Following Homo sapiens, domesticated cattle, pigs and sheep are the second, third and fourth most widespread large mammals in the world. From a narrow evolutionary perspective, which measures success by the number of DNA copies, the Agricultural Revolution was a wonderful boon for chickens, cattle, pigs and sheep. Unfortunately, the evolutionary perspective is an incomplete measure of success. It judges everything by the criteria of survival and reproduction, with no regard for individual suffering and happiness. Domesticated chickens and cattle may well be an evolutionary success story, but they are also among the most miserable creatures that ever lived. The domestication of animals was founded on a series of brutal practices that only became crueller with the passing of the centuries. The natural lifespan of wild chickens is about seven to twelve years, and of cattle about twenty to twenty-five years. In the wild, most chickens and cattle died long before that, but they still had a fair chance of living for a respectable number of years. In contrast, the vast majority of domesticated chickens and cattle are slaughtered at the age of between a few weeks and a few months, because this has always been the optimal slaughtering age from an economic perspective. (Why keep feeding a cock for three years if it has already reached its maximum weight after three months?) Egg-laying hens, dairy cows and draught animals are sometimes allowed to live for many years. But the price is subjugation to a way of life completely alien to their urges and desires. It’s reasonable to assume, for example, that bulls prefer to spend their days wandering over open prairies in the company of other bulls and cows rather than pulling carts and ploughshares under the yoke of a whip-wielding ape. In order for humans to turn bulls, horses, donkeys and camels into obedient draught animals, their natural instincts and social ties had to be broken, their aggression and sexuality contained, and their freedom of movement curtailed. Farmers developed techniques such as locking animals inside pens and cages, bridling them in harnesses and leashes, training them with whips and cattle prods, and mutilating them. Much less obviously, the leavenings and lecithin, the mono-, di-, and triglycerides, the attractive gold coloring, and even the citric acid that keeps the nugget "fresh" can all be derived from corn. To wash down your chicken nuggets with virtually any soft drink in the supermarket is to have some corn with your corn. Since the 1980s virtually all the sodas and most of the fruit drinks sold in the supermarket have been sweetened with high-fructose corn syrup (HFCS) -- after water, corn sweetener is their principal ingredient. Grab a beer for you beverage instead and you'd still be drinking corn, in the form of alcohol fermented from glucose refined from corn. Read the ingredients on the label of any processed food and, provided you know the chemical names it travels under, corn is what you will find. And it implanted in them an even stronger desire to bond with their mothers, whose milk and care were essential for survival. What happens if farmers now take a young calf, separate her from her mother, put her in a closed cage, give her food, water and inoculations against diseases, and then, when she is old enough, inseminate her with bull sperm? From an objective perspective, this calf no longer needs either maternal bonding or playmates in order to survive and reproduce. But from a subjective perspective, the calf still feels a very strong urge to bond with her mother and to play with other calves. If these urges are not fulfilled, the calf suffers greatly. This is the basic lesson of evolutionary psychology: a need shaped in the wild continues to be felt subjectively even if it is no longer really necessary for survival and reproduction. The tragedy of industrial agriculture is that it takes great care of the objective needs of animals, while neglecting their subjective needs.

Consider the life of a pregnant sow. Her incredible fertility is the source of her particular hell. While a cow will give birth to only a single calf at a time, the modern factory sow will birth, nurse, and raise an average of nearly nine piglets — a number that has been increased annually by industry breeders. She will invariably be kept pregnant as much as possible, which will prove to be the majority of her life. When she is approaching her due date, drugs to induce labor may be administered to make the timing more convenient for the farmer. After her piglets are weaned, a hormone injection makes the sow rapidly “cycle” so that she will be ready to be artificially inseminated again in only three weeks. Four out of five times a sow will spend the sixteen weeks of her pregnancy confined in a “gestation crate” so small that she will not be able to turn around. Her bone density will decrease because of the lack of movement. She will be given no bedding and often will develop quarter-sized, blackened, pus-filled sores from chafing in the crate. (In one undercover investigation in Nebraska, pregnant pigs with multiple open sores on their faces, heads, shoulders, backs, and legs — some as large as a fist — were videotaped. A worker at the farm commented, “They all have sores. . . . There’s hardly a pig in there who doesn’t have a sore.”) More serious and pervasive is the suffering caused by boredom and isolation and the thwarting of the sow’s powerful urge to prepare for her coming piglets. In nature, she would spend much of her time before giving birth foraging and ultimately would build a nest of grass, leaves, or straw. To avoid excessive weight gain and to further reduce feed costs, the crated sow will be feed restricted and often hungry. Pigs also have an inborn tendency to use separate areas for sleeping and defecating that is totally thwarted in confinement. The pregnant pigs, like most all pigs in industrial systems, must lie or step in their excrement to force it through the slatted floor. The industry defends such confinement by arguing that it helps control and manage animals better, but the system makes good welfare practices more difficult because lame and diseased animals are almost impossible to identify when no animals are allowed to move.

