Eton’s great strength is that it does encourage interests--however wacky. From stamp collecting to a cheese-and-wine club, mountaineering to juggling, if the will is there than the school will help you. Eton was only ever intolerant of two things: laziness and a lack of enthusiasm. As long as you got “into something,” then most other misdemeanors were forgivable. I liked that: it didn’t only celebrate the cool and sporty, but encouraged the individual, which, in the game of life, matters much more. Hence Eton helped me to go for the Potential Royal Marines Officer Selection Course, age only sixteen. This was a pretty grueling three-day course of endless runs, marches, mud yomps, assault courses, high-wire confidence tests (I’m good at those!), and leadership tasks. At the end I narrowly passed as one of only three out of twenty-five, with the report saying: “Approved for Officer Selection: Grylls is fit, enthusiastic, but needs to watch out that he isn’t too happy-go-lucky.” (Fortunately for my future life, I discarded the last part of that advice.) But passing this course gave me great confidence that if I wanted to, after school, I could at least follow my father into the commandos.

For this reason the ancients often compared the symbol to water, a case in point being tao, where yang and yin are united. Tao is the “valley spirit,” the winding course of a river. The symbolum of the Church is the aqua doctrinae, corresponding to the wonder-working “divine” water of alchemy, whose double aspect is represented by Mercurius. The healing and renewing properties of this symbolical water—whether it be tao, the baptismal water, or the elixir—point to the therapeutic character of the mythological background from which this idea comes. Physicians who were versed in alchemy had long recognized that their arcanum healed, or was supposed to heal, not only the diseases of the body but also those of the mind. Similarly, modern psychotherapy knows that, though there are many interim solutions, there is, at the bottom of every neurosis, a moral problem of opposites that cannot be solved rationally, and can be answered only by a supraordinate third, by a symbol which expresses both sides. This was the “veritas” (Dorn) or “theoria” (Paracelsus) for which the old physicians and alchemists strove, and they could do so only by incorporating the Christian revelation into their world of ideas. They continued the work of the Gnostics (who were, most of them, not so much heretics as theologians) and the Church Fathers in a new era, instinctively recognizing that new wine should not be put into old bottles, and that, like a snake changing its skin, the old myth needs to be clothed anew in every renewed age if it is not to lose its therapeutic effect.

The Princeton economist and wine lover Orley Ashenfelter has offered a compelling demonstration of the power of simple statistics to outdo world-renowned experts. Ashenfelter wanted to predict the future value of fine Bordeaux wines from information available in the year they are made. The question is important because fine wines take years to reach their peak quality, and the prices of mature wines from the same vineyard vary dramatically across different vintages; bottles filled only twelve months apart can differ in value by a factor of 10 or more. An ability to forecast future prices is of substantial value, because investors buy wine, like art, in the anticipation that its value will appreciate. It is generally agreed that the effect of vintage can be due only to variations in the weather during the grape-growing season. The best wines are produced when the summer is warm and dry, which makes the Bordeaux wine industry a likely beneficiary of global warming. The industry is also helped by wet springs, which increase quantity without much effect on quality. Ashenfelter converted that conventional knowledge into a statistical formula that predicts the price of a wine—for a particular property and at a particular age—by three features of the weather: the average temperature over the summer growing season, the amount of rain at harvest-time, and the total rainfall during the previous winter. His formula provides accurate price forecasts years and even decades into the future. Indeed, his formula forecasts future prices much more accurately than the current prices of young wines do. This new example of a “Meehl pattern” challenges the abilities of the experts whose opinions help shape the early price. It also challenges economic theory, according to which prices should reflect all the available information, including the weather. Ashenfelter’s formula is extremely accurate—the correlation between his predictions and actual prices is above .90.

Fine it with Ovo-Pure (powdered egg whites), isinglass (granulate from fish bladders), gelatin (often derived from cow bones and pigskins), or if it’s a white, strip out pesky proteins that cause haziness with Puri-Bent (bentonite clay, the ingredient in kitty litter). Not tannic enough? Replace $1,000 barrels with a bag of oak chips (small wood nuggets toasted for flavor), “tank planks” (long oak staves), oak dust (what it sounds like), or a few drops of liquid oak tannin (pick between “mocha” and “vanilla”). Or simulate the texture of barrel-aged wines with powdered tannin, then double what you charge. (““Typically, the $8 to $12 bottle can be brought up to $15 to $20 per bottle because it gives you more of a barrel quality. . . . You’re dressing it up,” a sales rep explained.) Wine too thin? Build fullness in the mouth with gum arabic (an ingredient also found in frosting and watercolor paint). Too frothy? Add a few drops of antifoaming agent (food-grade silicone oil). Cut acidity with potassium carbonate (a white salt) or calcium carbonate (chalk). Crank it up again with a bag of tartaric acid (aka cream of tartar). Increase alcohol by mixing the pressed grape must with sugary grape concentrate, or just add sugar. Decrease alcohol with ConeTech’s spinning cone, or Vinovation’s reverse-osmosis machine, or water. Fake an aged Bordeaux with Lesaffre’s yeast and yeast derivative. Boost “fresh butter” and “honey” aromas by ordering the CY3079 designer yeast from a catalog, or go for “cherry-cola” with the Rhône 2226. Or just ask the “Yeast Whisperer,” a man with thick sideburns at the Lallemand stand, for the best yeast to meet your “stylistic goals.” (For a Sauvignon Blanc with citrus aromas, use the Uvaferm SVG. For pear and melon, do Lalvin Ba11. For passion fruit, add Vitilevure Elixir.) Kill off microbes with Velcorin (just be careful, because it’s toxic). And preserve the whole thing with sulfur dioxide. When it’s all over, if you still don’t like the wine, just add a few drops of Mega Purple—thick grape-juice concentrate that’s been called a “magical potion.” It can plump up a wine, make it sweeter on the finish, add richer color, cover up greenness, mask the horsey stink of Brett, and make fruit flavors pop. Abu Ghraib is the symbol of American mistakes in Iraq, the place where the weird criminal perversions of bored, porn-surfing American teenagers clashed spectacularly with fastidious, sexually inviolate Islamic culture. It was also a most powerful symbol of our misguided perception of ourselves and our place in the world. We came into this war expecting to be treated like the GIs who went into France a half century ago—worshipped, instantly excused for the occasional excess or foible, and handed the keys to both the castle wine cellar and the nurses’ dormitory. Instead we were treated like unclean monsters by the people we liberated, and around the world our every move was viciously scrutinized not only by those same Europeans we rescued ages ago but by our own press. The failure of Abu Ghraib was the failure to accept the role we had created for ourselves as new masters of subject peoples. We wanted to rule absolutely and also to be liked, which was why our first reaction after the scandal broke was to issue profuse apologies, call for a self-flagellating round of investigations, and demand the prison’s closure. A hegemonic power more comfortable with ruling would have just shot the reporter who broke the story and moved on. But America has never been able to stomach that kind of thing, which is why, incidentally, this occupation of Iraq is probably not going to work. We are too civilized to make ourselves truly feared in public, but not civilized enough to properly restrain our power in private.
