It all began around 1876 when an “epicurean” named Ben Wenberg (or Wenburg) demonstrated the dish at Delmonico’s restaurant in New York City. After some “tweaking” by the Delmonico chef, Charles Ranhofer, the dish was added to the menu under the name “Lobster Wenburg.” It proved to be very popular. But sometime later, Wenburg got involved in a dispute with the Delmonico’s management and the dish was subsequently removed from the menu. But customers still requested it. So, the name was changed to “Lobster Newburg” and reappeared to the delight of restaurant customers. So, that’s the story. Probably. One can never be sure about these origin myths.

Is there to be found on earth a fullness of joy, or is there no such thing?
. . . What the world values is money, reputation, long life, achievement. What it counts as joy is health and comfort of body, good food, fine clothes, beautiful things to look at, pleasant music to listen to.
What it condemns is lack of money, a low social rank, a reputation for being no good, and an early death.
What it considers misfortune is bodily discomfort and labour, no chance to get your fill of good food, not having good clothes to wear, having no way to amuse or delight the eye, no pleasant music to listen to. If people find that they are deprived of these things, they go into a panic or fall into despair. There are no good collaborations, whether in music, in art, in poetry, in mathematics, in philosophy. Once the miracle of creation has taken place, the group can build and extend it, but the group never invents anything. The preciousness lies in the lonely mind of a man.
And now the forces marshaled around the concept of the group have declared a war of extermination on that preciousness, the mind of man. By disparagement, by starvation, by repressions, forced direction, and the stunning hammerblows of conditioning, the free, roving mind is being pursued, roped, blunted, drugged. It is a sad suicidal course our species seems to have taken.
And this I believe: that the free, exploring mind of the individual human is the most valuable thing in the world. And this I would fight for: the freedom of the mind to take any direction it wishes, undirected. And this I must fight against: any idea, religion, or government which limits or destroys the individual. This is what I am and what I am about. I can understand why a system built on a pattern must try to destroy the free mind, for this is one thing which can by inspection destroy such a system. He tore open the barrier between him and his prize and he was compelled to smile when remarking the numerous slices of meat in his hands. He began eating them immediately, leaving no time between one slice and the next to savour that which he had longed to again taste. The superior fare of Frewyn had been the chief of his consolation during the war, and if he was to remain on the islands with all its splendor, all its comforting familiarity, all its temperate climate, and all its horrendous food, he would relish this last ember of bliss before being made to suffer a diet of steamed grains again.

“I am responsible for securing your life,” he replied with a full mouth and without turning around.
“And I thanked you accordingly.” The commander’s remonstrations were unanswered, and she scoffed in aversion as she watched the voracious beast consume nearly all the provisions she had been saving for the return journey. “I know you shall not be satisfied until you have all the tribute in the world, but that pork does belong to me, Rau.”
“You are not permitted to have meat while taking our medicines,” he said, dismissively.
She peered at him in circumspection. “I don’t recall you mentioning that stipulation before. I find it convenient that you should care to do so now.”
The giant paused, his cheeks filled with pork. “And?” he said, shoving another slice into his mouth.
“And,” she laughed, “You’re going to allow me to starve on your inedible bread while you skulk off with something that was meant for both of us?”
“Perhaps.”

This was a talk to an anarchist conference, and in my view the libertarian movements have been very shortsighted in pursuing doctrine in a rigid fashion without being concerned about the human consequences. Sometimes there is a more illegitimate institution which will take over if you do not support this illegitimate institution. So, if you're concerned with the people, let's be concrete, let's take the United States. There is a state sector that does awful things, but it also happens to do some good things. As a result of centuries of extensive popular struggle there is a minimal welfare system that provides support for poor mothers and children. That's under attack in an effort to minimize the state. Well, anarchists can't seem to understand that they are to support that. So they join with the ultra-right in saying "Yes, we've got to minimize the state," meaning put more power into the hands of private tyrannies which are completely unaccountable to the public and purely totalitarian.
It's kind of reminiscent of an old Communist Party slogan back in the early thirties "The worse, the better." So there was a period when the Communist Party was refusing to combat fascism on the theory that if you combat fascism, you join the social democrats and they are not good guys, so "the worse, the better." That was the slogan I remember from childhood. Well, they got the worse: Hitler. If you care about the question of whether seven-year-old children have food to eat, you'll support the state sector at this point, recognizing that in the long term it's illegitimate. I know that a lot of people find that hard to deal with and personally I'm under constant critique from the left for not being principled. Principle to them means opposing the state sector, even though opposing the state sector at this conjuncture means placing power into the hands of private totalitarian organizations who would be delighted to see children starve. I think we have to be able to keep those ideas in our heads if we want to think constructively about the problems of the future. In fact, protecting the state sector today is a step towards abolishing the state because it maintains a public arena in which people can participate, and organize, and affect policy, and so on, though in limited ways. If that's removed, we'd go back to a [...] dictatorship or say a private dictatorship, but that's hardly a step towards liberation.

