That metaphor has always interested me, because it makes us artists of our behavior, and the reaction of God to us might be thought of as aesthetic rather than morally judgmental in the ordinary sense. How well do we understand our role? With how much assurance do we perform it? I suppose Calvin’s God was a Frenchman, just as mine is a Middle Westerner of New England extraction. Well, we all bring such light to bear on these great matters as we can. I do like Calvin’s image, though, because it suggests how God might actually enjoy us. I believe we think about that far too little. It would be a way into understanding essential things, since presumably the world exists for God’s enjoyment, not in any simple sense, of course, but as you enjoy the being of a child even when he is in every way a thorn in your heart.

For a long time yet, or perhaps forever, nations will live in danger. Rulers must somehow nerve their subjects to defend them or at least to prepare for their defence. Where the sentiment of patriotism has been destroyed this can be done only by presenting every international conflict in a purely ethical light. If people will spend neither sweat nor blood for ‘their country’ they must be made to feel that they are spending them for justice, or civilisation, or humanity. This is a step down, not up. Patriotic sentiment did not of course need to disregard ethics. Good men needed to be convinced that their country’s cause was just; but it was still their country’s cause, not the cause of justice as such. The difference seems to me important. I may without self-righteousness or hypocrisy think it just to defend my house by force against a burglar; but if I start pretending that I blacked his eye purely on moral grounds—wholly indifferent to the fact that the house in question was mine—I become insufferable. The pretence that when England’s cause is just we are on England’s side—as some neutral Don Quixote might be—for that reason alone, is equally spurious. And nonsense draws evil after it. If our country’s cause is the cause of God, wars must be wars of annihilation. A false transcendence is given to things which are very much of this world.

Many of them had experienced digging canals and were known by the euphemism “navigators.” They wore the diminutive “navvy” as a term of pride. Polite society shunned them, but these magnificent railways would have been impossible without their contributions of sweat and blood. Their primary task was cleaving the hillsides so that tracks could be laid on a level plain for the weak locomotive engines of the day. Teams of navvies known as “butty gangs” blasted a route with gunpowder and then hauled the dirt out with the same kind of harness that so many children were then using in the coal mines: a man at the back of a full wheelbarrow would buckle a thick belt around his waist, then attach that to a rope dangling from the top of the slope and allow himself to be pulled up by a horse. This was how the Lime Street approach had been dug out, and it was dangerous. One 1827 fatality happened as “the poor fellow was in the act of undermining a heavy head of clay, fourteen or fifteen feet high, when the mass fell upon him and literally crushed his bowels out of his body,” as a Liverpool paper told it. The navvies wrecked old England along with themselves, erecting a bizarre new kingdom of tracks. Let us turn now to a study of a small Newfoundland fishing village. Fishing is, in England at any rate – more hazardous even than mining. Cat Harbour, a community in Newfoundland, is very complex. Its social relationships occur in terms of a densely elaborate series of interrelated conceptual universes one important consequence of which is that virtually all permanent members of the community are kin, ‘cunny kin’, or economic associates of all other of the 285 permanent members. The primary activity of the community is cod fishing. Salmon, lobster, and squid provide additional sources of revenue. Woodcutting is necessary in off-seasons. Domestic gardening, and stints in lumber camps when money is needed, are the two other profitable activities. The community's religion is reactionary. Women assume the main roles in the operation though not the government of the churches in the town. A complicated system of ‘jinking’ – curses, magic, and witchcraft – governs and modulates social relationships. Successful cod fishing in the area depends upon highly developed skills of navigation, knowledge of fish movements, and familiarity with local nautical conditions. Lore is passed down by word of mouth, and literacy among older fishermen is not universal by any means. ‘Stranger’ males cannot easily assume dominant positions in the fishing systems and may only hire on for salary or percentage. Because women in the community are not paid for their labour, there has been a pattern of female migration out of the area. Significantly, two thirds of the wives in the community are from outside the area. This has a predictable effect on the community's concept of ‘the feminine’. An elaborate anti-female symbolism is woven into the fabric of male communal life, e.g. strong boats are male and older leaky ones are female. Women ‘are regarded as polluting “on the water” and the more traditional men would not consider going out if a woman had set foot in the boat that day – they are “jinker” (i.e., a jinx), even unwittingly'. (It is not only relatively unsophisticated workers such as those fishermen who insist on sexual purity. The very skilled technicians drilling for natural gas in the North Sea affirm the same taboo: women are not permitted on their drilling platform rigs.) It would be, however, a rare Cat Harbour woman who would consider such an act, for they are aware of their structural position in the outport society and the cognition surrounding their sex….Cat Harbour is a male-dominated society….Only men can normally inherit property, or smoke or drink, and the increasingly frequent breach of this by women is the source of much gossip (and not a negligible amount of conflict and resentment). Men are seated first at meals and eat together – women and children eating afterwards. Men are given the choicest and largest portions, and sit at the same table with a ‘stranger’ or guest. Women work extremely demanding and long hours, ‘especially during the fishing season, for not only do they have to fix up to 5 to 6 meals each day for the fishermen, but do all their household chores, mind the children and help “put away fish”. They seldom have time to visit extensively, usually only a few minutes to and from the shop or Post Office….Men on the other hand, spend each evening arguing, gossiping, and “telling cuffers”, in the shop, and have numerous “blows” (i.e., breaks) during the day.’ Pre-adolescents are separated on sexual lines. Boys play exclusively male games and identify strongly with fathers or older brothers. Girls perform light women's work, though Faris indicates '. . . often openly aspire to be male and do male things. By this time they can clearly see the privileged position of the Cat Harbour male….’. Girls are advised not to marry a fisherman, and are encouraged to leave the community if they wish to avoid a hard life. Boys are told it is better to leave Cat Harbour than become fishermen....

