Killing things - that’s about as near to poetry as a boy gets. And yet all the while there’s that peculiar intensity, the power of longing for things as you can’t long when you’re grown up, and the feeling that time stretches out and out in front of you and that whatever you’re doing you could go on for ever.

Following my water, I drink 8 ounces of fresh celery blended in my Vita-mix. The juice cleanses the system and reduces inflammation. My biggest meal is my first one: oatmeal. I soak my oats overnight so that when I get up all I have to do is turn on the burner. Sometimes I enjoy them with warm almond milk, other times I add grated almonds and berries, put the mixture in my tumbler and shake it until it’s so smooth I can drink it. In any form, oats do the heart good. Throughout the day I eat sweet potatoes, which are filled with fiber, beets sprinkled with a little olive oil, and vegetables of every variety. I also still enjoy plenty of salad, though I stopped adding so many carrots – too much sugar. But I will do celery, cucumbers, seaweed grass and other greens. God’s fresh bounty doesn’t need a lot of dressing up, which is why I generally eat my salad plain. From time to time I do drizzle it with garlic oil. I love the taste. I also love lychee nuts. I put them in the freezer so that when I bite into them cold juice comes flooding out. As terrific as they are, I buy them only once in awhile. Indeed, just thinking about a disaster is one of the best things you can do —because it allows you to imagine how you would respond in a way that is free of pain and destruction. Another reason why disasters seem so scary is that many victims tend to see them as a whole rather than divide them into much smaller and more manageable problems. A disaster can seem overwhelming when confronted with everything at once —but if you dice it into its tiny parts and knock them off one at a time, the whole thing can seem as easy as eating a lavish dinner one bite at a time. In a disaster you must also plan for disruption as well as destruction. Death and damage may make the news, but in almost every disaster far more lives are disrupted than destroyed. Wit­ness the tornado that struck Joplin, Missouri, in May 2011 and killed 158 people. The path of death and destruction was less than a mile wide and only 22 miles long —but within thirty miles 160,000 citizens whose property didn’t suffer a dime of damage were profoundly disrupted by the carnage, loss of power and water, suspension of civic services, and inability to buy food, gas, and other necessities. You may rightfully believe your chances of dying in a disaster in your lifetime may be nearly nil, but the chances of your life being disrupted by a disaster in the next decade is nearly a sure thing. Not only should you prepare for disasters, you should learn to premeditate them. Prepare concerns the body; premeditate concerns the mind. Everywhere you go, think what could happen and how you might/could/would/should respond. Use your imagination. Fill your brain with these visualizations —run mind-movies in your head —develop a repertoire —until when you walk into a building/room/situation you’ll automatically know what to do. If a disaster does ambush you —sure you’re apt to panic, but in seconds your memory will load the proper video into your mobile disk drive and you’ll feel like you’re watching a scary movie for the second time and you’ll know what to expect and how to react. That’s why this book is important: its manner of vivifying disasters kickstarts and streamlines your acquiring these premeditations, which lays the foundation for satisfying your needs when a disaster catches you by surprise.

Tips for Preparing Artichokes To cook an artichoke, slice 1 inch off the tip. Cut off about ½ inch or less of the very bottom piece of the stem to expose the fresh green bottom, keeping the remaining stem attached. Then, using a large, sharp knife, slice the artichoke in half lengthwise. Once sliced in half, you can see the fuzzy inedible choke part. Use a small, pointed knife to cut a deep half-moon-shaped incision where the heart meets the choke. Scoop out and discard the fibrous and hairy choke from the center of each half. Place the artichoke in a steamer basket over several inches of water. Bring the water to a boil, cover, and steam for eighteen minutes. Set the artichoke aside until it’s cool enough to handle. To eat, peel off the outer leaves one at a time. Tightly grip the outer end of the leaf, place the opposite end in your mouth, and pull through your teeth to remove the soft, pulpy, delicious portion of the leaf. You can also scrape off the edible portion with a butter knife. Then you can eat it plain or prepare a healthful dip or dressing to use as a dip. Continue until all the leaves are removed. Cut the remaining heart into pieces and enjoy!