"It's good stuff. And we have some fresh chili corn bread. The corn, I think, is from Peter Lindsey's new crop, just cut out from the maze, which is right down this hill." He motioned with his head toward the field, and then he handed her a big loaf of the fresh corn bread wrapped loosely in wax paper.
"It's still warm!" Delighted, she held it to her cheek.
Then he pulled out a large oval Tupperware container. "And, yes, we have Dolly's buttermilk fried chicken."
Grace peeled open the top and smelled. "Fabulous."
"It is!"
He also pulled out a mason jar of sourwood honey, a sack of pecans, and a couple of very cold bottles of a local mountain-brewed beer.

If we sink a spoon into that fact, into the duff between us, we will find it teeming. It will look like all the books ever written. It will look like all the nerves in a body. Saturday is birthday cake day.
During the week, the panadería is all strong coffee and pan dulce. But on weekends, it's sprinkle cookies and pink cake. By ten or eleven this morning, we'll get the first rush of mothers picking up yellow boxes in between buying balloons and paper streamers.
In the back kitchen, my father hums along with the radio as he shapes the pastry rounds of ojos de buey, the centers giving off the smell of orange and coconut. It may be so early the birds haven't even started up yet, but with enough of my mother's coffee and Mariachi Los Camperos, my father is as awake as if it were afternoon.
While he fills the bakery cases, my mother does the delicate work of hollowing out the piñata cakes, and when her back is turned, I rake my fingers through the sprinkle canisters. During open hours, most of my work is filling bakery boxes and ringing up customers (when it's busy) or washing dishes and windexing the glass cases (when it's not). But on birthday cake days, we're busy enough that I get to slide sheet cakes from the oven and cover them in pink frosting and tiny round nonpareils, like they're giant circus-animal cookies. I get to press hundreds-and-thousands into the galletas de grajea, the round, rainbow-sprinkle-covered cookies that were my favorite when I was five.
My mother finishes hollowing two cake halves, fills them with candy- green, yellow, and pink this time- and puts them back together. Her piñatas are half our Saturday cake orders, both birthday girls and grandfathers delighting at the moment of seeing M&M's or gummy worms spill out. She covers them with sugar-paste ruffles or coconut to look like the tiny paper flags on a piñata, or frosting and a million rainbow sprinkles.

For four hours, Andrew and I were presented with course after course of delightful creations, imaginative pairings, and, always, dramatic presentations. Little fillets of sturgeon arrived under a glass dome, after which it was lifted, applewood smoke billowed out across the table. Pretzel bread, cheese, and ale, meant to evoke a picnic in Central Park, was delivered in a picnic basket. But my favorite dish was the carrot tartare.
The idea came, along with many of the menu's other courses, while researching reflecting upon New York's classic restaurants. From 21 Club to Four Seasons, once upon a time, every establishment offered a signature steak tartare. "What's our tartare?" Will and Daniel wondered. They kept playing with formulas and recipes and coming close to something special, but it never quite had the wow factor they were looking for. One day after Daniel returned from Paffenroth Gardens, a farm in the Hudson Valley with the rich muck soil that yields incredibly flavorful root vegetables, they had a moment. In his perfect Swiss accent, he said, "What if we used carrots?" Will remembers. And so carrot tartare, a sublime ode to the humble vegetable, was added to the Eleven Madison Park tasting course.
"I love that moment when you clamp a meat grinder onto the table and people expect it to be meat, and it's not," Will gushes of the theatrical table side presentation. After the vibrant carrots are ground by the server, they're turned over to you along with a palette of ingredients with which to mix and play: pickled mustard seeds, quail egg yolk, pea mustard, smoked bluefish, spicy vinaigrette. It was one of the most enlightening yet simple dishes I've ever had. I didn't know exactly which combination of ingredients I mixed, adding a little of this and a little of that, but every bite I created was fresh, bright, and ringing with flavor. Carrots- who knew?

