To the Saints themselves, the true Mormon heartland is here in Provo and surrounding Utah County--the site of chaste little towns like Highland, American Fork, Orem, Payson and Salem--where the population is nearly 90 percent LDS. The Sabbath is taken seriously in these parts. Almost all businesses close on Sundays, as do public swimming pools, even on the hottest days of the summer months. This part of the state is demographically notable in other aspects, as well. The LDS Church forbids abortions, frowns on contraception, and teaches that Mormon couples have a sacred duty to give birth to as many children as they can support--which goes a long way toward explaining why Utah County has the highest birth rate in the United States; it is higher, in fact, than the birth rate in Bangladesh. This also happens to be the most Republican county in the most Republican state in the nation. Not coincidentally, Utah County is a stronghold not only of Mormonism but also Mormon Fundamentalism.

A while back a young woman from another state came to live with some of her relatives in the Salt Lake City area for a few weeks. On her first Sunday she came to church dressed in a simple, nice blouse and knee-length skirt set off with a light, button-up sweater. She wore hose and dress shoes, and her hair was combed simply but with care. Her overall appearance created an impression of youthful grace. Unfortunately, she immediately felt out of place. It seemed like all the other young women her age or near her age were dressed in casual skirts, some rather distant from the knee; tight T-shirt-like tops that barely met the top of their skirts at the waist (some bare instead of barely); no socks or stockings; and clunky sneakers or flip-flops. One would have hoped that seeing the new girl, the other girls would have realized how inappropriate their manner of dress was for a chapel and for the Sabbath day and immediately changed for the better. Sad to say, however, they did not, and it was the visitor who, in order to fit in, adopted the fashion (if you can call it that) of her host ward. It is troubling to see this growing trend that is not limited to young women but extends to older women, to men, and to young men as well. . . . I was shocked to see what the people of this other congregation wore to church. There was not a suit or tie among the men. They appeared to have come from or to be on their way to the golf course. It was hard to spot a woman wearing a dress or anything other than very casual pants or even shorts. Had I not known that they were coming to the school for church meetings, I would have assumed that there was some kind of sporting event taking place. The dress of our ward members compared very favorably to this bad example, but I am beginning to think that we are no longer quite so different as more and more we seem to slide toward that lower standard. We used to use the phrase “Sunday best.” People understood that to mean the nicest clothes they had. The specific clothing would vary according to different cultures and economic circumstances, but it would be their best. It is an affront to God to come into His house, especially on His holy day, not groomed and dressed in the most careful and modest manner that our circumstances permit. Where a poor member from the hills of Peru must ford a river to get to church, the Lord surely will not be offended by the stain of muddy water on his white shirt. But how can God not be pained at the sight of one who, with all the clothes he needs and more and with easy access to the chapel, nevertheless appears in church in rumpled cargo pants and a T-shirt? Ironically, it has been my experience as I travel around the world that members of the Church with the least means somehow find a way to arrive at Sabbath meetings neatly dressed in clean, nice clothes, the best they have, while those who have more than enough are the ones who may appear in casual, even slovenly clothing. Some say dress and hair don’t matter—it’s what’s inside that counts. I believe that truly it is what’s inside a person that counts, but that’s what worries me. Casual dress at holy places and events is a message about what is inside a person. It may be pride or rebellion or something else, but at a minimum it says, “I don’t get it. I don’t understand the difference between the sacred and the profane.” In that condition they are easily drawn away from the Lord. They do not appreciate the value of what they have. I worry about them. Unless they can gain some understanding and capture some feeling for sacred things, they are at risk of eventually losing all that matters most. You are Saints of the great latter-day dispensation—look the part.

The bus trip from Denver to Frisco was uneventful except that my whole soul leaped to it the nearer we got to Frisco. Cheyenne again, in the afternoon this time, and then west over the range; crossing the Divide at midnight at Creston, arriving at Salt Lake City at dawn—a city of sprinklers, the least likely place for Dean to have been born; then out to Nevada in the hot sun, Reno by nightfall, its twinkling Chinese streets; then up the Sierra Nevada, pines, stars, mountain lodges signifying Frisco romances—a little girl in the back seat, crying to her mother, “Mama when do we get home to Truckee?” And Truckee itself, homey Truckee, and then down the hill to the flats of Sacramento. I suddenly realized I was in California. Warm, palmy air—air you can kiss—and palms. Along the storied Sacramento River on a superhighway; into the hills again; up, down; and suddenly the vast expanse of a bay (it was just before dawn) with the sleepy lights of Frisco festooned across.