In consequence, we had shelters to ourselves each night, which was a big treat. On the fourth night, just as I was facing the dismal prospect of finishing my only book and thereafter having nothing to do in the evenings but lie in the half light and listen to Katz snore, I was delighted, thrilled, sublimely gratified to find that some earlier user had left a Graham Greene paperback. If there is one thing the AT teaches, it is low-level ecstasy—something we could all do with more of in our lives.

Drink at least eight 8-ounce glasses of water each day to hydrate your body, avoid constipation and flush out the by-products of burning fat. 12. As a general rule, sour or acidic fruits (grapefruits, kiwis, and strawberries) can be combined with “protein fats” such as avocado, coconut, coconut kefir, and sprouted nuts and seeds. Both acid fruits and sub-acid fruits like apples, grapes, and pears can be eaten with cheeses; and vegetable fruits (avocados, cucumbers, tomatoes, and peppers) can be eaten with fruits, vegetables, starches, and proteins. I’ve also found that apples combine well with raw vegetables. Leafy greens (spinach, kale, collard greens), along with the vegetable fruits noted above, are my go-to staples. They are the magic foods that combine well with every food on the planet. I blend them together in green smoothies, cold soups, and salads.

The last refuge of the Self, perhaps, is “physical continuity.” Despite the body’s mercurial nature, it feels like a badge of identity we have carried since the time of our earliest childhood memories. A thought experiment dreamed up in the 1980s by British philosopher Derek Parfit illustrates how important—yet deceiving—this sense of physical continuity is to us.15 He invites us to imagine a future in which the limitations of conventional space travel—of transporting the frail human body to another planet at relatively slow speeds—have been solved by beaming radio waves encoding all the data needed to assemble the passenger to their chosen destination. You step into a machine resembling a photo booth, called a teletransporter, which logs every atom in your body then sends the information at the speed of light to a replicator on Mars, say. This rebuilds your body atom by atom using local stocks of carbon, oxygen, hydrogen, and so on. Unfortunately, the high energies needed to scan your body with the required precision vaporize it—but that’s okay because the replicator on Mars faithfully reproduces the structure of your brain nerve by nerve, synapse by synapse. You step into the teletransporter, press the green button, and an instant later materialize on Mars and can continue your existence where you left off. The person who steps out of the machine at the other end not only looks just like you, but etched into his or her brain are all your personality traits and memories, right down to the memory of eating breakfast that morning and your last thought before you pressed the green button. If you are a fan of Star Trek, you may be perfectly happy to use this new mode of space travel, since this is more or less what the USS Enterprise’s transporter does when it beams its crew down to alien planets and back up again. But now Parfit asks us to imagine that a few years after you first use the teletransporter comes the announcement that it has been upgraded in such a way that your original body can be scanned without destroying it. You decide to give it a go. You pay the fare, step into the booth, and press the button. Nothing seems to happen, apart from a slight tingling sensation, but you wait patiently and sure enough, forty-five minutes later, an image of your new self pops up on the video link and you spend the next few minutes having a surreal conversation with yourself on Mars. Then comes some bad news. A technician cheerfully informs you that there have been some teething problems with the upgraded teletransporter. The scanning process has irreparably damaged your internal organs, so whereas your replica on Mars is absolutely fine and will carry on your life where you left off, this body here on Earth will die within a few hours. Would you care to accompany her to the mortuary? Now how do you feel? There is no difference in outcome between this scenario and what happened in the old scanner—there will still be one surviving “you”—but now it somehow feels as though it’s the real you facing the horror of imminent annihilation. Parfit nevertheless uses this thought experiment to argue that the only criterion that can rationally be used to judge whether a person has survived is not the physical continuity of a body but “psychological continuity”—having the same memories and personality traits as the most recent version of yourself. They are the game-changers that climate advocates have been waiting for. We should model our actions after theirs and learn from their methods and their idealism. Educate, Educate, Educate: Most hard-core climate-change deniers are unmovable. They view climate change through the prism of right-wing ideology and are impervious to facts. Don’t waste your time and effort trying to convince them. But there are many honest, confused folks out there who are caught in the crossfire, victims of the climate-change disinformation campaign. We must help them out. Then they will be in a position to join us in battle. Changing the System Requires Systemic Change: The fossil fuel disinformation machine wants to make it about the car you choose to drive, the food you choose to eat, and the lifestyle you choose to live rather than about the larger system and incentives. We need policies that will incentivize the needed shift away from fossil fuel burning toward a clean, green global economy. So-called leaders who resist the call for action must be removed from office.

