell, the world-famous philosopher and peace activist, saying “I have recently finished your remarkable book The American Resolution” and “have been greatly impressed with its power and insight.” The letter goes on to ask for Jimmy’s views on whether American whites “will understand the negro [sic] revolt because “the survival of mankind may well follow or fail to follow from political and social behavior of Americans in the next decades.” On September 5 Jimmy wrote back a lengthy reply saying among other things that “so far, with the exception of the students, there has been no social force in the white population which the Negroes can respect and a handful of liberals joining in a demonstration doesn’t change this one bit.” Russell replied on September 18 with more questions that Jimmy answered in an even longer letter dated December 22. Meanwhile, Russell had sent a telegram to the November 21 Town Hall meeting in New York City at which Jimmy was scheduled to speak, warning Negroes not to resort to violence. In response Jimmy said at the meeting that “I too would like to hope that the issues of our revolt might be resolved by peaceful means,” but “the issues and grievances were too deeply imbedded in the American system and the American peoples so that the very things Russell warned against might just have to take place if the Negroes in the U.S.A. are ever to walk the streets as free men.” In his December 22 letter Jimmy repeats what he said at the meeting and then patiently explains to Russell that what has historically been considered democracy in the United States has actually been fascism for millions of Negroes. The letter concludes: I believe that it is your responsibility as I believe that it is my responsibility to recognize and record this, so that in the future words do not confuse the struggle but help to clarify it. This is what I think philosophers should make clear. Because even though Negroes in the United States still think they are struggling for democracy, in fact democracy is what they are struggling against. This exchange between Jimmy and Russell has to be seen to be believed. In a way it epitomizes the 1960s—Jimmy Boggs, the Alabama-born autoworker, explaining the responsibility of philosophers to The Earl Russell, O.M., F.R.S., in his time probably the West’s best-known philosopher. Within the next few years The American Revolution was translated and published in French, Italian, Japanese, Spanish, Catalan, and Portuguese. To this day it remains a page-turner for grassroots activists because it is so personal and yet political, so down to earth and yet visionary.

A gentle sizzle, as the back of the ladle sparkles a mixture of eggs, flour, water, and milk across the silver surface. A crepe takes shape. Next comes cabbage, chopped thin- but not too thin- and stacked six inches high, lightly packed so hot air can flow freely and wilt the mountain down to a molehill. Crowning the cabbage comes a flurry of tastes and textures: ivory bean sprouts, golden pebbles of fried tempura batter, a few shakes of salt, and, for an extra umami punch, a drift of dried bonito powder. Finally, three strips of streaky pork belly, just enough to umbrella the cabbage in fat, plus a bit more batter to hold the whole thing together. With two metal spatulas and a gentle rocking of the wrists, the mass is inverted. The pork fat melts on contact, and the cabbage shrinks in the steam trapped under the crepe. Then things get serious. Thin wheat soba noodles, still dripping with hot water, hit the teppan, dancing like garden hoses across its hot surface, absorbing the heat of the griddle until they crisp into a bird's nest to house the cabbage and crepe. An egg with two orange yolks sizzles beside the soba, waiting for its place on top of this magnificent heap. Everything comes together: cabbage and crepe at the base, bean sprouts and pork belly in the center, soba and fried egg parked on top, a geologic construction of carbs and crunch, protein and chew, all framed with the black and white of thickened Worcestershire and a zigzag of mayonnaise. This is okonomiyaki, the second most famous thing that ever happened to Hiroshima.

A pickled ginger shoot, a few tender soybeans, and the crowning touch, the tilefish skin, separated from its body and fried into a ripple wave of crunch. The rice course arrives in a small bamboo steamer. The young chef works quickly. He slices curtains of tuna belly from a massive, fat-streaked block, dips it briefly in house-made soy sauce, then lays it on the rice. Over the top he spoons a sauce of seaweed and crushed sesame seeds just as the tuna fat begins to melt into the grains below. A round of tempura comes next: a harvest moon of creamy pumpkin, a gold nugget of blowfish capped with a translucent daikon sauce, and finally a soft, custardy chunk of salmon liver, intensely fatty with a bitter edge, a flavor that I've never tasted before. The last savory course comes in a large ice block carved into the shape of a bowl. Inside, a nest of soba noodles tinted green with powdered matcha floating in a dashi charged with citrus and topped with a false quail egg, the white fashioned from grated daikon.

