When the forests are cleared so the cattle can graze, billions of tons of carbon dioxide are released into the atmosphere. Finally, the world's cattle are thought to produce about 20 percent of the methane released into the atmosphere, and methane traps twenty-five times as much heat from the sun as carbon dioxide. Factory farm manure also produces methane because, unlike manured dropped naturally in the fields, it dies not decompose in the presence of oxygen. All of this amounts to a compelling reason...for a plant based diet.

How does matter manage to move itself? Could it be that an indwelling consciousness makes up the stuff of all things? Could this consciousness somehow animate the whole grand ecology of evolution, from the forming of the first stars to the creation of human beings who look out at the universe’s glittering constellations in wonder? Could consciousness somehow embrace itself, folding back on itself, in a new and natural technology of the soul? If it could, this would give new meaning to Nietzsche’s insight that: “The highest art is self–creation.” Could we, really, shape our own evolution with the full force of our consciousness, even as we might exert our will to reach out and mold a lump of clay into a graceful sculpture? Particularly galling was the way the Homestead Act was abused. Passed during the Civil War, it was supposed to make a reality out of Lincoln’s version of the free labor, free soil dream. But fewer than half a million people actually set up viable farms over nearly half a century. Most public lands were taken over by the railroads, thanks to the government’s beneficent land-grant policy (another form of primitive accumulation); by land speculators backed by eastern bankers, who sometimes hired pretend “homesteaders” in acts of outright fraud; or by giant cattle ranches and timber companies and the like who worked hand in glove with government land agents. As early as 1862 two-thirds of Iowa (or ten million acres) was owned by speculators. Railroads closed off one-third of Kansas to homesteading and that was the best land available. Mushrooming cities back east became, in a kind of historical inversion, the safety valve for overpopulated areas in the west. At least the city held out the prospect of remunerative wage labor if no longer a life of propertied independence. Few city workers had the capital to migrate west anyway; when one Pennsylvania legislator suggested that the state subsidize such moves, he was denounced as “the Pennsylvania Communist” for his trouble. During the last land boom of the nineteenth century (from about 1883 to 1887), 16 million acres underwent that conversion every year. Railroads doubled down by selling off or mortgaging portions of the public domain they had just been gifted to finance construction or to speculate with. But land-grant roads were built at costs 100 percent greater than warranted and badly built at that, needing to be rebuilt just fifteen years later.

Pesticides are an increasing potential problem for our microbes and they take many forms. The most popular is called glyphosate (or Roundup), which stops vegetables and fruit sprouting or going mouldy once developed. It was invented by Monsanto in the 1970s and is probably the most commonly used chemical for farming in the world. In 2013 over 1.7 million hectares of land in the UK was sprayed with it, and the majority of non-organic breads (especially wholemeal) tested contain glyphosate residues. Traces of it are found in the blood and urine of cattle and even in humans living in cities. Even at sub-toxic doses it could be adversely affecting human health and, like most chemicals, contains potential carcinogens.4 We know it affects soil microbes, and much less is known about its effects on our gut microbes – but early studies suggest it is not good.5 We may prefer to let our fruit and vegetables deteriorate and change colour after a few days, rather than keep them chemically in suspended animation with adverse effects on our microbes. While there is little solid research on whether eating organic foods is better for us and our microbes, there are studies showing levels of pesticides in our bodies can be dramatically reduced within a week by switching to organic produce.

Two thousand Jews, for example, lived in and around the small town of Tykocin, northwest of Warsaw on the road to Bialystok in eastern Poland, worshiping in a square, fortified synagogue with a turreted tower and a red mansard roof, built in 1642, more than a century after Jewish settlement began in the region. Lush farm country surrounds Tykocin: wheat fields, prosperous villages, cattle in the fields, black-and-white storks brooding wide, flat nests on the chimneys of lucky houses. Each village maintains a forest, a dense oval stand of perhaps forty acres of red-barked pines harvested for firewood and house and barn construction. Inside the forests, even in the heat of summer, the air is cool and heady with pine; wild strawberries, small and sweet, strew the forest floor. Police Battalions 309 and 316, based in Bialystok, invaded Tykocin on 5 August 1941. They drove Jewish men, women and children screaming from their homes, killed laggards in the streets, loaded the living onto trucks and jarred them down a potholed, winding dirt road past the storks and the cattle to the Lopuchowo village forest two miles southwest. In the center of the Lopuchowo forest, men dug pits, piling up the sandy yellow soil, and then Police Battalions 309 and 316, out for the morning on excursion from Bialystok, murdered the Jews of Tykocin, man, woman and child. For months the forest buzzed and stank of death. (Twenty miles northwest of Tykocin in the village of Jedwabne, Polish villagers themselves, with German encouragement, had murdered their Jewish neighbors on 10 July 1941 by driving them into a barn and burning them alive, a massacre examined in Jan T. Gross’s book Neighbors.)