Fuel your body. Think about your environment as an ecosystem. If there’s pollution, you’ll feel the toxic side effects; if you’re in the fresh air of the mountains, you’ll feel alive. You’d be surprised at how many of the foods that we eat actually sap our body of fuel. Just look at three quick examples: soda, potato chips, and hamburgers. I’m not a hard-liner who says that you should never consume these things, but this kind of steady diet will make it harder for your body to help you. Instead, look at the foods that are going to give you energy. Choose food that’s water soluble and easier for your body to break down, which gives you maximum nutrition with minimal effort. Look at a cucumber: it’s practically water and it takes no energy to consume, but it’s packed with nutrients. Green for me is the key. We overeat and undernourish ourselves way too much. When you eat bad food, your body will feel bad and then you will feel bad. It’s all connected. I drink green juice every day and eat huge salads. I am also a big believer in lean protein to feed and fuel the muscles--I might even have a chicken breast for breakfast. Growing up, because I danced every single day, I would basically eat anything I wanted and I wouldn’t gain any weight. I would eat anything and everything trying to put on a few pounds, but it never worked--and my skin was terrible as a result of it. We’d blame it on the sweat from the dancing, but I never connected it to what I ate. As I got older, I started to educate myself more about food. I learned that I need to alkalize my body. It’s never about how I look. Instead, I go by how I feel. I notice immediately how good, clean food boosts my energy while junk makes me feel lethargic. I’m also a huge believer in hydrating. Forget about eight glasses of water a day; I drink eight glasses before noon!

I do not mean to be sentimental about suffering - enough is certainly as good as a feast - but people who cannot suffer can never grow up, can never discover who they are. That man who is forced each day to snatch manhood, his identity, out of the fire of human cruelty that rages to destroy it knows, if he survives his effort, and even if he does not survive it, something about himself and human life that no school on earth - and indeed, no church - can teach. He achieves his own authority, and that is unshakable. If one is continually surviving the worst that life can bring, one eventually ceases to be controlled by a fear of what life can bring; whatever it brings must be borne. And at this level of experience one's bitterness begins to be palatable, and hatred becomes too heavy a sack to carry. The apprehension of life here so briefly and inadequately sketched has been the experience of generations of Negroes, and it helps to explain how they have endured and how they have been able to produce children of kindergarten age who can walk through mobs to get to school. It demands great force and great cunning continually to assault the mighty and indifferent fortress of white supremacy, as Negroes in this country have done so long. It demands great spiritual resilience not to hate the hater whose foot is on your neck, and even greater miracle of perception and charity not to teach your child to hate. The Negro boys and girls who are facing mobs today come out of a long line of improbable aristocrats - the only genuine aristocrats this country has produced. I say "this country" because their frame of reference was totally American. They were hewing out of the mountain of white supremacy the stone of their individuality. I have great respect for that unsung army of black men and women who trudged down back lanes and entered back doors, saying "Yes, sir" and "No, Ma'am" in order to acquire a new roof for the schoolhouse, new books, a new chemistry lab, more beds for the dormitories, more dormitories. They did not like saying "Yes, sir" and "No Ma'am", but the country was in no hurry to educate Negroes, these black men and women knew that the job had to be done, and they put their pride in their pockets in order to do it. It is very hard to believe that they were in anyway inferior to the white men and women who opened those back doors. It is very hard to believe that those men and women, raising their children, eating their greens, crying their curses, weeping their tears, singing their songs, making their love, as the sun rose, as the sun set, were in any way inferior to the white men and women who crept over to share these splendors after the sun went down. ... I am proud of these people not because of their color but because of their intelligence and their spiritual force and their beauty. The country should be proud of them, too, but, alas, not many people in this country even know of their existence.

