The more I experimented, the more I wanted to discover flavor, texture, scent. Gently toasting spices. Mixing herbs. On another occasion he accepted a one-time purchase of food after Category 4 Hurricane Michelle struck the island that same year. Once, he declined a U.S. Government offer of humanitarian aid turning to Canada instead. Castro continued having close relations with Canada and demonstrated this friendship when he attended Prime Minister Pierre Trudeau’s funeral in the fall of the year 2000. It was a way that he could retain contact with the western world without becoming involved with the United States.

From the Bridge” Celebrating “La Navidad Cubana” Before the fall of Batista, Cuba was considered to be a staunch Catholic Nation. As in other Christian countries, Christmas was considered a religious holiday. In 1962, a few years after the revolution, Cuba became an atheist country by government decree. Then In 1969, Fidel Castro thinking that Christmas was interfering with the production of sugar cane, totally removed the holiday from the official calendar. Of course Christmas was still celebrated by Cubans in exile, many of whom live in South Florida and Union City, NJ. However it was still was celebrated clandestinely in a subdued way on the island. It was said, if it is to believed, that part of the reason for this was due to the fact that Christmas trees do not grow in Cuba. Now that Christianity and Christmas have both been reestablished by the government, primarily due to the Pope’s visits to Cuba, Christmas as a holiday has been reinstated. Many Christmas traditions have been lost over the past five decades and are still not observed in Cuba, although the Cuban Christmas feast is highlighted by a festive “Pig Roast,” called the “Cena de Navidad” or Christmas dinner. Where possible, the dinner includes Roast Pork done on a spit, beans, plantains, rice and “mojo” which is a type of marinade with onions, garlic, and sour orange. Being a special event, some Cubans delight in serving the roasted pork, in fancier ways than others. Desserts like sweet potatos, “turrones” or nougats, “buñuelos” or fritters, as well as readily available tropical fruits and nuts hazelnuts, guava and coconuts, are very common at most Christmas dinners. Beverages such as the “Mojito” a drink made of rum, sugar cane juice, lime, carbonated water and mint, is the main alcoholic drink for the evening, although traditionally the Christmas dinner should be concluded by drinking wine. This grand Christmas dinner is considered a special annual occasion, for families and friends to join together. Following this glorious meal, many Cubans will attend Misa de Gallo or mass of the rooster, which is held in most Catholic churches at midnight. The real reason for Christmas in Cuba, as elsewhere, is to celebrate the birth of Christ. Churches and some Cuban families once again, display manger scenes. Traditionally, children receive presents from the Three Wise Men and not from Santa Claus or the parents. Epiphany or “Three King’s Day,” falls on January 6th. Christmas in Cuba has become more festive but is not yet the same as it used to be. Although Christmas day is again considered a legal holiday in Cuba, children still have to attend school on this holiday and stores, restaurants and markets stay open for regular business. Christmas trees and decorations are usually only displayed at upscale hotels and resorts.

BEHIND THE WALL The Berlin Wall fell on November 9, 1989, twenty-five years ago this month, but the first attempts to breach it came immediately after it went up, just past midnight on August 13, 1961. The East German regime had been secretly stockpiling barbed wire and wooden sawhorses, which the police, who learned of their mission only that night, hastily assembled into a barrier. For many Berliners, the first sign that a historic turn had been taken was when the U-Bahn, the city’s subway, stopped running on certain routes, leaving late-night passengers to walk home through streets that were suddenly filled with soldiers. As realization set in, so did a sense of panic. By noon the next day, as Ann Tusa recounts in “The Last Division,” people were trying to pull down the barbed wire with their hands. Some succeeded, in scattered places, and a car drove through a section of the Wall to the other side. In the following weeks, the authorities began reinforcing it. Within a year, the Wall was nearly eight feet high, with patrols and the beginnings of a no man’s land. But it still wasn’t too tall for a person to scale, and on August 17, 1962, Peter Fechter, who was eighteen years old, and his friend Helmut Kulbeik decided to try. They picked a spot on Zimmerstrasse, near the American Checkpoint Charlie, and just after two o’clock in the afternoon they made a run for it. Kulbeik got over, but Fechter was shot by a guard, and fell to the ground. He was easily visible from the West; there are photographs of him, taken as he lay calling for help. Hundreds of people gathered on the Western side, shouting for someone to save him. The East German police didn’t want to, and the Americans had been told that if they crossed the border they might start a war. Someone tossed a first-aid kit over the Wall, but Fechter was too weak to pick it up. After an hour, he bled to death. Riots broke out in West Berlin, and many asked angrily why the Americans had let Fechter die. He was hardly more than a child, and he wanted to be a free man. It’s a fair question, though one can imagine actions taken that day which could have led to a broader confrontation. It was not a moment to risk grand gestures; Fechter died two months before the Cuban missile crisis. (When the Wall went up, John F. Kennedy told his aides that it was “not a very nice solution, but a wall is a hell of a lot better than a war.”) And there was something off key about Germans, so soon after the end of the Second World War, railing about others being craven bystanders. Some observers came to see the Wall as the necessary scaffolding on which to secure a postwar peace. That’s easy to say, though, when one is on the side with the department stores, and without the secret police. Technically, West Berlin was the city being walled in, a quasi-metropolis detached from the rest of West Germany. The Allied victors—America, Britain, France, and the Soviet Union—had divided Germany into four parts, and, since Berlin was in the Soviet sector, they divided the city into four parts, too. In 1948, the Soviets cut off most road and rail access to the city’s three western sectors, in an effort to assert their authority. The Americans responded with the Berlin Airlift, sending in planes carrying food and coal, and so much salt that their engines began to corrode. By the time the Wall went up, it wasn’t the West Berliners who were hungry. West Germany’s Wirtschaftswunder , or economic miracle, was under way, while life in the East involved interminable shortages. West Berliners were surrounded by Soviet military encampments, but they were free and they could leave—and so could anyone who could get to their part of the city. The East Berliners were the prisoners. In the weeks before the Wall went up, more than a thousand managed to cross the border each day; the Wall was built to keep them from leaving. But people never stopped trying to tear it down.