By instinct, I head for the produce section. There, the close quarters of slim Ichiban eggplant, baby bok choy, brilliant red chard, chartreuse-and-purple asparagus, sends me into paroxysms of delight. I'm glad the store is nearly empty; I'm oohing and aahing with produce lust at the colors, the smooth, shiny textures set against frilly leaves.
I fondle the palm-size plums, the soft fuzz of the peaches. And the berries! It's berry season, and seven varieties spill from green cardboard containers: the ubiquitous Oregon marionberry, red raspberry, and blackberry, of course, but next to them are blueberries, loganberries, and gorgeous golden raspberries. I pluck one from a container, fat and slightly past firm, and pop it into my mouth. The sweet explosion of flavor so familiar, but like something too long forgotten. I load two pints into my basket.
The asparagus has me intrigued. Maybe I could roast it with olive oil and fresh herbs, like the sprigs of rosemary and oregano poking out of the salad display, and some good sea salt. And salad. Baby greens tossed with lemon-infused olive oil and a sprinkle of vinegar. Why haven't I eaten a salad in so long? I'll choose a soft, mild French cheese from the deli case, have it for an hors d'oeuvre with a beautiful glass of sparkling Prosecco, say, then roast a tiny chunk of spring lamb that I'm sure the nice sister will cut for me, and complement it with a crusty baguette and roasted asparagus, followed by the salad. Followed by more cheese and berries for dessert. And a fruity Willamette Valley Pinot Noir to wash it all down. My idea of eating heaven, a French-influenced feast that reminds me of the way I always thought my life would be.

Now, there are a few dryadologists who could resist the opportunity to sample faerie food, the enchanted sort served at the tables of the courtly fae---I know several who have dedicated their careers to the subject and would hand over their eye teeth for the opportunity. I stopped at a stand offering toasted cheese---a very strange sort of cheese, threaded with glittering mold. It smelled divine, and the faerie merchant rolled it in crushed nuts before handing it over on a stick, but as soon as it touched my palm, it began to melt. The merchant was watching me, so I put it in my mouth, pantomiming my delight. The cheese tasted like snow and melted within seconds. I stopped next at a stand equipped with a smoking hut. The faerie handed me a delicate fillet of fish, almost perfectly clear despite the smoking. I offered it to Shadow, but he only looked at me with incomprehension in his eyes. And, indeed, when I popped it into my mouth, it too melted flavorlessly against my tongue.
I took a wandering course to the lakeshore, conscious of the need to avoid suspicion. I paused at the wine merchant, who had the largest stand. It was brighter than the others, snow piled up behind it in a wall that caught the lantern light and threw it back in a blinding glitter. I had to look down at my feet, blinking back tears, as one of the Folk pressed an ice-glass into my hand. Like the food, the wine smelled lovely, of sugared apples and cloves, but it slid eerily within the ice, more like oil than wine. Shadow kept growling at it, as he had not with the faerie food, and so I tipped it onto the snow.
Beside the wine merchant was a stand offering trinkets, frozen wildflowers that many of the Folk threaded through their hair or wove through unused buttonholes on their cloaks, as well as an array of jewels with pins in them. I could not compare them to any jewels I knew; they were mostly in shades of white and winter grey, hundreds of them, each impossibly different from the next. I selected one that I knew, without understanding how, was the precise color of the icicles that hung from the stone ledges of the Cambridge libraries in winter. But moments after I pinned it to my breast, all that remained was a patch of damp.