We had green Jell-O. It was jiggling around. Suzy bent down to look at her Jell-O real close, and I … pushed her face into it.” I barely choked off a belly laugh and quickly looked away, struggling for control. Somehow I sensed that Billy’s straitlaced teacher would frown upon me laughing uncontrollably about this issue. With Zenlike concentration, I mastered my emotions and turned to face my son. My expression was serious, my tone was stern, my acting was impeccable, “Billy, how do you think that made Suzy feel?” “Bad.” said Billy. “That’s right.” I said. “I don’t want you to ever do such a thing again. More like a big cat that roams the mountains.” “Makes sense,” he said. Minka set the other half of her fourth fajita on her plate and gave him a curious look. “Would you mind if I ask you a personal question?” His mouth twitched as he prepared another fajita. He wasn’t used to Minka being so reserved. She usually said whatever was on her mind, regardless of whether it was personal or not. “Go ahead,” he said. “The first time we met, I had claws, fangs, glowing red eyes, and I tried to kill you. Since then, I’ve spent most of the time telling you about an imaginary creature that lives inside my head and makes me act like a monster. How are you so calm about that? Most people would have run away already.” Angelo chuckled. Not exactly the personal question he’d expected, but then again Minka rarely did the expected. “Well, my mom was full-blooded Cherokee, and I grew up around all kinds of Indian folktales and legends. My dad was in the army, and whenever he was deployed, Mom would take my sisters and me back to the reservation where she grew up in Oklahoma. I’d stay up half the night listening to the old men tell stories about shape-shifters, animal spirits, skin-walkers, and trickster spirits.” He grinned. “I’m not saying I necessarily believed in all that stuff back then, but after meeting Ivy, Tanner, and the other shifters at the DCO, it just didn’t faze me that much.” Minka looked at him with wide eyes. “You’re a real American Indian? Like in the movies? With horses and everything?” He laughed again. The expression of wonder on her face was adorable. “First, I’m only half-Indian. My dad is Mexican, so there’s that. And second, Native Americans are almost nothing like you see in the movies. We don’t all live in tepees and ride horses. In fact, I don’t even own a horse.” Minka was a little disappointed about the no-horse thing, but she was fascinated with what it was like growing up on an Indian reservation and being surrounded by all those legends. She immediately asked him to tell her some Indian stories. It had been a long time since he’d thought about them, but to make her happy, he dug through his head and tried to remember every tale he’d heard as a kid.

But I ate the almond and resigned myself to imagining his lips on mine. His hand was still around my wrist... his finger on my lips... "Or, maybe this." He gripped me tighter and, with his other hand, picked up a frond of dehydrated kale, as big and light as a feather. He touched the end of my lips, but when I opened my mouth, he pulled it away. First of all there were just two or three green specks, sliding smoothly through the trees, winking regularly. But gradually more and more appeared, until parts of the olive-grove were lit with a weird green glow. Never had we seen so many fireflies congregated in one spot; they flicked through the trees in swarms, they crawled on the grass, the bushes and olive-trunks, they drifted in swarms over our heads and landed on the rocks, like green embers. Glittering streams of them flew out over the bay, swirling over the water, and then, right on cue, the porpoises appeared, swimming in line into the bay, rocking rhythmically through the water, their backs as if painted with phosphorus. In the centre of the bay they swam around, diving and rolling, occasionally leaping high in the air and falling back into a conflagration of light. With the fireflies above and illuminated porpoises below it was a fantastic sight. We could even see the luminous trails beneath the surface where the porpoises swam in fiery patterns across the sandy bottom, and when they leapt high in the air drops of emerald glowing water flicked from them, and you could not tell if it was phosphorescence or fireflies you were looking at. For an hour or so we watched this pageant, and then slowly the fireflies drifted back inland farther down the coast. Then the porpoises lined up and sped out to sea, leaving a flaming path behind them flickered and glowed, and then died slowly, like a glowing branch laid across the bay.

