Whisk eggs and sugar together in a mixing bowl, then set the bowl over simmering water and stir constantly until warm to the touch. Remove from heat. Beat egg mixture with an electric mixer until light and fluffy. Fold egg mixture into chocolate mixture. Spoon the batter into cups. Add enough hot water to baking pan to come halfway up sides of cups. Bake until the tops lose their glossy finish, about fifteen minutes. Serve warm or at room temperature with a scoop of ice cream or dollop of whipped cream that has been lightly sweetened and spiked with Cointreau. Line a muffin pan with cupcake liners. In a large bowl, whisk together the milk and vinegar, and set aside for a few minutes to curdle. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Once the milk has curdled, add in the sugar, oil, vanilla extract, and raspberry pulp, and stir. Then slowly add the dry ingredients to the wet ones a little bit at a time, and combine using a whisk or handheld mixer, stopping to scrape the sides of the bowl a few times, until no lumps remain. Fill cupcake liners two-thirds of the way and bake for 20–22 minutes. Transfer to a cooling rack, and let cool completely before frosting. White-Chocolate Mint Frosting INGREDIENTS: 4-1/2 ounces white chocolate, finely chopped 6 tablespoons margarine or butter 2 cups confectioners’ sugar 1/2 teaspoon vanilla extract 1 teaspoon mint extract or minced fresh mint leaves (NOT peppermint) Up to 1/4 cup milk INSTRUCTIONS: In a double boiler, melt the white chocolate until smooth, then remove and cool to room temperature. If you prefer, you can instead melt the white chocolate in a small bowl in the microwave, heating it on high for a few seconds at a time, then stirring until smooth. (Repeat heating if necessary, but don’t overdo it!) In a large bowl, with an electric mixer, cream the margarine or butter until it’s a lighter color, about 2–3 minutes. Slowly beat in the confectioners’ sugar in 1/2-cup batches, adding the vanilla extract and either mint extract or minced fresh mint leaves about halfway through. Add the melted white chocolate to the frosting and combine thoroughly. If the frosting seems too stiff and thick, add a little milk until the right consistency is reached. Continue mixing on high speed for about 3–7 minutes, until the frosting is light and fluffy. Place in the refrigerator until firm enough to frost, about 30 minutes.

They go stale, she thinks: everything needs to be turned over. Composted. She feels invigorated, punitive and steely as she moves through the steps of the recipe. It was from one of her mother's relatives, perhaps even Avis's grandmother- black bittersweets- a kind of cookie requiring slow melting in a double boiler, then baking, layering, and torching, hours of work simply to result in nine dark squares of chocolate and gianduja tucked within pieces of 'pate sucree.' Peppermint-Patty Cupcakes (makes approximately 12 cupcakes) I love peppermint. It always wakes me right up! And when it’s mixed with chocolate … yum! INGREDIENTS: 1/2 cup milk 1/2 teaspoon apple cider vinegar 1 cup all-purpose flour 1/2 teaspoon baking powder 3/4 teaspoon baking soda 1/3 cup cocoa powder 1/4 teaspoon salt 1/2 cup semisweet chocolate chips 1/4 cup yogurt 3/4 cup granulated sugar 1 teaspoon vanilla extract 1 teaspoon peppermint extract 1/3 cup canola oil INSTRUCTIONS: Preheat the oven to 350°F. Line a muffin pan with cupcake liners. In a large bowl, whisk together the milk and vinegar, and set aside for a few minutes to curdle. Sift the flour, baking powder, baking soda, cocoa powder, and salt into a large bowl, and mix together. In a double boiler, melt the chocolate chips until smooth, then remove and cool to room temperature. If you prefer, you can instead melt the chocolate chips in a small bowl in the microwave, heating it on high for a few seconds at a time, then stirring until smooth. (Repeat heating if necessary, but don’t overdo it!) Once the milk has curdled, add in the yogurt, sugar, vanilla extract, peppermint extract, and oil, and stir together. Then add the melted chocolate and stir some more. With a whisk or handheld mixer, add the dry ingredients to the wet ones a little bit at a time and mix until no lumps remain, stopping to scrape the sides of the bowl a few times. Fill cupcake liners two-thirds of the way and bake for 18–22 minutes. Transfer to a cooling rack, and let cool completely before frosting. With your (clean!) thumb, poke large holes into the center of each cupcake. Alternately, take a small knife and carve out a cone from the center of each cupcake to create a well. (You can discard the cones, or eat them.) Fill a pastry bag with the peppermint frosting. (You can also make your own pastry bag by cutting off a corner from a plastic Ziploc bag.) Insert the tip of the pastry bag into each cupcake, and squeeze it to fill the cavity you created. Then swirl the frosting on top of the cupcake to cover the opening. Peppermint Frosting INGREDIENTS: 1 cup margarine or butter 3-1/2 cups confectioners’ sugar 1-1/2 teaspoons peppermint extract 1–2 tablespoons milk INSTRUCTIONS: In a large bowl, with an electric mixer, cream the margarine or butter until it’s a lighter color, about 2–3 minutes. Slowly beat in the confectioners’ sugar in 1/2-cup batches, adding a little bit of milk whenever the frosting becomes too thick. Add the peppermint extract and continue mixing on high speed for about 3–7 minutes, until the frosting is light and fluffy.