Until the industrial revolution, most wealth was held in land. Primogeniture was a powerful tool for aristocrats aiming to avoid fractionation among heirs, the outcome inflicted on Black and Native American owners—and on the Irish. Fractionation was in part responsible for the Irish Potato Famine and the resulting wave of immigration to the United States. Following the Popery Act of 1703, England did not allow primogeniture for Catholics in Ireland, so their farms fractured as generations passed. Plots shrank to the point that planting a diversified range of crops became impossible. Eventually, potatoes were the only viable, nutrient-dense food that could be farmed. When a blight killed that sole crop, there was no alternative. A million Irish people starved to death; an exodus of survivors came to America.

During the eighteenth century, students from the religious schools of the Latin Quarter, panting up this hill at the southern limit of Paris, may have looked back at the city spreading along the banks of the Seine and thought themselves masters of the known world. Through the haze of wine purchased from the locals, this unpromising landfill, formed from the rubble of urban expansion and fertilized by the corpses of the nameless dead, could have felt like their own Parnassus, an illusion they celebrated by reciting or improvising verse. Still then nameless, the hill first appeared on a map, the Lutetia Parisiorum vulgo of Johannes Janssonius, in 1657, which identified the track leading to its summit as the Chemin d’Enfer: the Road to Hell. Sometimes the passenger would only have a twenty crown note, sometimes only a fifty, and I'd never have the change, so I'd pocket his note and go on selling until finally the customer got on the train, worked his way to a window and reached out his hand. Then I'd put down the caddy of hot frankfurters and fumble about in my pockets for the change, until the fellow would yell at me to forget about the coins and just give him the notes. Very slowly I'd start patting my pockets, and the dispatcher would blow his whistle, and very slowly I'd ease the notes out of my pocket, and the train would start moving, and I'd trot alongside it and when the train had picked up speed, reach out so that the notes would just barely brush the tips of the fellow's fingers, and sometimes he'd be leaning out so far that someone inside would have to hang on to his legs and one of my customers even beaned himself on a signal post. But then the fingers would be out of reach and I'd stand there panting, the money still in my outstretched hand, and it was all mine. They almost never came back for their change, and that's how I started having money of my own, a couple of hundred a month, and once I even got handed a thousand-crown note.