You eat one meal a day, only what is given. Through these practices of surrender there grows a ripening of trust as the heart learns to face the mystery of life with patience, faith, and compassion. Monks must go out each morning with a bowl for alms rounds. This is not like street-corner begging. For me, it was one of the most beautiful experiences of my life. Just as the sun rises, you walk across the green rice paddies to small villages with packed earthen lanes. Those who wish to offer alms wait for the monks to come and bow before they offer their food. Even the poorest villages will offer part of their food to make merit and as if to say, “Even though we are poor, we so value what you represent that we give of what little we have so that your spirit may be here in our village, in our community, and in our society.” Alms rounds are done completely in silence. When you receive the food, you can’t say, “Thank you; I appreciate the mango you gave me,” or “Thanks for the fish this morning; it looks really good.” The only response you can make is the sincerity of your heart. After you receive this food, you take it back to support and inspire your practice. When the villagers value the monk’s life and give of the little they have, you must take that. The extraordinary generosity of the village brings a powerful motivation in a monastery. The rules about alms food govern monastic life. Monks are not allowed to keep food overnight or eat anything that’s not put into their hands each morning by a layperson. This means that monks can’t live as hermits up in the mountains far from the world. They must live where people can feed them. This immediately establishes a powerful relationship. You must do something of enough value that they want to feed you. Your presence, your meditation, your dignity, has to be vivid enough so that when you bring your bowl, people want to offer food because that’s the only way you can eat! This creates an ongoing dynamic of offering that goes both ways, from those who are in the process of being initiated in the monastery, and those of the community whom it benefits.

With the importance of resetting the entropy each time a steam engine goes through a cycle, you might wonder what would happen if the entropy reset were to fail. That’s tantamount to the steam engine not expelling adequate waste heat, and so with each cycle the engine would get hotter until it would overheat and break down. If a steam engine were to suffer such a fate it might prove inconvenient but, assuming there were no injuries, would likely not drive anyone into an existential crisis. Yet the very same physics is central to whether life and mind can persist indefinitely far into the future. The reason is that what holds for the steam engine holds for you. It is likely that you don’t consider yourself to be a steam engine or perhaps even a physical contraption. I, too, only rarely use those terms to describe myself. But think about it: your life involves processes no less cyclical than those of the steam engine. Day after day, your body burns the food you eat and the air you breathe to provide energy for your internal workings and your external activities. Even the very act of thinking—molecular motion taking place in your brain—is powered by these energy-conversion processes. And so, much like the steam engine, you could not survive without resetting your entropy by purging excess waste heat to the environment. Indeed, that’s what you do. That’s what we all do. All the time. It’s why, for example, the military’s infrared goggles designed to “see” the heat we all continually expel do a good job of helping soldiers spot enemy combatants at night. We can now appreciate more fully Russell’s mind-set when imagining the far future. We are all waging a relentless battle to resist the persistent accumulation of waste, the unstoppable rise of entropy. For us to survive, the environment must absorb and carry away all the waste, all the entropy, we generate. Which raises the question, Does the environment—by which we now mean the observable universe—provide a bottomless pit for absorbing such waste? Can life dance the entropic two-step indefinitely? Or might there come a time when the universe is, in effect, stuffed and so is unable to absorb the waste heat generated by the very activities that define us, bringing an end to life and mind? In the lachrymose phrasing of Russell, is it true that “all the labors of the ages, all the devotion, all the inspiration, all the noonday brightness of human genius, are destined to extinction in the vast death of the solar system, and that the whole temple of Man’s achievement must inevitably be buried beneath the debris of a universe in ruins”?

A spunky girl in a visor and an apron had perked up as she walked by the counter, saying, "Cheese can change your life!" The charm of her youthful innocence would have been enough to be cheered by, but the sample she handed out really did it. The taste was beyond delicious. It was good alone, but it cried out for ham or turkey or a rich beefy broth with deep caramelized onions for soup.