On the afternoon of August 9, hearing the news that Nagasaki had been bombed, Emperor Hirohito called an imperial conference at which his ministers debated the wisdom of surrender. After hours of talk, at 2 a.m. Hirohito stated that he felt Japan should accept the terms of the Potsdam Declaration, terms of surrender proposed in late July by Truman (who had only become president on Roosevelt’s death in April). But Potsdam called for the emperor to step down; and his ministers insisted that their acceptance depended on Hirohito being allowed to remain as sovereign—an astute demand that would ensure a sense of national exoneration. James F. Byrnes, the U.S. secretary of state, did not deal directly with this, and on August 14 Japan surrendered at Hirohito’s command. The next day, the entire country heard with astonishment the first radio broadcast from a supreme ruler, now telling them squeakily, in the antiquated argot of the imperial court, that he was surrendering to save all mankind “from total extinction.” Until then, Japan’s goal had been full, all-out war, as a country wholly committed; any Japanese famously preferred to die for the emperor rather than to surrender. (One hundred million die together! was the slogan.) Today the goal was surrender: all-out peace. It was the emperor’s new will. Later that day a member of his cabinet, over the radio, formally denounced the United States for ignoring international law by dropping the atomic bombs. In 1988, on the forty-seventh anniversary of the Japanese attack on Pearl Harbor, when the mayor of Nagasaki accused Hirohito of responsibility for the war and its numerous atrocities, he inadvertently stirred up petitions for his own impeachment, and nationwide protests and riots calling for his assassination. A month afterward, in January 1989, Hirohito died at age eighty-seven, still emperor of Japan. Eleven days later the mayor, whom the Nagasaki police were no longer protecting, was shot in the back. He barely survived.

The complex Japanese aircraft designation systems proved confusing during and after the war. Several forms of nomenclature applied to Imperial Navy aircraft, but just two are important. The first system (“short form”) comprised a letter, number, letter (e.g., A5M). The first letter identified mission (A = carrier fighter, B = carrier bomber, G = land-based bomber, etc.). This was followed by a numeral indicating the numerical sequence of that model for the mission (5 = fifth carrier fighter). The second letter designated the manufacturer (the most important were A = Aichi, K = Kawanishi, M = Mitsubishi, N = Nakajima). The second major system was the type number from the year of service introduction under the Japanese calendar. By the Japanese calendar, 1936 was Year 2596, from which “96” was taken as the year of introduction. The year 1940 was Year 2600, hence the famous designation of the Mitsubishi A6M Carrier Fighter as the Type “0” or “Zero.” Imperial Army aircraft bore a Kitai (airframe) number (e.g., Ki-27), a type number/mission designator based on the Japanese calendar (Army Type 97 fighter had a 1937 year of introduction), and sometimes a name. The Imperial Navy resisted the use of names before capitulating to this system in 1943. To unify and simplify the identification of Japanese aircraft, the United States adopted a system by 1943 of providing male (fighters) and female (bombers) names for Japanese aircraft. Hence, the A6M “Zero” became officially the “Zeke” (although the Zero alone of Japanese aircraft continued to be widely known by that designation), while the “Nell” stood for the G3M and “Betty” for the G4M. This system has become so entrenched in decades of literature about the Pacific War that it will be used here for purposes of clarity.

In my case, I was being taught to believe that, first, I was special, unique, important, and great beyond words; second, that I was completely equal to everyone, which is to say average and mediocre. I was taught that diversity is unity. That to regress is to progress. That bullying was Hitler. That George W. Bush was doubleHitler. That British colonizers of Canada were doubleplusHitler. That we have always been at war with Hitler, however defined.
