" all the way up to a hundred and fifty three, while the newly risen Lord of Creation, the Sustainer of all their beings, He who died for them and for Whom they would gladly die, stood waiting, ignored, till the heap of fish was quantified. Rounding out the population were the famous un-fish of the ocean: the octopus, flexing and swirling the ends of her tentacles; delicate jellyfish like fairies; lobsters and sea stars; urchins and nudibranchs... the funny, caterpillar-like creatures that flowed over the ocean floor wearing all kinds of colors and appendages. All of these creatures woke, slept, played, swam about, and lived their whole lives under the sea, unconcerned with what went on above them. But there were other animals in this land, strange ones, who spoke both sky and sea. Seals and dolphins and turtles and the rare fin whale would come down to hunt or talk for a bit and then vanish to that strange membrane that separated the ocean from everything else. Whenever I tried to analyse our lives, and talk about it with Mary, she would say, ‘Darling, you are on the way to becoming one of the leading authorities in the world on caddis fly larvae. Don’t allow anything to deflect you from that. You may be rather inadequately paid, certainly compared with me you are, but excellence in any field is an achievement beyond value.’ I don’t know when we started drifting apart. When I told Mary about the project—I mean about researching the possibility of a salmon fishery in the Yemen—something changed. If there was a defining moment in our marriage, then that was it. Anything Bunny wrote was bound to be alarmingly original, since he began with such odd working materials and managed to alter them further by his befuddled scrutiny, but the John Donne paper must have been the worst of all the bad papers he ever wrote (ironic, given that it was the only thing he ever wrote that saw print. After he disappeared, a journalist asked for an excerpt from the missing young scholar's work and Marion gave him a copy of it, a laboriously edited paragraph of which eventually found its way into People magazine). Somewhere, Bunny had heard that John Donne had been acquainted with Izaak Walton, and in some dim corridor of his mind this friendship grew larger and larger, until in his mind the two men were practically interchangeable. We never understood how this fatal connection had established itself: Henry blamed it on Men of Thought and Deed, but no one knew for sure. A week or two before the paper was due, he had started showing up in my room about two or three in the morning, looking as if he had just narrowly escaped some natural disaster, his tie askew and his eyes wild and rolling. 'Hello, hello,' he would say, stepping in, running both hands through his disordered hair. 'Hope I didn't wake you, don't mind if I cut on the lights, do you, ah, here we go, yes, yes…' He would turn on the lights and then pace back and forth for a while without taking off his coat, hands clasped behind his back, shaking his head. Finally he would stop dead in his tracks and say, with a desperate look in his eye: 'Metahemeralism. Tell me about it. Everything you know. I gotta know something about metahemeralism.' 'I'm sorry. In the early 1990s, before Japan’s bubble economy burst, a leading newspaper in the U.S. published a large photo taken on a winter’s morning of rush-hour commuters in Shinjuku Station (or possibly Tokyo Station—the same applies to both) heading down the stairs. As if by agreement, all the commuters were gazing downward, their expressions strained and unhappy, looking more like lifeless fish packed in a can than people. The article said, “Japan may be affluent, but most Japanese look like this, heads downcast and unhappy-looking.” The photo became famous. Tsukuru had no idea if most Japanese were, as the article claimed, unhappy. But the real reason that most passengers descending the stairs at Shinjuku Station during their packed morning commute were looking down was less that they were unhappy than that they were concerned about their footing. Don’t slip on the stairs, don’t lose a shoe—these are the major issues on the minds of the commuters in the mammoth station during rush hour. There was no explanation of this, no context for the photograph. Certainly it was hard to view this mass of people, clad in dark overcoats, their heads down, as happy. And of course it’s logical to see a country where people can’t commute in the morning without fear of losing their shoes as an unhappy society.