Why do Southerners eat Black Eyed Peas on New Year’s Day? The story of the Southern tradition of eating black-eyed peas as the first meal on New Year's Day is generally believed to date back to the winter of 1864 - 1865. When Union General William T. Sherman led his invading troops on their destructive march through Georgia, the fields of black-eyed peas were largely left untouched because they were deemed fit only for animals. The Union foragers took everything, plundered the land, and left what they could not take, burning or in shambles. But two things did remain, the lowly peas and good Ol’ Southern salted pork. As a result, the humble yet nourishing black-eyed peas saved surviving Southerners - mainly women, children, elderly and the disabled veterans of the Confederate army - from mass starvation and were thereafter regarded as a symbol of good luck. The peas are said to represent good fortune. Certainly the starving Southern families and soldiers were fortunate to have those meager supplies. According to the tradition and folklore, the peas are served with several other dishes that symbolically represent good fortune, health, wealth, and prosperity in the coming year. Some folks still traditionally cook the black-eyed peas with a silver dime in the pot as a symbol of good fortune. Greens represent wealth and paper money. Any greens will do, but in the South the most popular are collards, mustard greens, turnip greens, and cabbage. Cornbread - a regular staple among Southerners in the absence of wheat - symbolizes gold and is very good for soaking up the juice from the greens on the plate. You should always have some cornbread on hand in your kitchen anyway. Good for dinner and in the morning with syrup. Pork symbolizes bountiful prosperity, and then progressing into the year ahead. Ham and hog jowls are typical with the New Year meal, though sometimes bacon will be used, too. Pigs root forward, so it’s the symbolic moving forward for the New Year. Tomatoes are often eaten with this meal as well. They represent health and wealth. So reflect on those stories when you sit down at your family table and enjoy this humble, uniquely Southern meal every New Year’s Day. Be thankful for what this year did give you in spite of the bad, and hope and pray for better days that are coming ahead for you.

The biggest uncle—they were all as tall as Papa. “Well, that’s because we’re a surprise,” the other dark-haired fellow said. “I’m your uncle Valentine, and we have an entire gaggle of aunties waiting out in the coach to spoil you rotten. Westhaven here is just out of sorts because Father Christmas gave him a headache for being naughty yesterday.” “I was not naughty.” The other two uncles thought this was quite funny, judging by their smiles. “There’s your problem,” said Uncle Devlin. “I’m thinking it’s a fine day for a pair of ladies to join their aunts for a ride in the traveling coach.” Uncle Gayle—it didn’t seem fair to call him by the same name as Fleur’s puppy—appeared to consider this. “For what purpose?” “To keep the peace. Emmie and I never haul out our big guns around the children,” said Uncle Devlin, which made no sense. “Do you like to play soldiers?” Fleur asked. Amanda appeared intrigued by the notion. She was forever galloping up hills and charging down banisters in pursuit of the French. Uncle Devlin’s brows knitted—he had wonderful dark eyebrows, much like Papa’s. “As a matter of fact, on occasion, if I’ve been an exceedingly good fellow, my daughter lets me join her in a game of soldiers.” “I’m not exactly unfamiliar with the business myself,” said Uncle Valentine. “I excel at the lightning charge and have been known to take even the occasional doll prisoner.” “Missus Wolverhampton would not like being a prisoner,” Fleur said, though Uncle Valentine was teasing—wasn’t he?” “Perhaps you gentlemen can arrange an assignation to play soldiers with our nieces on some other day,” Westhaven said. He sounded like his teeth hurt, which Fleur knew might be from the seasonal hazard of eating too much candy. “You can play too,” Fleur allowed, because it was Christmas, and one ought to be kind to uncles who strayed into one’s nursery. “We’ll let you be Wellington,” Amanda added, getting into the spirit of the day. “Which leaves me to be Blucher’s mercenaries,” Uncle Devlin said, “saving the day as usual.” “Oh, that’s brilliant.” Uncle Valentine wasn’t smiling now. “Leave your baby brother to be the infernal French again, will you? See if I write a waltz for your daughter’s come out, St. Just.” Uncle Gayle wasn’t frowning quite so mightily. In fact, he looked like he wanted to smile but was too grown-up to allow it. “Perhaps you ladies will gather up a few soldiers and fetch a doll or two. We’re going on a short journey to find your mama and papa, so we can all share Christmas with them.” Fleur noticed his slip, and clearly, Amanda had too—but it was the same slip Amanda had made earlier, and one Fleur was perfectly happy to let everybody make. Uncle Gayle had referred to their papa’s new wife not as their stepmama, but as their mama. What a fine thing that would be, if for Christmas they got a mama again for really and truly. Lentil-Mushroom Burgers For any reluctant vegan who worries that nothing will ever replace the taste or texture of a juicy beef patty, consider the lentil burger. It might not matter so much that lentils are an excellent source of protein, that they are one of the fastest-cooking legumes, or that they are consumed in large quantities all over Europe, Asia, and Africa (even Idaho!). What will impress you is how tender, juicy, and “meaty” they taste. I grew up grilling over campfires, and I know burgers. These are as delicious as they come. Sometimes I’ll even take a few patties with me on long training runs and races.        1 cup dried green lentils (2¼ cups cooked)      2¼ cups water      1 teaspoon dried parsley      ¼ teaspoon black pepper      3 garlic cloves, minced      1¼ cups finely chopped onion      ¾ cup finely chopped walnuts      2 cups fine bread crumbs (see Note)      ½ cup ground flax seed (flax seed meal)      3 cups finely chopped mushrooms   1½ cups destemmed, finely chopped kale, spinach, or winter greens      2 tablespoons coconut oil or olive oil      3 tablespoons balsamic vinegar      2 tablespoons Dijon mustard      2 tablespoons nutritional yeast      1 teaspoon sea salt      ½ teaspoon black pepper      ½ teaspoon paprika   In a small pot, bring the lentils, water, parsley, 1 garlic clove, and ¼ cup of the onion to a boil. Reduce heat and simmer, partially covered, for 35 to 40 minutes, until the water is absorbed and the lentils are soft. While the lentils are cooking, combine the walnuts, bread crumbs, and flax seed in a bowl. Add the nutritional yeast, salt, pepper, and paprika and mix well. Sauté the remaining onion, remaining garlic, the mushrooms, and greens in the oil for 8 to 10 minutes, then set aside. Remove the lentils from the heat, add the vinegar and mustard, and mash with a potato masher or wooden spoon to a thick paste. In a large mixing bowl, combine the lentils, sautéed veggies, and bread crumb mixtures, and mix well. Cool in the refrigerator for 15 to 30 minutes or more. Using your hands, form burger patties to your desired size and place on waxed paper. Lightly fry in a seasoned skillet, broil, or grill until lightly browned and crisp, 3 to 5 minutes on each side. Extra uncooked patties can be frozen on wax paper in plastic bags or wrapped individually in aluminum foil, making for a quick dinner or wholesome burger for the next barbecue.   MAKES A DOZEN 4-INCH DIAMETER BURGERS   NOTE: To make the bread crumbs, you’ll need about half of a loaf of day-old bread (I use Ezekiel 4:9). Slice the bread, then tear or cut into 2- to 3-inch pieces and chop in a food processor for 1 to 2 minutes, until a fine crumb results. The walnuts can also be chopped in the food processor with the bread.

