The amount of force and violence necessary to board the train, for example, was no less and no more than the amount of politeness and consideration necessary to ensure that the cramped journey was as pleasant as possible afterwards. What is necessary! That was the unspoken but implied and unavoidable question everywhere in India. My conception of freedom. — The value of a thing sometimes does not lie in that which one attains by it, but in what one pays for it — what it costs us. I shall give an example. Liberal institutions cease to be liberal as soon as they are attained: later on, there are no worse and no more thorough injurers of freedom than liberal institutions. Their effects are known well enough: they undermine the will to power; they level mountain and valley, and call that morality; they make men small, cowardly, and hedonistic — every time it is the herd animal that triumphs with them. Liberalism: in other words, herd-animalization. These same institutions produce quite different effects while they are still being fought for; then they really promote freedom in a powerful way. On closer inspection it is war that produces these effects, the war for liberal institutions, which, as a war, permits illiberal instincts to continue. And war educates for freedom. For what is freedom? That one has the will to assume responsibility for oneself. That one maintains the distance which separates us. That one becomes more indifferent to difficulties, hardships, privation, even to life itself. That one is prepared to sacrifice human beings for one's cause, not excluding oneself. Freedom means that the manly instincts which delight in war and victory dominate over other instincts, for example, over those of "pleasure." The human being who has become free — and how much more the spirit who has become free — spits on the contemptible type of well-being dreamed of by shopkeepers, Christians, cows, females, Englishmen, and other democrats. The free man is a warrior. How is freedom measured in individuals and peoples? According to the resistance which must be overcome, according to the exertion required, to remain on top. The highest type of free men should be sought where the highest resistance is constantly overcome: five steps from tyranny, close to the threshold of the danger of servitude. This is true psychologically if by "tyrants" are meant inexorable and fearful instincts that provoke the maximum of authority and discipline against themselves; most beautiful type: Julius Caesar. This is true politically too; one need only go through history. The peoples who had some value, attained some value, never attained it under liberal institutions: it was great danger that made something of them that merits respect. Danger alone acquaints us with our own resources, our virtues, our armor and weapons, our spirit, and forces us to be strong. First principle: one must need to be strong — otherwise one will never become strong. Those large hothouses for the strong — for the strongest kind of human being that has so far been known — the aristocratic commonwealths of the type of Rome or Venice, understood freedom exactly in the sense in which I understand it: as something one has or does not have, something one wants, something one conquers.

Corn is what feeds the steer that becomes the steak. Corn feeds the chicken and the pig, the turkey, and the lamb, the catfish and the tilapia and, increasingly, even the salmon, a carnivore by nature that the fish farmers are reengineering to tolerate corn. The eggs are made of corn. The milk and cheese and yogurt, which once came from dairy cows that grazed on grass, now typically comes from Holsteins that spend their working lives indoors tethered to machines, eating corn. Head over to the processed foods and you find ever more intricate manifestations of corn. A chicken nugget, for example, piles up corn upon corn: what chicken it contains consists of corn, of course, but so do most of a nugget's other constituents, including the modified corn starch that glues the things together, the corn flour in the batter that coats it, and the corn oil in which it gets fried. Much less obviously, the leavenings and lecithin, the mono-, di-, and triglycerides, the attractive gold coloring, and even the citric acid that keeps the nugget "fresh" can all be derived from corn. To wash down your chicken nuggets with virtually any soft drink in the supermarket is to have some corn with your corn. Since the 1980s virtually all the sodas and most of the fruit drinks sold in the supermarket have been sweetened with high-fructose corn syrup (HFCS) -- after water, corn sweetener is their principal ingredient. Grab a beer for you beverage instead and you'd still be drinking corn, in the form of alcohol fermented from glucose refined from corn. Read the ingredients on the label of any processed food and, provided you know the chemical names it travels under, corn is what you will find. For modified or unmodified starch, for glucose syrup and maltodextrin, for crystalline fructose and ascorbic acid, for lecithin and dextrose, lactic acid and lysine, for maltose and HFCS, for MSG and polyols, for the caramel color and xanthan gum, read: corn. Corn is in the coffee whitener and Cheez Whiz, the frozen yogurt and TV dinner, the canned fruit and ketchup and candies, the soups and snacks and cake mixes, the frosting and candies, the soups and snacks and cake mixes, the frosting and gravy and frozen waffles, the syrups and hot sauces, the mayonnaise and mustard, the hot dogs and the bologna, the margarine and shortening, the salad dressings and the relishes and even the vitamins. (Yes, it's in the Twinkie, too.) There are some forty-five thousand items in the average American supermarket and more than a quarter of them now contain corn. This goes for the nonfood items as well: Everything from the toothpaste and cosmetics to the disposable diapers, trash bags, cleansers, charcoal briquettes, matches, and batteries, right down to the shine on the cover of the magazine that catches your eye by the checkout: corn. Even in Produce on a day when there's ostensibly no corn for sale, you'll nevertheless find plenty of corn: in the vegetable wax that gives the cucumbers their sheen, in the pesticide responsible for the produce's perfection, even in the coating on the cardboard it was shipped in. Indeed, the supermarket itself -- the wallboard and joint compound, the linoleum and fiberglass and adhesives out of which the building itself has been built -- is in no small measure a manifestation of corn.