On April 1, 1865, in Virginia, Pickett was defending an intersection known as Five Forks, six miles south of the Appomattox River and a good bit closer to the Southside Railroad, the last remaining supply line to Richmond. While thirty thousand Union troops led by Little Phil Sheridan approached from the southeast, Pickett’s twelve thousand, spread two miles wide behind fences and in ditches, braced to meet them. Pickett’s supreme commander, Robert E. Lee, was headquartered ten miles away, near Petersburg. Should Pickett fall to Sheridan, Lee would be forced from Petersburg, the Federals would capture Richmond, and the Confederate cause would be lost. Someone mentioned shad. The spring spawning run was in full penetration of the continent. The fish were in the rivers. Tom Rosser, another Confederate general, had caught some, and on the morning of April 1st ordered them baked for his midday dinner, near Hatcher’s Run, several miles from Five Forks. He invited Pickett and Major General Fitzhugh Lee, nephew of Robert E. Lee, to join him. Pickett readily accepted, and rode off from his battle station with Lee. The historian Shelby Foote continues the narrative (“The Civil War,” vol. 3, p. 870): “Neither told any subordinate where he was going or why, perhaps to keep from dividing the succulent fish too many ways; with the result that when the attack exploded—damped from their hearing, as it was, by a heavy stand of pines along Hatcher’s Run—no one knew where to find them. Pickett only made it back to his division after half its members had been shot or captured, a sad last act for a man who gave his name to the most famous charge in a war whose end was hastened by his threehour absence at a shad bake.

It starts with a thwack, the sharp crack of hard plastic against a hot metal surface. When the ladle rolls over, it deposits a pale-yellow puddle of batter onto the griddle. A gentle sizzle, as the back of the ladle sparkles a mixture of eggs, flour, water, and milk across the silver surface. A crepe takes shape. Next comes cabbage, chopped thin- but not too thin- and stacked six inches high, lightly packed so hot air can flow freely and wilt the mountain down to a molehill. Crowning the cabbage comes a flurry of tastes and textures: ivory bean sprouts, golden pebbles of fried tempura batter, a few shakes of salt, and, for an extra umami punch, a drift of dried bonito powder. Finally, three strips of streaky pork belly, just enough to umbrella the cabbage in fat, plus a bit more batter to hold the whole thing together. With two metal spatulas and a gentle rocking of the wrists, the mass is inverted. The pork fat melts on contact, and the cabbage shrinks in the steam trapped under the crepe. Then things get serious. Thin wheat soba noodles, still dripping with hot water, hit the teppan, dancing like garden hoses across its hot surface, absorbing the heat of the griddle until they crisp into a bird's nest to house the cabbage and crepe. An egg with two orange yolks sizzles beside the soba, waiting for its place on top of this magnificent heap. Everything comes together: cabbage and crepe at the base, bean sprouts and pork belly in the center, soba and fried egg parked on top, a geologic construction of carbs and crunch, protein and chew, all framed with the black and white of thickened Worcestershire and a zigzag of mayonnaise. This is okonomiyaki, the second most famous thing that ever happened to Hiroshima.

We start with a next-generation miso soup: Kyoto's famous sweet white miso whisked with dashi made from lobster shells, with large chunks of tender claw meat and wilted spinach bobbing on the soup's surface. The son takes a cube of topflight Wagyu off the grill, charred on the outside, rare in the center, and swaddles it with green onions and a scoop of melting sea urchin- a surf-and-turf to end all others. The father lays down a gorgeous ceramic plate with a poem painted on its surface. "From the sixteenth century," he tells us, then goes about constructing the dish with his son, piece by piece: First, a chunk of tilefish wrapped around a grilled matsutake mushroom stem. Then a thick triangle of grilled mushroom cap, plus another grilled stem the size of a D-sized battery, topped with mushroom miso. A pickled ginger shoot, a few tender soybeans, and the crowning touch, the tilefish skin, separated from its body and fried into a ripple wave of crunch. The rice course arrives in a small bamboo steamer. The young chef works quickly. He slices curtains of tuna belly from a massive, fat-streaked block, dips it briefly in house-made soy sauce, then lays it on the rice. Over the top he spoons a sauce of seaweed and crushed sesame seeds just as the tuna fat begins to melt into the grains below. A round of tempura comes next: a harvest moon of creamy pumpkin, a gold nugget of blowfish capped with a translucent daikon sauce, and finally a soft, custardy chunk of salmon liver, intensely fatty with a bitter edge, a flavor that I've never tasted before. The last savory course comes in a large ice block carved into the shape of a bowl. Inside, a nest of soba noodles tinted green with powdered matcha floating in a dashi charged with citrus and topped with a false quail egg, the white fashioned from grated daikon.

