We took the long way back toward his house and drove past the northernmost point of the ranch just as the sun was beginning to set. “That’s so pretty,” I exclaimed as I beheld the beauty of the sky. Marlboro Man slowed to a stop and put his pickup in park. “It is, isn’t it?” he replied, looking over the land on which he’d grown up. He’d lived there since he was four days old, had worked there as a child, had learned how to be a rancher from his dad and grandfather and great-grandfather. He’d learned how to build fences and handle animals and extinguish prairie fires and raise cattle of all colors, shapes, and sizes. He’d helped bury his older brother in the family cemetery near his house, and he’d learned to pick up and go on in the face of unspeakable tragedy and sadness. This ranch was a part of him. His love for it was tangible. We got out of the pickup and sat on the back, holding hands and watching every second of the magenta sunset as it slowly dissipated into the blackness underneath. I just wanted to make sure he knew. “Yeah…I know,” he said. “Um, funniest thing happened,” I continued, my hands in a death grip on the steering wheel. “Seems I got a little turned around and I’m kinda sorta maybe perhaps a little tiny bit lost.” He chuckled. “Where are you?” “Um, well, that’s just it,” I replied, looking around the utter darkness for any ounce of remaining pride. “I don’t really know.” Marlboro Man assumed control, telling me to drive until I found an intersection, then read him the numbers on the small green county road sign, numbers that meant absolutely nothing to me, considering I’d never even heard the term “county road” before, but that would help Marlboro Man pinpoint exactly where on earth I was. “Okay, here we go,” I called out. “It says, um…CR 4521.” “Hang tight,” he said. “I’ll be right there.” Marlboro Man was right there, in less than five minutes. Once I determined the white pickup pulling beside my car was his and not that of Jason Voorhees, I rolled down my window. Marlboro Man did the same and said, with a huge smile, “Having trouble?” He was enjoying this, in the exact same way he’d enjoyed waking me from a sound sleep when he’d called at seven a few days earlier. I was having no trouble establishing myself as the clueless pansy-ass of our rapidly developing relationship. “Follow me,” he said. I did. I’ll follow you anywhere, I thought as I drove in the dust trail behind his pickup. Within minutes we were back at the highway and I heaved a sigh of relief that I was going to survive. Humiliated and wanting to get out of his hair, I intended to give him a nice, simple wave and drive away in shame. Instead, I saw Marlboro Man walking toward my car. Staring at his Wranglers, I rolled down my window again so I could hear what he had to say. He didn’t say anything at all. What does one wear to a ranch early in the morning? I wondered. I was stumped. I had enough good sense, thank God, to know my spiked black boots--the same boots I’d worn on basically every date with Marlboro Man thus far--were out of the question. I wouldn’t want them to get dirty, and besides that, people might look at me funny. I had a good selection of jeans, yes, but would I go for the dark, straight-leg Anne Kleins? Or the faded, boot-cut Gaps with contrast stitching? And what on earth would I wear on top? This could get dicey. I had a couple of nice, wholesome sweater sets, but the weather was turning warmer and the style didn’t exactly scream “ranch” to me. Then there was the long, flax-colored linen tunic from Banana Republic--one I loved to pair with a chunky turquoise necklace and sandals. One day Marlboro Man invited my sister, Betsy, and me to the ranch to work cattle. She was home from college and bored, and Marlboro Man wanted Tim to meet another member of my family. “Working cattle” is the term used to describe the process of pushing cattle, one by one, through a working chute, during which time they are branded, dehorned, ear tagged, and “doctored” (temperature taken, injections given). The idea is to get all the trauma and mess over with in one fell swoop so the animals can spend their days grazing peacefully in the pasture. When Betsy and I pulled up and parked, Tim greeted us at the chute and immediately assigned us our duties. He handed my sister a hot shot, which is used to gently zap the animal’s behind to get it to move through the chute. It’s considered the easy job. “You’ll be pushing ’em through,” Tim told Betsy. She dutifully took the hot shot, studying the oddly shaped object in her hands. Next, Tim handed me an eight-inch-long, thick-gauge probe with some kind of electronic device attached. “You’ll be taking their temperature,” Tim informed me. Easy enough, I thought. But how does this thing fit into its ear? Or does it slide under its arm somehow? Perhaps I insert it under the tongue? Will the cows be okay with this? Tim showed me to my location--at the hind end of the chute. “You just wait till the steer gets locked in the chute,” Tim directed. “Then you push the stick all the way in and wait till I tell you to take it out.” Come again? The bottom fell out of my stomach as my sister shot me a worried look, and I suddenly wished I’d eaten something before we came. I felt weak. I didn’t dare question the brother of the man who made my heart go pitter-pat, but…in the bottom? Up the bottom? Seriously? Before I knew it, the first animal had entered the chute. Various cowboys were at different positions around the animal and began carrying out their respective duties. Tim looked at me and yelled, “Stick it in!” With utter trepidation, I slid the wand deep into the steer’s rectum. This wasn’t natural. This wasn’t normal. At least it wasn’t for me. This was definitely against God’s plan.