Egg-laying hens, for example, have a complex world of behavioural needs and drives. They feel strong urges to scout their environment, forage and peck around, determine social hierarchies, build nests and groom themselves. But the egg industry often locks the hens inside tiny coops, and it is not uncommon for it to squeeze four hens to a cage, each given a floor space of about 10 by 8.5 inches. The hens receive sufficient food, but they are unable to claim a territory, build a nest or engage in other natural activities. Indeed, the cage is so small that hens are often unable even to flap their wings or stand fully erect. Pigs are among the most intelligent and inquisitive of mammals, second perhaps only to the great apes. Yet industrialised pig farms routinely confine nursing sows inside such small crates that they are literally unable to turn around (not to mention walk or forage). The sows are kept in these crates day and night for four weeks after giving birth. Their offspring are then taken away to be fattened up and the sows are impregnated with the next litter of piglets. Many dairy cows live almost all their allotted years inside a small enclosure; standing, sitting and sleeping in their own urine and excrement. They receive their measure of food, hormones and medications from one set of machines, and get milked every few hours by another set of machines. The cow in the middle is treated as little more than a mouth that takes in raw materials and an udder that produces a commodity. Treating living creatures possessing complex emotional worlds as if they were machines is likely to cause them not only physical discomfort, but also much social stress and psychological frustration.

The smudges there were tepees, made out of fading buffalo hide, clustered together in groups, the groups too close to those from other tribes, but forced, due to the government, to live together. Misery hung over this landscape like a cloud, even on the sunniest day. So he kept to the south, swooping closer to the ground, and finally the peaceful-seeming landscape gave up some secrets. A fence post here, a clump of bushes there, an upturned wagon, haystacks. As his eyes adjusted, however, other secrets were discovered. What seemed like a line of small haystacks were, upon closer inspection as the hawk zeroed in, cows. Unmoving cows, statues; some on their sides, others standing, all frozen where they were. The hawk turned, uninterested, to investigate more dark shapes emerging from the blinding white; horses, their legs collapsed under them, eyes closed forever.

It's the many little things. It doesn't seem that taking sweat-soaked harnesses off tired, hot horses would be something that would make you notice. Opening a barn door for the sheep standing out in a cold rain, or throwing a few grains of corn to the chickens are small things, but these little things begin to add up in you, and you can begin to understand that you're important. You may not be real important like people who do great things that you read about in the newspaper, but you begin to feel that you're important to all the life around you. Nobody else knows or cares too much about what you do, but if you get a good feeling inside about what you do, then it doesn't matter if nobody else knows. I do think about myself a lot when I'm alone way back on the place bringing in the cows or sitting on a mowing machine all day. But when I start thinking about how our animals and crops and fields and woods and gardens sort of all fit together, I then get that good feeling inside and don't worry much about what will happen to me.