Spaghetti alla puttanesca is typically made with tomatoes, olives, anchovies, capers, and garlic. It means, literally, "spaghetti in the style of a prostitute." It is a sloppy dish, the tomatoes and oil making the spaghetti lubricated and slippery. It is the sort of sauce that demands you slurp the noodles Goodfellas style, staining your cheeks with flecks of orange and red. It is very salty and very tangy and altogether very strong; after a small plate, you feel like you've had a visceral and significant experience. There are varying accounts as to when and how the dish originated- but the most likely explanation is that it became popular in the mid-twentieth century. The first documented mention of it is in Raffaele La Capria's 1961 novel, Ferito a Morte. According to the Italian Pasta Makers Union, spaghetti alla puttanesca was a very popular dish throughout the sixties, but its exact genesis is not quite known. Sandro Petti, a famous Napoli chef and co-owner of Ischian restaurant Rangio Fellone, claims to be its creator. Near closing time one evening, a group of customers sat at one of his tables and demanded to be served a meal. Running low on ingredients, Petti told them he didn't have enough to make anything, but they insisted. They were tired, and they were hungry, and they wanted pasta. "Facci una puttanata qualsiasi!" they cried. "Make any kind of garbage!" The late-night eater is not usually the most discerning. Petti raided the kitchen, finding four tomatoes, two olives, and a jar of capers, the base of the now-famous spaghetti dish; he included it on his menu the next day under the name spaghetti alla puttanesca. Others have their own origin myths. But the most common theory is that it was a quick, satisfying dish that the working girls of Naples could knock up with just a few key ingredients found at the back of the fridge- after a long and unforgiving night. As with all dishes containing tomatoes, there are lots of variations in technique. Some use a combination of tinned and fresh tomatoes, while others opt for a squirt of puree. Some require specifically cherry or plum tomatoes, while others go for a smooth, premade pasta. Many suggest that a teaspoon of sugar will "open up the flavor," though that has never really worked for me. I prefer fresh, chopped, and very ripe, cooked for a really long time. Tomatoes always take longer to cook than you think they will- I rarely go for anything less than an hour. This will make the sauce stronger, thicker, and less watery. Most recipes include onions, but I prefer to infuse the oil with onions, frying them until brown, then chucking them out. I like a little kick in most things, but especially in pasta, so I usually go for a generous dousing of chili flakes. I crush three or four cloves of garlic into the oil, then add any extras. The classic is olives, anchovies, and capers, though sometimes I add a handful of fresh spinach, which nicely soaks up any excess water- and the strange, metallic taste of cooked spinach adds an interesting extra dimension. The sauce is naturally quite salty, but I like to add a pinch of sea or Himalayan salt, too, which gives it a slightly more buttery taste, as opposed to the sharp, acrid salt of olives and anchovies. I once made this for a vegetarian friend, substituting braised tofu for anchovies. Usually a solid fish replacement, braised tofu is more like tuna than anchovy, so it was a mistake for puttanesca. It gave the dish an unpleasant solidity and heft. You want a fish that slips and melts into the pasta, not one that dominates it. In terms of garnishing, I go for dried oregano or fresh basil (never fresh oregano or dried basil) and a modest sprinkle of cheese. Oh, and I always use spaghetti. Not fettuccine. Not penne. Not farfalle. Not rigatoni. Not even linguine. Always spaghetti.