I found Chinatown both impossibly sophisticated and unbearably out of vogue. Chinese restaurants were a guilty pleasure of mine. I loved how they evoked the living world- either the Walden-like sense of individualism of the Ocean or Happy Garden, or something more candid ("Yummies!"). Back home they had been a preserve of birthdays and special celebrations: a lazy Susan packed with ribs and Peking duck, rhapsodically spun to the sound of Fleetwood Mac or the Police, with banana fritters drenched in syrup and a round of flowering tea to finish. It felt as cosmopolitan a dining experience as I would ever encounter. Contextualized amid the big-city landscape of politicized microbreweries and sushi, a hearty table of MSG and marinated pork felt at best crass, at worst obscurely racist. But there was something about the gloop and the sugar that I couldn't resist. And Chinatown was peculiarly untouched by my contemporaries, so I could happily nibble at plates of salt and chili squid or crispy Szechuan beef while leafing through pages of a magazine in peace.

He got out of his car, started jumping around and screaming like he won the Super Bowl, did this for 20 solid minutes, then started swigging whiskey and shooting at things while whooping it up. Eventually, he drank the entire bottle, got back into his car and just started happily ramming into trees until the car stopped moving. Then he passed out in the driver's seat, woke up the next morning and walked home. Anyway, my answer is Jack Nicklaus.

The gods in Lankhmar (that is, the gods and candidates for divinity who dwell or camp, it may be said, in the Imperishable City, not the gods of Lankhmar—a very different and most secret and dire matter)… the gods in Lankhmar sometimes seem as if they must be as numberless as the grains of sand in the Great Eastern Desert. The vast majority of them began as men, or more strictly the memories of men who led ascetic, vision-haunted lives and died painful, messy deaths. One gets the impression that since the beginning of time an unending horde of their priests and apostles (or even the gods themselves, it makes little difference) have been crippling across that same desert, the Sinking Land, and the Great Salt Marsh to converge on Lankhmar's low, heavy-arched Marsh Gate—meanwhile suffering by the way various inevitable tortures, castrations, bindings and stonings, impalements, crucifixions, quarterings and so forth at the hands of eastern brigands and Mingol unbelievers who, one is tempted to think, were created solely for the purpose of seeing to the running of that cruel gauntlet.

Flour on the floor makes my sandals slip and I tumble into your arms. Too hot to bake this morning but blueberries begged me to fold them into moist muffins. Sticks of rhubarb plotted a whole pie. The windows are blown open and a thickfruit tang sneaks through the wire screen and into the home of the scowly lady who lives next door. Yesterday, a man in the city was rescued from his apartment which was filled with a thousand rats. Something about being angry because his pet python refused to eat. He let the bloom of fur rise, rise over the little gnarly blue rug, over the coffee table, the kitchen countertops and pip through each cabinet, snip at the stumpy bags of sugar, the cylinders of salt. Our kitchen is a riot of pots, wooden spoons, melted butter. So be it. Maybe all this baking will quiet the angry voices next door, if only for a brief whiff. I want our summers to always be like this—a kitchen wrecked with love, a table overflowing with baked goods warming the already warm air. After all the pots are stacked, the goodies cooled, and all the counters wiped clean—let us never be rescued from this mess.