One Saturday, I was to drive to the airport for a flight to a stake conference in California. But the cow was expecting a calf and in trouble. The calf was born, but the cow could not get up. We called the veterinarian, who soon came. He said the cow had swallowed a wire and would not live through the day. I copied the telephone number of the animal by-products company so my wife could call them to come and get the cow as soon as she died. Before I left, we had our family prayer. Our little boy said our prayer. After he had asked Heavenly Father to “bless Daddy in his travels and bless us all,” he then started an earnest plea. He said, “Heavenly Father, please bless Bossy cow so that she will get to be all right.” In California, I told of the incident and said, “He must learn that we do not get everything we pray for just that easily.” There was a lesson to be learned, but it was I who learned it, not my son. When I returned Sunday night, Bossy had “got to be all right.” This process is not reserved for the prophets alone. The gift of the Holy Ghost operates equally with men, women, and even little children. It is within this wondrous gift and power that the spiritual remedy to any problem can be found. “And now, he imparteth his word by angels unto men, yea, not only men but women also. And what do you with that poor ignorant jerk? Do you call him on class, knowing damn well he hasn’t read the assignment because he doesn’t know how to read? Or do you ignore him? Or do you ask him to stop by after school, knowing he would prefer playing stickball to learning how to read. And knowing he considers himself liberated the moment the bell sounds at the end of the eighth period. What do you do when you’ve explained something patiently and fully, explained it just the way you were taught to explain in your education courses, explained in minute detail, and you look out at your class and see that stretching, vacant wall of blank, blank faces and you know nothing has penetrated, not a goddamn thing has sunk in? What do you do then? Give them all board erasers to clean. What do you do when you call on a kid and ask “What did that last passage mean?”and the kid stands there without any idea of what the passage meant , and you know that he’s not alone, you know every other kid in the class hasn’t the faintest idea either? What the hell do you do then? Do you go home and browse through the philosophy of education books the G.I bill generously provided. Do you scratch your ugly head and seek enlightenment from the educational psychology texts? Do you consult Dewey? And who the hell do you condemn, just who? Do you condemn elementary schools for sending a kid on to high school without knowing how to read, without knowing how to write his own name on a piece of paper? Do you condemn the masterminds who plot the education systems of a nation, or a state or a city?

Those who are willing to work for change, and make changes, too often do so only for the sake of their own liberation, without much thought to the oppression of others—especially other species. Feminists lobby against sex wage discrepancies, gays fight homophobic laws, and the physically challenged demand greater access—each fighting for injustices that affect their lives, and/or the lives of their loved ones. Yet these dedicated activists usually fail to make even a slight change in their consumer choices for the sake of other much more egregiously oppressed and exploited individuals. While it is important to fight for one’s own liberation, it is counterproductive (not to mention selfish and small minded) to fight for one’s own liberation while willfully continuing to oppress others who are yet lower on the rungs of hierarchy. While fighting for liberation, it makes no sense for feminists to trample on gays, for gays to trample on the physically challenged, or for the physically challenged to trample on feminists. It also makes no sense for any of these social justice activists to willfully exploit factory farmed animals. Can we not at least avoid exploiting and dominating others while working for our personal liberation? Those who seek greater justice—whatever their cause—must make choices that diminish the cruel exploitation of others. As a matter of consistency and solidarity, social justice activists must reject dairy products, eggs, and flesh. There is no other industry as cruel and oppressive as factory farming. With regard to numbers affected, extent and length of suffering, and numbers of premature deaths, no other industry can even approach factory farming. Billions of individuals are exploited from genetically engineered birth, through excruciating confinement, to conveyor belt dismemberment. Consequently, there is no industry more appropriate for social justice activists to boycott. Even if we aren’t prepared to take a public stand, or take on another cause, we must at least make a private commitment on behalf of cows, pigs, and hens by leaving animal products on the shelf at the grocery store.

Consider the life of a pregnant sow. Her incredible fertility is the source of her particular hell. While a cow will give birth to only a single calf at a time, the modern factory sow will birth, nurse, and raise an average of nearly nine piglets — a number that has been increased annually by industry breeders. She will invariably be kept pregnant as much as possible, which will prove to be the majority of her life. When she is approaching her due date, drugs to induce labor may be administered to make the timing more convenient for the farmer. After her piglets are weaned, a hormone injection makes the sow rapidly “cycle” so that she will be ready to be artificially inseminated again in only three weeks. Four out of five times a sow will spend the sixteen weeks of her pregnancy confined in a “gestation crate” so small that she will not be able to turn around. Her bone density will decrease because of the lack of movement. She will be given no bedding and often will develop quarter-sized, blackened, pus-filled sores from chafing in the crate. (In one undercover investigation in Nebraska, pregnant pigs with multiple open sores on their faces, heads, shoulders, backs, and legs — some as large as a fist — were videotaped. A worker at the farm commented, “They all have sores. . . . There’s hardly a pig in there who doesn’t have a sore.”) More serious and pervasive is the suffering caused by boredom and isolation and the thwarting of the sow’s powerful urge to prepare for her coming piglets. In nature, she would spend much of her time before giving birth foraging and ultimately would build a nest of grass, leaves, or straw. To avoid excessive weight gain and to further reduce feed costs, the crated sow will be feed restricted and often hungry. Pigs also have an inborn tendency to use separate areas for sleeping and defecating that is totally thwarted in confinement. The pregnant pigs, like most all pigs in industrial systems, must lie or step in their excrement to force it through the slatted floor. The industry defends such confinement by arguing that it helps control and manage animals better, but the system makes good welfare practices more difficult because lame and diseased animals are almost impossible to identify when no animals are allowed to move.