The average Texas cattle herd driven northward numbered 2,500 cows, composed primarily of hardy Texas longhorns, a breed that could travel long distances without water. A dozen cowboys, including a trail boss, along with 50–60 horses, four mules, and a chuck wagon (sometimes called a mess wagon) that hauled the food and bedding, accompanied the herd. This was a media beat-up at its very worst. All those officials reacting to what the media labeled “The Baby Bob Incident” failed to understand the Irwin family. This is what we did--teach our children about wildlife, from a very early age. It wasn’t unnatural and it wasn’t a stunt. It was, on the contrary, an old and valued family tradition, and one that I embraced wholeheartedly. It was who we were. To have the press fasten on the practice as irresponsible made us feel that our very ability as parents was being attacked. It didn’t make any sense. This is why Steve never publicly apologized. For him to say “I’m sorry” would mean that he was sorry that Bob and Lyn raised him the way they did, and that was simply impossible. The best he could do was to sincerely apologize if he had worried anyone. The reality was that he would have been remiss as a parent if he didn’t teach his kids how to coexist with wildlife. After all, his kids didn’t just have busy roads and hot stoves to contend with. They literally had to learn how to live with crocodiles and venomous snakes in their backyard. Through it all, the plight of the Tibetan nuns was completely and totally ignored. The world media had not a word to spare about a dry well that hundreds of people depended on. For months, any time Steve encountered the press, Tibetan nuns were about the furthest thing from the reporter’s mind. The questions would always be the same: “Hey, Stevo, what about the Baby Bob Incident?” “If I could relive Friday, mate, I’d go surfing,” Steve said on a hugely publicized national television appearance in the United States. “I can’t go back to Friday, but you know what, mate? Don’t think for one second I would ever endanger my children, mate, because they’re the most important thing in my life, just like I was with my mum and dad.” Steve and I struggled to get back to a point where we felt normal again. Sponsors spoke about terminating contracts. Members of our own documentary crew sought to distance themselves from us, and our relationship with Discovery was on shaky ground. But gradually we were able to tune out the static and hear what people were saying. Not the press, but the people. We read the e-mails that had been pouring in, as well as faxes, letters, and phone messages. Real people helped to get us back on track. Their kids were growing up with them on cattle ranches and could already drive tractors, or lived on horse farms and helped handle skittish stallions. Tim smiled as he regarded his new niece. “She’s so cute,” he said tenderly. “Can I hold her?” He reached out his arms like a child wanting to hold a puppy. “Sure,” I said, handing her over, my bottom stinging by now. All I could think about was getting in the shower and spraying it with the nozzle I’d noticed earlier in the day when the nurse escorted me to the bathroom. I’d started obsessing over it, in fact. The nozzle was all I could think about. Tim seemed as surprised at the baby’s gender as his brother had been. “I was shocked when I heard!” he said, looking at me with a smile. I laughed, imagining what Marlboro Man’s dad might be thinking. That the first grandchild in such a male-dominated ranching family turned out to be a girl was becoming more humorous to me each minute. This was going to be an adventure.