We were divided into adoptive families, and there was always someone from the Kibbutz who accompanied us to immediately take care of any problem that might come up. The rooms we got were spacious wooden huts, and we were divided into two in each room. I adapted nicely after learning to switch on the boiler. I felt free in my room and the Kibbutz. I enjoyed my new place. Although I found it hard to work with the boiler, but with time I found a way to get used to the new situation. At Tiberias, heating water was done using electricity and solar panels installed on the roof, and here we heated water with a boiler, at least that is what they called the small device that operated on kerosene. In the tiny shower room there was a kind of boiler which, to me, looked like a threatening missile, and from it was an arrangement of dripping kerosene, that when it was burned, would heat the water. I loved hearing the noise the boiler made when it worked. The noise rose and fell  according to the pace of the kerosene drip. Sometimes, in my mind, I saw it taking off into the sky.

Then back to the hammock for books, kissing, and another whiff of sewage. When we returned to the UK it was a freezing cold January day. Shara was tired, but we were both excited to get onto our nice, warm, centrally heated barge. It was to be our first night in our own home. I had asked Annabel, Shara’s sister, to put the heating on before we arrived, and some food in the fridge. She had done so perfectly. What she didn’t know, though, was that the boiler packed in soon after she left. By the time Shara and I made it to the quayside on the Thames, it was dark. Our breath was coming out as clouds of vapor in the freezing air. I picked Shara up and carried her up the steps onto the boat. We opened the door and looked at each other. Surprised. It was literally like stepping into a deep freeze. Old iron boats are like that in winter. The cold water around them means that, without heating, they are Baltically cold. We fumbled our way, still all wrapped up, into the bowels of the boat and the boiler room. Shara looked at me, then at the silent, cold boiler. No doubt she questioned how smart both choices had really been. So there we were. No money, and freezing cold--but happy and together. That night, all wrapped up in blankets, I made a simple promise to Shara: I would love her and look after her, every day of our life together--and along the way we would have one hell of an adventure. Little did either of us realize, but this was really just the beginning.

The ship’s electricity was produced by three turbo-drive 300 kW DC generators when at sea, but when ashore, for the most part, electricity came from either the Central Maine power grid or a generator in the Engineering Laboratory. The State of Maine was considered cold iron until her boilers were lit off, breathing life into her soul. This would be the first time the engineers fired up the boilers and cautiously brought up a head of steam close to her rated 450 psi at 759 degrees. At this temperature, a failure was not an option. The steam was so hot as to be invisible and could instantly cut a two by four in half. There have been recorded boiler and steam pipe failures resulting in the deaths of people in the engine room, so we were taking no chances! Out on the open deck the sky was sunny however the air was frigid. It was the kind of day you could expect in Maine this time of year and we were just happy that the sun was shining. Now it was up to deck force to let go of all but the forward spring lines. Slowly the ship pulled ahead and as the spring line tightened, our stern swung out into the channel. At the right moment the order was given and we backed away from the dock. It was the first time for our new TS State of Maine to get underway, and so far, everything functioned satisfactorily.

Raleigh was struck by a torpedo early in the attack. Like Utah, she occupied a berth usually used by an aircraft carrier. At 0756 the two torpedoes were dropped about 300 yards from the ship. One hit the ship below the eighty pound armor belt and another passed about twenty-five yards ahead of the ship. The one which hit the ship caused immediate flooding of the two forward boiler rooms and the forward engine room. General Quarters was sounded at once, and the anti-aircraft battery went into action promptly. Men not at the guns were ordered to jettison weights on the port side, especially those high up on the ship. About 0900 the ship received a bomb hit from a dive-bomber. This was dropped from about 800 feet and passed through three decks and out the side of the ship. It exploded clear of the vessel at frame 112 and caused damage typical of a near-miss. Luckily the compartment, which held 3,500 gallons of aviation gasoline, was left intact. The ship counterflooded, but the construction of the ship was not favorable to a great deal of counterflooding as loss of buoyancy was more important than list. Due to defective hatches the main deck had some free water surface, which, added to that produced by the damage, was almost fatal. The jettisoning of topside weights and the reduction of free surface by pumping water from the main deck saved the ship. It certainly would have been lost in a seaway, as it developed negative stability.