I’ll call you Moony, because I created you under a full moon. Of course, that’s such a perfect name! I am truly a genius. I wish people would start appreciating my intellect. Oh, right. The story, right, my bad. So Moony, when it all started, I was a miner. Yep, just like 70% of the people in Scotland. And it was a dull job, I have to say. Most of the times, I mined for coal and iron ore. Those two resources were in great need at my place, that’s why so many people were miners. We had some farmers, builders, and merchants, but that was basically it. No jewelers, no booksellers, no restaurants, nothing. My gosh, that place was boring! I had always been fascinated by the idea of building. It seemed like so much fun, creating new things from other things. What’s not to like? I wanted to build, too. So I started. It was part-time at first, and I only did it when nobody was around. Whenever I got some free time on my hands, I spent it building stuff. One should hope that WDAS is right; fish are objects, wild animals want to live in captivity, dogs desire human owners, cows are happy to lactate milk for other species, and so forth. Disney’s depictions of animal harm are hopefully the ones that are correct because if animals do have lives of their own, away from the selfishness of humans, then companies like Disney have made a huge mistake.

I LIVE IN A part of the country that at one time a good farmer could take some pleasure in looking at. When I first became aware of it, in the 1940s, the better land, at least, was generally well farmed. The farms were mostly small and were highly diversified, producing cattle, sheep, and hogs, tobacco, corn, and the small grains; nearly all the farmers milked a few cows for home use and to market milk or cream. Nearly every farm household maintained a garden, kept a flock of poultry, and fattened its own meat hogs. There was also an extensive “support system” for agriculture: Every community had its blacksmith shop, shops that repaired harness and machinery, and stores that dealt in farm equipment and supplies. Now the country is not well farmed, and driving through it has become a depressing experience. Some good small farmers remain, and their farms stand out in the landscape like jewels. But they are few and far between, and they are getting fewer every year. The buildings and other improvements of the old farming are everywhere in decay or have vanished altogether. The produce of the country is increasingly specialized. The small dairies are gone. Most of the sheep flocks are gone, and so are most of the enterprises of the old household economy. From the Mormons, Powell learned how “salutary co-operation could be as a way of life, how much less wasteful than competition.” In the late 1880s, Powell wrote a General Plan for land use in the West that “reached to embrace the related problems of land, water, erosion, floods, soil conservation, even the new one of hydroelectric power” that was based on “the settled belief in the worth of the small farmer and the necessity of protecting him both from speculators and from natural conditions he did not understand and could not combat.” It was a methodical, sensible, scientific approach, essentially a declaration of interdependence between the people and their land, and the miracle is that it came very close to passing into law. But of course it met with fierce opposition from those who stood to profit from exploitation, from the boosters and boomers and politicians who thought it “unpatriotic” to describe the West as dry. After all, how dare he call their garden a desert? What right did he have to come in and determine what only free individuals should? Powell was attacked in the papers, slandered in Congress. According to Stegner, Congressman Thomas M. Patterson of Colorado referred to Powell as “this revolutionist,” and the overall attack on Powell “distinguished itself for bombast and ignorance and bad faith.