Old Hubert must have had a premonition of his squalid demise. In October he said to me, ‘Forty-two years I’ve had this place. I’d really like to go back home, but I ain’t got the energy since my old girl died. And I can’t sell it the way it is now. But anyway before I hang my hat up I’d be curious to know what’s in that third cellar of mine.’ The third cellar has been walled up by order of the civil defence authorities after the floods of 1910. A double barrier of cemented bricks prevents the rising waters from invading the upper floors when flooding occurs. In the event of storms or blocked drains, the cellar acts as a regulatory overflow. The weather was fine: no risk of drowning or any sudden emergency. There were five of us: Hubert, Gerard the painter, two regulars and myself. Old Marteau, the local builder, was upstairs with his gear, ready to repair the damage. We made a hole. Our exploration took us sixty metres down a laboriously-faced vaulted corridor (it must have been an old thoroughfare). We were wading through a disgusting sludge. At the far end, an impassable barrier of iron bars. The corridor continued beyond it, plunging downwards. In short, it was a kind of drain-trap. That’s all. Nothing else. Disappointed, we retraced our steps. Old Hubert scanned the walls with his electric torch. Look! An opening. No, an alcove, with some wooden object that looks like a black statuette. I pick the thing up: it’s easily removable. I stick it under my arm. I told Hubert, ‘It’s of no interest. . .’ and kept this treasure for myself. I gazed at it for hours on end, in private. So my deductions, my hunches were not mistaken: the Bièvre-Seine confluence was once the site where sorcerers and satanists must surely have gathered. And this kind of primitive magic, which the blacks of Central Africa practise today, was known here several centuries ago. The statuette had miraculously survived the onslaught of time: the well-known virtues of the waters of the Bièvre, so rich in tannin, had protected the wood from rotting, actually hardened, almost fossilized it. The object answered a purpose that was anything but aesthetic. Crudely carved, probably from heart of oak. The legs were slightly set apart, the arms detached from the body. No indication of gender. Four nails set in a triangle were planted in its chest. Two of them, corroded with rust, broke off at the wood’s surface all on their own. There was a spike sunk in each eye. The skull, like a salt cellar, had twenty-four holes in which little tufts of brown hair had been planted, fixed in place with wax, of which there were still some vestiges. I’ve kept quiet about my find. I’m biding my time.

At this point, the sequence of my memories is disrupted. I sank into a chaos of brief, incoherent and bizarre hallucinations, in which the grotesque and the horrible kept close company. A whole series of monsters and avatars swarmed in the shadows, coming to life amid draughts of sulphur and phosphorus like an animated fresco painted on the moving wall of sleep. There followed a turbulent race through space. I soared, grasped by the hair by an invisible hand of will: an icy and powerful hand, in which I felt the hardness of precious stones, and which I sensed to be the hand of Ethal. Dizziness was piled upon dizziness in that flight to the abyss, under skies the colour of camphor and salt, skies whose nocturnal brilliance had a terrible limpidity. I was spun around and around, in bewildering confusion, above deserts and rivers. Great expanses of sand stretched into the distance, mottled here and there by monumental shadows. At times we would pass over cities: sleeping cities with obelisks and cupolas shining milk-white in the moonlight, between metallic palm-trees. In the extreme distance, amid bamboos and flowering mangroves, luminous millennial pagodas descended towards the water on stepped terraces.

He spent the morning at the beach. He had no idea which one, just some open stretch of coastline reaching out to the sea. An unbroken mantle of soft grey clouds was sitting low over the water. Only on the horizon was there a glimmer of light, a faint blue band of promise. The beach was deserted, not another soul on the vast, wide expanse of sand that stretched out in front of him. Having come from the city, it never ceased to amaze Jejeune that you could be that alone in the world. He walked along the beach, feeling the satisfying softness as the sand gave way beneath his slow deliberate strides. He ventured as close to the tide line as he dared, the white noise of the waves breaking on the shingles. A set of paw prints ran along the sand, with an unbroken line in between. A small dog, dragging a stick in its mouth. Always the detective, even if, these days, he wasn’t a very good one. Jejeune’s path became blocked by a narrow tidal creek carrying its silty cargo out to the sea. On each side of it were shallow lagoons and rock pools. When the tide washed in they would teem with new life, but at the moment they looked barren and empty. Jejeune looked inland, back to where the dark smudge of Corsican pines marked the edge of the coast road. He traced the creek’s sinuous course back to where it emerged from a tidal salt flat, and watched the water for a long time as it eddied and churned, meeting the incoming tide in an erotic swirl of water, the fresh intermingling with the salty in a turbulent, roiling dance, until it was no longer possible to tell one from the other. He looked out at the sea, at the motion, the color, the light. A Black-headed Gull swooped in and settled on a piece of driftwood a few feet away. Picture complete, thought Jejeune. For him, a landscape by itself, no matter how beautiful, seemed an empty thing. It needed a flicker of life, a tiny quiver of existence, to validate it, to confirm that other living things found a home here, too. Side by side, they looked out over the sea, the man and the bird, two beating hearts in this otherwise empty landscape, with no connection beyond their desire to be here, at this time. Was it the birds that attracted him to places like this, he wondered, or the solitude, the absence of demands, of expectations? But if Jejeune was unsure of his own motives, he knew this bird would have a purpose in being here. Nature always had her reasons. He chanced a sidelong glance at the bird, now settled to his presence. It had already completed its summer molt, crisp clean feathers having replaced the ones abraded by the harsh demands of eking out a living on this wild, windswept coastline. The gull stayed for a long moment, allowing Jejeune to rest his eyes softly, unthreateningly, upon it. And then, as if deciding it had allowed him enough time to appreciate its beauty, the bird spread its wings and effortlessly lifted off, wheeling on the invisible air currents, drifting away over the sea toward the horizon. p. 282-3