It experimented with making ethanol gasoline and corn oil. There were more abstract initiatives. Koch launched an effort to sell rain insurance to farmers who had no way to offset the risk of heavy rains. To do that, Koch hired a team of PhD statisticians to write formulas that correlated corn harvests with rain events, figuring out what a rain insurance policy should cost. At the same time, Koch’s commodity traders were buying contracts for corn and soybeans, learning more every day about those markets.

Senior executives inside IBP realized that raising cattle was a waste of money. So at Garden City, IBP employed a new way to procure a steady stream of cows. It was called the “formula contract.” The formula contract created a way for IBP to lock in a steady supply of cattle without having to go out on the open market and haggle for them, as meatpackers always had. Instead, IBP signed contracts with a rancher or feedlot, agreeing to buy a set number of cattle at a set date.3 The price for those cattle, when they were delivered, was based on a formula rather than a competitive bid. IBP created a formula price that allowed the company to start controlling its cattle supply in a way that mimicked Tyson’s methods for controlling its chicken supply. IBP couldn’t simply dictate what kind of animals it slaughtered, the way Tyson did, but it could use contracts to exert influence over the ranches. IBP’s formula contained a series of discounts and premiums that rewarded some qualities in the cow while punishing others. These discounts were crude levels that IBP used to shape the kind of cattle ranchers raised. Early on, for example, IBP controlled the size of the cows ranchers delivered by discounting those that were too big and those that were too small. The formula acted as a market incentive all its own, slowly bending the characteristics of the cattle herd to IBP’s specifications. It was still a long way from the exacting control Tyson had over its chicken flocks, but the formulas would evolve over the decades.

During the last land boom of the nineteenth century (from about 1883 to 1887), 16 million acres underwent that conversion every year. Railroads doubled down by selling off or mortgaging portions of the public domain they had just been gifted to finance construction or to speculate with. But land-grant roads were built at costs 100 percent greater than warranted and badly built at that, needing to be rebuilt just fifteen years later.

For more than a century they were a major force for white colonial expansion pushing out Mexicans through violence, intimidation, and political interference. In some cases, whites would raid cattle from Mexican ranches and then, when Mexican vaqueros tried to take them back, call in the Rangers to retrieve their “stolen property.” Mexicans and Native Americans who resisted Ranger authority could be killed, beaten, arrested, or intimidated. Mike Cox describes this as nothing short of an extermination campaign in which almost the entire indigenous population was killed or driven out of the territory.24

Buffalo Bill is important to me as the symbol of the growth of our nation, for his life spanned the settlement of the Great Plains, the Indian Wars, the Gold Rush, the Pony Express, the building of the transcontinental railroad, and the enduring romance of the American frontier-especially the Great Plains. Consider what he witnessed in his lifetime: the invention of the telephone, the transatlantic cable, the automobile, the airplane, and the introduction of modem warfare, with great armies massed against each other, with tanks, armored cars, flame-throwers, and poison gas-a far cry from the days when Cody and the troopers of the Fifth Cavalry rode hell-for-leather across the prairie in pursuit of hostile Indians. Nor, though it is not usually considered a milestone in American history, should we forget Joseph F. Glidden's 1874 invention of barbed wire, which, more than the rifle or the plow, transformed Buffalo Bill's Great Plains by insuring the survival of thousands of family farms, and making possible the growth of enormous-and enormously profitable-cattle ranches. In addition, I feel a personal connection. In April 1855 my great-granduncle Alexander Carter Jr. and his younger brother, Thomas Marion Carter, left their home in Scioto County, Ohio, and headed west. Starting by steamboat, the two brothers floated down the Ohio River until it joined the Mississippi and then traveled upstream to St. Louis. In St. Louis they found little transportation west, so they walked, hitched rides, and rode horseback to reach St. Joseph, Missouri. There they caught a stagecoach to Council Bluffs, Iowa, riding on top of the stage, with seventeen men and women-a three-day ordeal. On May 14, nineteen days after leaving St. Louis, the brothers crossed the Missouri River and landed on the town site of Omaha, then a community of cotton tents and shanties, where lots were being offered to anyone willing to build on them. They refused this offer and pressed on to their final destination, DeSoto, Washington County, Nebraska Territory, where
