In his history of biology, Ernst Mayr showed that many biologists originally rejected the theory of natural selection because of their belief that a species was a pure type defined by an essence. They could not wrap their minds around the concept that species are populations of variable individuals and that one can blend into another over evolutionary time.36 In this context, the fear of genetically modified foods no longer seems so strange: it is simply the standard human intuition that every living thing has an essence. Natural foods are thought to have the pure essence of the plant or animal and to carry with them the rejuvenating powers of the pastoral environment in which they grew. Genetically modified foods, or foods containing artificial additives, are thought of as being deliberately laced with a contaminant tainted by its origins in an acrid laboratory or factory. Arguments that invoke genetics, biochemistry, evolution, and risk analysis are likely to fall on deaf ears when pitted against this deep-rooted way of thinking.

The various seafood guides usually rank farmed fish based on safety for consumers as well as on environmental impacts. Currently, it’s really hard to find out where or how animals were raised, what they have consumed that you don’t want to have as a part of you, or how long they have been sitting in storage, accumulating things you also do not want to have as a part of you. What most guides do not tell you is whether the fish are plant-eaters or carnivores, nor do you learn their likely age, and these things matter a lot for two reasons. The higher up the food chain, and the older the animal, the greater the concentration of contaminants: tuna, shark, swordfish, halibut, and in fact, most of the fish in the counter fit into this category. It takes a much greater investment from the ecosystem, pound for pound, to make a ten-year-old fish-eating tuna than a one-year-old plant-eating catfish. For those who want to eat low on the food chain with lowest risk of contaminants, farmed catfish, tilapia, carp, and certain mollusks are the best choices, but even so, it makes a difference where and how they were raised.

This nostalgic impulse is of course extremely powerful, and has recently been harnessed to great effect by reactionary and fascist political movements, but I’m not convinced that this means the impulse itself is intrinsically fascistic. I think it makes sense that people are looking back wistfully to a time before the natural world started dying, before our shared cultural forms degraded into mass marketing and before our cities and towns became anonymous employment hubs.

DENGUE FEVER (BREAKBONE FEVER) Dengue fever is a viral infection found throughout Central America. In Costa Rica outbreaks involving thousands of people occur every year. Dengue is transmitted by aedes mosquitoes, which often bite during the daytime and are usually found close to human habitations, often indoors. They breed primarily in artificial water containers such as jars, barrels, cans, plastic containers and discarded tires. Dengue is especially common in densely populated, urban environments. Dengue usually causes flulike symptoms including fever, muscle aches, joint pains, headaches, nausea and vomiting, often followed by a rash. Most cases resolve uneventfully in a few days. Severe cases usually occur in children under the age of 15 who are experiencing their second dengue infection. There is no treatment for dengue fever except taking analgesics such as acetaminophen/paracetamol (Tylenol) and drinking plenty of fluids. Severe cases may require hospitalization for intravenous fluids and supportive care. There is no vaccine. The key to prevention is taking insect-protection measures. HEPATITIS A Hepatitis A is the second-most-common travel-related infection (after traveler’s diarrhea). It’s a viral infection of the liver that is usually acquired by ingestion of contaminated water, food or ice, though it may also be acquired by direct contact with infected persons. Symptoms may include fever, malaise, jaundice, nausea, vomiting and abdominal pain. Most cases resolve without complications, though hepatitis A occasionally causes severe liver damage. There is no treatment. The vaccine for hepatitis A is extremely safe and highly effective. You should get vaccinated before you go to Costa Rica. Because the safety of hepatitis A vaccine has not been established for pregnant women or children under the age of two, they should instead be given a gammaglobulin injection. Most cases occur in newly cleared forest or areas of secondary growth. The highest incidence is in Puerto Viejo de Talamanca. It causes slow-growing ulcers over exposed parts of the body There is no vaccine. RABIES Rabies is a viral infection of the brain and spinal cord that is almost always fatal. The rabies virus is carried in the saliva of infected animals and is typically transmitted through an animal bite, though contamination of any break in the skin with infected saliva may result in rabies. Rabies occurs in all Central American countries. However, in Costa Rica only two cases have been reported over the last 30 years. TYPHOID Typhoid fever is caused by ingestion of food or water contaminated by a species of salmonella known as Salmonella typhi . Fever occurs in virtually all cases. Food aversion is similarly transmitted. This was first noticed by a German rodent-control officer who set out poisoned bait, killing wild rats in large numbers. At the heart of the Denver-based company’s crisis was the ever-present problem faced by companies that depend on multiple outside suppliers to deliver parts and ingredients: a lack of transparency and accountability across complex supply chains. Many Chipotle patrons probably assumed the outbreak stemmed from poor practices at one of the chain’s restaurants or facilities. But, as painful as that would be for the company’s reputation, the reality was actually worse: Chipotle had no way to pinpoint where the dangerous virus got into its food offerings; it only knew that it came from one of its many third-party beef suppliers. Five months later, the best management could come up with was that it “most likely” came from contaminated Australian beef. At the heart of the problem was the lack of visibility that Chipotle—like any food provider—has over the global supply chain of ingredients that flow into its operations. The subject matter of the issues governed by such norms shows a fairly clear affinity with the subject matter regulated by disgust, and the defining contrast between purity, on the one hand, and dirt and contamination, on the other, further implicates the emotion. The Co-opt thesis holds that disgust will provide the motivation for individuals to comply with purity norms that they have acquired, and that disgust also shapes the punitive motivations that are directed at violators. Yes, microplastics can come from degrading plastics, no matter what their shape or form. Micro plastics in the bloodstream would be most likely to come from ingestion; that is either by eating or drinking contaminated products as it then becomes easier to enter the bloodstream. Other microplastics would enter the body by inhalation when we breathe. In general, most of the microplastics, in the body, are the PET type (polyethylene terephthalate) which comes from drink bottles, food containers and food wrapping. So we need to be more careful and stringent. If not, then we run the risk of truly becoming a plastic society.