Sometimes a big event happens that changes everything. When it does, it tends to affirm the human tendency to treat big events as fundamentally different from smaller ones. That’s a problem, inside companies. When we put setbacks into two buckets—the “business as usual” bucket and the “holy cow” bucket—and use a different mindset for each, we are signing up for trouble. We become so caught up in our big problems that we ignore the little ones, failing to realize that some of our small problems will have long-term consequences—and are, therefore, big problems in the making. What’s needed, in my view, is to approach big and small problems with the same set of values and emotions, because they are, in fact, self-similar. In other words, it is important that we don’t freak out or start blaming people when some threshold—the “holy cow” bucket I referred to earlier—is reached. You then disengage your right arm from under his throat, but only far enough to grasp his chin and twist it upward and away from the ground. To keep him passive in this punishing position, you lower your right knee to press into the small of his back. While further to imprison him, you grasp his right arm with your right and stretch it upward. (See Fig. 21) This is the most devastating and utterly demoralizing hold imaginable. If you study it carefully and learn to co-ordinate all the movements with speed and precision, you will most likely, by means of this one trick alone, justify all the energy and effort you have given to Jiu-jitsu. FOREWORD When Commander Perry opened up to the occidental world that shut-tight little island Kingdom, Japan, he did more than merely contact for our manufacturers a people who bought "Nifty Clothes," with two pair of pants. He gave us an insight into a world that was thoroughly organized and civilized long before Columbus discovered West where the East should have been. The Japanese learned much from the so-called civilized world, -but they taught us something we could never have learned from intercourse with any other nation. They gave our governmental forces of law and order a weapon that aided materially in the suppression of disorderly elements throughout our great cities. It took time, of course, to break down the prejudices that our early enforcement officers, in common with our then wild and wooly population, had against anything that was foreign. But when the great police forces of our largest metropolises realized that guns and billies alone would not be proof against big, burly lawbreakers, and that to instil respect in the hearts of "bruisers" they needed something other than armaments—pistols that could not be drawn fast enough,—they then discovered the wonder of Jiu-jitsu. They found that the wily little brown man depended on brain instead of brawn and that he had developed a Science and an Art that utilized another's strength to his own undoing. Strangely enough it was the layman who first appreciated the potential value of Jiu-jitsu. For many years before the Police Forces of our cities put a study of this Science into the training of every rookie policeman, there were physical culture experts in America who advocated the use of it by everyone who had any respect for physical prowess but who found the spirit more willing than the flesh. They showed that it needed no possession of unusual strength to overcome an opponent that depended entirely on his bulk and ferocious appearance to cow the meeker ones of the earth into submission. The Japanese, by the very fact of their small stature, are compelled to place more emphasis on strategy than on force. Thus they have thoroughly developed Jiu-jitsu and there is barely a saffron-hued tot in Japan that doesn't know something about the "Gentle-Art" as it is known. President Masaryk of Czechoslovakia, one of the world's greatest educators, who, together with millions of his enlightened and progressive countrymen, is a firm believer in "a strong mind in a strong body," sought to teach every schoolboy in his country some knowledge of the wisest of all physical sciences. While it does not itself develop and build muscle, it is an invaluable aid to the sensible use of the body. It is a form of wrestling that combines the cunning of the fox with the lithe grace and agility of the panther. It sharpens the brain and quickens the nerve centers. The man or woman who has self-respect must not sit by and permit our people to become a nation of spectators watching athletic specialists perform, while we become obese and ungainly applauders. Jiu-jitsu gives the man, woman and child, denied by nature a great frame, the opportunity to walk without fear, to resist successfully the bullies of their particular world, and the self-confidence which only a "well-armed" athlete can have. By its use, differences in weight, height and reach are practically wiped out, so that he who knows, may smilingly face superior odds and conquer.