A Southern Vegetarian’s Story By Erin Stewart, Alabama Grits It wasn’t easy being a vegetarian in Huntsville, Alabama, but I managed it throughout my high school years. At least I thought I did. I remember one trip with my parents that threw everything into doubt. It was a Saturday, and we had reservations at Miss Mary Bobo’s, the famous restaurant in Lynchburg, Tennessee, the home of Jack Daniel’s whiskey. Miss MaryBobo’s is known for serving at least one item cooked in Jack Daniel’s at every meal: this time it was the apples. What really interested me, though, was the greens. I think they were mustard greens. I was just eating my third bite when a large man next to me turned to our hostess, who was watching us all eat at one communal table, and said, “Miss Mary Bobo, these are the best greens I’ve ever had. What’s your secret?” Without a second thought, she replied, “Why, real lard, of course.” I must confess: I took one more bite before I put my fork down! (Don’t tell anyone!) To this day, those are some of the best greens I’ve ever tasted.

Eating lots of greens makes it difficult to overconsume high-starch vegetables. You just won’t have room for that much. Examples of starchy vegetables include corn, sweet potatoes, white potatoes, butternut squash, acorn squash, winter squash, chestnuts, parsnips, rutabagas, turnips, water chestnuts, yams, and pumpkins. Grains include barley, buckwheat (kasha), millet, oats, quinoa, brown rice, and wild rice. On some days, you may choose to have a cup of oatmeal or other whole grain at breakfast. On other days, save your serving of starch for dinner.