Guantánamo Naval Base has been held for a long period of time, perhaps too long, and for questionable reasons, whereas Cuba has incarcerated people for political reasons, including some Americans, for far too long. Families have been divided and animosities have continued. Special interest groups, including a very vocal Cuban population in South Florida, continue to block the U.S. Government from initiating reasonable legislature regarding U.S. interests in Cuba, while many other countries carry on normal relations with the country. What is happening now is a reversal and counterproductive. It would seem that now should be a good time for the U.S. and Cuba to become reasonably good neighbors again….

Gloria’s Pork Ribs and Red Beans YIELD: 4 SERVINGS BEFORE I MARRIED Gloria, I knew nothing about Caribbean cooking—Puerto Rican or Cuban. She introduced me to many dishes that through the years we have transformed into our own family recipes. When Roland, my brother, came to visit, one of the first dishes that Gloria would prepare for him was pork shoulder ribs with red beans, which she usually serves with rice and onion pilaf. This dish is great when made ahead, and any leftovers can be served with fried eggs for breakfast, a type of huevos rancheros. With the bones removed, it can be puréed into a sturdy, flavorful soup in a food processor. Although dried beans are typically presoaked in water before cooking, this is not necessary if the beans are started in cool water. 2 tablespoons good olive oil 4 shoulder pork chops with the bones or country ribs (about 1½ pounds) 1 pound dried red kidney beans 2 cups fresh diced tomato flesh or 1 can (14¾ ounces) whole Italian tomatoes, with juice 3 cups sliced onions 1½ tablespoons chopped garlic 1 jalapeño pepper (or more or less, depending on your tolerance for “hotness”), finely chopped, with or without the seeds (about 1 tablespoon) 2 bay leaves 1 teaspoon herbes de Provence (available in many supermarkets) or Italian seasoning 6 cups cold water 1½ teaspoons salt 1 small bunch cilantro Cooked rice, for serving (optional) Tabasco hot pepper sauce (optional) Heat the oil in a large saucepan (I like enameled cast iron), add the pork chops or ribs, and sauté gently, turning once, for 15 to 20 minutes or until they are browned on both sides. Meanwhile, sort through the beans and discard any broken or damaged ones and any foreign matter. Rinse the beans in a sieve under cold water. When the chops or ribs are browned, remove them from the heat, and add the tomatoes and their juice, onions, garlic, jala-peño, bay leaves, herbs, and water. Stir in the beans and salt, and bring to a boil. Meanwhile, pull the leaves from the cilantro stems. Chop the stems finely (you should have about ¼ cup), and add them to the beans. Reserve the leaves (you should have about 1 cup loosely packed) for use as a garnish. When the bean mixture is boiling, reduce the heat to low, and boil very gently, covered, for 2 to 2½ hours, or until the beans and pork are very tender. Divide among soup bowls, sprinkle the cilantro leaves on top, and serve with rice, if desired. Pass the Tabasco sauce for those who want added hotness.