My first example concerns Satan’s efforts to corrupt a person who has an unusual commitment to one particular doctrine or commandment of the gospel of Jesus Christ. This could be an unusual talent for family history work, an extraordinary commitment to constitutional government, a special gift in the acquisition of knowledge, or any other special talent or commitment. In a memorable message given at the 1971 October conference, Elder Boyd K. Packer likened the fulness of the gospel to a piano keyboard. He reminded us that a person could be “attracted by a single key,” such as a doctrine they want to hear “played over and over again.” He explained: Some members of the Church who should know better pick out a hobby key or two and tap them incessantly, to the irritation of those around them. They can dull their own spiritual sensitivities. They lose track that there is a fulness of the gospel, . . . [which they reject] in preference to a favorite note. This becomes exaggerated and distorted, leading them away into apostasy. [Boyd K. Packer, Teach Ye Diligently (Salt Lake City: Bookcraft, 1975), p. 44] We could say of such persons, as the Lord said of the members of the Shaker sect in a revelation given in 1831, “Behold, I say unto you, that they desire to know the truth in part, but not all” (D&C 49:2). And so, I say, beware of a hobby key. If you tap one key to the exclusion or serious detriment of the full harmony of the gospel keyboard, Satan can use your strength to bring you down.

Women are replaced by water, by wind, by the ocean, shifting and treacherous; a man has to know what to do, to navigate, to sail, to bail, so reach for the How-To book, and out here it’s what he said to him, or didn’t say, a narrowing of the eyes, sizing the bastard up before the pounce, the knife to the gut, and here comes a wave, hang on to the shrouds, all teeth grit, all muscles bulge together. Or sneaking along the gangway, the passageway, the right of way, the Milky Way, in the dark, your eyes shining like digital wristwatches, and the bushes, barrels, scuppers, ditches, filthy with enemies, and you on the prowl for adrenalin and loot. Dennis Tueller, a Salt Lake City police officer and firearms instructor (since retired), asked just this question.  Uniformed officers are routinely faced with impact weapon bearing suspects.  So it’s natural for Tueller to wonder how far away a suspect can be and still use an impact weapon against an officer before he could defend himself. To answer his question, Tueller ran a bunch of empirical studies.  Which is just a fancy way of saying he ran a bunch of students through the exercise that would later become the Tueller Drill. Tueller learned that most officers can get a service pistol out of a holster and engage a threat with center-mass hits within 1.5 seconds.  So the question then becomes, how much distance can a bad guy cross in 1.5 seconds?  Timing a great many students running from a standing start, Tueller learned that someone can go about 21 feet in 1.5 seconds.  So 21 feet became the “Tueller distance,” or the maximum distance from a police officer a person can use an impact weapon against the officer before the officer can shoot them.  The Tueller Drill is often referred to as the “21 foot rule,” or the “7 yard rule.”  This really obscures the real take-home message of the Tueller Drill.  The value is not some particular distance.  What matters is your “Tueller distance.” People’s draw speeds vary.  Your Tueller distance will be greater or less than 21 feet depending on your ability to get the gun unholstered and pointed center-mass. The real lesson of the Tueller Drill is that someone armed with an impact weapon has the opportunity to use it at a far greater distance than most think—and certainly much greater distances than a juror might have otherwise thought.  If you imagine the length of typical American parking space, and add another three paces, you’ll be right about at 21 feet.