The Stoics, as we have seen, advise us to pursue tranquility, and as part of their strategy for attaining it they advise us to engage in negative visualization. But isn’t this contradictory advice? Suppose, for example, that a Stoic is invited to a picnic. While the other picnickers are enjoying themselves, the Stoic will sit there, quietly contemplating ways the picnic could be ruined: “Maybe the potato salad is spoiled, and people will get food poisoning. Maybe someone will break an ankle playing softball. Maybe there will be a violent thunderstorm that will scatter the picnickers. Maybe I will be struck by lightning and die.” This sounds like no fun at all. But more to the point, it seems unlikely that a Stoic will gain tranquility as a result of entertaining such thoughts. To the contrary, he is likely to end up glum and anxiety-ridden.
In response to this objection, let me point out that it is a mistake to think Stoics will spend all their time contemplating potential catastrophes. It is instead something they will do periodically: A few times each day or a few times each week a Stoic will pause in his enjoyment of life to think about how all this, all these things he enjoys, could be taken from him.
Furthermore, there is a difference between contemplating something bad happening and worrying about it. Contemplation is an intellectual exercise, and it is possible for us to conduct such exercises without its affecting our emotions. It is possible, for example, for a meteorologist to spend her days contemplating tornadoes without subsequently living in dread of being killed by one. In similar fashion, it is possible for a Stoic to contemplate bad things that can happen without becoming anxiety-ridden as a result.
Finally, negative visualization, rather than making people glum, will increase the extent to which they enjoy the world around them, inasmuch as it will prevent them from taking that world for granted. Despite - or rather, because of - his (occasional) gloomy thoughts, the Stoic will likely enjoy the picnic far more than the other picnickers who refuse to entertain similarly gloomy thoughts; he will take delight in being part of an event that, he fully realizes, might not have taken place.

Then I thoroughly rinsed the tofu pockets with hot water to wash off the extra oil so they'd soak up the seasonings better.
But the biggest secret to the whole thing...
... was my specially made Mochi White Sauce!
Normal white sauce is made with lots of milk, butter and flour, making it really thick and heavy. But I made mine using only soy milk and mochi, so it's still rich and creamy without the slightest hint of greasiness. In addition, I sprinkled a blend of several cheeses on top of everything when I put it in the oven to toast. They added some nice hints of mellow saltiness to the dish without making it too heavy!
Basically, I shoved all the tasty things I could think of into my dish...
... pushing the rich, savory flavor as hard as I could until it was just shy of too much... and this is the result!"

We grew through the vital essence of her food while she endured embarrassment, pain, and suffering. After we were born, from a small worm until we were fully grown, she developed our body.
The "kindness of undergoing hardships for you" means that, at first, we were not wearing any clothes with all their ornamentation, did not possess any wealth, and did not bring any provisions. We just came with a mouth and stomach-empty-handed, without any material things.
When we came to this place where we knew no one, she gave food when we were hungry, she gave drink when we were thirsty, she gave clothes when we were cold, she gave wealth when we had nothing. Also, she did not just give us things she did not need. Rather, she has given us what she did not dare use for herself, things she did not dare eat, drink, or wear for herself, things she did not dare employ for the happiness of this life, things she did not dare use for her next life's wealth. In brief, without looking for happiness in this life or next, she nurtured her child.
She did not obtain these things easily or with pleasure. She collected them by creating various negative karmas, by sufferings and hardships, and gave them all to the child. For example, creating negative karma: she fed the child through various nonvirtuous actions like fishing, butchering, and so forth. For example, suffering: to give to the child, she accumulated wealth by working at a business or farm and so forth, wearing frost for shoes, wearing stars as a hat, riding on the horse of her legs, her hem like a whip, giving her legs to the dogs and her face to the people.
Furthermore, she loved the unknown one much more than her father, mother, and teachers who were very kind to her. She watched the child with eyes of love, and kept it warm in soft cloth. She dandled the child in her ten fingers, and lifted it up in the sky. She called to it in a loving, pleasant voice, saying, "Joyful one, you who delight Mommy. Lu, lu, you happy one," and so forth.
The "kindness of giving you life" means that, at first, we were not capable of eating with our mouth and hands nor were we capable of enduring all the different hardships. We were like feeble insects without strength; we were just silly and could not think anything. Again, without rejection, the mother served us, put us on her lap, protected us from fire and water, held us away from precipices, dispelled all harmful things, and performed rituals. Out of fear for our death or fear for our health, she did divinations and consulted astrologers. Through many ritual ceremonies and many other different things, in inconceivable ways, she protected the life of her child.
The "kindness of showing you the world" means that, at first, we did not come here knowing various things, seeing broadly, and being talented. We could only cry and move our legs and hands. Other than that, we knew nothing. The mother taught us how to eat when we did not know how. She taught us how to wear clothes when we did not know how. She taught us how to walk when we did not know how. She taught us how to talk when we did not know how to say "Mama," or "Hi," and so forth. She taught us various skills, creative arts, and so forth. She tried to make us equal when we were unequal, and tried to make the uneven even for us.
Not only have we had a mother in this lifetime, but from beginningless samsara she served as a mother countless times.