Where does the word cocktail come from? There are many answers to that question, and none is really satisfactory. One particular favorite story of mine, though, comes from The Booze Reader: A Soggy Saga of a Man in His Cups, by George Bishop: “The word itself stems from the English cock-tail which, in the middle 1800s, referred to a woman of easy virtue who was considered desirable but impure. The word was imported by expatriate Englishmen and applied derogatorily to the newly acquired American habit of bastardizing good British Gin with foreign matter, including ice. The disappearance of the hyphen coincided with the general acceptance of the word and its re-exportation back to England in its present meaning.” Of course, this can’t be true since the word was applied to a drink before the middle 1800s, but it’s entertaining nonetheless, and the definition of “desirable but impure” fits cocktails to a tee. A delightful story, published in 1936 in the Bartender, a British publication, details how English sailors of “many years ago” were served mixed drinks in a Mexican tavern. The drinks were stirred with “the fine, slender and smooth root of a plant which owing to its shape was called Cola de Gallo, which in English means ‘Cock’s tail.’ ” The story goes on to say that the sailors made the name popular in England, and from there the word made its way to America. Another Mexican tale about the etymology of cocktail—again, dated “many years ago”—concerns Xoc-tl (transliterated as Xochitl and Coctel in different accounts), the daughter of a Mexican king, who served drinks to visiting American officers. The Americans honored her by calling the drinks cocktails—the closest they could come to pronouncing her name. And one more south-of-the-border explanation for the word can be found in Made in America, by Bill Bryson, who explains that in the Krio language, spoken in Sierra Leone, a scorpion is called a kaktel. Could it be that the sting in the cocktail is related to the sting in the scorpion’s tail? It’s doubtful at best. One of the most popular tales told about the first drinks known as cocktails concerns a tavernkeeper by the name of Betsy Flanagan, who in 1779 served French soldiers drinks garnished with feathers she had plucked from a neighbor’s roosters. The soldiers toasted her by shouting, “Vive le cocktail!” William Grimes, however, points out in his book Straight Up or On the Rocks: A Cultural History of American Drink that Flanagan was a fictional character who appeared in The Spy, by James Fenimore Cooper. He also notes that the book “relied on oral testimony of Revolutionary War veterans,” so although it’s possible that the tale has some merit, it’s a very unsatisfactory explanation. A fairly plausible narrative on this subject can be found in Famous New Orleans Drinks & How to Mix ’em, by Stanley Clisby Arthur, first published in 1937. Arthur tells the story of Antoine Amedie Peychaud, a French refugee from San Domingo who settled in New Orleans in 1793. Peychaud was an apothecary who opened his own business, where, among other things, he made his own bitters, Peychaud’s, a concoction still available today. He created a stomach remedy by mixing his bitters with brandy in an eggcup—a vessel known to him in his native tongue as a coquetier. Presumably not all Peychaud’s customers spoke French, and it’s quite possible that the word, pronounced coh-KET-yay, could have been corrupted into cocktail. However, according to the Sazerac Company, the present-day producers of Peychaud’s bitters, the apothecary didn’t open until 1838, so there’s yet another explanation that doesn’t work.

With this extirpation of earlier cultures went a vast loss of botanical and medical lore, representing many thousands of years of watchful observation and empirical experiment whose extraordinary discoveries-such as the American Indian's use of snakeroot (reserpine) as a tranquilizer in mental illness-modern medicine has now, all too belatedly, begun to appreciate. The next day, I told him I loved him, too, and it was true for both of us, probably, but it was a shallow, watery love—born of repetition and resignation.