In The Better Angels of Our Nature, Pinker calculates the average homicide rate among eight primitive societies, arriving at an alarming 14 per cent. This figure appeared in respected journals like Science and was endlessly regurgitated by newspapers and on TV. When other scientists took a look at his source material, however, they discovered that Pinker mixed up some things. This may get a little technical, but we need to understand where he went wrong. The question we want to answer is: which peoples still hunting and gathering today are representative of how humans lived 50,000 years ago? After all, we were nomads for 95 per cent of human history, roving the world in small, relatively egalitarian groups. Pinker chose to focus almost exclusively on hybrid cultures. These are people who hunt and gather, but who also ride horses or live together in settlements or engage in farming on the side. Now these activities are all relatively recent. Humans didn’t start farming until 10,000 years ago and horses weren’t domesticated until 5,000 years ago. If you want to figure out how our distant ancestors lived 50,000 years ago, it doesn’t make sense to extrapolate from people who keep horses and tend vegetable plots. But even if we get on board with Pinker’s methods, the data is problematic. According to the psychologist, 30 per cent of deaths among the Aché in Paraguay (tribe 1 on his list) and 21 per cent of deaths among the Hiwi in Venezuela and Colombia (tribe 3) are attributable to warfare. These people are out for blood, it would seem. The anthropologist Douglas Fry was sceptical, however. Reviewing the original sources, he discovered that all forty-six cases of what Pinker categorised as Aché ‘war mortality’ actually concerned a tribe member listed as ‘shot by Paraguayan’. The Aché were in fact not killing each other, but being ‘relentlessly pursued by slave traders and attacked by Paraguayan frontiersmen’, reads the original source, whereas they themselves ‘desire a peaceful relationship with their more powerful neighbors’. It was the same with the Hiwi. All the men, women and children enumerated by Pinker as war deaths were murdered in 1968 by local cattle ranchers.40 There go the iron-clad homicide rates. Far from habitually slaughtering one another, these nomadic foragers were the victims of ‘civilised’ farmers wielding advanced weaponry. ‘Bar charts and numeric tables depicting percentages […] convey an air of scientific objectivity,’ Fry writes. ‘But in this case it is all an illusion.

Compared to England, Tsenacomoco had slower communications (no galloping horses), a dearth of plowed fields (no straining oxen) and pastures (no grazing cattle), and fewer and smaller roads (no carriages to accommodate). Battles were fought without cavalry; winters endured without wool; logs skidded through the forest without oxen. Distances loomed larger when people had to walk from place to place; indeed, in terms of the time required for Powhatan’s orders to reach his minions, Tsenacomoco may have been the size of England itself (it was much less populous, of course).

Still more striking, the people who built Stonehenge were not farmers, or not in the usual sense. The Neolithic inhabitants of England appear to have taken the measure of cereal-farming and collectively decided that they preferred to live another way.

Buffalo Bill is important to me as the symbol of the growth of our nation, for his life spanned the settlement of the Great Plains, the Indian Wars, the Gold Rush, the Pony Express, the building of the transcontinental railroad, and the enduring romance of the American frontier-especially the Great Plains. Sometimes the elite green gospel has proved catastrophic—especially for the middle classes. In August and September 2020, high winds, lightning strikes, and scorching temperatures caused hundreds of forest fires throughout California. Past “more natural” policies had discouraged controlled burning, removal of brush from forest floors, cattle grazing on hillsides of dead undergrowth, and the logging of tens of millions of dead trees lost during recent droughts. Even the emasculated timber industry might have managed if it had been permitted to hire thousands to harvest the dead trees of the last six years, thus providing jobs, timber, and forest safety. Instead, the summer perfect storm created a sort of green napalm—a combustible fuel of unharvested timber that would turn a traditional wildfire into an uncontrollable inferno, burn over four million acres, and send one hundred million metric tons of carbon emissions into the air. Due to the tremendous temperatures created by the infernos, eerie pyrocumulus clouds for weeks dotted the Sierra Nevada skyline, in apocalyptical fashion emulating the mushroom clouds that billow up after nuclear blasts. The ensuing smoke clouds soon covered much of the state and overwhelmed the efficacy of public and private solar farms, which in turn led to rolling scheduled power outages. And the power crisis had been made worse by the voluntary state shutdown of clean-burning natural gas and nuclear power plants—all exacerbated by near-record temperatures in some areas of the state reaching 110 degrees.