Papa crafted the savory loaves and Mamma the sweet ones, along with almond cakes drizzled with lemon glaze, chocolate biscuits with hazelnut pralines, and her famous cinnamon cookies. The magic the Blue Fairy had grown up with was sugar shimmering on her fingertips and flour dusting her hair like snow. It was her older brother, Niccolo, coaxing their finicky oven into working again, and Mamma listening for the crackle of a golden-brown crust just before her bread sang. It was her little sister Ilaria's tongue turning green after she ate too many pistachio cakes. Most of all, magic was the smile on Mamma's, Papa's, Niccolo's, and Ilaria's faces when they brought home the bakery's leftover chocolate cake and sank their forks into a sumptuous, moist slice. After dinner, the Blue Fairy and her siblings made music together in the Blue Room. Its walls were bluer than the midsummer sky, and the windows arched like rainbows. His book For Whom the Bell Tolls was an instant success in the summer of 1940, and afforded him the means to live in style at his villa outside of Havana with his new wife Mary Welsh, whom he married in 1946. It was during this period that he started getting headaches and gaining weight, frequently becoming depressed. Being able to shake off his problems, he wrote a series of books on the Land, Air and Sea, and later wrote The Old Man and the Sea for which he won the Pulitzer Prize in May 1954. Hemingway on a trip to Africa where he barely survived two successive airplane crashes. Returning to Cuba, Ernest worked reshaping the recovered work and wrote his memoir, A Moveable Feast. He also finished True at First Light and The Garden of Eden. Being security conscious, he stored his works in a safe deposit box at a bank in Havana. His home Finca Vigía had become a hub for friends and even visiting tourists. It was reliably disclosed to me that he frequently enjoyed swinger’s parties and orgies at his Cuban home. In Spain after divorcing Frank Sinatra Hemingway introduced Ava Gardner to many of the bullfighters he knew and in a free for all, she seduced many of hotter ones. After Ava Gardner’s affair with the famous Spanish bullfighter Luis Miguel Dominguín crashed, she came to Cuba and stayed at Finca Vigía, where she had what was termed to be a poignant relationship with Ernest. Ava Gardner swam nude in the pool, located down the slope from the Hemingway house, after which he told his staff that the water was not to be emptied. An intimate friendship grew between Hemingway’s forth and second wife, Mary and Pauline. Pauline often came to Finca Vigia, in the early 1950s, and likewise Mary made the crossing of the Florida Straits, back to Key West several times. The ex-wife and the current wife enjoyed gossiping about their prior husbands and lovers and had choice words regarding Ernest. In 1959, Hemingway was in Cuba during the revolution, and was delighted that Batista, who owned the nearby property, that later became the location of the dismal Pan Americana Housing Development, was overthrown. He shared the love of fishing with Fidel Castro and remained on good terms with him. Reading the tea leaves, he decided to leave Cuba after hearing that Fidel wanted to nationalize the properties owned by Americans and other foreign nationals. In the summer of 1960, while working on a manuscript for Life magazine, Hemingway developed dementia becoming disorganized and confused. His eyesight had been failing and he became despondent and depressed. On July 25, 1960, he and his wife Mary left Cuba for the last time. He never retrieved his books or the manuscripts that he left in the bank vault. Following the Bay of Pigs Invasion, the Cuban government took ownership of his home and the works he left behind, including an estimated 5,000 books from his personal library. After years of neglect, his home, which was designed by the Spanish architect Miguel Pascual y Baguer in 1886, has now been largely restored as the Hemingway Museum. The museum, overlooking San Francisco de Paula, as well as the Straits of Florida in the distance, houses much of his work as well as his boat housed near his pool.

