STUFFIN’ MUFFINS Preheat oven to 350 degrees F., rack in the middle position. 4 ounces salted butter (1 stick, 8 Tablespoons, ¼ pound) ½ cup finely chopped onion (you can buy this chopped or chop it yourself) ½ cup finely chopped celery ½ cup chopped apple (core, but do not peel before chopping) 1 teaspoon powdered sage 1 teaspoon powdered thyme 1 teaspoon ground oregano 8 cups herb stuffing (the kind in cubes that you buy in the grocery store—you can also use plain bread cubes and add a quarter-teaspoon more of ground sage, thyme, and oregano) 3 eggs, beaten (just whip them up in a glass with a fork) 1 teaspoon salt ½ teaspoon black pepper (freshly ground is best) 2 ounces (½ stick, 4 Tablespoons, pound) melted butter ¼ to ½ cup chicken broth (I used Swanson’s) Hannah’s 1st Note: I used a Fuji apple this time. I’ve also used Granny Smith apples, or Gala apples. Before you start, find a 12-cup muffin pan. Spray the inside of the cups with Pam or another nonstick cooking spray OR line them with cupcake papers. Get out a 10-inch or larger frying pan. Cut the stick of butter in 4 to 8 pieces and drop them inside. Put the pan over MEDIUM heat on the stovetop to melt the butter. Once the butter has melted, add the chopped onions. Give them a stir. Add the chopped celery. Stir it in. Add the chopped apple and stir that in. Sprinkle in the ground sage, thyme, and oregano. Sauté this mixture for 5 minutes. Then pull the frying pan off the heat and onto a cold burner. In a large mixing bowl, combine the 8 cups of herb stuffing. (If the boxed stuffing you bought has a separate herb packet, just sprinkle it over the top of the mixture in your frying pan. That way you’ll be sure to put it in!) Pour the beaten eggs over the top of the herb stuffing and mix them in. Sprinkle on the salt and the pepper. Mix them in. Pour the melted butter over the top and mix it in. Add the mixture from your frying pan on top of that. Stir it all up together. Measure out ¼ cup of chicken broth. Wash your hands. (Mixing the stuffing is going to be a lot easier if you use your impeccably clean hands to mix it.) Pour the ¼ cup of chicken broth over the top of your bowl. Mix everything with your hands. Feel the resulting mixture. It should be softened, but not wet. If you think it’s so dry that your muffins might fall apart after you bake them, mix in another ¼ cup of chicken broth. Once your Stuffin’ Muffin mixture is thoroughly combined, move the bowl close to the muffin pan you’ve prepared, and go wash your hands again. Use an ice cream scoop to fill your muffin cups. If you don’t have an ice cream scoop, use a large spoon. Mound the tops of the muffins by hand. (Your hands are still impeccably clean, aren’t they?) Bake the Stuffin’ Muffins at 350 degrees F. for 25 minutes. Yield: One dozen standard-sized muffins that can be served hot, warm, or at room temperature. Hannah’s 2nd Note: These muffins are a great accompaniment to pork, ham, chicken, turkey, duck, beef, or . . . well . . . practically anything! If there are any left over, you can reheat them in the microwave to serve the next day. Hannah’s 3rd Note: I’m beginning to think that Andrea can actually make Stuffin’ Muffins. It’s only April now, so she’s got seven months to practice.

I have to prove them wrong by letting them know I can do anything I put my mind into it. So I decided to make a very big move in my that would either end it my life or could change my life for ever. On Sep 2, 1990 I had it enough of the communist regime and all the negative people telling me what I can and can't do. So I decided to leave everyone behind me and move forward in life, I decided to escape and followed my dreams. I excaped from army who was chasing to kill us. but God was with me. can you believe it I made it on the local news saying "Two young girls were killed today by army forces escaping the borders" I made it alive to Yugoslavia, I spend almost seven months in concentration camp,but I thought of bright site. New place, new chapter in my life, two weeks later got united with my boyfriend. neither of us spoke English, it was very hard to find jobs, we manage to get a job in a local restaurant as a dishwasher and me as a bustable. at that time I was very I found a happy, so I did it with smile on my face, at that time we were living at my husband's cousins unfinished basement? My Life Story. - If I can do it, so can you- I was born and lived in one of the most oldest and most beautiful cities in Albania. for 23 years I lived under the communist regime, where everyone was poor, there was no rich people beside the Elite group who dictate the country. Since I was little girl I dreamed of fairy tale life. But for some reason no one was supportive of my dreams. It looked like they were enjoying watching us living in poverty and keep our heads down, for instance I remember when I was in 5th grade I told my literature teacher "When I get older I want to be a beautician." With a smire on her face she said "You are going to be just like your mother, keep having kids in a row" At that time I did not understood what she meant, but I did not expected that answer from an "educated" person, especially your teacher. As I got older I started to isolate myself from all the negative people until one day I asked my uncle to help me to get in a beauty college, he knew people in town that's why, I did not wanted to believe he respond. Even today I can hear his words whisper in my ears, telling me "Beauty college is not for poor children, education is only for rich kids" But that did not stopped me either, I told myself "No one can tell me what I can and can't do" They just motivated me to prove them wrong. Poor children can go to college. So I decided to make a very big move my that would either end it my life or could change my life for ever. Sep 2, 1990 I had it enough of that hell place, communist regime and all the negative people.I decided to leave everyone behind me and move forward in life, I decided to escape the communist and followed my dreams. I was also escaped from army who was chasing to kill us, but mighty God was with us. We made the local news saying "Two young girls were killed today by army forces escaping the borders" but I made it alive to Yugoslavia, I spend almost seven months there in concentration camp. There I meet the love of my life also, we dated for five months, until his visa was approved to come in US, two months later I come to state on March of 1991. New place, new chapter in my life, two weeks later got united, neither of us spoke English, it was very hard to find jobs, we manage to get a job in a local restaurant as a dishwasher and me as a bustable, at that time I was very I found a happy, so I did it with smile on my face. We were living at my husband's cousins unfinished basement. Yes we were sharing a single / twin size bed, we had to saved money so we can get our own apartment, we had nothing insite site. I remember when the manager showed us the appartment, it was green shaggy carpet, I told my husband. "Honey the carpet is thick enough, we don't need mattress to sleep on it, we can sleep on the carpet" later on a co-worker give us some household stuff to start our life with. Later that year our 1st child /daughter was born, two months later we get married in a local Albania church. My Dearest Bev, For the last week we have been waiting for an attack, and last night it came in full force. Honey, I was never so scared in my life. We got hit by 12 mortars and rockets, and some even hit our ammo dumps, which really hurt the battery. A mortar landed about 30 feet from me and I was lucky enough to have my head down, but the sergeant next to me didn’t, and we think he lost an eye. We got three men seriously hurt and four others shaken up by the blast. This was my first real look at war, and it sure was an ugly sight. I helped carry some of the wounded away, and boy, I sure hope I don’t have to do that again. It was an experience you can never explain in a million words. The noise from shooting is enough to drive a person crazy. Even after the attack last night, we had to stay up and wait for a ground attack which, lucky for us, never came. We expect to catch a lot of hell through May because it seems that the VC are really putting a big push on. Bev, I was so surprised last night to see that the men here were willing to risk their own lives to save a buddy’s. It really makes you have faith in people again, but I hope I don’t have to go through what we did last night in a long time (like never!) I take your picture out quite often and just look at it, because it’s such a relief from this pitiful place to see such a beautiful being. I am thinking of you always.