To achieve authentic, sustained happiness, above all else you need to be in charge of your life, to be in control of who you want to be, and be able to make the appropriate changes if you are not. This cannot merely be a perception, a slogan like the American Dream (the United States came way down on the LSE's social mobility scale, incidentally). In Scandinavia it is a reality. These are the real lands of opportunity. There is far greater social mobility in the Nordic countries than in the United States or Britain and, for all the collectivism and state interference in the lives of the people who live here, there is far greater freedom to be the person you want to be, and do the things you want to do, up here in the north. In a recent poll by Gallup, only 5 percent of Danes said they could not change their lives if they wanted to. In contrast, I can think of many American states in which it would probably be quite an uncomfortable experience to declare yourself an atheist, for example or gay, or to be married yet choose not to have children, or to be unmarried and have children, or to have an abortion, or to raise your children as Muslims. Less significantly, but still limiting, I don't imagine it would be easy being vegetarian in Texas, for instance, or a wine buff in Salt Lake City, come to that. And don't even think of coming out as a socialist anywhere! In Scandinavia you can be all of these things and no one will bat an eye (as long as you wait and cross on green). Crucial to this social mobility are the schools. Drop by slightly rounded tablespoons onto ungreased baking sheets. Bake for 10 to 12 minutes at 375 or until lightly browned. Cool on baking sheets for 2 minutes. Remove to wire racks to cool completely.

Later he announces he has been enabled by God’s Spirit to translate them. They tell the story of a group of Mormons who migrated to the Yukon in the late nineteenth century and who mingled with the Inuit there until they were all killed off except for one who had buried these tiles with their story engraved on them. Later God reveals to this young man extensive instructions for the founding of a new group restoring the original Mormonism of Joseph Smith, which had begun to be corrupted by Brigham Young, lost its moorings considerably in the mid-twentieth century, was reformed and improved by LDS church president Ezra Taft Benson but still needs a full restoration. After all, Joseph Smith died before he could pass on his authority to his divinely ordained successor, so no existing Mormons have true priesthood authority. The Salt Lake City-based Mormons, the rural Utah fundamentalist Mormons, and the Community of Christ (formerly the Reorganized Church of Jesus Christ of Latter-day Saints) are all illegitimate, and it is time to restore original Mormonism under the leadership of this upstart young man. Anyone who wants to be in God’s best graces has to be baptized into the new church this man is organizing, which is to be called the Restored Church of our Holy Lord Jesus Christ of Last-day Disciples. Existing Mormon baptisms are not good enough for membership in his church. Indeed, this new Restored Church is the one true church on the entire planet. At the same time, it wants to call itself Mormon and be treated as fully Mormon by the Quorum of the Twelve and the First Presidency in Salt Lake City, by all the renegade fundamentalist Mormons, and by the Community of Christ. What is the likelihood that anyone in these three groups would agree? Yet that is very close to how the rest of Christendom perceives, rightly or wrongly, the desires of the Church of Jesus Christ of Latter-day Saints.

So at about the same age that I started whipping up Oreo blizzards for my illustrious career at Dairy Queen, Pierre began his in the French pastry world. After five years at Lenôtre, at the spry age of nineteen, he became the head pastry chef. If you've ever seen the billowy white gâteaux or structurally perfect strawberry tarts from this Parisian landmark, you know how impressive this is. Later, he moved on to Fauchon, another top marque in the French pastry world, where he caught the world's attention with his Cherry on the Cake, a towering creation of hazelnut dacquoise, milk chocolate ganache, milk chocolate Chantilly cream, milk chocolate shavings, crushed wafers, and a bright red candied cherry- phew! complete with stem- on top. This was an important revelation for two reasons: its artistry and the unexpected flavors. Unveiling this cake is a ritual, and if there's one thing I'd learned, it's that the French like their rituals. The more dramatic, the better. Untying the satin bow at the top of the cake's tall, triangular box allows the sides to fall away, revealing the gleaming cherry and six gold-leaf markings down the side, which indicate where to slice to serve the six perfect portions. With this cake, Pierre proved he was wildly creative, yet precise and thoughtful; a hedonist, but a hedonist with a little restraint and a lot of skill. Just as with its design, the flavor of the Cherry on the Cake left the French gasping. While they're typically dark and bittersweet chocolate devotees, this cake is all milk chocolate. Pierre took a risk that his budding fan base would fall for the milk chocolate and not think him sacrilegious for eschewing the dark. Same thing with flavors like lychee, rose, and salted caramel, which are common these days, but were out there when Pierre introduced them to his macarons and cakes in the early days.