Devoid of their ancestral land and in the absence of a proper rehabilitation plan, those evicted wandered aimlessly around the cities—refugees by another name. Calcutta had assumed different dimensions in Malay’s mind. The smell of the Hooghly wafted across Victoria Memorial and settled like an unwanted cow on its lawns. Unsung symphonies spilled out of St Paul’s Cathedral on lonely nights; white gulls swooped in on grey afternoons and looked startling against the backdrop of the rain-swept edifice. In a few years, Naxalbari would become a reality, but not yet. Like an infant Kali with bohemian fantasies, Calcutta and its literature sprouted a new tongue – that of the Hungry Generation. Malay, like Samir and many others, found himself at the helm of this madness, and poetry seemed to lick his body and soul in strange colours. I determined that nothing could cheer me up, but in an instant my sour grapes were forgotten. I couldn’t believe my eyes when I first saw the calf with her mother standing over her proudly. Normally our calves are around seventy to ninety pounds. We weighed Mini, just to be sure. Full term and full of life…and only twenty pounds. As a precaution, Mini is spending the first few weeks of her life living in an insulated, heated room in the barn, breathing warm air and where her mother won’t accidentally squish her. Twice a day we carry her out to nurse the cow. She can just reach if she stands on her toes. Plus, we bottle-feed her periodically throughout the day and night.  We took pictures of Mini next to the cats, and they’re the same size! I told a friend that I don’t know why Mini is that size; all of the cow’s other calves were normal. “Every now and then,” she replied, “God sends us a present that will always make us smile.” She’s right. No matter what misery I’m dwelling on, whenever I see Mini, it all goes away and I can’t help but grin. There are times when I get caught up in negativity, Lord. Wolves have an amazing lack of interest in attacking people. Moose On the Loose Sandy Sisti My relationship with a moose cow and her calf began on May 21 when I stopped to photograph the pair. The calf was less than one day old. The moose cow had ventured to a secluded area to give birth. Her little calf was born on a small island in the middle of the Shoshone River, just twelve miles outside of Yellowstone’s East Entrance. Choosing such an isolated place isn’t unusual, since moose often give birth on islands in an effort to keep their helpless calves safe for the first few days of their lives. Unfortunately the extremely warm weather in 2014 caused the mountain snows to melt rapidly, flooding parts of the Shoshone River. While watching the pair, I couldn’t help but notice that the rising water was swallowing up their tiny island. Only a few bare patches were left where the moose could bed down. At the same time the flooding was stranding the cow and her newborn calf. The young fellow could barely stand and when he was able to get to his feet a few times a day to nurse, it was obviously quite an effort. I worried that this drama would end badly, so on that very first day I vowed to myself that I wouldn’t spend any more time with the cow and her calf for fear of the heartbreak I would feel if tragedy struck. I stuck to my vow for four days, although I would always quickly glance over at the mother and calf each time I drove past. The pair was stuck on a small bit of land far from the opposite shore. I couldn’t imagine how the little calf could ever make it across the rushing floodwaters to freedom and to an area where his mother could graze. For those first few days, the calf didn’t move much. He spent most of his time sleeping alongside his mother or standing to nurse as the river continued to rise. When the calf was five days old, I was surprised to see him up and about as I drove past on my way home from Yellowstone. Although he wasn’t yet steady on his feet, he was able to follow his mother around their island as she grazed. I spent six hours watching the pair that day and from that moment on I knew I could no longer keep my vow to not get emotionally involved. I grew attached to the little family and became very concerned that the calf would never be able to safely swim across the river to the mainland. That way there would not be access into the main cabin through the stream. There would be a door to the small room which could be locked from inside the cabin. With that decided I get to work building the small addition to the addition. That takes me a day and a half, then I dig the streambed into the addition. It loops into the room and also continues on the normal path that it always has. Miss Mary likes it because now when they want to bathe or do anything that takes water they do not have to go outside and carry the water back to the cabin. Miss Mary and Luke are really enjoying the milk. She got so excited about it that she and Luke took a ride over to the other farms to take them some. Martha Brown has a butter churn, but hasn’t had any use for it in quite a while. She lent it to Miss Mary so now she is going to make butter for all of them. I am continuing to keep up with the weeding and making sure that the crops get water when they need it. Luckily we have had enough rain to keep everything growing great. The newest crops that we planted are catching up with the original ones and should be ready to harvest in plenty of time before winter gets here. To make sure there are no problems over the cows and the calves that I brought in, I made a branding iron to Miss Mary’s specifications and branded all of them with it. All classes utilized these common property resources, but for poorer households they constituted the very margin of survival. In an outstanding study of a contemporary Gujarati village struggling with seasonality and drought, Martha Chen has shown how decisive nonmarket resources and entitlements remain for laborers and small farmers. "Standard definitions of work, worker and income," she writes, "do not capture how poor households generate livelihoods." In the village