I must come up with a more creative name. Angela sounds cool, but I don’t think you’ll like that. Come on, give me some time. I’m not used to coming up with awesome names on the fly! Yes, I got it! I’ll call you Moony, because I created you under a full moon. Of course, that’s such a perfect name! I am truly a genius. I wish people would start appreciating my intellect. Oh, right. The story, right, my bad. So Moony, when it all started, I was a miner. Yep, just like 70% of the people in Scotland. And it was a dull job, I have to say. Most of the times, I mined for coal and iron ore. Those two resources were in great need at my place, that’s why so many people were miners. Gandhi’s defence of the killing of the maimed cow brought upon him a further torrent of criticism. He received so many hostile letters that, in a rare resort to sarcasm, he said his critics ‘seem bent upon improving the finances of the Postal Department’. Most letters were ‘full of abuse’; they were ‘practising himsa in the name of ahimsa’. But one letter deserved a reply; this had suggested that Gandhi’s position might lend itself to an argument in favour of the selective assassination of tyrants and dictators. For, if ‘a man begins to oppress a whole people and there is no other way to stop his oppression’, then it would be ‘an act of ahimsa to rid society of his presence by putting him to death’. The correspondent added: ‘You say that there is no himsa in killing off animal pests that destroy a farmer’s crops; then why should it not be ahimsa to kill human pests that threaten society with destruction and worse?’ In response, Gandhi clarified that his definition of ahimsa did not in any way endorse manslaughter. The killing of the calf was undertaken for the sake of the animal itself. Recalling his earlier defence of killing monkeys that destroy crops, Gandhi noted that ‘society as yet knows of no means by which to effect a change of heart in the monkeys and their killing may therefore be pardonable, but there is no evil-doer or tyrant who can be considered beyond reform. In turn, the Hadza have become so used to visiting scientists that hosting the researchers who observe them has become a way to supplement their income. Sadly, visiting scientists who want to emphasize how much they are studying bona fide hunter-gatherers sometimes turn a blind eye to the degree to which the Hadza’s way of life is changing as a result of contact with the outside world. These papers rarely mention how many Hadza children now go to government schools, and how the Hadza’s territory is almost entirely shared with neighboring tribes of farmers and pastoralists, with whom they trade and whose cows tramp all over the region. As I write this, the Hadza don’t yet have cell phones, but they are not isolated as they once were. Despite these limitations, there is still much to learn from the Hadza, and I am fortunate to have visited them on a couple of occasions. But to get to the Hadza is not easy. They live in a ring of inhospitable hills surrounding a seasonal, salty lake in northwestern Tanzania—a hot, arid, sunbaked region that is almost impossible to farm.13 The area has some of the worst roads on the planet. Of the roughly twelve hundred Hadza, only about four hundred still predominantly hunt and gather, and to find these few, more traditional Hadza, you need sturdy jeeps, an experienced guide, and a lot of skill to travel over treacherous terrain. After a rainstorm, driving twenty miles can take most of the day. Many things surprised me when I first walked into a Hadza camp mid-morning on a torrid, sunny day in 2013, but I remember being especially struck by how everyone was apparently doing nothing. Hadza camps consist of a few temporary grass huts that blend in with the surrounding bushes. I didn’t realize I had walked into a camp until I found myself amid about fifteen Hadza men, women, and children who were sitting on the ground as shown in figure 2. The women and children were relaxing on one side, and the men on another. One fellow was straightening some arrows, and a few children were toddling about, but no one was engaged in any hard work. To be sure, the Hadza weren’t lounging on sofas, watching TV, munching potato chips, and sipping soda, but they were doing what so many health experts warn us to avoid: sitting.