The recommended daily intake of iodine is 150 mcg, which is what is in about two sheets of nori,31 the seaweed that’s used to make sushi. There are all sorts of seaweed snacks on the market now, but most, if not all of them, seem to have added red-light ingredients. So I buy plain nori and season the sheets myself by brushing them with jarred pickled ginger juice and lightly sprinkling on wasabi powder before recrisping them at 300°F for about five minutes. Sprinkling just a half teaspoon of the seaweeds arame or dulse onto dishes you’re preparing may also get you your iodine for the day. Dulse is sold as pretty purple flakes you can just shake onto your food. I do caution against hijiki32 (also spelled hiziki), because it has been found to be contaminated with arsenic. I also caution against kelp, which may have too much iodine; just a half teaspoon of kelp could exceed the daily upper limit. For the same reason, you shouldn’t get into a regular habit of eating more than fifteen sheets of nori or more than a tablespoon of arame or dulse a day.33 Too much iodine can cause excessive thyroid gland activity.34

If the emotion of disgust is an evolved defense against disease, several predictions follow. One is that disgust should be evoked most strongly by disease-carrying substances. The second is that these disgust elicitors should be universal across cultures. Empirical research supports both predictions (Curtis & Biran, 2001). People from cultures ranging from the Netherlands to West Africa find foods potentially contaminated by parasites or unhygienic preparation to be exceptionally disgusting. Examples are rotting flesh, dirty food, bad-smelling food, food leftovers, moldy food, a dead insect in food, and witnessing food preparation by someone with dirty hands. Foods that have had contact with worms, cockroaches, or feces evoke especially strong disgust reactions. A third prediction is that the disgust should activate the immune system. A fourth prediction is that the people should show an especially good memory for objects that have been touched by sick or diseased individuals—a prediction supported in studies conducted in both Portugal and the United States (Fernandez, Pandeirada, Soares, & Nairne, 2017).

Almost two hundred years ago, during the War of 2062, back when the world was inhabited exclusively by humans, a war between North American Countries and Middle Eastern countries arose.  It began over religious reasons, though I have no idea what the word religious even means just that whatever was inherent in their opposing beliefs led to the Middle Eastern people creating powerful weapons that no one had ever seen or heard of at the time.  Biological weapons they were called, and they were unleashed on North America.  The name of the weapon was evictium.  It warped the mind as well as the body and drove everyone mad.  The North Americans retaliated by launching nuclear weapons, which destroyed the rest of the world.  The only survivors were those who had something called money.  Back then, money was equated to power and value.  The more one had, the more value he held in society and the more power he had.  Those who had money were able to flee to large underground shelters that had been built.  Hundreds of underground shelters existed around North America that held hundreds of people with enough supplies to last twenty years.  When the supplies ran out, those who lived below ground feared that radiation, an after effect of the nuclear blast that made living things ill and caused death over time, would affect them and had affected any source of food above ground.  They soon learned radiation was the least of their concerns.  What waited for them at the surface was far, far worse.  Those who’d been exposed to evictium survived the nuclear blast.  However, the radiation that remained in the atmosphere and contaminated the food supply reacted with the evictium.  It created monstrous, demented beings, bloodthirsty and filled with rage.  When the inhabitants of the underground shelters returned to the world above, they were met by what we now know as Urthmen.  The Urthmen slaughtered them.  Very few managed to escape.  They fled to the forest and hid deep within it.  They were our ancestors.  Almost two hundred years later, the offspring of those warped creatures that waited at the surface are the ones that rule the Urth today.  They’ve evolved, however.  They’re no longer as demented and wild as their predecessors.  But they are far from civilized, and they no longer retain a shred of humanity.  They hate us in a way that is as much as part of them as breathing.  It’s instinctive.  And these creatures rule the only inhabitable section of the planet we know of: North America.

Hemagglutinin promotes unhealthy blood clotting and blocks oxygen. Goitrogens prevent iodine from reaching the thyroid. Without iodine, the thyroid can enlarge and malfunction. Phytic acid blocks the body's absorption of essential minerals like calcium and magnesium. 2. It has lots of phytoestrogens, which do damage by mimicking estrogen inside the body. 3. It contains lysinoalanine, a known toxin, and nitrosamines, which are known carcinogens. 4. It has harmful levels of the mineral manganese and dangerous amounts of aluminum from being processed in aluminum containers. 5. It has a high risk of contamination with mycotoxins. 6. It is almost always genetically modified. As you can see, soy has pretty much everything going against it. Fortunately, it's easy to avoid processed soy in the United States because it must be listed as an ingredient on product labels. Most soy in Asian cuisine is different because it's been fermented. Fermentation greatly decreases the antinutrient and phytic acid levels. Fermented soy products include tempeh, miso, and natto. Most of these products are still highly processed and artificial, though, and soy sauce naturally contains MSG. To avoid GMO soy, make sure that any fermented soy product you eat is organic, or better yet just don't eat it at all. Even in areas of the world like Asia where fermented soy is common, people actually don't eat much of it. A 1998 study found that Japanese men eat only about eight grams of soy per day (a teaspoon or two). The average misguided American consumes far more than this when he drinks a glass of soy milk or eats a soy burger (and these soy products aren't even fermented).
