Could the Popol Vuh be transmitting some garbled memory of that same civilization when it speaks nostalgically of the First Men and of the miraculous geographical knowledge they possessed? Geography is about maps, and astronomy is about stars. As Japan recovered from the post-war depression, okonomiyaki became the cornerstone of Hiroshima's nascent restaurant culture. And with new variables- noodles, protein, fishy powders- added to the equation, it became an increasingly fungible concept. Half a century later it still defies easy description. Okonomi means "whatever you like," yaki means "grill," but smashed together they do little to paint a clear picture. Invariably, writers, cooks, and oko officials revert to analogies: some call it a cabbage crepe; others a savory pancake or an omelet. Guidebooks, unhelpfully, refer to it as Japanese pizza, though okonomiyaki looks and tastes nothing like pizza. Otafuku, for its part, does little to clarify the situation, comparing okonomiyaki in turn to Turkish pide, Indian chapati, and Mexican tacos. There are two overarching categories of okonomiyaki Hiroshima style, with a layer of noodles and a heavy cabbage presence, and Osaka or Kansai style, made with a base of eggs, flour, dashi, and grated nagaimo, sticky mountain yam. More than the ingredients themselves, the difference lies in the structure: whereas okonomiyaki in Hiroshima is carefully layered, a savory circle with five or six distinct layers, the ingredients in Osaka-style okonomiyaki are mixed together before cooking. The latter is so simple to cook that many restaurants let you do it yourself on table side teppans. Hiroshima-style okonomiyaki, on the other hand, is complicated enough that even the cooks who dedicate their lives to its construction still don't get it right most of the time. (Some people consider monjayaki, a runny mass of meat and vegetables popularized in Tokyo's Tsukishima district, to be part of the okonomiyaki family, but if so, it's no more than a distant cousin.) Otafuku entered the picture in 1938 as a rice vinegar manufacturer. Their original factory near Yokogawa Station burned down in the nuclear attack, but in 1946 they started making vinegar again. In 1950 Otafuku began production of Worcestershire sauce, but local cooks complained that it was too spicy and too thin, that it didn't cling to okonomiyaki, which was becoming the nutritional staple of Hiroshima life. So Otafuku used fruit- originally orange and peach, later Middle Eastern dates- to thicken and sweeten the sauce, and added the now-iconic Otafuku label with the six virtues that the chubby-cheeked lady of Otafuku, a traditional character from Japanese folklore, is supposed to represent, including a little nose for modesty, big ears for good listening, and a large forehead for wisdom.

Slow It Down God called the light “day,” and the darkness he called “night.” And there was evening, and there was morning—the first day. Genesis 1:5 by T. So I was surprised to read in Genesis 1:5 that the order was, in fact, reversed: “And there was evening, and there was morning.” God started with evening, a time of rest, and a day followed, in which he continued to create. We live in a culture where we work all day, and then eventually we might take time to rest. To order our days the way God does—with rest as a priority—is a challenge. I learned to prioritize God’s way when, at age 32, I was diagnosed with cancer. I told the doctor I didn’t have time for cancer, but cancer didn’t consult my schedule. My life changed while going through treatment as I put aside activities that previously had seemed vital. Out of that difficult time came a new list of priorities. At the top of the list: to balance my life. I learned to climb between the sheets and put aside my worries—to rest my body and mind. To slow down when life became crazy and assess what is important. I began to see evening as the first part of my day. This concept changed my life, physically and spiritually. Recently I had two speaking events sandwiched together. As the dates approached, time with my heavenly Father became “evening.” In preparation for my events, I listened to the heart of my Father instead of going over my notes. Out of that rest sprang fruitful ministry during the day. Learning to live with evening, or rest, as a top priority is an ongoing process. Recipe for March Wassail Drinking wassail is an ancient tradition. Dating back to Saxon times, the word itself comes from the greeting “wæs hæl”, roughly translated as “be you healthy”. In the counties of southern England renowned for cider production, drinking wassail originated as a bit of sympathetic magic to protect and encourage the apple trees to bear fruit. While wassail and other punches were very popular during Regency times, by the later part of the 19th-century, they had been largely supplanted by wines and other spirits. The Marches, however, care much more for their own pleasure than for what is fashionable. They serve their wassail the old-fashioned way, out of an enormous wooden bowl mounted in silver with a roasted apple garnish. Their wassail is, as tradition dictates, served quite hot and is deceptively alcoholic. Proceed with caution. Preheat oven to 350 degrees. Core a dozen small apples. (You will only need ten for the wassail, but leftover roasted apples are delicious with cream, yogurt, or ice cream.) Loosely spoon brown sugar into each apple place in a casserole dish with a small amount of water. Bake until tender, approximately 45 minutes. Meanwhile, gently warm 2 pints hard cider. (This is not available in the juice aisle of the grocery store. It is wonderfully alcoholic and tastes deeply of apples. You can find bottled varieties at wine and liquor stores, but the very best is fermented by apple farmers for their own use. Find one and befriend him. The Marches get their cider at the source from the Home Farm at Bellmont Abbey.) To the warming cider, add four cinnamon sticks, crushed with a mortar and pestle, and four pinches ground cloves. (In a bind, ½ teaspoon ground cinnamon may be substituted for the sticks.) Grate in fresh ginger and fresh nutmeg to taste. Lord March’s secret ingredient is a cup of his very best port, added just in time to heat through. When the apples are plump and bursting from their skins, remove them from the oven. Put one into a heatproof punch glass and ladle the wassail over. The March family recipe calls for a garnish of a fresh cinnamon stick for each glass. This recipe will serve six Marches or ten ordinary folk.

Children dress in costumes like Befana and go to neighboring houses, where they receive small gifts such as fruit and nuts. At the end of the Befana celebration, Befana figures are burned in a bonfire to get rid of the old year and start the new year fresh. Another major festival is Carnevale. It is a huge festival celebrated in the last week before Lent, a serious forty-day period that precedes Easter. Italy’s biggest Carnevale celebration is in Venice, where people dress in dazzling costumes and parade around the city. Though the costumes often feature somber masks, Carnevale is a time for giddy fun. Children run about throwing confetti. Shopkeepers pass out snacks in the city’s squares. Music fills the air. Like Italy itself, it is a feast for the senses.

He tries to contain it, but he can’t. He has always been a sucker for a good joke. Sarai is just as amused. When she hears the news, a cackle escapes before she can contain it. She mumbles something about her husband’s needing a lot more than what he’s got and then laughs again. They laugh because that is what you do when someone says he can do the impossible. They laugh a little at God, and a lot with God—for God is laughing too. Then, with the smile still on his face, he gets busy doing what he does best—the unbelievable.