of Maatisar, (which she visited during the severe drought of 1985-87) fully 70 percent of the fuel and 55 percent of the fodder requirements of the poor are provided from free sources. The forest and pasture commons, which altogether generate thirty-five different useful products, "not only serve as a buffer against seasonal shortages, but also contribute to rural equity." The British consolidated their rule in India by transferring control of these strategic resources from the village community to the state. "Among all the interventions into village society that nurtured the Anglo-Indian empire," David Ludden argues, "dividing public from private land stands out as the most important." Labeling an animal mad was not only a way of explaining irrational anger, it also described creatures' strange behavior, aggression, or some other form of insanity, such as hysteria, melancholia, depression, or nostalgia. One small dog, for example, discovered with a pig on a shipwreck afloat in midocean in 1890 was said to have gone mad with loss. Animals could also go mad from a lifetime of abuse, such as Smiles, the Central Park rhinoceros, who reportedly did so in 1903. Maddened horses, as they were known, could simply take off running through Central Park or Williamsburg, Virginia, or anywhere at all, still attached to their carriages or dragging their riders behind, often with fatal consequences. Other horses, suffering from equine insanity, could, in a flash, turn on their grooms or riders and stomp them to death. Madness was also used to explain other seemingly bizarre animal actions. In 1909 Henry, the monkey mascot of a New Orleans baseball team, supposedly went mad when fans of the opposing team taunted him past his breaking point. He broke free from his cage at the stadium and climbed into the grandstand, creating a stampede and causing the game to be called in the seventh inning. As late as the 1920s and 1930s there were mad cats yowling in madder orgies, cows gone mad on the way to slaughter, at least one mad parrot, and some unruly Hollywood primates. In 1937, just a few months before forging an alliance with Hitler, Mussolini made international news when he was attacked by a mad ox during a parade to welcome him to Libya. During the last 200 years, industrial production methods became the mainstay of agriculture. Machines such as tractors began to undertake tasks that were previously performed by muscle power, or not performed at all. Fields and animals became vastly more productive thanks to artificial fertilisers, industrial insecticides and an entire arsenal of hormones and medications. Refrigerators, ships and aeroplanes have made it possible to store produce for months, and transport it quickly and cheaply to the other side of the world. Europeans began to dine on fresh Argentinian beef and Japanese sushi. Even plants and animals were mechanised. Around the time that Homo sapiens was elevated to divine status by humanist religions, farm animals stopped being viewed as living creatures that could feel pain and distress, and instead came to be treated as machines. Today these animals are often mass-produced in factory-like facilities, their bodies shaped in accordance with industrial needs. They pass their entire lives as cogs in a giant production line, and the length and quality of their existence is determined by the profits and losses of business corporations. Even when the industry takes care to keep them alive, reasonably healthy and well fed, it has no intrinsic interest in the animals' social and psychological needs (except when these have a direct impact on production). Egg-laying hens, for example, have a complex world of behavioural needs and drives. They feel strong urges to scout their environment, forage and peck around, determine social hierarchies, build nests and groom themselves. But the egg industry often locks the hens inside tiny coops, and it is not uncommon for it to squeeze four hens to a cage, each given a floor space of about 10 by 8.5 inches. The hens receive sufficient food, but they are unable to claim a territory, build a nest or engage in other natural activities. Indeed, the cage is so small that hens are often unable even to flap their wings or stand fully erect. Pigs are among the most intelligent and inquisitive of mammals, second perhaps only to the great apes. Yet industrialised pig farms routinely confine nursing sows inside such small crates that they are literally unable to turn around (not to mention walk or forage). The sows are kept in these crates day and night for four weeks after giving birth. Their offspring are then taken away to be fattened up and the sows are impregnated with the next litter of piglets. Many dairy cows live almost all their allotted years inside a small enclosure; standing, sitting and sleeping in their own urine and excrement. They receive their measure of food, hormones and medications from one set of machines, and get milked by another set of machines. The cow in the middle is treated as little more than a mouth that takes in raw materials and an udder that produces a commodity. Treating living creatures possessing complex emotional worlds as if they were machines is likely to cause them not only physical discomfort, but also much social stress and psychological frustration. Just as the Atlantic slave trade did not stem from hatred towards Africans, so the modern animal industry is not motivated by animosity. Again, it is fuelled by indifference. Most people who produce and consume eggs, milk and meat rarely stop to think about the fate of the chickens, cows or pigs whose flesh and emissions they are eating. Those who do think often argue that such animals are really little different from machines, devoid of sensations and emotions, incapable of suffering. Ironically, the same scientific disciplines which shape our milk machines and egg machines have lately demonstrated beyond reasonable doubt that mammals and birds have a complex and emotional make-up. They not only feel physical pain, but can also suffer from emotional distress.