Driving through the “Túnel de la Bahía,” which was started two years after I was in Havana last, was completed in 1958 by the French company “French Societé des Grand Travaux de Marseille.” The 2,405 foot long tunnel takes you to the eastern side of the entrance of Havana harbor, on the “Via Monumental highway” located just behind the famous Morro Castle. Continuing east along Cuba’s northern coast through the rather grim Pan Americana, a Russian style housing development, on the Carretera Del Morro, brings you to “Cojimar,” one of the most charming Cuban towns near Havana. This picturesque fishing village is where Hemingway docked his boat “El Pilar” and was the inspiration for one of his most famous books, “The Old Man and the Sea.” It is said that the old man referred to in his book, was Gregorio Fuentes, a resident of Cojimar.

I’m gonna tap that and have three kids with that and all three of those kids are going to be horrible beasts that bring on the apocalypse. I see no problems with this.” So for now, let’s just focus on the first kid: a giant wolf named Fenrir. Now Loki brings baby Fenrir to Asgard and the Aesir all instantly know that this wolf is gonna be the death of them mainly because it is a GIANT WOLF NAMED FENRIR. But instead of doing anything about it they decide to see if they can just raise it as their own presumably because they don’t want to hurt Loki’s feelings. So this god Tyr the god of single combat and being awesome gets put in charge of feeding Fenrir because he’s the only person with sufficient testicular mass to actually go near the wolf and Fenrir gets bigger and bigger and holy shit bigger until the gods start to be like “Uhh . . . we should really do something about this wolf.” So what they do is they make a big metal chain. This chain is so incredibly massive that they don’t feel right until they give it a name that name is Leyding. So they go up to Fenrir like “Hey, man I bet you totally can’t break out of this chain.” And Fenrir is like “Okay, bring it.” So they tie him up and he pretty much just breaks the chains like cobwebs and he gets famous because of that and the gods are like “Fuck, that backfired. Okay, let’s make a better chain.” so they make a chain that is TWO TIMES AS STRONG and they name it Dromi and they go back to Fenrir like “Bet you can’t break THIS chain.” And Fenrir is like “I don’t know if I want to let you tie me up again.” And the gods are like “Don’t you want to be double famous?” and Fenrir is like “Ugh, okay.” So he lets them tie him up again and he flexes a little, but the chain doesn’t break so then he kicks the chain, and it does break and the gods are all like “Okay we definitely need a better chain. Somebody call some dwarves.” So the dwarves are like “Okay the mistake you guys have been making is you have been trying to make a chain out of actual things that exist such as metal instead of abstract concepts such as the sound of a cat’s footfall.” So what the dwarves do is they take the sound of a cat’s footfall along with the roots of a mountain the sinews of a bear the beard of a woman— remember, these are dwarves— and the breath of a fish, and the spit of a bird so that’s why you can’t hear cats walking around and mountains don’t have roots and fish don’t breathe, and birds don’t spit but I think bears still probably have sinews and I have definitely met me some bearded ladies so I guess the dwarves were not that thorough. I weave through LA's famous Farmers Market, which is really more of an outdoor food court, and now I'm a few minutes late. And the place is packed and there's still the uncertainty about where to meet when I look down and realize I'm wearing yellow pants. Yellow pants. Really? Sometimes I don't know what I'm thinking. They're rolled at the cuff and paired with a navy polo and it looks like maybe I just yacht my yacht, and I'm certain to come off as an asshole. I thin about canceling, or at least delaying so I can go home and change, but the effort that would require is unappealing, and this date is mostly for distraction. And when I round the last stall--someone selling enormous eggplants, more round than oblong, I see him, casually leaning against a wall, and something inside my body says there you are. 