I thought the Vedas were a load of humbug and it didn’t matter which way you recited them. Some jobless Brahmin like my father, created them thousands of years ago. Instead of making themselves useful, the Brahmins prayed to the Gods they themselves invented for the rain, the sun, horses, cows and money and many other things. It must have been very cold, from whichever cursed places they came. Otherwise, why would they croak like frogs and appeal to the Gods after putting hundreds of assorted twigs into the fire? Perhaps I was prejudiced. I shouldn’t think that the work they were doing, as Yajnas, was useless. In fact, it served as a perfect tool to mint money and gain material favours. They were no fools-these Brahmins. They knew how to project even the mundane tasks of burning twigs as earth-shaking, scientific discoveries and claimed to tame the forces that controlled the world. And it was funny that the majority of people like the carpenters, masons and farmers who were doing something meaningful, had become supplicant to these jokers croaking under the warm sun, sweat pouring from their faces in front of a raging fire and chanting God knows what. They had a Yajna or a Puja for everything under the sun. If you had leprosy or a common cold, there was a God to whom you had to offer a special puja to appease him. You wanted your pestering wife to elope with your bothersome neighbour, there was a puja for that too. You wanted your cow to have a calf or your wife to have son, the Brahmin would help you. He would just conduct a Puja and a divine calf or son would be born. You curried favour with the Brahmins and your son would become the biggest pundit in the world by the age of sixteen. If not, he would perhaps become rowdy like me, who did not respect Brahmins or rituals. He would become a Rakshasa. I think there are many more Rakshasas among us now. Perhaps, it was because the ‘why?’ virus spread. Couldn’t the Brahmins conduct a puja so that our heads were cleared of sinful thoughts? This is something I have to ponder over when I have time.

I LIVE IN A part of the country that at one time a good farmer could take some pleasure in looking at. When I first became aware of it, in the 1940s, the better land, at least, was generally well farmed. The farms were mostly small and were highly diversified, producing cattle, sheep, and hogs, tobacco, corn, and the small grains; nearly all the farmers milked a few cows for home use and to market milk or cream. Nearly every farm household maintained a garden, kept a flock of poultry, and fattened its own meat hogs. There was also an extensive “support system” for agriculture: Every community had its blacksmith shop, shops that repaired harness and machinery, and stores that dealt in farm equipment and supplies. Now the country is not well farmed, and driving through it has become a depressing experience. Some good small farmers remain, and their farms stand out in the landscape like jewels. But they are few and far between, and they are getting fewer every year. The buildings and other improvements of the old farming are everywhere in decay or have vanished altogether. The produce of the country is increasingly specialized. The small dairies are gone. Most of the sheep flocks are gone, and so are most of the enterprises of the old household economy. In the face of this vision, Powell put forth another. What was needed above all else, Powell believed, was to know the land, to understand the land, and to react accordingly. This had practical consequences: while a cow might properly graze on a half-acre in the lush East, it would require fifty times that amount of land in most of the West. It followed that the standard acreage of settlement should be different, and it followed that settlement should take into account sources of water. Powell’s goal with his survey was to clearly map out the western lands, to determine what land could be realistically used for agriculture, which meant also determining where irrigation dams should be placed for best effect. In other words, his goal, to use Wendell Berry’s phrase, was to think about “land use” and to do so on a massive scale. Specifically, Powell wanted to think out the uses of land that would be the most beneficial and fruitful for the human beings living there, and for the entire ecosystem (though that word did not yet exist). From the Mormons, Powell learned how “salutary co-operation could be as a way of life, how much less wasteful than competition.” In the late 1880s, Powell wrote a General Plan for land use in the West that “reached to embrace the related problems of land, water, erosion, floods, soil conservation, even the new one of hydroelectric power” that was based on “the settled belief in the worth of the small farmer and the necessity of protecting him both from speculators and from natural conditions he did not understand and could not combat.” It was a methodical, sensible, scientific approach, essentially a declaration of interdependence between the people and their land, and the miracle is that it came very close to passing into law. But of course it met with fierce opposition from those who stood to profit from exploitation, from the boosters and boomers and politicians who thought it “unpatriotic” to describe the West as dry. After all, how dare he call their garden a desert? What right did he have to come in and determine what only free individuals should? Powell was attacked in the papers, slandered in Congress. According to Stegner, Congressman Thomas M. Patterson of Colorado referred to Powell as “this revolutionist,” and the overall attack on Powell “distinguished itself for bombast and ignorance and bad faith.

That’s the reason for the zoning and why cows always have the right of way. The main street through the center of downtown is rightly known as the Promenade, and it is where many newly minted locals go show off their Ferraris and Bentleys and fur coats, while shopping for jewelry, watches, and more fur coats in the boutiques. Cheese making in the Alps is largely seasonal, and like many other mountain towns in Switzerland, the cows have to pass through town when they come down from the mountains in the fall and return in the spring.