The recipe came when she was roasting potatoes early on in her career and thought they were too bland. She didn't want to just keep adding salt so instead she reached for the mustard, which her mom always used on fries. "It just was everything," she says of the tangy, vinegary flavor the French condiment lent to her spuds. Along with the new potatoes, mustard, and herbs de Provence, she uses whole jacket garlic cloves in the roasting pan. It's a simple recipe that's also "a Zen exercise," as the potatoes have to be continuously turned every fifteen minutes to get them hard and crispy on the outside and soft and billowy on the inside.

BEHIND THE WALL The Berlin Wall fell on November 9, 1989, twenty-five years ago this month, but the first attempts to breach it came immediately after it went up, just past midnight on August 13, 1961. The East German regime had been secretly stockpiling barbed wire and wooden sawhorses, which the police, who learned of their mission only that night, hastily assembled into a barrier. For many Berliners, the first sign that a historic turn had been taken was when the U-Bahn, the city’s subway, stopped running on certain routes, leaving late-night passengers to walk home through streets that were suddenly filled with soldiers. As realization set in, so did a sense of panic. By noon the next day, as Ann Tusa recounts in “The Last Division,” people were trying to pull down the barbed wire with their hands. Some succeeded, in scattered places, and a car drove through a section of the Wall to the other side. In the following weeks, the authorities began reinforcing it. Within a year, the Wall was nearly eight feet high, with patrols and the beginnings of a no man’s land. But it still wasn’t too tall for a person to scale, and on August 17, 1962, Peter Fechter, who was eighteen years old, and his friend Helmut Kulbeik decided to try. They picked a spot on Zimmerstrasse, near the American Checkpoint Charlie, and just after two o’clock in the afternoon they made a run for it. Kulbeik got over, but Fechter was shot by a guard, and fell to the ground. He was easily visible from the West; there are photographs of him, taken as he lay calling for help. Hundreds of people gathered on the Western side, shouting for someone to save him. The East German police didn’t want to, and the Americans had been told that if they crossed the border they might start a war. Someone tossed a first-aid kit over the Wall, but Fechter was too weak to pick it up. After an hour, he bled to death. Riots broke out in West Berlin, and many asked angrily why the Americans had let Fechter die. He was hardly more than a child, and he wanted to be a free man. It’s a fair question, though one can imagine actions taken that day which could have led to a broader confrontation. It was not a moment to risk grand gestures; Fechter died two months before the Cuban missile crisis. (When the Wall went up, John F. Kennedy told his aides that it was “not a very nice solution, but a wall is a hell of a lot better than a war.”) And there was something off key about Germans, so soon after the end of the Second World War, railing about others being craven bystanders. Some observers came to see the Wall as the necessary scaffolding on which to secure a postwar peace. That’s easy to say, though, when one is on the side with the department stores, and without the secret police. Technically, West Berlin was the city being walled in, a quasi-metropolis detached from the rest of West Germany. The Allied victors—America, Britain, France, and the Soviet Union—had divided Germany into four parts, and, since Berlin was in the Soviet sector, they divided the city into four parts, too. In 1948, the Soviets cut off most road and rail access to the city’s three western sectors, in an effort to assert their authority. The Americans responded with the Berlin Airlift, sending in planes carrying food and coal, and so much salt that their engines began to corrode. By the time the Wall went up, it wasn’t the West Berliners who were hungry. West Germany’s Wirtschaftswunder , or economic miracle, was under way, while life in the East involved interminable shortages. West Berliners were surrounded by Soviet military encampments, but they were free and they could leave—and so could anyone who could get to their part of the city. The East Berliners were the prisoners. In the weeks before the Wall went up, more than a thousand managed to cross the border each day; the Wall was built to keep them from leaving. But people never stopped trying to tear it down.