'There you are.' I don't understand them, these words, because they seem too deep and too soulful to attach to the Farmers Market, this Starbucks or that, a frozen yogurt place, or confusion over where to meet a stranger. They're straining to define a feeling of stunning comfort that drips over me, as if a water balloon burst over my head on the hottest of summer days. My knees don't buckle, my heart doesn't skip, but I'm awash in the warmth of a valium-like hug. Except I haven't taken a Valium. Not since the night of Lily's death. Yet here is this warm hug that makes me feel safe with this person, this Byron the maybe-poet, and I want it to stop. This--whatever this feeling is--can't be a real feeling, this can't be a tangible connection. This is just a man leaning against a stall that sells giant eggplants. But I no longer have time to worry about what this feeling is, whether I should or shouldn't be her, or should or should't be wearing yellow pants, because there are only maybe three perfect seconds where I see him and he has yet to spot me. Three perfect seconds to enjoy the calm that has so long eluded me. 'There you are.' And then he casually lifts his head and turns my way and uses one foot to push himself off the wall he is leaning agains. We lock eyes and he smiles with recognition and there's a disarming kindness to his face and suddenly I'm standing in front of him. 'There you are.' It comes out of my mouth before I can stop it and it's all I can do to steer the words in a more playfully casual direction so he isn't saddled with the importance I've placed on them. I think it comes off okay, but, as I know from my time at sea, sometimes big ships turn slowly. Byron chuckles and gives a little pump of his fist. 'YES! IT'S! ALL! HAPPENING! FOR! US!' I want to stop in my tracks, but I'm already leaning in for a hug, and he comes the rest of the way, and the warm embrace of seeing him standing there is now an actual embrace, and it is no less sincere. He must feel me gripping him tightly, because he asks, 'Is everything okay?' No. 'Yes, everything is great, it's just...' I play it back in my head what he said, the way in which he said it, and the enthusiasm which only a month had gone silent. 'You reminded me of someone is all.' 'Hopefully in a good way.' I smile but it takes just a minute to speak. 'In the best possible way.' I don't break the hug first, but maybe at the same time, this is a step. jenny will be proud. I look in his eyes, which I expect to be brown like Lily's but instead are deep blue like the waters lapping calmly against the outboard sides of 'Fishful Thinking.' 'Is frozen yogurt okay?' 'Frozen yogurt is perfect.

The array of culinary treats is matched by a similar breadth of local wins. Tended by generation after generation of the same families, vineyards carpet the hillsides of many islands. Grapevines have been cultivated in the Greek Isles for some four thousand years. Wines from Rhodes and Crete were already renowned in antiquity, and traders shipped them throughout the Greek Isles and beyond. The light reds and gently sweet whites complement the diverse, multiflavored Greek seafood, grilled meats, and fresh, ripe fruits and vegetables. Sitting at a seaside tavern enjoying music and conversation over a midday meze and glass of retsina, all the cares in the world seem to evaporate in the sparkling sunshine reflected off the brightly hued boats and glistening blue waters.

Rather than waiting for a new male to arrive, something extraordinary takes place in the harem. Within minutes, one of the females begins exhibiting male-typical behaviors. Relatively quickly, the former female transforms into a male, a form of phenotypic plasticity known in the trade as protogyny. The opposite occurs in protandry, in which individuals begin life as males and transform into females. Examples include the clownfish (Amphiprion), whose behavior could have offered an intriguing alternative resolution to the animated film Finding Nemo.

As established at various points in this book, Walt was fond of animals. They inspired his most famous characters and works, such as Mickey Mouse, Bambi, The Jungle Book, and so forth. Therefore, Walt, WDAS, and Disney, owe their unique global success to animals. In a small way, WDAS does pay homage to animals, yet they have continuously ignored the harsh lives that most animals today experience. This text is of the opinion that all animals are sentient and can feel pain. However, given the reality and scale of animal harm today, one should hope that this position is incorrect. One should hope that WDAS is right; fish are objects, wild animals want to live in captivity, dogs desire human owners, cows are happy to lactate milk for other species, and so forth. Disney’s depictions of animal harm are hopefully the ones that are correct because if animals do have lives of their own, away from the selfishness of humans, then companies like Disney have made a huge mistake.
